Dinner Tonight: Catfish Nuggets w/ Southwest Style Hash Browns and Cut Green Beans
I just had a cup of the Bigelow Decaf Green Tea for Breakfast. Partly Cloudy, humid, and 89 degrees out today. Right after my Tea I headed out to Walmart. I needed printing ink, Bigelow Tea, and a few other items. Next it was off to Meijer for the rest of the Grocery Shopping. Stopped by McDonald's and picked up Breakfast for Mom. Later in the day I went to the hospital and seen a friend of mine that I used to work with. He was in a pretty bad car wreck, but doing ok. For Dinner tonight I prepared Catfish Nuggets w/ Southwest Style Hash Browns and Cut Green Beans.
Picked up the Catfish Nuggets at Meijer earlier in the day. To prepare them I rinsed the Catfish
Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty. You can bake Catfish but for me you just can’t beat frying Catfish.
For one side I prepared some Simply Potatoes Southwest Style Hash Browns. I had tried all the
Simply Potatoes Products but these and found some at Meijer today and they sounded perfect with the Catfish. I prepared them as I do all the Hash Brown Products. Fried them in Extra Light Olive Oil and seasoned them with Sea Salt and Ground Pepper. Great seasoning on the Hash Browns (Onion, Green and Red Bell Peppers, Garlic, Tomato, Jalapeno Peppers). Just love Potatoes with Fish.
I also heated up a can of Del Monte Low Sodium Cut Green Beans. I also baked a Loaf of the
RiverRoad Bake House Garlic Oval Loaf Bread. Then for Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

INGREDIENTS
1 (1-pound) package JENNIE-O® All Natural* Turkey Sausage
2 tablespoons olive oil
1 pound Yukon gold potato, cubed
1 small onion, chopped
1 pound Brussels sprouts, trimmed and thinly sliced
½ red bell pepper, chopped
½ cup chicken broth
1 teaspoon kosher salt
½ teaspoon freshly ground pepper
chopped green onion, if desired
DIRECTIONS
1) Cook turkey sausage as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
2) Add oil and potatoes and cook 5 minutes. Stir in onion and cook 5 minutes. Add sprouts, bell pepper, chicken broth, salt and pepper and cook 3 minutes or until bell pepper is tender. Garnish with chopped green onion, if desired.

Leftovers: Chicken and Dumplings and Cornbread!
Dinner Tonight: Leftovers - Chicken and Dumplings and Cornbread
To start my morning off I Scrambled some Egg Beater's Egg Whites, heated up a couple of Johnsonville Turkey Breakfast Sausage Links, toasted a slice of Aunt Millie's Light Whole Grain
Bread, and had a cup of Bigelow Decaf Green Tea. I really enjoy the Egg Beater's Egg Whites, they Scramble up perfect and are only 25 calories per serving (1 serving is 1/4 cup which is equal to 1 Egg) Outside had a couple of showers with a high of 83 degrees, and humid. Before the showers moved in later in the day I raked the front and side yard. Lot of leaves already. Then got the leaf blower and cleaned off the deck and driveway areas. That was about my day today. For Dinner tonight Leftovers!
No way could I let these Chicken and Dumpling leftovers go to waste! I know the carbs and calories are bit higher than I like but just had to have them one more time! I had a light Breakfast and just a 1/2 an Apple for Lunch to even up everything a bit. I've left the original post from last night below for recipe directions.
My Mom is making her Chicken and Dumplings for Dinner Tonight! She used Bisquick Heart Smart Mix for the Dumplings and Amish Chicken Breasts for the Chicken. She first made the Dumplings using a recipe found on Bisquick Boxes. Made those and set them aside until ready to use.
For the Chicken. She boiled the Skinles Chicken Breasts in a pot until they were done adding more water to them twice. After the Chicken was cooked she removed them from the pot and roughly shredded it. Returned it to the pot of Broth or Stew and added the Dumplings, reducing the heat. Cooked the two together uncovered for 10 minutes and then another 12 minutes covered until they were done.
As I said these Dumplings just melt in your mouth! Just incredible flavor with the Chicken being moist and adding it's flavor. I can't have these often, having Diabetes 2, but once in a while is fine!
As the Chicken and Dumplings were cooking I made the Cornbread. I made a small Cast iron Skillet
of Cornbread. As always I used Martha White Corn Meal Mix, something I think I could eat every meal. I like a nice fresh and hot slice with Butter on it. When I make this I just make it by the instructions on the package but I only use half the ingredients because I use a small cast iron skillet to make it. I use Egg Beaters and Extra Virgin Oil instead of Eggs and Vegetable Oil the recipe calls for. Bake at 450 degrees for about 25 minutes and you have some golden brown piping hot Cornbread! If you use a small cast iron skillet just cut the recipe in half and it comes out just right for the skillet size. What a dinner tonight!

Chicken and Dumplings and Cornbread!
Dinner Tonight; Chicken and Dumplings and Cornbread
For Breakfast this morning I toasted a Thomas Light 100% Whole Grain English Muffin that I topped with I Can't Believe It's Not Butter. Also had my morning cup of Bigelow Decaf Green Tea. Partly
cloudy with rain later in the afternoon, high of 90 degrees. Did a load of laundry and some light house cleaning. Then spent most of the afternoon writing an appeal letter to my insurance over my policy increase and balance of over $7,000. My insurance has been one big screw up! All I can do is wait and see what happens with the Appeal. On top of that I had to go the Dentist, which I can't stand doing. But had no choice I've got a cavity. More on that later. Anyway a real Dinner treat tonight! My Mom is making her melt-in-your mouth Chicken and Dumplings and some Cast Iron Skillet Cornbread.
My Mom is making her Chicken and Dumplings for Dinner Tonight! She used Bisquick Heart Smart Mix for the Dumplings and Amish Chicken Breasts for the Chicken. She first made the Dumplings using a recipe found on Bisquick Boxes. Made those and set them aside until ready to use.
For the Chicken. She boiled the Skinles Chicken Breasts in a pot until they were done adding more water to them twice. After the Chicken was cooked she removed them from the pot and roughly shredded it. Returned it to the pot of Broth or Stew and added the Dumplings, reducing the heat. Cooked the two together uncovered for 10 minutes and then another 12 minutes covered until they were done.
As I said these Dumplings just melt in your mouth! Just incredible flavor with the Chicken being moist and adding it's flavor. I can't have these often, having Diabetes 2, but once in a while is fine!
As the Chicken and Dumplings were cooking I made the Cornbread. I made a small Cast iron Skillet of Cornbread. As always I used Martha White Corn Meal Mix, something I think I could eat every
meal. I like a nice fresh and hot slice with Butter on it. When I make this I just make it by the instructions on the package but I only use half the ingredients because I use a small cast iron skillet to make it. I use Egg Beaters and Extra Virgin Oil instead of Eggs and Vegetable Oil the recipe calls for. Bake at 450 degrees for about 25 minutes and you have some golden brown piping hot Cornbread! If you use a small cast iron skillet just cut the recipe in half and it comes out just right for the skillet size. What a dinner tonight! For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Ingredients:
1 - 10oz. New York Steak Strip
2 - heads butter lettuce
1 - cucumber, chopped
2 - tomatoes, chopped
2 - green onions, chopped
Dijon Vinaigrette
Preparation:
1 - Prep steak, by rinsing under cold water and blotting dry. Drizzle with olive oil, salt and pepper. Allow to rest at room temperature for about two hours.
2 - Remove the core from the butter greens and select leaves that form a nice cup shape, reserve remaining greens for other use.
3 - Mix other vegetables in a bowl and drizzles with the vinaigrette. Cover and marinate at room temperature until ready to use.
4 - Grill the steak according to thickness, three to four minutes each side, turning at one and a half minute intervals. Remove the steak from the grill, tent with foil and allow to rest for 5 minutes.
5 - Slice the steak thin and divide between the butter lettuce cups.
6 - Top with cucumber and tomatoes in vinaigrette. Serve immediately.

Fried Ocean Perch w/ Mac and Cheese
Dinner Tonight: Fried Ocean Perch w/ Mac and Cheese
It was Steak and Eggs to start my day off today. For my Steak I fried up a SayersBrook 4 oz. Bison Fillet Mignon. I just seasoned it with some McCormick Grinder Sea Salt and Peppercorn Medley. It came out a perfect medium rare! It was so tender and juicy.Then I Scrambled a couple Eggs, toasted 1 slice of Aunt Millie's Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Good way to start the day! Mostly sunny, humid, and 94 degrees out to day. Took my Hoveround Chair outside and gave it a good cleaning, a much needed cleaning! That was about it for the day. Still fighting with my insurance so I was on the phone again for about 40 minutes! Very upset over this! For Dinner tonight I prepared Fried Ocean Perch w/ Mac and Cheese.
I picked up the Ocean Perch at Kroger the other day, cleaned them and had them in the freezer. Really
love the Kroger Seafood Department, good selections. I laid the bag in the fridge to thaw overnight. To prepare them I preheated a medium size skillet, that I had sprayed with Pam Cooking Spray and added Extra Light Olive Oil, on medium heat. Lightly seasoned them with the McCormick Sea Salt. I then put them in a Hefty Zip Lock Bag and added Zatarain’s Seasoned Fish Fri, shaking the bag then until the Perch Fillets were coated. Added the Fillets to the heated skillet and fried them 3 minutes per side. They came out Golden Brown! Delicious and fresh tasting, I love all Fish and Seafood!
Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac
Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack later a bowl of Skinny Pop - Pop Corn with a Coke Zero to drink.

and flaky. Large ocean perch develop a coarse texture. Deep-skinned ocean perch with the fat line removed has the most delicate flavor. The flesh is white, though not as light as cod, and it turns opaque white when cooked.Whole fish may have bulging eyes and distended air bladders, which is a result of being brought up from great depths, not an indication of poor quality.

Lemon Pepper Chicken Wings
Ingredients
Large baking sheet, lined with foil, with a wire rack set on top
2 pounds free-range chicken wings
2 tablespoons grated lemon zest
2 tablespoons freshly squeezed lemon juice
1 tablespoon freshly ground black pepper
1 teaspoon sea salt
Directions
1 - Preheat oven to 375°F (190°C).
2 - Pat chicken dry with paper towels, removing as much moisture as you can. Arrange on the wire rack over the prepared baking sheet, leaving space in between, if possible.
3 - Roast in preheated oven for 30 to 35 minutes, flipping them over halfway through, until juices run clear when chicken is pierced.
4 - Meanwhile, in a large bowl, combine lemon zest, lemon juice, pepper, and salt.
5 - Add wings to the lemon sauce and toss until evenly coated. Serve hot.
Yield: 4 servings. Serving size: 1/4 of recipe.

3 Bean Turkey Chili w/ Johnny Cakes
Dinner Tonight: 3 Bean Turkey Chili w/ Johnny Cakes
To start my morning off I Poached an Egg and served it on a toasted Thomas Light 100% Whole
Grain English Muffin. Also had a cup of Bigelow Decaf Green Tea. Partly cloudy, humid, and a high
of 97 degrees outside today.
Long day on the phone with my Supplement insurance, Anthem Blue Cross. I've had my policy since around 2004, I became disabled in 2001. I had always made my payments but for the last 2 years I have to call my payment in because for some reason they couldn't take it out automatically. Well now I get a letter that I owe them $7,600 dollars because they said they increased my rates in 2017 because I'm disabled! I was never informed of this increase or I would have canceled my policy. Now they want $854 a month for a Supplement Policy!! And I owe them back pay to cover the new rate since early 2017! I'm not happy right now. And it's still unresolved! NOT HAPPY! I'll let you know how it turns out. So for Dinner tonight its 3 Bean Turkey Chili along with some Johnny Cakes.
I had the 3 Bean Chili in the freezer. So I sat a container of it in the fridge overnight to thaw. The
Chili freezes and reheats so easy. I’ll have to make some more, it’s my last container! To reheat the Chili; I’ll use a small sauce pan, spray it with Pam Non Stick Cooking Spray, add the Chili to the pan, and heat slowly on medium low heat until heated through. The Chili is just as good as it was when it was made! To go with the Chili I made some Johnny Cakes. I love the combination of Chili and Cornbread! I’ve left the original post which gives the ingredients and directions on making the Chili. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.
When I prepare my Chili I prepare the Ground Turkey and mix the Beans the night before. So the
morning I’m making it everything is ready! I had the Crock Pot set up also. To make the Chili I’m
using Jennie -O Lean Extra Lean Ground Turkey Breast. The 3 Beans I use are 1 Can (16 oz.) Bush’s Chili Beans (Black Beans), 1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans), 1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans) drained and rinsed, Then I mix in a 1/2 a Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Seeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste (2 cans), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 2 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). What’s good about this recipe you can use your own favorite Spices and make your own tweaks to it and it turns out delicious.
The first thing I do is get the Crock Pot out and put in a Glad Crock Pot Liner. The Liners are
incredible, just line your Crock Pot with one and spray it with Pam Cooking Spray. Now you are set to go. It makes for one easy clean up, just remove it when done and give the inside of your Crock Pot a quick wipe down and your clean up is done! On with the recipe.
The Beans and Ground Turkey were prepared last night. I started by opening all 3 cans of Bush
Beans into a large bowl and stirred until mixed. Then in the morning, I added the Beans to Crock Pot. To prepare the Turkey, I started by browning the Jennie -O Ground Turkey. Using a large skillet sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Preheat the skillet on medium heat. When heated I add the Ground Turkey and all the Seasonings and Tomato Paste, stirring often. When the Turkey has browned I put it in a large plastic container and on into the fridge after it had cooled a bit. Then this morning I added everything to the Crock Pot. Throw in a 1/2 cup of Water, stirred twice, and put the lid on the Crock Pot and set on low for 5-6 hours.
Then sit back and enjoy the aroma, that usually starts after an hour or so of simmering! I love a thick Chili and this one works! The Jennie – O Ground Turkey combined with all those Beans and Spices is a perfect match. Served it topped with some Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a couple of shakes of Frank’s Red Hot Sauce. Also a side of Johnny Cakes, recipe below.
To prepare the Johnny Cakes (I love these…) all you’ll need is: Pam w/ Olive Oil Non – Stick Spray,
1/4 cup Extra Light Virgin Olive Oil, 1 3/4 cups Low Fat Buttermilk, and 2 cups Martha White Self Rising Enriched White Corn Meal Mix. Just mix all your ingredients in a large bowl. Spray your Pam on a Flat Top Griddle or large Skillet and preheat on medium low, I use the Flat Top Griddle. When the Griddle is heated add your batter. You can make the Cakes any size you want from half-dollar size to regular pancake size cakes. After the bottom side turns golden brown flip over and let the other side get golden brown. I love the combination of Chili and Cornbread!

2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (16 oz.) Bush’s Chili Beans (Red Beans)

1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans), drained and rinsed

1/2 Tsp Ground Cocoa Chili Blend (McCormick)
1/2 Tsp Ground Chipotle Chili Pepper (McCormick)

2 Tsps Ground Cinnamon

5 Dashes of Frank’s Hot Sauce or to taste.
1/2 Cup of Water
Shredded Cheese, I use Grated Dutch Gouda or Sargento Reduced Fat Shredded Cheddar Cheese (Topping)
Oyster Crackers
Frank’s Hot Sauce or to taste.
Directions:
*Brown Turkey in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste and water.
*ADD to slow cooker and add in the remaining 1 can of tomato paste and 1/2 cup of water.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).
*Serve in bowl or mug with cheese and oyster crackers, A Tablespoon of fat-free sour cream, Chopped Onions, or serve with some home made cornbread.

Variations
There are numerous variations of the basic slinger:
* "Top one": has a tamale served on top of the slinger
* "Vegetarian": uses veggie burgers and veggie chili
* "The Toby"/"the Hoosier": slinger that has white gravy instead of chili. (Named after a customer at Tiffany's Original Diner).
* "Yin and yang": slinger covered in half chili and half gravy. A customer favorite at Tiffany's Original Diner, and named by manager Tom Gray. (The yin and yang is both light and dark in color).
* "The Jared": slinger with equal amounts of chili and white gravy
* "The JP slinger": slinger with hamburger patty, extra onions and extra chili
* "Devil's delight": slinger without the hamburgers patties at Courtesy Diner
* "Chicago style": served with white bread toast on the side, burgers are specified as "cheeseburger patties", eggs are specified as over easy, and must contain grilled onions.

"Meatless Monday" Recipe of the Week - Beer-Battered Portabella Strips with Spicy Dipping Sauce
Beer-Battered Portabella Strips with Spicy Dipping Sauce
3 cups beer or ale
3 cups all-purpose flour
1 1/2 quarts mayonnaise
1 tablespoon plus 1 teaspoon lemon zest
3 tablespoons lemon juice
1/4 cup chopped cilantro
1/4 teaspoon cayenne pepper
24 Portabella mushrooms, slice about 3/8-inch thick (about 2.5 ounces each; stems reserved for other use)
Lemon zest, for garnish as needed
Cooking Directions:
1 - Whisk together beer and flour; let sit at least 2 hour
2 - To make sauce, mix mayonnaise, zest, lemon juice, cilantro and cayenne pepper until well combined; reserve.
3 - Dip Portabella strips into reserved beer batter.
4 - Deep fry until crisp and golden brown, about 3 minutes.
5 - Serve with 1/4 cup Spicy Sauce on the side. Garnish with lemon zest, if desired.
Makes 24 servings.

Dinner Tonight: Banquet Homestyle Bakes Pizza Pasta w/ Cheesy Bread
For Breakfast this morning I made a Ham and Cheese Omelet, toasted a slice of Aunt Millie's Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Partly cloudy, humid and 93 degrees out today. August Weather has returned! After I did the dishes I went to Kroger for Mom and then to McDonald's to pick up Breakfast for her. She went on to Church afterward. I cleaned the house today, vacuumed and dusted. Then gave the fridge a good cleaning and cleaned the microwave and stove. Kicked back the rest of the day. For Dinner tonight I prepared Banquet Homestyle Bakes Pizza Pasta w/ Cheesy Bread.
Love this Pizza Pasta from Banquet! This is one of my favorite boxed foods, Banquet Homestyle
Bakes Pizza Pasta. Nothing like a quick, easy and delicious comfort food. But here’s another product I love and it’s getting harder and harder to find, I can only find it at Walmart or online now!
Anyway it’s got two of my favorites in it, pasta and pizza! The box contains 1 can of Pizza Sauce w/
Pepperoni and Sausage and 1 Pouch of Rotini Pasta. I also added a few slices of Turkey Pepperoni and sliced Portabello Mushrooms to the mix. For the preparation you can bake it or prepare it on the stove top, which is how I prepared it. Add 1 cup of water, stir and mix, and simmer and you have your dinner! This came out fantastic! Really had a good Pizza flavor to it and excellent Sauce! The Sauce with the Mushrooms, Sausage, and Pepperoni provides the great flavoring. Easily prepared and makes a hearty and delicious meal.
Along with the Pizza Pasta I also prepared some Baked Cheesy Bread. Another easy one, using
Healthy Life Whole Grain Bread, Sargento Reduced Fat Shredded Mozzarella Cheese, and I Can’t Believe It’s Not Butter. Just Butter the Bread and add your Cheese on top. Then bake on 400 degrees until the Bread is toasted and Cheese is melted. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Mango Snapple to drink.

For Breakfast this morning I made a Ham and Cheese Omelet, toasted a slice of Aunt Millie's Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Partly cloudy, humid and 93 degrees out today. August Weather has returned! After I did the dishes I went to Kroger for Mom and then to McDonald's to pick up Breakfast for her. She went on to Church afterward. I cleaned the house today, vacuumed and dusted. Then gave the fridge a good cleaning and cleaned the microwave and stove. Kicked back the rest of the day. For Dinner tonight I prepared Banquet Homestyle Bakes Pizza Pasta w/ Cheesy Bread.
Love this Pizza Pasta from Banquet! This is one of my favorite boxed foods, Banquet Homestyle
Bakes Pizza Pasta. Nothing like a quick, easy and delicious comfort food. But here’s another product I love and it’s getting harder and harder to find, I can only find it at Walmart or online now!
Anyway it’s got two of my favorites in it, pasta and pizza! The box contains 1 can of Pizza Sauce w/
Pepperoni and Sausage and 1 Pouch of Rotini Pasta. I also added a few slices of Turkey Pepperoni and sliced Portabello Mushrooms to the mix. For the preparation you can bake it or prepare it on the stove top, which is how I prepared it. Add 1 cup of water, stir and mix, and simmer and you have your dinner! This came out fantastic! Really had a good Pizza flavor to it and excellent Sauce! The Sauce with the Mushrooms, Sausage, and Pepperoni provides the great flavoring. Easily prepared and makes a hearty and delicious meal.
Along with the Pizza Pasta I also prepared some Baked Cheesy Bread. Another easy one, using
Healthy Life Whole Grain Bread, Sargento Reduced Fat Shredded Mozzarella Cheese, and I Can’t Believe It’s Not Butter. Just Butter the Bread and add your Cheese on top. Then bake on 400 degrees until the Bread is toasted and Cheese is melted. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Mango Snapple to drink.
