Dinner Tonight: Cheesy Skillet Classic Lasagna w/ Baked French Bread




For Breakfast on this sunny morning I toasted a Healthy Life Whole Grain English Muffin and
topped it with Smucker's Sugarless Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. The hot weather has kicked in again, 85 degrees and somewhat humid. Mom wanted a McMuffin for Breakfast so I went to McDonald's and picked it up for her. Back home did a load of laundry for Mom. About 2:00 I went to the Cincinnati Airport and picked up a friend of mine that was coming to town for a week or so. I took him on to Fairfield and dropped him off at his brother's place. Good catching up with him. For Dinner tonight I prepared a Cheesy Skillet Classic Lasagna w/ Baked French Bread.




First time using the Kraft/Velveeta Cheesy Skillets Classic Lasagna. The box contains the Pasta, Seasoning, and Velveeta Cheese Sauce. I added the Jennie - O Extra Lean Ground Turkey Breast, Water, and Sargento Shredded Mozzarella Cheese. The instructions calls for Ground Beef but as usual I substitute the Ground Beef with the Jennie - O Extra Lean Ground Turkey Breast. Much healthier option with fewer calories, fat, and carbs.







To make the dish; You will need the 1 lb. Jennie - O Extra Lean Ground Turkey Breast and 2 cups
water. Cook the 1 lb. Ground Turkey in large skillet, until no longer pink. Add 2 cups water, Pasta and Seasoning; stir. Bring it to a boil. Reduce heat. Cover; simmer 11 min. or until most of the water is gone, stirring frequently. Remove from heat. Stir in the Velveeta Cheese Sauce. Top it off with a cup of Shredded Mozzarella Cheese before serving.







The Lasagna came out fantastic, hot and cheesy! The Seasoning and Cheese was perfect and the Pasta was excellent. Made a very good and hearty Dinner Dish! I also baked a Pillsbury French Bread Loaf. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.











Kraft/Velveeta Cheesy Skillets Classic Lasagna

Directions:
Instructions: . You will need. 1 lb. lean ground beef. 2 cups water. Brown 1 lb. lean ground beef in large skillet; drain. Return meat to skillet. Add 2 cups water, Pasta and Seasoning; stir. Bring to boil. Reduce heat. Cover; simmer 9 to 11 min. or until most of the water is gone, stirring frequently. Remove from heat. Stir in Velveeta Cheese Sauce. Customize it! Top with cup shredded mozzarella cheese before serving.

One of America's Favorites - White Hot


White Hot

The white hot is a variation on the hot dog found primarily in the Rochester, New York area, as well as other parts of Western New York and Central New York. It is composed of a combination of uncured and unsmoked pork, beef, and veal; the lack of smoking or curing allows the meat to retain a naturally white color. White hots usually contain mustard and other spices, and often include a dairy component such as nonfat dry milk.










The white hot, also commonly referred to as a coney, originated in the 1920s in Rochester's German community as a "white and porky". It was originally a cheaper alternative to high-price red hot dogs, made of the less desirable meat parts and various fillers; in contrast, modern versions are made from quality meats and are generally sold at higher prices than common hot dogs.

One of the best-known producers of the white hot is Zweigle's. Although they were not the first to make white hots, they were the first to secure a contract at the Red Wing Stadium soon after Zweigle's founder Robert Berl began making the dogs in 1925. The white hot has become the official hot dog of the Buffalo Bills, Buffalo Sabres, Rochester Americans and Rochester Rhinos and was the official hot dog of the Washington Nationals during the major league baseball team's first season.

Another producer, Hofmann, produces white hots in the Syracuse, New York area under the name "Snappy Grillers". A third company, Hartmann, is also known to produce white hots.

Jambalaya - Vegan

Bite-sized chunks of meatless sausage lend an authentic flair to this vegan version of a Creole-Cajun classic. Serve with coleslaw, sautéed greens (kale or collards), and fresh corn bread for a hearty, satisfying winter dinner.

Recipe Ingredients:

3 cups water
1 1/4 cups raw brown rice
2 tablespoons olive oil
14-ounce package Tofurkey or Field Roast vegan sausage links, sliced 1/2 inch thick
1 large onion, chopped
3 to 4 cloves garlic, minced
4 celery stalks, diced
1 medium green or red bell pepper, diced
1 (28-ounce) can diced tomatoes, with liquid
1 teaspoon each: paprika, dried oregano, dried basil
1/2 teaspoon dried thyme
Cayenne pepper to taste
Salt to taste

Cooking Directions:

1 - Combine the water and rice in a saucepan; bring to a rapid simmer, then lower the heat, cover, and simmer gently until the water is absorbed, about 30 to 35 minutes.
2 - Heat the oil in the large skillet. Add the onion and sauté over medium heat until the onion is translucent. Add the garlic, celery, and bell pepper, and sliced sausage links, and continue to sauté until all the vegetables and sausage are lightly browned.
3 - Add the remaining ingredients except the salt. Heat until the tomato liquid simmers, then cover and cook over low heat for 15 to 20 minutes.
4 - Combine the skillet mixture with the hot cooked rice in a large serving bowl and toss together thoroughly. Season to taste with salt (and a bit more cayenne if you’d like) and serve at once.

Makes 6 to 8 servings.

Kitchen Hint of the Day!

Roasted Chicken.......


Let roasted chicken rest for 10 to 15 minutes before carving to allow juices to be distributed throughout the meat. Standing the chicken up with bottom end up allows more juices to run into the drier breast area.

Cheddar Chili Dogs

Dinner Tonight: Cheddar Chili Dogs




For Breakfast this morning I fried 2 Jennie – O Turkey Breakfast Sausage Patties, prepared a
Scrambled Egg, toasted 2 slices of Aunt Millie’s Whole Bread, and my morning cup of Bigelow Decaf Green Tea. Another sunny and beautiful day out there again! A bit warmer and more humid, but still nice out. After Breakfast I started a load of laundry and then headed out to Meijer and then by Kroger to pick up a few things for Mom. After Lunch headed up to the rehab center to see Dad. Back home finished up laundry and done for the day. Got the cart out for a spin around the neighborhood. For Dinner tonight its CHEDDAR CHILI DOGS.



I tried these for the first time around a month ago and really liked them so I'm having so I'm having
them again. They're a nice alternative to my Cincinnati Style Cheese Coneys. To make the Dogs I’ll need; 1 can (16 oz) BUSH’S® Chili Beans – Red Beans in a Medium Chili Sauce (drained), 1 tsp chili powder, 4 Ball Park Smoked Turkey Franks, 4 Aunt Millie’s Reduced Calorie Whole Grain Hot Dog Buns, French’s Yellow Mustard, 3 slices Simple Truth Hickory Smoked Bacon (crisped and coarsely chopped), and 1/4 cup Sargento Reduced Fat Shredded Sharp Cheddar Cheese.




To prepare them; Heat the Beans in a medium saucepan until just heated through; stir in chili powder. Next I cooked Hot Dogs. I used a medium size sauce pan, filled 3/4 full of water and heated to a boil. When water was boiling I added the Franks, boiled for 5 minutes. Removed the pan from the heat, drained the water, and prepared the Cheddar Chili Dogs. Spread each Bun with Mustard. Place a Hot Dog in each Bun and top with Beans. Sprinkle each with Bacon, Onion (optional), Tomato (optional), and Cheese. These turned out fantastic, love the Beans and Cheddar toppings.




Served it with some Ruffles Reduced Fat Potato Chips and some Lay’s Ranch Dip. Also had a
Caffeine Free Diet Coke. For Dessert later a Breyer's 100 Calorie Vanilla Cup.













BUSH’S® CHEDDAR CHILI DOGS

Chili Beans with a touch of chili powder add some heat to these Cheddar chili dogs with bacon, onion and tomato.

RECIPE DETAILS
Prep Time: 15 minutes
Cook Time: 15 minutes
Total Time: 30 minutes

INGREDIENTS
1 can (16 oz) BUSH’S® Chili Beans, drained
1 tsp chili powder (optional)
4 all-beef hot dogs
4 soft hot dog buns
2 Tbsp mustard
3 slices bacon, crisped and coarsely chopped
2 Tbsp white onion, chopped
1 small tomato, cored and chopped
1/4 cup shredded mild Cheddar cheese

DIRECTIONS
1 – Heat beans in a medium saucepan until just heated through; stir in chili powder, if desired.
2 – Cook hot dogs according to package directions.
3 – Spread each bun with mustard. Place a hot dog in each bun and top with beans. Sprinkle each with bacon, onion, tomato and cheese. Serve hot.

Turkey Minestrone Soup

Bison Chopped Steak and Sauteed Mushrooms w/ Roasted Butternut Squash and Cut Green Beans

Today's Menu: Bison Chopped Steak and Sauteed Mushrooms w/ Roasted Butternut Squash and Cut Green Beans




For Breakfast this morning I prepared an Egg Beater’s Egg White Cheese Omelet, I used Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a few drops of Ortega Smoky Chipotle Taco sauce.
I also prepared 2 Jimmy Dean Turkey Breakfast Sausage Links, toasted a slice of Aunt Millie's Light Whole Grain Bread, and my morning cup of Bigelow Decaf Green Tea. The end of July and we have a high of 79 degrees! And it's one beautiful and sunny day out here today! After Breakfast I headed out to Meijer for a few items we needed. On the way back home I stopped and got gas, got the car washed, and picked up Breakfast for Mom at McDonald's. Back home after Lunch I got the cart out and did a few things around the yard. Then took the cart around the neighborhood and down by the lake, enjoying this beautiful day! For Dinner tonight I prepared a Bison Chopped Steak and Sauteed Mushrooms w/ Roasted Butternut Squash and Cut Green Beans.


For Dinner tonight it’s one of my favorites, SayersBrook Ranch Bison Chopped Sirloin Steak. I love
this Chopped Steak. To start I preheated the oven on 400 degrees. To prepare it I’ll need McCormick Grinder Sea Salt and  Peppercorn Medley, McCormick Crushed Rosemary, and McCormick Thyme Leaves (all seasoning to taste). I got the Cast Iron Skillet out to prepare it. I first sprayed it with a very light coat of Pam Cooking Spray and then added a tablespoon of Extra Light Olive Oil. Heated it on medium heat. When the pan was heated I added the Chopped Steak. I cooked each side 2 minutes.Then finished it in the oven, at 400 degrees for 7 minutes. It cooked up beautifully, perfect medium rare! Had a nice little char on the outside and moist and juicy inside. These are so tender you could slice them with a spoon and have an excellent taste to them. Another very good item from SayersBrook Ranch!




I topped the Chopped Steak with some A-1 Sauce Thick/Hardy. Also cooked up some Sauteed Mushrooms.







Then for one side I prepared some Roasted Butternut Squash, easy recipe for some delicious
Butternut Squash! And this too has quickly become a favorite. I purchased 1 small package of Diced Butternut Squash at Kroger. They sell packages of it that they dice up. This is a lot easier than peeling and seeding one yourself, especially if you don’t have a good knife to cut it. I’ll need; 1 package of Diced Butternut Squash, Crumbled Bacon Bits, 1 tablespoons Extra Light Olive Oil, 1 1/2 teaspoons McCormick Grinder Sea Salt, and 1 teaspoon McCormick Grinder Peppercorn Medley.






To prepare it; Preheat the oven to 400 degrees F. Place the Squash on a sheet pan and drizzle with the
Olive Oil, Salt, and Peppercorn and toss well. Arrange the squash in one layer and roast for 25 to 30 minutes, until the Squash is tender, turning once with a spatula. And done, very easy to prepare. With the small amount of Seasoning and Olive Oil, it really brings out the flavor of Butternut Squash!









Next I heated up a large can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and
heat until heated through. Also had a slice of LaBrea Multi Grain Bread, I baked this the day before and have some slices leftover. For Dessert/Snacks I had a bowl of Skinny Pop - Pop Corn and a Diet Dr. Pepper to drink.

For Breakfast this Friday morning I prepared a Toasted Ham and Cheese Sandwich. I used Boar's Head Sweet Sliced Ham, a half slice of Boar's Head Longhorn Colby Cheese, and toasted 2 slices of Aunt Millie's Light Whole Grain Bread. Also made a cup of Bigelow Decaf Green Tea. Not a lot going on today. After Lunch went over to the rehab center and spent the afternoon with Dad. For Dinner tonight I prepared Fried Oysters and Roasted Garlic and Chive Pappardelle.





I love Fried Oysters, just don’t have them that often. So I'm going to correct that by starting to have them more often. Had these about 2 or 3 weeks ago and it's time to have them again!  To prepare them I’ll need; 12 large-medium Oysters (shucked), 1 tablespoon Flour, 1/4 cup Egg Beaters, 1 cup Shake and Bake Seasoned Panko Bread Crumbs, Sea Salt and Pepper (to taste), 2 to 3 tablespoons Extra Light Olive Oil. Lemon Wedges, Hot sauce, Seafood Cocktail Sauce are all optional.






I used Hilton’s Fresh Farm Raised Pacific Willapoint Oysters. To prepare them; Place shucked oysters in a colander rinse in cold water and drain. Dredge drained oysters in the Flour, then Egg Beater’s, and then in Panko Crumbs seasoned with Sea Salt and Pepper (coating each oyster thoroughly). Set aside to dry at least 1/2 hour. An easy way to coat the oysters with the Panko Crumbs is to place the Crumbs in a resealable plastic bag, add egg-dipped oysters, seal bag, and then shake.






Next, heat Oil in a frying pan (I like to use my cast-iron frying pan) to 370 degrees F. or until quite
hot. Fry oysters until golden brown on one side, then turn over each oysters carefully to brown the other side, approximately 1 to 2 minutes on each side Fry oyster until golden brown and edges are curled. Do not overcook or overcrowd in frying pan. Remove from frying pan and serve immediately. Serve with Lemons Wedges, Tartar Sauce, Cocktail Sauce and/or your favorite hot sauce. I served mine with some Tarter Sauce with a side of my favorite hot sauce Frank’s Hot Sauce. I don’t know why I don’t have these more often! They’re so delicious, golden brown, and with an incredible fresh flavor.



To go with the Fried Oysters I'm having Buitoni Roasted Garlic and Chive Pappardelle. I've tried
several of the Buitoni Products but first time having the  Roasted Garlic and Chive Pappardelle. Pappardelle is wide cut flat Pasta Ribbons but this Pappardelle has Roasted Garlic and Chives infused into the pasta dough. It comes fresh made and sealed in a plastic packaging.





To prepare it; Open the package and add the Pasta with 1 tablespoon Extra Light Olive Oil to 4 quarts of boiling water. Add in Salt to taste. Reduce the heat and boil gently for 4 minutes, stirring frequently with tongs to separate pasta. Drain the water and serve!







Another excellent Buitoni Pasta! It cooks up easy and quickly, the Pasta was tender, and the taste is
spot on. Really liked the infused Roasted Garlic and Chives in the Pasta. Plus its only 230 calories per serving. To serve I made a bed of the Pasta in a bowl and topped it with the Fried Oysters, and what a dish it made! Once again Pasta and Seafood make a perfect pairing. I also had a slice of La Brea Multi Grain Bread I had leftover from last night's Dinner. For Dessert later a Weight Watcher's Cookies and Cream Ice Cream Bar.

INGREDIENTS

1 (19.5-ounce) package JENNIE-O® Lean Turkey Bratwurst
5 bratwurst buns
¼ cup chili
2 tablespoons cooked kidney beans
2 tablespoons chopped onion

assorted chopped bell peppers, if desired

Wild Mexican Shrimp Ravioli w/ Baked Multi Grain Bread

Dinner Tonight: Wild Mexican Shrimp Ravioli w/ Baked Multi Grain Bread





For Breakfast this morning I made another Breakfast Skillet. This time it was Simply Potatoes
Shredded Hash Browns, Diced Ham, Sargento Reduced Fat Shredded Sharp Cheddar Cheese, and a Sunnyside Up. Also had that morning cup of Bigelow Decaf Green Tea. Outside it was predicted to pour the rain on and off all day. But we only had a brief shower, accurate as always! Anyway good day to clean the house, vacuumed and dusted. Next I straightened up both freezers and pitched a few items that were expired. Dad is doing good with therapy and his lungs are almost cleared! So good news there. For Dinner tonight something new, Wild Mexican Shrimp Ravioli. I prepared Wild Mexican Shrimp Ravioli w/ Baked Multi Grain Bread.



I went to our local Kroger the other day and I wandered around looking for something new. And I found it in one of the Seafood Freezer Cases, a box of Keyport Wild Mexican Shrimp Ravioli w/ Garlic Butter Sauce. I was going to buy this on name alone, Wild Mexican Shrimp Ravioli. That just sounds mouth-watering! It's one I've never tried until tonight.







To start I preheated the oven on 385 degrees, to bake the La Brea Multi Grain Bread. I baked the
Bread as the Ravioli was cooking. The Ravioli comes frozen in a 2 serving box. To prepare it I removed the bag of ravioli and pouch with sauce from the box. Place a medium size pot with 4 quarts water over high heat and bring to a rolling boil. Opened the ravioli bag and added the ravioli to the water, simmer 5 minutes. While the ravioli cooks, place the pouch of sauce under warm running water for 3 minutes or until thawed.




Once ravioli have cooked for 5 minutes, remove from heat and strain ravioli. Carefully transfer
cooked ravioli to large, non-stick skillet.  Cut a corner of the sauce pouch and pour the sauce into the skillet and add 1 ounce of water, turn on medium heat. Heat and sauté ravioli and sauce together for 1-2 minutes, stirring and coating the ravioli until internal temperature reaches at least 165 degrees. And its ready to serve!








I've come across a winning dish! I love this Wild Mexican Shrimp Ravioli. The Pasta came out
perfect with filling of the Wild Shrimp seasoned just right. The Garlic Butter Sauce just made the dish pop that much more! Looking forward to trying the other Keyport Seafood Products. Along with the Wild Mexican Shrimp Ravioli I had a loaf of La Brea Multi Grain Bread. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.
