Terrific Turkey Tostados
Love tacos and quesadillas? Then you’ll love these Mexican Tostados—featuring pan-fried tortillas topped with seasoned ground turkey, sautéed veggies, melted cheese and a dollop of sour cream.

INGREDIENTS

3 tablespoons vegetable oil, divided
6 flour tortillias
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
½ cup red onion, sliced in strips
½ cup yellow or green bell pepper, sliced into strips
2 teaspoons minced garlic
2 teaspoons ground cumin
¾ teaspoon salt, if desired
¾ cup salsa, divided
1 (15-ounce) can refried black beans or refried beans
1 cup crumbled queso fresco or shredded Monterey jack cheese
¼ cup sour cream, if desired
¼ cup chopped fresh cilantro or sliced green onions

DIRECTIONS

1) In large skillet, heat 2 tablespoons oil until hot. Add tortilla to hot oil; cook 1 to 2 minutes per side or until golden brown and crisp. Transfer to paper towels to drain; repeat with remaining 5 tortillas.
2) Add remaining 1 tablespoon oil to skillet. Cook ground turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Add onion, bell pepper and garlic cook 5 minutes, stirring occasionally. Sprinkle with cumin and salt. Cook 5 minutes, stirring occasionally. Add ½ cup salsa; cook 5 minutes, stirring occasionally.
3) Meanwhile, combine beans and remaining 1/4 cup salsa; heat in microwave oven or small saucepan until hot. Spread bean mixture over tortillas; top with turkey mixture, cheese, sour cream, and cilantro. Serve with additional salsa, if desired. Makes 6 servings.
* Always cook to an internal temperature of 165°F

Jazzed-Up Turkey Fajitas

Looking for the easiest Mexican recipe ever? This quick fajita recipe features extra lean oven roasted turkey breast—found at your local deli—for a delicious weeknight shortcut.

INGREDIENTS

6 (6 to 8-inch) tortillas
2 red, green or yellow bell peppers, cut into thin strips
1 red onion, sliced
1 tablespoon olive oil
12 ounces JENNIE-O® Extra Lean Oven Roasted Turkey Breast, cut into strips
1 (.78 ounce) packet taco seasoning
1½ cups salsa
1 cup shredded Monterey Jack cheese with jalapeño peppers

DIRECTIONS

1) Heat tortillas according to package directions.
2) In large skillet over medium-high heat, sauté peppers and onion in oil 5 minutes or until peppers are slightly softened.
3) Add turkey, heat 2 minutes or until warmed. Stir in taco seasoning. Evenly divide turkey mixture among tortillas. Top with salsa and cheese.

Dinner Tonight: Baked Jumbo Butterfly Shrimp w/ Whole Grain Mac and Cheese





For Breakfast this morning I prepared a al fresco Chicken Breakfast Sausage Patty, toasted a Healthy Life Whole Grain English Muffin, and had a cup of Bigelow Decaf Green Tea. Same weather outside as yesterday except its a bit hotter and more humid. Our heat index is over 100. Not a good day to be doing a whole lot outside. After Lunch I headed up to the hospital and spent the afternoon with Dad. He's doing good, they just have to clear the pneumonia up in his right lung. Stopped and got gas on the way home and that was about it for the day. For Dinner tonight its Baked Jumbo Butterfly Shrimp w/ Whole Grain Mac and Cheese.



It's so hot out I wanted something sort of light and easy to preapre. So I baked 1 item and
microwaved the other one, don't get much easier! So I prepared a box of SeaPak Jumbo Shrimp. I preheated the oven on 425°f. I then got a small baking sheet, covered with aluminum foil and sprayed it with Pam Cooking Spray. I arranged the frozen shrimp in single layer on the baking sheet. Then baked at 425 degrees for 13-14 minutes turning over once after 6 minutes. They came out Golden Brown and delicious. Hard to beat these always great tasting. I served them with a side of Heinz Shrimp Cocktail Sauce.



 For a side I prepared some Kraft 50% Whole Grain Mac and Cheese. I normally have the regular
Mac and Cheese but I seen the 50% Whole Grain at Meijer and picked up a 4 pack of them. It comes in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese! For Dessert/Snack later tonight a bowl of Skinny Pop - Pop Corn along with a Coke Zero to drink.

- Keep frozen until ready to prepare.
- Due to differences in appliances, cooking times may vary and require adjustment.

PREPARATION:
BAKE
* preheat oven to 425°f.
* arrange frozen shrimp in single layer on baking sheet so shrimp are not touching.
* for full package, bake 13 to 14 minutes.
* for best results, turn product over halfway through cooking.

FRY
* preheat oil to 350°f.
* place frozen shrimp in fry basket.
* for full package fry 2 minutes and 30 seconds to 3 minutes.
* drain on absorbent paper before serving.

Cumin Spiced Pork Chop w/ Mashed Potatoes and Sliced Carrots

Dinner Tonight: Cumin Spiced Pork Chop w/  Mashed Potatoes and Sliced Carrots




It’s Bacon and Eggs to start off this hot and very humid morning! I fried up a couple of slices of Jennie – O Turkey Bacon, 2 Eggs Scrambled, toasted 1 slice of Aunt Millie's Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Love a good Breakfast! Well we are in for a stretch of
hot and humid days here. High in the 90's with a very high humidity. They say the heat index for the next 5 days will be over 100 degrees. I don't mind the heat but can't stand that high humidity. So anything that needs to be done outside will get done early! So this morning after Breakfast I got leaf blower out and cleaned up on the deck and driveway areas. After Lunch I took Mom's car over to the car Shop and the oil changed and then stopped and washed and the inside cleaned. The time I got back home it was 92 degrees already. I had everything done so I caught up on some shows I had recorded. For Dinner tonight I prepared a Cumin Spiced Pork Chop w/ Mashed Potatoes and Sliced Carrots.




I had picked up a large Center Cut Pork Chop from the Meijer Meat Department Counter and had it in the freezer. Sat it in the fridge and let it thaw overnight. I really love the Meijer selection and quality of all their meats, and all their products and produce.








To prepare my Chop I’ll need; The Cumin Spiced Rub which consists of; 1 tbsp Roasted Cumin, 1 tsp
Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. I’ll be using a Cast Iron Skillet for the Chop. I love using Cast Iron Skillets, not only do the heat up evenly and retain that heat but you can also go from using it on the stove and right into the oven. So I start by heating the Extra Virgin Olive oil in the Cast Iron Skillet over medium-high heat. Add the Chop to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 145° (slightly pink), turning after 5 minutes. Let stand 5 minutes before slicing. Fantastic combo of Spices, which gives a fantastic flavor and perfect browning to the Chop. The inside being so tender and moist! Love this seasoning on Pork. The Chop was huge, plenty leftovers for Breakfast and Lunch!





I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better.













Then I also heated up a can of Del Monte Sliced carrots. These are so much easier to prepare than boiling fresh Carrots, and they taste just as fresh and good. I also baked a slice of the New York Bakery Light Texas Toast Bread. For Dessert later a Weight Watcher’s Divine Triple Chocolate Ice Cream Bar.










Pork Facts….

You’ll get 137 calories and 4 grams of fat from a 3-ounce pork chop. Pork is similar to chicken, with 3 ounces of chicken breast containing 140 calories and 3 grams of fat. A pork chop has 65 milligrams of cholesterol, compared to 72 grams in chicken breast, but they both have just 1 gram of saturated fat.

BUFFALO KIELBASA AU GRATIN CASSEROLE

A perfect casserole for family diners or easy entertaining. (Makes 6 to 8 servings)

Ingredients:

1 - 12 oz. Uncured Smoked Kielbasa
3 to 4 lbs. - potatoes, par-boiled and chopped
¼ - cup olive oil
1 - small cabbage, sliced thin
1 - onion, sliced thin
2 - apples, peeled, cored and chopped
2 - cups white cheddar cheese, finely grated
¼ - cup vinegar
1 - tablespoon coarse mustard
3 - teaspoons salt
3 - teaspoon black pepper
2 - eggs, beaten
1 - pint heavy cream
2 - teaspoons caraway
2 - cups dark rye crackers crushed

Preparation:

1)  Preheat oven to 475* Rack positioned on middle rack.
2)  Place chopped potatoes in a bowl. Mix vinegar, mustard, 2 teaspoons salt and 1 teaspoon pepper together in separate bowl until incorporated and pour over potatoes. Toss.
3)  Pour oil in bottom of heavy casserole pan and spread to cover. Spoon potatoes in pan and place in hot oven.
4)  Allow potatoes to brown, turning as needed.
5)  Remove from oven. Turn oven temperature down to 375*
6)  Toss sliced cabbage, onions and apples all together. Place mixture on top of potatoes and cover with grated cheese.
7)  Top with sliced Buffalo Kielbasa.
8)  Whip cream into beaten eggs with remaining salt and pepper. Pour over casserole.
9)  Cover casserole and bake at 375 for 30 minutes. Remove casserole and continue to bake for 15 minutes.
10) Remove casserole from oven and turn oven to broil. Top casserole with crushed rye crackers and bake until crackers start to brown, about 7 minutes.
11) Remove from oven and allow too rest for 5 minutes.

Use a large spoon to dish up portions. Serve with crusty bread and additional mustard to pass.

Bacon and Cheese Buffalo Burger w/ Baked Fries

Dinner Tonight: Bacon and Cheese Buffalo Burger w/ Baked Fries





I wanted something a little different for Breakfast this morning  so I went with a Breakfast Burrito for Breakfast this morning. You can prepare them so many different ingredients. For this one I used 2 medium size Eggs (Scrambled), Jennie – O Turkey Bacon (Crumbled), sliced Black and Green Olives, Sargento Reduced Fat Shredded Sharp Cheddar Cheese, Ortega Smoked Chipotle Taco Sauce, and Old El Paso 6 – Inch Flour Tortillas. Eggs and Bacon are just a natural pairing and the Ortega Smoked Chipotle Taco Sauce can’t be beat. It just gives everything an unbelievable flavor, nice heat but not over powering.



Another hot and humid day out there! Did some cleaning outside early to avoid the heat and

humidity. Not a whole lot to do today, all caught up on everything. Did some work on the computer, ran the scans, deleted some old files and such. For Dinner tonight I prepared a Bacon and Cheese Buffalo Burger w/ Baked Fries.









I hadn't had a Wild Idea Buffalo Burger in a while now! I just love these Bad Boys of Buffalo
Burgers! I made this one combining my two favorites, Wild idea Buffalo and Jennie – O Turkey! I used Jennie – O  Turkey Bacon for my Burger topping. Heated up a medium size skillet on medium high heat and fried the Bacon until it was crisp. Removed it from the skillet to a Paper Towel lined
plate, and set aside. Always remember when frying Bacon use Bacon Math. Just decide how many slices you'll need and double it. Because, at least when I fry Bacon, you end up eating as much as you fix as you're preparing it! For the Buffalo Burger I used my favorite Buffalo, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers as usual. Just love these Buffalo Burgers; meaty, juicy and just flat out delicious! Preheated up a small skillet that I sprayed with Pam Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it, in Extra Light Olive Oil, about 3 1/2 minutes per side, after flipping the Burger I added my slice of Cheese, Kraft Deluxe Sharp Cheddar with about 1 minute of cooking time left. Topped it with the Turkey Bacon and served it on a Aunt Millie’s Reduced Calorie Hamburger Bun. Love a good Burger and love these Wild Idea Buffalo Burgers, and topped with the Jennie – O Turkey Bacon it just adds to the goodness!



To go with my Burger I baked some Alexia Organic Yukon Select Fries leftover so I prepared them to
go with my Burger.Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn and a Diet Peach Snapple to drink.

Buffalo Turkey Tacos

Ingredients

1 (16-ounce) package JENNIE-O Lean Ground Turkey
1/3 cup hot pepper wing sauce
8 hard corn taco shells, heated as specified on package
1 cup shredded lettuce
2 tomatoes, diced
1 avocado, sliced
1/2 cup blue cheese dressing

Directions

1 - Cook turkey as specified on package. Always cook to well-done, 165F as measured by a meat thermometer.
2 - Add hot pepper sauce. Stir to combine.
3 - Fill tacos shells with lettuce, turkey mixture, tomatoes and avocado.
4 - Drizzle with blue cheese dressing.

Catfish Nuggets w/ Creamy Cheddar Pasta

Dinner Tonight: Catfish Nuggets w/ Creamy Cheddar Pasta









For Breakfast this morning I prepared some Waffles. I used Bisquick Heat Smart Flour to make them with and used Egg Beater's to replace the Egg. I've got a large Waffle Maker and a smaller on that makes 2 Waffles, I used the smaller one. I also heated up a couple Jimmy Dean Turkey Breakfast Sausage Links. Really enjoy waffles and Pancakes and by using the Bisquick Heart Smart Flour it makes them a bit healthier. I also had my usual cup of Bigelow Decaf Green Tea.





Outside it's Hot and Humid with a passing shower. After Breakfast I headed to Walmart, needed some printing ink and copy paper. Looked at a couple of new TVs while there also. I might get a larger one for our spare room If I can find a good buy. Stopped and got my car a much needed car wash and had the inside cleaned also. Then stopped and got gas and back home. Just did some of those odd and ends jobs around the house. For Dinner tonight it's Catfish Nuggets w/ Creamy Cheddar Pasta.





Picked up the Catfish Nuggets at Meijer yesterday. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty. You can bake Catfish but for me you just can’t beat fried Catfish.





To go with my Fried Catfish Nuggets I prepared some Bear Creek Creamy Cheddar Pasta Mix. I've had this a few times now and really like it. Grabbed a 2 quart sauce pan, added 4 cups of water. Heated to a rolling boil. Whisked in the Pasta and Sauce Mix. Brought the mixture back to a rolling boil. Reduced the heat to a medium boil and cooked for 15 minutes, stirring occasionally.






Removed from the heat and let it sit for 8 minutes. The Sauce thickened up beautifully as it cooled. Another excellent product from Bear Creek. Really enjoy these all these Products! I seasoned the Pasta with just a little sea Salt and Ground Black Pepper. The Pasta and Catfish make a great pairing! For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

One of America's Favorites - Pig Pickin'

A pig pickin' (also known as rolling a pig, pig pull, pig roast or, among the Cajun, "cochon de lait") is a type of party or gathering held primarily in the American South which involves the barbecuing of a whole hog (the castrated male pig or barrow, bred for consumption at about 12 weeks old). Females, or gilts, are used as well. Boars (full-grown intact males) and sows generally are too large.

Many Southern families have a pig roast for Thanksgiving or Christmas, graduations, weddings, or summer gatherings. Some communities hold cook-offs during festivals, where cooks compete against one another for prize money.


A pig, often around 80–120 pounds dressed weight, is split in half and spread onto a large charcoal or propane grill. Some practitioners use a separate stove filled with hardwood to produce coals which are then transferred under the charcoal grill by shovel; others use charcoal with chunks of either blackjack oak, hickory wood or some other hardwood added for flavor. The style of these grills are as varied as the methods of producing them, some being homemade while others are custom-made.

There is a long-running debate among barbecue enthusiasts over the merits of different fuels. Propane is said to maintain a consistent temperature, whereas charcoal or charwood are often touted as producing better-tasting meat.

The cooking process is communal and usually directed by an authority figure; the host is helped by
friends or family. It usually takes four to eight hours to cook the pig completely; the pig is often started "meat-side" down, and then is flipped one time once the hog has stopped dripping rendered fat. Some practitioners clean ashes from the skin with paper towels or a small whisk broom before flipping the hog to help produce high quality cracklings from the skin.

Often the hog is basted while cooking, though the method and sauce used differs according to region. For instance, a typical South Carolina Piedmont-area baste would be a mustard based sauce, an Eastern North Carolina baste is usually a very light vinegar based sauce with red pepper flakes, and Western North Carolina barbecue uses sauce with a ketchup base similar to traditional barbecue sauce.

When the cooking is complete, the meat should ideally be tender to the point of falling off of the bone. The meat is then either chopped or pulled into traditional Carolina-style pork barbecue, or it is picked off the hog itself by the guests. It is from the latter that the gathering gains its name. The barbecue is sometimes eaten with hushpuppies (fried cornmeal, occasionally flavored with onions), coleslaw, baked beans or sometimes Brunswick stew. In South Carolina, it is common to serve pilaf or hash as a side dish. Hash is a blend of leftover pork mixed with barbecue sauce and usually served over rice.

Sweet tea, beer, and soft drinks are often served.


The pig pickin' is a significant part of the culture of the South; the necessary work and time needed to
cook the hog makes it ideal for church gatherings ("dinner on the grounds") or family reunions, and they can be held virtually year-round thanks to the region's mild winters. Pig pickin's are popular amongst the most devoted tailgaters at college football games across the South. The pig pickin' has been long associated with politics; many local political parties and politicians still use the pig pickin' to attract people to meetings and campaign rallies.[citation needed] In 1983, Rufus Edmisten, running for Governor of North Carolina at the time, was overheard saying "I've eaten enough barbecue. I am not going to eat any more. I'm taking my stand and that is it."

Culturally and culinarily different from traditional Deep South pig pickin' events, pig roasts are a common occurrence in Cuba, as well as the non-mainland American state of Hawaii, with roasts being done in the traditions of those places.

Herb Potato Salad
Servings: 6

Ingredients

1 lb new red potatoes
1/2 cup sliced radishes (optional)
Dressing:

3 Tbsp plain, nonfat yogurt
1 Tbsp reduced calories mayonnaise
1-1/2 tsp Dijon mustard
1/2 tsp garlic
1/2 tsp dried basil
1/4 tsp dried thyme
1/4 tsp onion powder
1/4 tsp salt (optional)
Directions

1 - Scrub potatoes & cube. Place in medium saucepan and cover with water. Bring to a boil. Cover, reduce heat and simmer 12 minutes or until potatoes are done. Drain. Mix dressing ingredients and combine hot potatoes, dressing and radishes. Serve hot or cold.

Dinner Tonight: Leftover – Shrimp w/ Pasta Roni – Parmesan Cheese




For Breakfast this morning I prepared an Egg Beater’s Egg White Cheese Omelet, I used Sargento
Reduced Fat Shredded Sharp Cheddar Cheese. I also prepared 2 Jimmy Dean Turkey Breakfast Sausage Links, toasted a slice of Healthy Life Whole Grain Bread, and my morning cup of Bigelow Decaf Green Tea. Breakfast is served! Had a high of 56 outside today but showers moved in later in the day, not bad for a February Winter’s day! After Lunch I went over to spend a few hours with dad at rehab. He has really been doing good in therapy! Eating good and building his strength back up. If he’s able to come home he has to exercise a bit or he’ll end up right back in the Hospital. So we’ll see. Back home did a load of laundry and cleaned up around the house a bit. For Dinner tonight its Leftover – Shrimp w/ Pasta Roni – Parmesan Cheese and Italian Round Loaf Bread.


As usual when I make the Shrimp w/ Pasta Roni – Parmesan Cheese dish I have the leftovers the next day. So for Dinner tonight its Leftovers! Below is the original post of Shrimp w/ Pasta Roni – Parmesan Cheese and Italian Round Loaf, which contains ingredients and directions.






For the Shrimp part of the dish I used Kroger Brand Jumbo Shrimp. I had them in the freezer so I let
them thaw overnight in the fridge. I love Shrimp and all Seafood. For the Shrimp; I started by rinsing the Shrimp off in cold water and letting it dry in a colander. Using a medium size skillet, that I sprayed with Pam Cooking Spray and a 1 tablespoon of Extra Virgin Olive Oil, that I heated on medium heat I cooked the Shrimp. I seasoned them with Old Bay Seasoning. Cooked them 2 minutes per side, turning the Shrimp once. And as the Shrimp was cooking I started to prepare the Pasta.




I’ve prepared this many times now, sometimes I make it using Chicken but Shrimp is my favorite.
Pasta Roni – Parmesan Cheese. It comes with the Pasta Parm Sauce and I added; 1 1/3 cups of water, 2/3 cups of 2% milk, and 2 tablespoons of Blue Bonnet Light Butter. Then to prepare it; In a medium saucepan bring water, milk, margarine or butter to a boil. Then slowly stir in pasta and Special Seasonings. Separate pasta with a fork, if needed. Return to a boil. Reduce heat to medium. Boil uncovered, 4-5 min. or until pasta is just tender, stirring frequently. Sauce will be thin. Let stand 3-5 min. to thicken. There’s 2 servings per box. Nice seasoning and the Parmesan Sauce is very flavorful. I topped the Pasta with some Kraft Reduced Fat Grated Parmesan Cheese and the Shrimp. Too good, this makes one delicious Shrimp and Pasta Dish! Love these Semi-Homemade Meals! I also reheated a couple of slices of La Brea Multi Grain Bread. For Dessert later a Weight Watcher's Cookies and Cream Ice Cream Bar.




Pasta Roni – Parmesan Cheese

What You’ll Need

1 1/3 cups of water
2/3 cups of milk

What You’ll Do:

Rustic Turkey Stew
INGREDIENTS

3 tablespoons flour
½ teaspoon salt, if desired
½ teaspoon freshly ground black pepper
2 cups cooked, chopped JENNIE-O® Premium Basted Bone-In Young Turkey Breast
4 slices JENNIE-O® Turkey Bacon, cooked according to package directions and chopped
2 teaspoons minced garlic
2 (14-ounce) cans chicken broth
⅓ cup red wine, if desired
2 teaspoons dried thyme leaves
1¼ pounds small red potatoes, halved
2 cups baby carrots
1 cup sliced celery
1 cup small boiling onions, peeled
2 cups cremini or button mushrooms, halved

DIRECTIONS

1) Mist Dutch oven with cooking spray. In plastic bag, combine flour, salt and pepper. Add turkey, shaking to coat. Add turkey mixture to Dutch oven; cook 2 minutes, stirring occasionally. Transfer to bowl with bacon. Add garlic to Dutch oven; cook 1 minute.
2) Add broth, wine, and thyme leaves; bring to a boil. Stir in potatoes, carrots, celery, and onions; return to a boil. Reduce heat; cover and simmer 20 to 25 minutes or until vegetables are almost tender. Add mushrooms, turkey mixture, and bacon. Simmer 10 minutes or until thoroughly heated. Always cook to well-done, 165°F as measured by a meat thermometer.
* Always cook to an internal temperature of 165°F.
