Sweet Potato and Bacon Bites
This holiday appetizer recipe boasts crisp sweet potatoes slices topped with crème fraiche, chives and turkey bacon. With little prep time, it’s an easy win when entertaining.
2 large sweet potatoes, sliced into ¼-inch slices
kosher salt to taste
chopped fresh chive leaves
HORMEL® bacon pieces
freshly ground pepper
1) Heat oven to 400°F.
2) Place sweet potato slices on parchment-lined baking sheet; spray with cooking spray and sprinkle with salt. Bake 20 minutes, turning half way through. Let stand 10 minutes. Dollop with ½ teaspoonmascarpone cheese, sprinkle with chives, turkey bacon pieces and pepper. Serve immediately.
* Always cook to an internal temperature of 165°F.
