Herb-Rubbed Beef Roast with Roasted Cauliflower
In this flavorful dish, Top loin roast, which is considered a lean cut, gets a rub-down using a simple mixture of garlic and thyme. Serve with roasted cauliflower for a potato-free version of a meat and potatoes meal. This is a nice choice for a holiday dinner with family and friends.

Recipe Yield: 16 servings.


1 beef Top Loin Roast, Boneless (about 3 to 4 pounds)
4 teaspoons minced garlic, divided
1 tablespoon plus 1 teaspoon fresh thyme leaves
2 heads (about 2-1/2 pounds each) cauliflower, separated into florets
6 tablespoons olive oil, divided
Salt and pepper
2/3 cups dry Italian-seasoned bread crumbs

Directions

1 – Preheat oven to 325F.
2 – Press 2 teaspoons of garlic evenly onto all surfaces of beef roast. Press thyme evenly over roast.
3 – Place roast, fat-side up, on rack in shallow roasting pan.
4 – Insert ovenproof meat thermometer so tip is centered in thickest part of beef, not resting in fat. Do not add water or cover.
5 – Roast on center rack in 325F oven 1-1/4 to 1-1/2 hours for medium rare; 1-1/2 to 1-3/4 hours for medium doneness.
6 – Meanwhile, toss remaining 2 teaspoons garlic, 4 tablespoons oil and cauliflower on rimmed baking sheet.
7 – Season with salt and pepper, as desired.
8 – Cover with aluminum foil; bake on lower rack 45 minutes.
9 – Combine bread crumbs and remaining 2 tablespoons oil. Remove foil; sprinkle bread crumbs evenly over cauliflower.
10 – Continue to bake, uncovered, 30 to 45 minutes or until crumbs are golden brown and cauliflower begins to brown.
11 – Remove roast when meat thermometer registers 135F for medium rare; 145F for medium.
12 – Transfer roast to carving board; tent loosely with aluminum foil. Let stand 15 to 20 minutes. (Temperature will continue to rise about 10-15F to reach 145F for medium rare; 160F for medium.)
13 – Carve roast into slices; season with salt and pepper, as desired. Serve with cauliflower.

ROASTED CARROTS AND PARSNIPS

Ingredients

1 pound carrots, peeled
1 pound parsnips, peeled
2 tablespoons olive oil
salt and pepper, to taste
1/4 cup chopped fresh parsley

Directions

1 - Heat oven to 425F.
2 - Cut carrots and parsnips in half then in half lengthwise.
3 - Place on large rimmed baking pan toss with olive oil.
4 - Season with salt and pepper.
5 - Bake 30 to 40 minutes or until parsnips are tender, stirring once.
6 - Sprinkle with parsley.

Cumin Spiced Pork Tenderloin w/ Roasted Butternut Squash and Golden Hominy

Dinner Tonight: Cumin Spiced Pork Tenderloin w/Roasted Butternut Squash and Golden Hominy








To start my morning off I prepared Turkey Goetta, Hash Browns, and Toast. For the Turkey Goetta I
used Glier's Turkey Goetta, best by far! I just sliced a few slices off and lightly fried them in Extra Light Olive Oil. Then I also prepared some Simply Potatoes Shredded Hash Browns. I also toasted a slice of Aunt Millie's Light Whole Grain Bread that I topped with some Smucker's Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. After Breakfast I did a couple of loads of laundry. Then after Lunch I took my car up and had it washed and I vacuumed the inside. Then went to the ATM and then dropped off a few letters at the Post Office. For Dinner tonight I prepared a Cumin Spiced Pork Tenderloin w/ Roasted Butternut Squash and Golden Hominy.

I purchased the Simple Truth Pork Tenderloin from Kroger yesterday, just over 1 1/2 lbs. To make the dish I’ll need; 1 tablespoon Extra Virgin Olive Oil, 1 pork Tenderloin, 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 350°. Combine all the Ingredients; rub it all over the pork. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 4 minutes, browning on all sides. From the stove to the oven; Bake at 400° for 10 minutes or until a thermometer registers 155° (slightly pink), turning after 7 minutes. Remove from the skillet into a platter or dish and let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which makes one incredible Crust on the Pork with the inside being tender and moist! This is my favorite Pork Recipe by far!

Then for one side I prepared some Roasted Butternut Squash, easy recipe for some delicious
Butternut Squash! I purchased 1 small package of Diced Butternut Squash at Kroger. They sell packages of it that they dice up. This is a lot easier than peeling and seeding one yourself, especially if you don’t have a good knife to cut it. I’ll need; 1 package of Diced Butternut Squash, Walnut Pieces, 1 tablespoons Extra Light Olive Oil, 1 1/2 teaspoons McCormick Grinder Sea Salt, and 1 teaspoon McCormick Grinder Peppercorn Medley.



To prepare it; Preheat the oven to 400 degrees F. Place the Squash on a sheet pan and drizzle with the
Olive Oil, add the Walnut Pieces, Salt, and Peppercorn and toss well. Arrange the squash in one layer and roast for 25 to 30 minutes, until the Squash is tender, turning once with a spatula. And done, very easy to prepare. With the small amount of Seasoning and Olive Oil, it really brings out the flavor of Butternut Squash! The Walnuts work perfect with the Squash. I really love Butternut Squash!



For another side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden
Hominy, and its been a while since I’ve any. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke zero to drink.

One of America's Favorites - Tortilla Chips

A tortilla chip is a snack food made from corn tortillas, which are cut into wedges and then fried—or baked (alternatively they may be discs pressed out of corn masa then fried or baked). Corn tortillas are made of corn, vegetable oil, salt and water. Although first mass-produced in Los Angeles in the late 1940s, tortilla chips were always considered to be a Mexican food, known as totopos and tostadas. Though usually made of yellow corn, they can also be made of white, blue, or red corn. Some manufacturers include many other ingredients including wheat, sugar, food coloring, and monosodium glutamate.

The triangle-shaped tortilla chip was popularized by Rebecca Webb Carranza in the 1940s as a way to make use of misshapen tortillas rejected from the automated tortilla manufacturing machine that she and her husband used at their Mexican delicatessen and tortilla factory in southwest Los Angeles. Carranza found that the discarded tortillas, cut into triangles and fried, were a popular snack, and she sold them for a dime a bag at the El Zarape Tortilla Factory. In 1994, Carranza received the Golden Tortilla award for her contribution to the Mexican food industry.

Tortilla chips are the quintessential and often complimentary appetizer in Tex-Mex and Mexican restaurants in the U.S. and elsewhere. Their popularity outside of California saw a steady rise in the late 1970s when they began to compete with corn chips, the dipping chip of choice during the first three quarters of the 20th century. They are typically served with a dip, such as salsa, chile con queso, or guacamole. When not served with a dip, the chips are often seasoned with herbs and spices. Although they are now available worldwide, the United States is one of the main markets for tortilla chips. Commercial brand names for tortilla chips include Phileas Fogg snacks, Tostitos, Doritos, and Don Tacos (in Japan).

A more elaborate dish utilizing tortilla chips is nachos. First created circa 1943 by Ignacio "Nacho" Anaya, nachos are tortilla chips served with melted or shredded cheese, although often other toppings are added or substituted, such as meat, salsa (such as pico de gallo), refried beans, guacamole, sour cream, diced onions, olives, and pickled jalapeƱos. More elaborate nachos are often baked for a short period of time to warm the tortillas and melt shredded cheese.

A similar fried corn snack is the corn chip, which is not made from a tortilla, but from corn meal which has been processed into a particular shape, typically a small scoop. Fritos are an example of this. The principal difference between the corn in tortilla and corn chips is that the corn in a tortilla chip has undergone a process known as nixtamalization, which involves processing the raw corn with quicklime. Both tortilla and corn chips are referred to as "corn chips" in Australia and Oceania.

Vegetarian Shepherd’s Pie
Ingredients
2 teaspoons olive oil
1 cup sliced onion
1 package (16 ounces) mushrooms, quartered
1 1/4 teaspoons minced garlic, divided
1 cup sliced carrots
1 cup sliced celery
1 cup frozen green peas
1/4 cup all-purpose flour
3 cups low-sodium vegetable broth
1/4 teaspoon salt
1/4 teaspoon dried rosemary
2 medium russet potatoes, peeled and cubed
1/4 cup fat-free (skim) milk
1 tablespoon light margarine
1/4 teaspoon black pepper
Fresh rosemary (optional)

Directions
1 - Heat oil in large saucepan over medium-high heat. Add onion; cook and stir 3 minutes or until just begins to soften. Add mushrooms; cook and stir 5 minutes or until vegetables are tender. Add 1 teaspoon garlic; cook and stir 1 minute. Add carrots, celery, and peas; cook and stir 5 minutes or until crisp-tender.

2 - Sprinkle flour over vegetables; cook and stir 2 minutes. Add broth, salt, and dried rosemary. Bring to a boil. Reduce heat; simmer 30 to 35 minutes or until thickened.

3 - Meanwhile, place potatoes in medium saucepan. Add enough water to cover potatoes. Bring to a boil over high heat. Reduce heat; simmer 15 minutes or until potatoes are tender; drain.

4 - Beat potatoes, milk, margarine, remaining 1/4 teaspoon garlic, and pepper in medium bowl with electric mixer at low speed until smooth.

5 - Preheat broiler. Pour vegetable mixture into 2-quart casserole. Gently spread mashed potatoes over top. Broil 5 minutes or until light golden brown. Garnish with fresh rosemary.

Yield: 6 servings.

Serving size: 1/6 of recipe.

Cajun Rainbow Trout w/ Hash Browns and Green Beans

Dinner Tonight: Cajun Rainbow Trout w/ Hash Browns and Green Beans




For Breakfast it was Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Reduced Fat Cheddar/Jack Cheese. Just love this skillet meal! Partly cloudy and 60 degrees out today. After Breakfast I went and picked up Breakfast for Mom, after eating Mom went on to Church. Did some cleaning outside around the shed then grabbed the leaf blower and cleaned off the deck and drive way areas. Later on went and got my car washed and vacuumed the inside. For Dinner tonight I prepared a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

I had purchased some Rainbow Trout Fillet at Kroger and had it in the freezer. So I it out of the
freezer and let it thaw overnight in the fridge. To prepare it all I’ll need is; 1 Rainbow Trout Fillet, 1 teaspoons Extra Virgin Olive Oil, 1 Teaspoon Zatarain’s Creole Seasoning, and 1 Teaspoon chopped Parsley Flakes. To prepare it I preheated the broiler. Patted the fillets dry and lightly brush both sides with oil. Sprinkled both sides evenly with Cajun seasoning. Placed skin side down on broiler rack and broil 4-6 inches from heat for 5 minutes or until the Trout flakes easily when I tested it with a fork. You can add a Lemon Wedge with it if you like. Excellent recipe, you have the fresh taste of the Trout along with all the flavor from the Creole Seasoning!

Then for one side I prepared some Simply Potatoes Hash Browns. Fried in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. I love Hash Browns, they make the perfect side for any Dish! I also heated up a can of Del Monte Cut Green Beans. For Dessert later a bowl of Del Monte Sliced Peaches.

JILL'S ROAST HERITAGE CHICKEN
After testing a few methods of roasting a Heritage Chicken, this method was hands down the winner. Although the flavor was always very good with other methods, I was looking for the method that would keep the meat juicy, but also get it close to fall off the bone tender.

Ingredients:

1 - 3# Emmer & Co. Heritage Chicken

1 - tablespoon + 1 teaspoon salt

1 - tablespoon baking powder (a tip from Emmer & Co.)

4 - tablespoons salted butter

1 - teaspoon black pepper

1 - teaspoon thyme leaves

1 - onion, orange, apple, or other sweet or savory food to fill the cavity

4 - stalks celery, halved

1 - onion, sliced

salt and pepper

1½ - cups water

Enameled Dutch Oven

Preparation:

1 - Rinse chicken and remove neck from cavity. (Reserve neck, adding to the pot for additional flavor or give to your favorite pet!) Blot the chicken dry with paper towels.
2 - Mix salt and baking powder together and gently rub all over the chicken. Refrigerate uncovered for 4 to 24 hours.
3 - Position top oven rack in the middle of the oven and preheat to 500°.
4 - Remove chicken from the refrigerator. Melt butter and add pepper, thyme and remaining teaspoon salt. Rub seasoned butter into the chicken skin and cavity. *The butter will adhere to the cold chicken without running off.
5 - Fill the cavity of the chicken with coarse chopped onion or orange halves, or other savory or
sweet foods. This adds additional flavor and helps chicken cook more evenly.
6 - Place celery and onions in the bottom of the Dutch oven and place chicken breast side up on top of vegetables. Place the chicken in the oven and roast for 15 minutes.
7 - Add the water to the pot and cover and continue to cook at 500° for another 10 minutes.
*Optional: Before continuing with this step you can also turn your chicken over after initial roasting, so the breast is facing down. For the best browning, pile your vegetables to the center or add a few more to keep the breast out of the liquid.
8 - After 10 minutes, shut your oven off and leave the chicken in the oven for two hours. Do not open the door during this time.
9 - Remove chicken from the oven and transfer to a platter or cutting board. Chicken segments will release fairly easily or carve as desired. Season with a little salt and pepper.
10 - Strain juices from the pot and serve with the chicken or thicken to your liking for gravy.

Turkey Ham and Corn Chowder
A rich, creamy homemade broth combined with corn and turkey ham makes the perfect weeknight dinner. And at less than 300 calories per serving, comfort food just got even more comforting.

INGREDIENTS
1 cup chopped onion
1 tablespoon vegetable oil
3 tablespoons flour
½ teaspoon black pepper
4 cups milk
2 cups frozen hash brown potatoes
2 (11-ounce) cans corn with red and green peppers
¾ pound JENNIE-O® Turkey Ham, cut into ½-inch cubes

DIRECTIONS
1)  In 3-quart saucepan over medium-high heat, saute onion in vegetable oil 3 minutes or until tender. Blend in flour and black pepper. Remove pan from heat; slowly add milk; stirring constantly. Return pan to heat.
2) Add hash brown potatoes; bring mixture to boil, stirring constantly. Add corn and ham; return mixture to boil. Reduce heat to low and simmer 15 minutes or until potatoes are tender and mixture has thickened.

Vietnamese Pork Rolls

These rolls are special, yet not hard to make. A simply dressed green salad with cucumber or radish
would be a perfect accompaniment. Cut them on the diagonal or cut the lettuce leaves into thirds and roll up smaller, hors d'oeuvre-size pieces.

Recipe Ingredients:
Dressing:
1 tablespoon Asian fish sauce
1 tablespoon fresh lime juice
2 teaspoons minced fresh ginger
1 garlic clove, minced
Pinch red pepper flakes

Pork:
1 tablespoon canola oil
1 pound pork cutlets
1 (1/2 pound) head Napa cabbage, shredded (3 cups)
1 small red bell pepper, cut into thin strips
8 large Boston lettuce leaves
Salt and freshly ground black pepper

Cooking Directions:
1 - For the dressing: Whisk together fish sauce, lime juice, ginger, garlic, and red pepper flakes in a
small bowl.
2 - For the pork: Heat oil in a large skillet over medium heat. Season pork with salt and pepper and sautƩ until lightly browned, 3 minutes per side. Remove from heat and slice into thin strips. Toss with 1 tablespoon of the dressing.
3 - Combine cabbage, bell pepper, and remaining dressing in a large bowl. Lay lettuce leaves on a clean, dry work surface. Divide pork among leaves. Top with cabbage mixture and roll tightly, tucking edges in as you go. Place rolls, seam side down, on a cutting board, cut in half, and serve.
Makes 4 servings.

Toasted a couple of Eggo Nutri Grain Waffles and had a cup Bigelow Decaf Tea for Breakfast this morning. Lot of rain overnight into the morning. Then partly sunny and 60 degrees out. Rested most of the day, dealing with a painful sinus headache. They say our pollen count outside is extremely high and my head can feel it! Like most plans, they are made to be broken. I was going to prepare Dinner tonight Mom wanted Pizza so…….





........Pizza it is! I ordered Mom’s favorite, Domino’s Hand Tossed Pizza Large with Cheese, Sauce, Pepperoni, Italian Sausage, Mushrooms, and Black Olives, Green Olives. First Pizza in a while, and it was over due! As always the Pizza arrived on time, hot and delicious! I had a Diet Coke to drink. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Caffeine Free Diet Mango Tea Snapple to drink. The Kitchen reopens tomorrow! Take care all.

Sriracha Turkey Burger
Sriracha sauce is mixed into these lean ground turkey patties and the chili-mayo dressing for heat that hits the spot! Too hot? The thinly sliced cucumber and carrot topping will cool you right off! At under 300 calories per serving, this bold burger recipe will be great on the grill.

INGREDIENTS
TURKEY PATTIES
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
¼ cup egg substitute or 1 egg, beaten
½ cup fine dry breadcrumbs
2 tablespoons sriracha sauce
2 cloves garlic, minced
¼ cup chopped fresh cilantro
1 teaspoon ground cumin
salt and freshly ground pepper, if desired

BURGER FIXINGS
¼ cup low-fat mayonnaise
1 tablespoon Sriracha sauce
1 tablespoon sweet chili sauce
6 whole wheat or grain buns, split and toasted
¼ cup thinly sliced red onion
½ cup thinly sliced cucumber
½ cup grated carrot

DIRECTIONS
1) To make patties, in large bowl, combine turkey, egg, breadcrumbs, 2 tablespoons Sriracha sauce, garlic, cilantro, cumin, salt and pepper, if desired. Cover and chill 30 minutes.
2) Shape mixture into 6 (½-inch thick) patties. Heat non-stick skillet to medium-high heat. Lightly coat with cooking spray. Cook 16 to 18 minutes turning 2 to 3 times. Always cook to well-done, 165°F as measured by meat thermometer.
3) To make the burger fixings, in small bowl, combine mayonnaise, 1 tablespoon Sriracha sauce and sweet chili sauce.
4) Spread mayonnaise mixture on cut sides of each bun. Top bottom halves of buns with turkey patties, red onion, cucumber and carrot. Replace bun tops.
* Always cook to an internal temperature of 165°F.

Ground Beef alone makes a pretty dull-tasting Hamburger, so make sure the Meat is mixed throughout with at least Salt and Pepper. Other ingredients, like Worcestershire Sauce, Hot Sauce, Grated Onions, or Lipton Onion Soup Mix will improve not only the taste but also the juiciness of your Hamburgers.

Ice Cream Cake
Ingredients
5 crushed sugar cones
3 tablespoons unsalted butter, melted
2 pints (4 cups) no-sugar-added light ice cream, softened at room temperature, divided
1 container (8 ounces) reduced-fat whipped topping, thawed
3 tablespoons sugar-free hot fudge sauce, warmed (optional)

Directions
1 - Spray 10-inch springform pan or deep-dish pie pan with nonstick cooking spray.

2 - Place sugar cone crumbs in small bowl. Stir in butter until crumbs are evenly moistened. Press crumbs onto bottom and partially up side of prepared pan. Refrigerate 20 minutes.

3 - Spread one pint of ice cream into crust with rubber spatula. Freeze 30 minutes or until firm. Spread remaining pint of ice cream over first layer. Freeze 30 minutes or until firm. Spread whipped topping over ice cream; freeze 2 hours or until firm. If desired, drizzle with fudge sauce after 30 minutes.

4 - Let soften in refrigerator 15 to 30 minutes; slice into wedges to serve.

* Tip: To finely crush sugar cones, place in resealable plastic bag. Remove excess air from bag; seal. Press rolling pin on top of cones to break into pieces. Continue pressing until evenly crushed.

Yield: 16 servings.

Serving size: 1/16 of cake.

Lasagna with Meat and Sauce w/ Texas Toast (Light)

Dinner Tonight: Lasagna with Meat and Sauce w/ Texas Toast (Light)





To start this morning off I prepared a SayersBrook 4 oz. Bison Fillet Mignon. These are so tender and delicious! Cooked it for a total of 5 minutes and done, a perfect medium rare. I also Poached an Egg and served it on a Thomas Light Multi Grain English Muffin. I also had a cup of Bigelow Decaf Green Tea. Cloudy and 67 degrees out today. I had to have Mom at Dermatologist at 10:15 this morning. She didn't want to go but I'm forcing her. She has mole and it's been getting darker so she needed to go! On the way home we stopped by Meijer and stopped and grabbed Mom a Breakfast Sandwich from McDonald's. For Dinner tonight I prepared a Stouffer’s Lasagna with Meat and Sauce w/ Texas Toast (Light).

I had picked up a box of Stouffer’s Lasagna with Meat and Sauce at Meijer earlier and having it
tonight. I purchased the Large Size, about 2 1/2 servings. I’m also baking a few slices of the New York Bakery Texas Toast – Lite.










To prepare it s very easy. It comes frozen and to prepare it; Preheat the oven to 350°F. Leave the film on tray, but do not vent. Place the tray on a baking sheet on the center rack of the oven. Cook 56 Minutes. Remove baking sheet from oven. Let stand 1 Minute and Dinner is ready. I really enjoy this Lasagna! Plenty of Sauce and Meat and the Noodles are good size and tender. One easy way to have a Lasagna Dinner! The Lasagna is 260 calories and 25 net carbs per serving.




I also baked a slice of New York Bakery Lite Texas Toast. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.















Stouffer’s Lasagna with Meat and Sauce
Large Size
Traditional lasagna noodles layered with an herb seasoned tomato and meat sauce and three kinds of natural cheese

Conventional Oven
1) Preheat to 350°F
2) Leave film on tray, do not vent.
3) Place tray on a baking sheet, center rack. Cook 56 Minutes.
4) Remove baking sheet from oven. Let stand 5 Minutes.

* Ensure product reaches an internal temperature of 160°F
* Directions developed using 1100 WATT microwave oven. Ovens vary, cooking time may need adjusting

Steak, Potato and Green Bean Salad
It’s hard not to love a salad that has both meat and potatoes in it! Of course the green stuff makes for
a well balanced meal that will leave you completely satiated. And, the garlic, lemon and herb vinaigrette, you’ll want to make again and again.

Ingredients: (serves 2 to 3)
1 – 10 oz. Ribeye or New York Strip Steak (or other cut would work too)
2 to 3 – medium-sized potatoes, steamed or boiled
1/4 – pound fresh green beans, stem end clipped
1 – tomato or cherry tomatoes, chopped
Optional: Crumbled Feta Cheese, Fennel Fronds, or green onion for garnish
Greek Vinaigrette

Preparation:

1 – Prep steak, by rinsing under cold water and blotting dry. Drizzle with olive oil, salt and pepper. Allow to rest at room temperature for about two hours.
2 – Quarter the potatoes after they are steamed or boiled. You can also pan fry in a little olive oil to lightly brown.
3 – Steam or pan sautĆ© green beans until el dente.
4 – Grill the steak according to thickness, three to four minutes each side, turning at one and a half minute intervals. Remove the steak from the grill, tent with foil and allow to rest for 5 minutes.
5 – Arrange potatoes and green beans on the plates.
6 – Slice the steak thin and divide between plates.
7 – Add the tomatoes and drizzle the whole salad with the vinaigrette.
8 – Garnish with feta cheese and fennel fronds. Season with a little finishing salt and fresh cracked pepper to taste.

Greek Vinaigrette:
Ingredients:
1/3 – cup white wine vinegar
1 – tablespoon fresh squeezed lemon juice
1/3 – cup extra virgin olive oil
1 to 2 – garlic cloves
¼ – cup fresh basil leaves
4 – green onions, white part only, chopped (reserve greens for garnish)
2 – teaspoons oregano
1 – tablespoon crushed fennel
1 – teaspoon black pepper
½ teaspoon salt

* Preparation: Mix all ingredients in blender until well incorporated. Transfer to a lidded container until ready to serve. Shake before drizzling onto salad. Keeps well in the refrigerator.

Seasoned Haddock w/ Mac and Cheese

Dinner Tonight: Seasoned Haddock w/ Mac and Cheese




For Breakfast this morning I Scrambled a couple of eggs, toasted 2 slices of Aunt Millie's Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. Partly sunny and 74 degrees, rain and thunderstorms moving in toward evening. Had the other half of the outside deck painted, looks great. Went to Meijer Lawn and Garden and picked up another bag of the dark Mulch. Ran a little short of Mulch for around the tree out front. Got the front and side yards looking good! Next is the back yard flower bed and replacing some skirting around the back of the shed. For Dinner tonight I prepared Seasoned Haddock w/ Mac and Cheese.

Had not had Haddock in a while and it sounded good! I had purchased the Haddock from Kroger a couple of weeks ago and had them in the freezer. I sat the bag of them in the fridge overnight to thaw. I had already rinsed the fillets off in cold water  and cut the fillets in half before I froze them. So to prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until the pieces were well coated. Shook off the excess and pan fried them in Extra Light Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love Haddock it cooks up so nicely and I love the flavor and how meaty it is.

Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac
Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.
