Lasagna with Meat and Sauce w/ Texas Toast (Light)

Dinner Tonight: Lasagna with Meat and Sauce w/ Texas Toast (Light)

To start this Monday morning off I prepared a packet of the Pioneer Peppered White Gravy. I also toasted a couple of slices of Aunt Millie's Light Whole Grain Bread, heated up a couple of Jimmy
Dean Turkey Sausage Patties, and had a cup of Bigelow Decaf Green Tea. Mom had the same for a change. After Breakfast I had to go pick up the Vacuum from the repair shop. Stopped by the ATM on the way back. Then after Lunch I took Mom over to Meijer, she was looking for a couple of items. For Dinner tonight I prepared a Stouffer's Lasagna with Meat and Sauce w/ Texas Toast (Light).

I tried a bit of the Stouffer's Lasagna with Meat and Sauce over Christmas and really liked it! So I
had picked up a box of it at Kroger's the day before and having it tonight. I purchased the Large Size, about 2 1/2 servings. I'm also baking a few slices of the New York Bakery Texas Toast - Lite.

To prepare it s very easy. It comes frozen and to prepare it; Preheat the oven to 350°F. Leave the film on tray, but do not vent. Place the tray on a baking sheet on the center rack of the oven. Cook 56 Minutes. Remove baking sheet from oven. Let stand 1 Minute and Dinner is ready. I really enjoy this Lasagna! Plenty of Sauce and Meat and the Noodles are good size and tender. One easy way to have a Lasagna Dinner! The Lasagna is 260 calories and 25 net carbs per serving.

I also baked a slice of New York Bakery Lite Texas Toast. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

One of America's Favorites - Sauerkraut

German sauerkraut

Sauerkraut (/ˈsaʊ.ərkraʊt/; German: [ˈzaʊɐˌkʁaʊt] is finely cut raw cabbage that has been fermented by various lactic acid bacteria. It has a long shelf life and a distinctive sour flavor, both of which result from the lactic acid formed when the bacteria ferment the sugars in the cabbage leaves.

Fermented foods have a long history in many cultures, with sauerkraut being one of the most well-known instances of traditional fermented moist cabbage side dishes. The Roman writers Cato (in his De Agri Cultura) and Columella (in his De re Rustica) mentioned preserving cabbages and turnips with salt.

Sauerkraut originally came from China, from where it was brought over to Europe by the Tatars. The Tatars improved upon the original Chinese recipe by fermenting it with salt instead of rice wine. Another claim is that the dish was brought over by the Mongol Emperor Genghis Khan. It then took root mostly in Central and Eastern European cuisines, but also in other countries including the Netherlands, where it is known as zuurkool, and France, where the name became choucroute. The English name is borrowed from German where it means literally "sour herb" or "sour cabbage". The names in Slavic and other Central and Eastern European languages have similar meanings with the German word: "fermented cabbage" (Albanian: lakër turshi, Belarusian: квашаная капуста, Czech: kysané zelí, Polish: kiszona kapusta or kwaszona kapusta, Lithuanian: rauginti kopūstai, Russian: квашеная капуста, tr. kvashenaya kapusta, Ukrainian: квашена капуста) or "sour cabbage" (Bulgarian: кисело зеле, Croatian: kiselo zelje, Czech: kyselé zelí, Estonian: hapukapsas, Finnish: hapankaali, Hungarian: savanyúkáposzta, Latvian: skābēti kāposti, Romanian: varză murată, Russian: кислая капуста, tr. kislaya kapusta, Serbian: kiseli kupus, Slovak: kyslá kapusta, Slovene: kislo zelje, Ukrainian: кисла капуста, kisla kapusta).

Before frozen foods, refrigeration, and cheap transport from warmer areas became readily available in northern, central and eastern Europe, sauerkraut – like other preserved foods – provided a source of nutrients during the winter. James Cook always took a store of sauerkraut on his sea voyages, since experience had taught him it prevented scurvy.

The word "Kraut", derived from this food, is a derogatory term for the German people. During World War I, due to concerns the American public would reject a product with a German name, American sauerkraut makers relabeled their product as "Liberty Cabbage" for the duration of the war.

Sauerkraut is made by a process of pickling called lactic acid fermentation that is analogous to how traditional (not heat-treated) pickled cucumbers and kimchi are made. The cabbage is finely
Homemade sauerkraut
shredded, layered with salt, and left to ferment. Fully cured sauerkraut keeps for several months in an airtight container stored at 15 °C (60 °F) or below. Neither refrigeration nor pasteurization is required, although these treatments prolong storage life.

Fermentation by lactobacilli is introduced naturally, as these air-borne bacteria culture on raw cabbage leaves where they grow. Yeasts also are present, and may yield soft sauerkraut of poor flavor when the fermentation temperature is too high. The fermentation process has three phases, collectively sometimes referred to as population dynamics. In the first phase, anaerobic bacteria such as Klebsiella and Enterobacter lead the fermentation, and begin producing an acidic environment that favors later bacteria. The second phase starts as the acid levels become too high for many bacteria, and Leuconostoc mesenteroides and other Leuconostoc spp. take dominance. In the third phase, various Lactobacillus species, including L. brevis and L. plantarum, ferment any remaining sugars, further lowering the pH. Properly cured sauerkraut is sufficiently acidic to prevent a favorable environment for the growth of Clostridium botulinum, the toxins of which cause botulism.

A 2004 genomic study found an unexpectedly large diversity of lactic acid bacteria in sauerkraut, and that previous studies had oversimplified this diversity. Weissella was found to be a major organism in the initial, heterofermentative stage, up to day 7. It was also found that Lactobacillus brevis and Pediococcus pentosaceus had smaller population numbers in the first 14 days than previous studies had reported.

The Dutch sauerkraut industry found that inoculating a new batch of sauerkraut with an old batch resulted in an excessively sour product. This sourdough process is known as "backslopping" or "inoculum enrichment"; when used in making sauerkraut, first- and second-stage population dynamics, important to developing flavor, are bypassed. This is due primarily to the greater initial activity of species L. plantarum.

Regional varieties
In Belarusian, Polish, Russian, Baltic country and Ukrainian cuisine, chopped cabbage is often
Eastern European-style sauerkraut pickled with carrots
pickled together with shredded carrots. Other ingredients may include whole or quartered apples for additional flavor or cranberry for flavor and better keeping (the benzoic acid in cranberries is a common preservative). Bell peppers and beets are added in some recipes for colour. The resulting sauerkraut salad is typically served cold, as a zakuski or a side dish. There is also a home made type of very mild sauerkraut where white cabbage is pickled with salt in a refrigerator for only between three and seven days. This results in very little lactic acid being produced. Sometimes in Russia the double fermentation is used, with the initial step producing an exceptionally sour product, which is then "corrected" by adding 30-50% more fresh cabbage and fermenting the mix again. The flavor additives like apples, beets, cranberries and sometimes even watermelons are usually introduced at this step.

Many health benefits have been claimed for sauerkraut:

* It is a source of vitamins B, C, and K; the fermentation process increases the bioavailability of nutrients rendering sauerkraut even more nutritious than the original cabbage. It is also low in calories and high in calcium and magnesium, and it is a very good source of dietary fiber, folate, iron, potassium, copper and manganese.
* If unpasteurized and uncooked, sauerkraut also contains live lactobacilli and beneficial microbes and is rich in enzymes. Fiber and probiotics improve digestion and promote the growth of healthy bowel flora, protecting against many diseases of the digestive tract.
* During the American Civil War, the physician John Jay Terrell (1829–1922) was able to successfully reduce the death rate from disease among prisoners of war; he attributed this to feeding his patients raw sauerkraut.
* Sauerkraut and its juice is a time-honored folk remedy for canker sores. The treatment is to rinse the mouth with sauerkraut juice for about 30 seconds several times a day, or place a wad of sauerkraut against the affected area for a minute or so before chewing and swallowing the sauerkraut.
* In 2002, the Journal of Agriculture and Food Chemistry reported that Finnish researchers found the isothiocyanates produced in sauerkraut fermentation inhibit the growth of cancer cells in test tube and animal studies. A Polish study in 2010 concluded that "induction of the key detoxifying enzymes by cabbage juices, particularly sauerkraut, may be responsible for their chemopreventive activity demonstrated by epidemiological studies and in animal models".
* Sauerkraut is high in the antioxidants lutein and zeaxanthin, both associated with preserving ocular health.

Chili and Cheese Nachos

Dinner Tonight: Chili and Cheese Nachos

To start my day off I just had a cup of Bigelow Decaf Green Tea. After my Tea I went to Kroger for a few items and then to McDonald's to pick up Breakfast for Mom - a Sausage, Egg, and Cheese Bagel
with a Senior Coffee with 1 Cream. Mom went on to Church. Me, I did a couple of loads of laundry and light cleaning of the house. Later I got the leaf blower out and cleaned off the deck. After that I returned to being a slug for the afternoon! Watched NFL Football the rest of the afternoon. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

Just no motivation to prepare a big meal so why not Chili and Cheese Nachos. We love Chili and Cheese Nachos around here! To make them I’ll need: Tostitos Multi Grain Scoops for my Chips. I
love these with Salsa or just as snack by their selves, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives, sliced up some Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good Nachos! Especially love the Jalapenos, nice mild heat!

To prepare I preheated the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I first opened up 2 cans of the Hormel Chili with Beans and heated them up in a sauce
pan, as it was heating I added about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese. Then just pop it in the oven 10 minutes or until the Cheese had started to melt and everything heated. I love Nachos, nothing better than a big plate of Chili Cheese Nachos! For Dessert/Snack later a few slices of Boar's Head Block Sharp Cheddar and Wheat Crackers.

Hormel: Turkey w/Beans 98% Fat Free Chili

Directions:
Stove top: empty chili into saucepan. Stir occasionally while heating over medium heat, about 5 minutes or until hot. Microwave: empty chili into microwaveable bowl; cover loosely. Heat for 2 To 3 minutes or until hot, stirring once. Careful. Let chili stand in microwave 1 minute and stir before serving. All microwaves And stoves vary. Times given are approximate.

3 Bean Turkey Chili

Dinner Tonight: 3 Bean Turkey Chili

For Breakfast this morning I toasted a Thomas Light 100% Multi Grain English Muffin that I topped with some Smucker's Sugarless Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. Heavy
rains and strong winds overnight. Finally seen a little sunshine mid morning. Had a high of 58 degrees but cooler weather moving in Saturday. Cleaned the house today, dusted and vacuum. Then outside I got the leaf blower out and cleaned off the deck and driveway areas. Had a lot of papers, leaves, limbs, and a couple of plastic garbage cans all blown in from the storm. It just seemed like a good day to make a batch of my 3 Bean Turkey Chili, of course everyday is a good day to make Chili! So I’m making my 3 Bean Turkey Chili for Dinner! I prepared the Turkey and mixed the Beans last night. So this morning I had the Crock Pot set up and ready along having the Turkey and Beans. So its my 3 Bean Turkey Chili for Dinner tonight.

To make my Chili I’m using Jennie -O Lean Ground Turkey. The 3 Beans I use are 1 Can (16 oz.) Bush’s Chili Beans (Black Beans), 1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans), 1 Can (16 oz.)
Bush’s Chili Beans (Great Northern Beans) drained and rinsed, Then I mix in 1 Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Seeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste (2 cans), 1/2 Tsp Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 2 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). What’s good about this recipe you can use your own favorite Spices and make your own tweaks to it.

First thing I do is get the Crock Pot out and put in a Glad Crock Pot Liner. The Liners are incredible,
just line your Crock Pot with one and spray it with Pam Cooking Spray. Now you are set to go. It makes for one easy clean up, just remove it when done and give the inside of your Crock Pot a quick wipe down and your clean up is done! On with the recipe.

I prepared the Beans and Ground Turkey last night. To prepare the Turkey, I started by browning the Jennie -O Ground Turkey. Using a large skillet sprayed with Pam Cooking Spray and 1 tablespoon of
Extra Virgin Olive Oil. Preheat the skillet on medium heat. When heated I add the Ground Turkey and all the Seasonings and Tomato Paste, stirring often. When the Turkey has browned I put it in a large plastic container and on into the fridge after it had cooled a bit. Next I opened all 3 cans of Bush Beans into a large bowl and stirred until mixed. Stored them in a bowl and in the fridge also.

Then this morning I added everything to the Crock Pot. I also added a 1/2 cup of Water, stirred twice, and put the lid on the Crock Pot and set on low for 5-6 hours. The full recipe and list of ingredients is
at the end of the post. Then sit back and enjoy the aroma, that usually starts after an hour or so of simmering! I love a thick Chili and this one works! The Jennie – O Ground Turkey combined with all those Beans and Spices is a perfect match. Served it topped with some Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a couple of shakes of Frank’s Red Hot Sauce.

I just love the aroma of the simmering Chili, that usually starts after an hour or so of simmering! I love a thick Chili and this one works! The Jennie – O Ground Turkey combined with all those Beans
and Spices is a perfect match. Served it topped with some Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a couple of shakes of Frank’s Red Hot Sauce. I’ll be using the Leftover Chili in a couple of different ways for the couple of days, can’t wait! Chili is even better after sitting in the fridge for a day! I also made some Cornbread Ears. It’s normal baked Cornbread but in a cast iron baking mold in the shape of Ears of Corn. I used Martha White Corn Meal Mix. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Mango Snapple to drink.

Turkey Tacos and Refried Beans

Dinner Tonight: Turkey Tacos and Refried Beans

For Breakfast this morning I Scrambled a Couple of Eggs, toasted a couple of slices of Aunt Millie's Light Whole Grain Bread, and had my morning cup of Bigelow Decaf Green Tea. Cloudy and 54
degrees, rain moved in toward evening. I was out a couple of items for tonight's Dinner so I went to Meijer and picked them up. Stopped by the Post Office, ATM, and McDonald's to pick up Breakfast for Mom before heading home. Got the leaf blower out and cleaned off the deck and driveway areas. Then it was taking down and storing the Christmas Decorations. For Dinner tonight it’s Turkey Tacos and Refried Beans.

No more Holiday Food or Menus for a while! Me and Mom both are tired of the Holiday Food and ready to get back to everyday Food! So why not start with Turkey Tacos. We love our Turkey Tacos,
great Comfort food for us! When making Turkey Tacos I always use Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie -O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have an okay selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Old El Paso together make one fine Taco!

For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, and Shredded Lettuce.
For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Turn on the game and dig into our healthy appetizer recipes for the Super Bowl! These Super Bowl snacks, including chicken tender recipes, dip recipes, buffalo wing recipes and more healthy snack recipes, are lighter version of traditional snacks your friends and family will enjoy.

Soy-Lime Baked Buffalo Wings
Make this baked Buffalo chicken wing recipe at home to save 138 calories and a whopping 598 milligrams of sodium compared to the same number of deep-fried wings. If your market sells its chicken wings whole, you'll want to separate each into a "wingette" and a "drumette" so they cook evenly. They're easy to split apart with a sharp knife. Serve with carrot sticks, celery and ranch (or blue cheese) dressing..........

Loaded Sweet Potato Nacho Fries
Bump up the vitamin A and fiber when you swap tortilla chips for sweet potatoes in this healthy recipe. Serve as an appetizer at your next party or turn it into dinner by adding chicken, tofu, shrimp or more beans for protein.......

Black Bean Quesadillas
These satisfying quesadillas take just 15 minutes to make. We like them with black beans, but pinto beans work well too. If you like a little heat, be sure to use pepper Jack cheese in the filling. Serve with: A little sour cream and a mixed green salad...........

This week’s Wild Idea Buffalo Recipe of the Week – BUFFALO PASTRAMI AND PEACH SANDWICH WITH ORANGE AIOLI. It’s made using the Wild Idea Buffalo Pastrami. One Delicious and Healthy Sandwich! You can find this recipe or purchase the Wild Idea Buffalo Pastrami or any of the Wild Idea Products at the Wild Idea Buffalo website. Enjoy and Eat Healthy in 2018! https://wildideabuffalo.com/

BUFFALO PASTRAMI AND PEACH SANDWICH WITH ORANGE AIOLI
This sandwich is terrific grilled, but also great as a cold sandwich. Just slice, stack and serve! (Makes 4 servings)

Ingredients

2 - packages 8 oz. Buffalo Pastrami
2 - Peaches, halved and pit removed
1 - Red Onion, peeled and sliced, lightly oiled
4 oz. - White Cheddar, or mild cheese
8 - slices Artisan Whole Grain Bread
1 - Tb. Butter
2 - Tb. Orange Marmalade
8 - Tb. Orange Aioli *see recipe below

Make Orange Aioli, and refrigerate until needed.

1 - Preheat gas grill to medium high heat. Ensure grill grid is clean.
2 - Divide Pastrami into 4 piles.
3 - Spray grill with non-stick spray (I don’t usually use grilling spray, but it works great for grilling fruit).
4 - Place the piled Buffalo Pastrami, Red Onion, and Peach halves on grill, and heat for 1½minutes on the first side. Close grill lid during cooking.
5 - Turn all items over. Divide cheese, and place on top of hot Buffalo Pastrami. Place a dollop of orange marmalade on top of each onion slice. Brush one side of bread with butter and place on grill, butter side down. Close lid and continue to grill for 1 minute.
6 - Remove items as they are ready, bread should be light grilled, cheese should be melted, and onions should be soft.
7 - Remove peaches, pull skin off and slice each half in two.
8 - Layer Buffalo Pastrami with cheese, grilled peaches and red onion on non- grilled side of bread. Spread on Orange Aioli and place remaining grilled bread on top.
Pass with additional Aioli, and serve with green salad.

Orange Aioli:

2 egg yolks, blend until pale
1 Tb. orange juice concentrate, at room temperature
½ tsp. dry mustard
½ tsp. each, salt & pepper
¼ tsp. cayenne pepper
¾ cup olive oil

1 - In blender mix egg yolks until pale.
2 - Add, orange juice concentrate, and spices. Puree until blended.
3 - With motor running slowly add olive oil.
4 - Adjust seasoning to your taste.
Pour Orange Aioli into glass container and refrigerate until needed.

Christmas Dinner

I'm preparing Christmas Dinner for me and Mom. It's our first Christmas without Dad and it's a bit sad but I'm trying to keep things upbeat for Mom. We're having Dinner for just the 2 of us but later in the afternoon or early evening there will be several people coming over so that will help her spirits. For our Dinner I prepared a 4 lb. Prime Rib, Mashed Potatoes, opened up a quart jar of the Canned Green Beans, and Baked some Hawaiian Rolls. Mom had a baked an Apple Pie and a Pecan Pie yesterday. Both were made using Splenda Sweetner. I'd like to wish each and every one of you along with your families a Very Merry Christmas! And to all a good night.....
