One of America's Favorites - Mashed Potatoes

Mashed potato (British English) or mashed potatoes (American English and Canadian English), colloquially known as mash, is a dish prepared by mashing boiled, peeled potatoes. Milk and butter are frequently used in preparation and it is frequently whipped at the end. The dish is usually a side dish to meat and/or vegetables. The closely related smashed potatoes dish is made with unskinned potatoes and it is hand mashed and not whipped.

Mashed Potatoes

Recipes for making the dish started appearing in 1747 with an entry in The Art of Cookery by Hannah Glasse. Dehydrated and frozen mashed potatoes are available in many supermarkets.

Mashed potato may be used as an intermediary ingredient for other dishes such as dumplings and gnocchi, in which case the potatoes may be baked or boiled, and may or may not have dairy or seasoning added.

The use of "floury" types of potatoes is recommended, although "waxy" potatoes are sometimes used for a different texture. There are a multitude of "floury" types, but the most commonly known include russet, golden wonder, and red rascal potatoes. Butter, vegetable oil, milk and/or cream are usually added to improve flavor and texture, and the potatoes are seasoned with salt, pepper, and any other desired herbs and spices. Popular ingredients and seasonings include: garlic, cheese, bacon bits, sour cream, crisp onion or spring onion, caramelised onion, mayonnaise, mustard, horseradish, spices such as nutmeg, and chopped herbs such as parsley.

One French variation adds egg yolk for pommes duchesse or Duchess potatoes; piped through a pastry tube into wavy ribbons and rosettes, brushed with butter and lightly browned. Pomme purée (potato puree) uses considerably more butter than normal mashed potato - up to one part butter for every two parts potato. In low-calorie or non-dairy variations, milk, cream and butter may be replaced by soup stock or broth. Aloo Bharta, an Indian sub-continent variation, uses chopped onions, mustard (oil, paste or seeds), chili pepper, coriander leaves and other spices.

Mashed potato can be served as a side dish, and is often served with sausages in the British Isles,
Mashed potato served with Frankfurter Rippchen,
sauerkraut and mustard
where they are known as bangers and mash. Mashed potato can be an ingredient of various other dishes, including shepherd's and cottage pie, pierogi, colcannon, dumplings, potato pancakes, potato croquettes and gnocchi. Particularly runny mashed potatoes are called mousseline potatoes.

In the United Kingdom, the cold mashed potato is mixed with fresh eggs and then fried until crisp to produce the potato cake. This dish is thought to have originated in Cornwall and is a popular breakfast item. When instead combined with meat and other leftover vegetables, the fried dish is known as bubble and squeak.

A popular accompaniment to mashed potatoes in the United States is gravy. The most common forms of gravy paired with mashed potatoes are beef gravy or turkey gravy, though vegetable gravy is becoming more common as the vegetarian and vegan trends see a rise in popularity.

A potato masher is a utensil which can be used to prepare the potatoes, as is a potato ricer. They may also be whipped with an electric hand mixer, or with sufficient boiling, can be mashed effectively with a durable wooden spoon and brute force.

Fried Walleye Fillet w/ Roasted Asparagus and Baked Potato

Dinner Tonight: Fried Walleye Fillet w/ Roasted Asparagus, Baked Potato, and Baked Garlic Bread Loaf

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin that I lightly Buttered with I Can't Believe Its Not Butter. I also had my morning cup of Bigelow Decaf Green Tea. After Breakfast i went to Walmart for a few items and went to their Garden Center also. I stopped at McDonald's and picked up Breakfast for Mom. Outside had rain early and then partly sunny and 85 degrees. After Lunch I finished repotting some Pepper Plants and Herb Plants I had bought at Walmart. We finally got the shed cleaned out and organized! Now I have all kinds of room for storage and work. For Dinner tonight I prepared Fried Walleye Fillet w/ Roasted Asparagus and Baked Potato.

While at Meijer the other day I bought a couple of fillets of Walleye. I first rinsed the fillets in cold water and patted them dry with paper towel. Then to prepare them I seasoned them with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillets in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried them in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

For one side dish I prepared Roasted Asparagus for one side. To prepare the Asparagus I just needed Extra Virgin Olive Oil, Cloves Roasted Asparagus Garlic (minced), Sea Salt, Freshly grated Black
Pepper, Lemon Juice, and Shredded Parmesan Cheese. Rinse clean the asparagus. Break the tough ends off of the asparagus and discard. Lay the asparagus spears out in a single layer in a baking dish or a foil-covered roasting pan. Drizzle olive oil over the spears, roll the asparagus back and forth until they are all covered with a thin layer of olive oil. (Alternatively you can put the asparagus and oil in a plastic bag, and rub the bag so that the oil gets evenly distributed.) Sprinkle with minced garlic, salt, and pepper. Rub over the asparagus so that they are evenly seasoned. Place pan in oven and cook for approximately 8-10 minutes, depending on how thick your asparagus spears are, until tender when pierced with a fork. Drizzle with a little fresh lemon juice and shredded Parm Cheese before serving.

For another side I prepared a Baked Potato. Seasoned that with the McCormick Grinder Sea Salt and Peppercorn Medley, and topped with I Can’t Believe It’s Not Butter. I had also baked a loaf of RiverRoad Bake House Multi Grain Oval Loaf Bread. This has became the family’s favorite Baked Bread. For Dessert later a Jello Sugar Free Dark Chocolate Pudding Cup.

Tempura Shrimp and Baked Potato

Dinner Tonight: Tempura Shrimp and Baked Potato

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea, not much of an appetite this morning. After Breakfast I headed out to Meijer, just needed a few items. Stopped by McDonald's and picked up Breakfast for Mom and Dad. I've had a nagging Sinus Headache since yesterday so I took it easy this afternoon. For Dinner tonight I prepared Tempura Shrimp and Baked Potato.

I came across the SeaPak Tempura Shrimp at Meijer in the Frozen Food Aisle. I love using the
SeaPak Seafood Products, first time trying the Tempura Shrimp. As all their products its easy to prepare. First I preheat oven to 400°f. Arranged the frozen shrimp in single layer on a small baking sheet covered with foil and sprayed with Pam Non Stick Cooking Spray. I baked the Shrimp for 18 minutes, turned the shrimp over after 6 minutes.

The Shrimp came out with a great Tempura Crust and the Shrimp was delicious! Love the crunchiness and the Shrimp was so tasty. I'll have to keep a box of these in the freezer. Served it with a side of Heinz Shrimp Cocktail Sauce.

To go with the Shrimp I prepared a Baked Potato. I took a medium - sized Russet Potato and grabbed
a knife and made small punctures all around the Potato. Put the Potato in a Microwavable Bowl and cooked for 7 minutes and 20 seconds on high heat. Served the Potato Seasoned with McCormick Grinders of Sea Salt and Peppercorn Medley and I Can't Believe It's Not Butter. Love a good Potato! For Dessert later a bowl of Skinny Pop - Pop Corn and a Diet Peach Snapple to drink.

Bison Chopped Sirloin Steak w/ Sauteed Mushrooms and Baked Potato

Dinner Tonight: Bison Chopped Sirloin Steak w/ Sauteed Mushrooms and Baked Potato

To start my morning off I had Steak and Eggs. I love these SayersBrook 4 oz. Bison Filet Mignon! I had used my last one a couple of weeks ago and had ordered more of them that came in yesterday. So to prepare it I just seasoned it with some McCormick Grinder Sea Salt and Peppercorn Medley. I then grabbed a small skillet, sprayed it with Pam Cooking Spray, and added a 1/2 tablespoon of Extra Light Olive Oil. Heated it on medium heat. Fried the first side 3 minutes and flipped it over and cooked it another 2 minutes. It came out a perfect medium rare! It was so tender and juicy.  Then I also fried up a Sunny Side Egg and toasted a couple of slices of Healthy Life Whole Grain Bread. Sure tough to beat a Steak and Egg Breakfast! Also as usual, had my morning cup of Bigelow Decaf Green Tea.

Another cool morning out there, 32 degrees and a few snow flakes. We only had a high in the low
40's. Mom went to Church and I stayed home to keep an eye on Dad. His Dementia is getting worse everyday. I feel so sorry for him. So for Dinner it was a Bison Chopped Sirloin Steak w/ Sauteed Mushrooms and Baked Potato.

For Dinner tonight it’s the always delicious SayersBrook Ranch Bison Chopped Sirloin Steak. I love this Chopped Steak. To start I preheated the oven on 400 degrees. To prepare it I’ll need McCormick Grinder Sea Salt and  Peppercorn Medley, McCormick Crushed Rosemary, and McCormick Thyme Leaves (all seasoning to taste). I got the Cast Iron Skillet out to prepare it. I first sprayed it with a very light coat of Pam Cooking Spray and then added a tablespoon of Extra Light Olive Oil. Heated it on medium heat. When the pan was heated I added the Chopped Steak. I cooked each side 2 minutes. Then finished it in the oven, at 400 degrees for 7 minutes. It cooked up beautifully, perfect medium rare! Had a nice little char on the outside and moist and juicy inside. These are so tender you could slice them with a spoon and have an excellent taste to them. Another very good item from SayersBrook Ranch!

I topped the Chopped Steak with some A-1 Sauce Thick/Hardy. Also cooked up some Sauteed Mushrooms.

For a side I prepared a Baked Potato. Seasoned that with the McCormick Grinder Sea Salt and
Peppercorn Medley, and topped with I Can’t Believe It’s Not Butter. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

SayersBrook Ranch Bison Chopped Sirloin Steak

If you like the flavor of the sirloin, love the Bison Burger but want to take it up a notch, then the Chopped Sirloin Steak is for you! 4 lbs (4 packages each with 2-8oz chopped sirloin steaks).
Great flavor of the sirloin but also extremely tender and juicy.

Orange Roughy Fish Hoagie w/ Baked Potato

Dinner Tonight: Orange Roughy Fish Hoagie w/ Baked Potato

It was Gravy and Toast this morning for Breakfast. I prepared a packet of Pioneer Peppered White Gravy and toasted a couple slices of Aunt Millie's Whole Grain Bread. Also had a cup of my favorite Tea, Bigelow Decaf Green Tea. Warmer and a little more humid out today. A little more like our normal June/July weather. Did a couple of loads of laundry and then off to Walmart for a few items. Stopped and had the car washed on the way back home. Other than that not much else going on. For Dinner tonight an Orange Roughy Fish Hoagie w/ Baked Potato.

I had picked up the Orange Roughy at Kroger a while back and had a fillet left in the freezer. I normally don’t purchase Orange Roughy due to its sustainability classification. But it was in the case already packaged and I grabbed it. So to make it I’ll need; the Orange Roughy Fillet, McCormick Grinder Sea Salt and Peppercorn Medley, Flour, egg Beater's (1/2 cup), Paprika, and Shake and Bake Panko Bread Crumbs. I’ll also need McCormick Tarter Sauce and Kroger 100% Whole Wheat Hoagie Roll.

I had laid the Roughy in the fridge overnight to thaw. To prepare it I first rinsed the fillet off in cold
water and patted dry with a paper towel. I then grabbed a skillet and sprayed it with Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Then preheated the skillet on medium heat. Back to the fillet, I seasoned both sides of the fillet with McCormick Grinder Sea Salt and Peppercorn Medley. Then in a pie pan I added some Flour and seasoned it with some Paprika. Rolled the Roughy in the Flour till was completely covered. Next in another pie pan I added a 1/2 cup of Egg Beater's and dipped the fillets in the Egg Wash, shaking off the excess. Finally the third pie pan, I added a package of Shake and Bake Panko Seasoned Bread Crumbs to it and put the fillet in, making sure the fillet was well covered.

With the skillet heated I added my fillets. I then fried it for 3 minutes per side. It fried up perfect!
Golden Brown on the outside and a moist center. I served it on a Kroger Whole Grain  Hoagie Roll. Topped the Roughy fillet with some McCormick Tarter Sauce. Orange Roughy makes a perfect Fish Sandwich. Fries up great and an excellent taste to it.

For a side I prepared a Russet Baked Potato. Seasoned that with the McCormick Grinder Sea Salt and Peppercorn Medley, and topped with I Can’t Believe It’s Not Butter. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Dinner Tonight: Bison Chopped Sirloin Steak w/ Sauteed Mushrooms and Baked Potato

To start the morning off I toasted a Healthy Life Whole Grain English Muffin and I reheated a 1/2
piece of a Cubed Steak (Beef). And I had a Breakfast Sandwich. Mom had prepared the Cubed Steak the night before and had one leftover. I also had a cup of Bigelow Decaf Green Tea. After Breakfast I started a load of laundry for Mom and then it was on to house cleaning, vacuumed and dusted. Later on repotted a couple more of plants for Mom. Got the cart out and took a spin around the neighborhood. It's 77 degrees and sunny, beautiful out today! For Dinner it was a Bison Chopped Sirloin Steak w/ Sauteed Mushrooms and Baked Potato.

One of America's Favorites - The Baked Potato

A baked potato with butter

A baked potato, or jacket potato, is a potato that has been baked for eating. When well cooked, a baked potato has a fluffy interior and a crisp skin. It may be served with fillings and condiments such as butter, cheese or ham. Potatoes can be baked in a conventional gas or electric oven, a convection oven, a microwave oven, on a barbecue grill, or on/in an open fire. Some restaurants use special ovens designed specifically to cook large numbers of potatoes, then keep them warm and ready for service.

Prior to cooking, the potato should be scrubbed clean, washed and dried with eyes and surface blemishes removed, and basted with oil (usually Olive oil) or butter and/or salt. Pricking the potato with a fork or knife allows steam to escape during the cooking process. Potatoes cooked in a microwave oven without pricking the skin might split open due to built up internal pressure from unvented steam. It takes between one and two hours to bake a large potato in a conventional oven at 200 °C (392 °F). Microwaving takes from six to twelve minutes depending on oven power and potato size, but does not generally produce a crisp skin. Some recipes call for use of both a microwave and a conventional oven, with the microwave being used to vent most of the steam prior to the cooking process.

Some varieties of potato such as Russet and King Edward potatoes are more suitable for baking than others, owing to their size and consistency.

Wrapping the potato in aluminium foil before cooking in a standard oven will help to retain moisture, while leaving it unwrapped will result in a crisp skin. When cooking over an open fire or in the coals of a barbecue, it may require wrapping in foil to prevent burning of the skin. A potato buried directly in coals of a fire cooks very nicely, with a mostly burned and inedible skin. A baked potato is fully cooked when its internal temperature reaches 99 °C (210 °F).

Once a potato has been baked, some people discard the skin and eat only the softer and moister interior, while others enjoy the taste and texture of the crisp skin. Potatoes baked in their skins may lose between 20 and 40% of their vitamin C content because heating in air is slow and vitamin inactivation can continue for a long time. Small potatoes bake more quickly than large ones and therefore retain more of their vitamin C. Despite the popular misconception that potatoes are fattening, baked potatoes can be used as part of a healthy diet.

Baked potato and sweet potato, with kale

Some people bake their potatoes and then scoop out the interior, leaving the skin as a shell. The white interior flesh can then be mixed with various other food items such as cheese, butter, or bacon bits. This mixture is then spooned back into the skin shells and they are replaced in the oven to warm through. In America these are known variously as loaded potato skins, filled potatoes and twice baked potatoes. In Great Britain, toppings or fillings tend to be more varied than they are in America: baked beans, curried chicken, tuna, and prawn fillings are popular, and in Scotland even haggis is used as a filling for jacket potatoes.

A variation is Hasselback potatoes, where the potato is cut into very thin slices almost down the bottom, so that the potato still holds together, and is then baked in the oven, occasionally scalloped with cheese. The proper noun "Hasselback" refers to the luxurious Hasselbacken hotel and restaurant in Stockholm which originated this dish.

Many restaurants serve baked potatoes with sides such as butter, sour cream, chives, shredded cheese, and bacon bits. These potatoes can be a side item to a steak dinner, or some similar entree. Sides are usually optional and customers can order as many or as few as they wish.

Large, stuffed baked potatoes may be served as an entree, usually filled with meat in addition to any of the ingredients mentioned above. Barbecued or smoked meat or chili is substituted. Vegetables such as broccoli may also be added.

Idaho is the major producing state of potatoes. The Idaho baked potato was heavily promoted by the Northern Pacific Railroad in the early 20th century, often using Hollywood movie stars.

Hazen Titus was appointed as the Northern Pacific Railway's dining car superintendent in 1908. He
A baked potato with shrimp, cottage cheese, dill, tomato and lettuce
talked to Yakima Valley farmers who complained that they were unable to sell their potato crops because their potatoes were simply too large. They fed them to hogs. Titus learned that a single potato could weigh from two to five pounds, but that smaller potatoes were preferred by the end buyers of the vegetable and that many considered them not to be edible because they were difficult to cook because of their thick, rough skin.

Titus and his staff discovered the "inedible" potatoes were delicious after baking in a slow oven. He contracted to purchase as many potatoes as the farmers could produce that were more than two pounds in weight. Soon after the first delivery of "Netted Gem Bakers", they were offered to diners on the North Coast Limited beginning in 1909. Word of the line's specialty offering traveled quickly, and before long it was using "the Great Big Baked Potato" as a slogan to promote the railroad's passenger service. When an addition was built for the Northern Pacific's Seattle commissary in 1914, reporter wrote, "A large trade mark, in the shape of a baked potato, 40 ft.long and 18 ft. in diameter, surmounts the roof. The potato is electric lighted and its eyes, through the electric mechanism, are made to wink constantly. A cube of butter thrust into its split top glows intermittently." Premiums such as postcards, letter openers, and spoons were also produced to promote "The Route of the Great Big Baked Potato"; the slogan served the Northern Pacific for about 50 years. The song "Great Big Baked Potato" (words by N.R. Streeter and H. Caldwell ; Music by Oliver George) was written about this potato.

Shrimp Poppers w/ Baked Potato

Dinner Tonight: Shrimp Poppers w/ Baked Potato

I had a bowl of Cheerios's for Breakfast along with the morning cup of Bigelow Decaf Green Tea.
The heavy rains have finally stopped, just a light shower for the day! But more rain coming back in over the weekend they say. After Breakfast I headed out Grocery Shopping. I first stopped at Meijer for all my items and then on to Kroger for a few items for Mom. Feels good to get out again! Between the heat and humidity and all the rain of late I haven't been out a lot. I can't believe August is almost over, the Summer really flew by! So for Dinner tonight its Shrimp Poppers w/ Baked Potato.

I wanted something light and easy to prepare for tonight, Shrimp Poppers w/ Baked Potato. So I put the microwave to use for the Potato and the oven for the Shrimp. It doesn't get much easier than that!

I used SeaPak Shrimp Poppers. To prepare them I heated up the oven on 425°f. Arranged the frozen shrimp in single layer on baking sheet. Baked them for 12 minutes (until golden brown). I turned the shrimp over after 5 minutes. When done let them cool for 3 minutes. Love these Shrimp, nice flavor and just the right amount of breading. Served them with some Heinz Cocktail Sauce, perfect for any seafood.

For a side I prepared a Baked Potato. I seasoned it with McCormick Grinder Sea Salt and Peppercorn
Medley, topped it with I Can’t Believe It’s Not Butter. For dessert later a Weight Watcher's Cookies and Cream Ice Cream Bar.

Bourbon Glazed Chicken w/ Baked Potato and Cut Green Beans

Dinner Tonight: Bourbon Glazed Chicken w/ Baked Potato and Cut Green Beans

Really enjoyed Breakfast this morning!  I had; toasted a couple of slices of Healthy Life Whole Grain
Bread, 2 links of Jennie - O Turkey Breakfast Sausage Links, and a Poached Egg. To poach the egg I use a an Egg Poacher my Mom bought before I was born. You can't poach a bad egg in it and easy clean up afterwards. Just crack an Egg into 1 of the cups, add water to the base, and heat on high. When you see a wisp of steam coming out set a timer for 3 minutes and you have the perfect Poached Egg! Love that old Poacher! A bit cooler out today and windy, but mostly sunny until later in the day. Had to take dad over the Dentist, he's having new false teeth made and long over due. So for dinner tonight I prepared a new item PERDUE® Bourbon Glazed Chicken Breast Chunks. Tonight it's Bourbon Glazed Chicken w/ Baked Potato and Cut Green Beans.

I tried a new (new for me) Perdue Chicken Product for Dinner, PERDUE® Bourbon Glazed Chicken
Breast Chunks. As all the Perdue products it's easy to prepare. Preheated the oven to 375°F. Sprayed a baking sheet with Pam Cooking Spray and placed the frozen Chicken pieces in single layer on the baking sheet. Baked on the middle over rack for 25 minutes, until heated through. Turned the pieces halfway through heating time. I've got another Perdue Chicken Product that makes a delicious dinner! The Bourbon Glaze is outstanding. Thick and spicy, but over powering. Another Item to have in the freezer!

For one side I baked a Russet Potatoes. I seasoned it with McCormick Grinder Sea Salt and Peppercorn Medley. Topped it with I Can’t Believe It’s Not Butter. Then I also heated up a small can of Del Monte Cut Green Beans. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Buffalo 10 oz. New York Strip Steak w/ Baked Potato and Cut Green Beans

Dinner Tonight: Buffalo 10 oz. New York Strip Steak w/  Baked Potato and Cut Green Beans

It was a Poached Egg, Healthy Life Whole Grain English Muffin, and a cup of Bigelow Decaf Green
Tea. They said high's would be in the mid 50's but I don't think we reached that today. Mostly cloudy and windy out today. Swept up outside on the driveway and out on the wooden deck. Then back inside it was laundry and some light cleaning. Then I repaired a wheelchair that I keep out in my car trunk, just tightened everything up. For dinner tonight I prepared a Buffalo 10 oz. New York Strip Steak w/ Baked Potato and Cut Green Beans.

They had the Wild Idea Buffalo 10 oz. New York Strip Steak on sale last week so I purchased 3 of
them. So I grabbed one out of the freezer last night and let it thaw in the fridge overnight. What beautiful cuts of Buffalo these Steaks are. To prepare it all I’ll need is McCormick Grinder Sea Salt and Peppercorn Medley, Dried Rosemary, and Extra Virgin Olive Oil. I started by preheating a Cast Iron Skillet on medium high. Then rubbed a very light coat of the Extra Virgin Olive  Oil on both sides of the Steak then seasoned both sides with the Rosemary, Sea Salt and Peppercorn. Once the skillet is hot I added the Steak let it sear on the high heat for about 4 1/2 minutes. Then turned it once and cooked for 4 1/2 more minutes then into a preheated oven (400 degrees) to a perfect medium rare. The Steak is a thick cut so I had to cook it longer than normal. Served it with some Sauteed Mushrooms. These Steaks are every bit as delicious as they look! The taste is so fresh and has a slight sweet Grass Fed Buffalo taste to it. Moist and tender and so delicious! You just can’t beat these Wild Idea Buffalo Steaks, Bison or Beef. The Steak was plenty big so I saved some it for my Breakfast in the morning.

For a side dish I baked a Russet Potatoes. I seasoned it with McCormick Grinder Sea Salt and
Peppercorn Medley. Topped it with I Can’t Believe It’s Not Butter. Then I also heated up a small can of Del Monte Cut Green Beans. For dessert later a Jello Sugar Free Dark Chocolate Mousse.
