Kitchen Hint of the Day!

Grilling Fish........

Keep the skin on; it will help prevent your fish from falling apart. Then when grilling a filet with skin, grill the flesh side first for 70% of the total cooking time, and then flip it to the skin side for the   remainder of the time.

Kitchen Hint of the Day!

Pass the Corn Flakes please............

For added crunch with fewer calories, use cornflakes instead of breadcrumbs to coat fish fillets. Not only do cornflakes contain fewer calories than breadcrumbs, they are less absorbent and give a lighter covering, so the fish will soak up less oil.

Walnut Crusted Baked Salmon w/ Long Grain and Wild Rice

Dinner Tonight: Walnut Crusted Baked Salmon w/ Long Grain and Wild Rice

For Breakfast I prepared some Simply Potato Shredded Hash Browns, a couple of Johnsonville
Turkey Breakfast Sausage Links, toasted a slice of Aunt Millie's Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. A beautiful day out today, 79 degrees and sunny! I had to buy new batteries for my cart I keep in the shed. So today I installed the new batteries and it was job! Had to remove the seat to get to everything. Finally got them changed but it was tough. Took a ride around the neighborhood and enjoyed the beautiful weather. For Dinner tonight its a Walnut Crusted Baked Salmon w/ Long Grain and Wild Rice.

I purchased the fresh Atlantic Salmon from the Kroger Seafood Department. I had it in the freezer and let it thaw overnight in the fridge. I’m going to prepare it using the Walnut Crusted Baked Salmon recipe. I haven’t had Salmon or used this recipe in a while. To make I’ll need; Salmon Fillets (4 ounces each), 4 teaspoons Dijon Mustard, 4 teaspoons Honey, 2 slices Whole Grain Bread (torn into pieces), 3 tablespoons finely chopped Walnuts, 2 teaspoons Extra Light Olive Oil, and 1/2 teaspoon Dried Thyme. To prepare it; Start by preheating the oven to 400°. Place the Salmon on a baking sheet coated with Pam cooking spray. Mix the Mustard and Honey; brush over the Salmon. Next I placed the Bread in a food processor; pulse until coarse crumbs form. Transfer to a small bowl. Stir in Walnuts, Olive Oil and Thyme; press it onto the Salmon Fillet.

Bake 12-15 minutes or topping is lightly browned and fish just begins to flake easily with a fork. The
Salmon came out perfect, moist and delicious. The Walnut Crust is perfect for the Salmon. The Walnuts, Honey, Dijon Mustard, Thyme, and fresh Bread Crumbs all combine perfectly. Love this recipe.

I also prepared a packet of Uncle Ben’s Ready Rice Long Grain and Wild. It comes in a microwavable bag. I microwaved it for 90 seconds and done! I guess my favorite among the Uncle Ben’s Ready Rice, all though I love using them all. An easy to fix item, just microwave for 90 seconds and it’s ready. I love Rice and it pairs with Fish perfect. For Dessert/Snack later a bowl of Skinny Pop - Pop Corn and a Diet Peach Snapple to drink.

Cajun Rainbow Trout w/ Hash Browns and Green Beans

Dinner Tonight: Cajun Rainbow Trout w/ Hash Browns and Green Beans

For Breakfast it was Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Reduced Fat Cheddar/Jack Cheese. Just love this skillet meal! Partly cloudy and 60 degrees out today. After Breakfast I went and picked up Breakfast for Mom, after eating Mom went on to Church. Did some cleaning outside around the shed then grabbed the leaf blower and cleaned off the deck and drive way areas. Later on went and got my car washed and vacuumed the inside. For Dinner tonight I prepared a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

I had purchased some Rainbow Trout Fillet at Kroger and had it in the freezer. So I it out of the
freezer and let it thaw overnight in the fridge. To prepare it all I’ll need is; 1 Rainbow Trout Fillet, 1 teaspoons Extra Virgin Olive Oil, 1 Teaspoon Zatarain’s Creole Seasoning, and 1 Teaspoon chopped Parsley Flakes. To prepare it I preheated the broiler. Patted the fillets dry and lightly brush both sides with oil. Sprinkled both sides evenly with Cajun seasoning. Placed skin side down on broiler rack and broil 4-6 inches from heat for 5 minutes or until the Trout flakes easily when I tested it with a fork. You can add a Lemon Wedge with it if you like. Excellent recipe, you have the fresh taste of the Trout along with all the flavor from the Creole Seasoning!

Then for one side I prepared some Simply Potatoes Hash Browns. Fried in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. I love Hash Browns, they make the perfect side for any Dish! I also heated up a can of Del Monte Cut Green Beans. For Dessert later a bowl of Del Monte Sliced Peaches.

Seasoned Haddock w/ Mac and Cheese

Dinner Tonight: Seasoned Haddock w/ Mac and Cheese

For Breakfast this morning I Scrambled a couple of eggs, toasted 2 slices of Aunt Millie's Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. Partly sunny and 74 degrees, rain and thunderstorms moving in toward evening. Had the other half of the outside deck painted, looks great. Went to Meijer Lawn and Garden and picked up another bag of the dark Mulch. Ran a little short of Mulch for around the tree out front. Got the front and side yards looking good! Next is the back yard flower bed and replacing some skirting around the back of the shed. For Dinner tonight I prepared Seasoned Haddock w/ Mac and Cheese.

Had not had Haddock in a while and it sounded good! I had purchased the Haddock from Kroger a couple of weeks ago and had them in the freezer. I sat the bag of them in the fridge overnight to thaw. I had already rinsed the fillets off in cold water  and cut the fillets in half before I froze them. So to prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until the pieces were well coated. Shook off the excess and pan fried them in Extra Light Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love Haddock it cooks up so nicely and I love the flavor and how meaty it is.

Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac
Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

Kitchen Hint of the Day!

Leave the Salmon skin on.............

So when you're cooking salmon, keep that skin on: It provides a safety layer between your fish's flesh and a hot pan or grill. Start with the skin-side down, and let it crisp up. It's much easier to slide a fish spatula under the salmon's skin than under its delicate flesh.

Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Corn Bread

Dinner Tonight: Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Corn Bread

For Breakfast I toasted a couple of slices of Aunt Millie's Light Whole Grain Bread and topped them with some Smucker's Sugar Free Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. Rough morning and afternoon, Ive had a bad Sinus Headache all day. Did a lot of resting and that was it. For Dinner tonight its Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Corn Bread.

I had purchased some Catfish Nuggets from Kroger. To prepare them I rinsed the Catfish Nuggets off
in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty.

For one side we had Fried Potatoes! I’ve loved these all my life and my Mom makes the best! I
bought a bag of Medium Size Red Potatoes, which we’ll be using. To prepare them; first wash the Whole Potatoes and dry with a paper towel. Next grab a Cast Iron Skillet and add 1 tablespoon of Extra Light Olive Oil and heat the Skillet on high.

With the skillet heated add the Potatoes. After adding the Potatoes add your Seasoning, we just used Salt and Pepper. Then fry until the Potatoes start to turn brown. Then flip them with a spatula and continue frying until done. I love these Potatoes and they are so easy to prepare.

Then I also heated up a can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and
heat until heated through.

I also made a small Cast Iron Skillet of Corn Bread, for Mom, using Martha White White Corn Meal.
First Corn Bread I’ve made in a while and it’s just as good as it always was! What a meal  Fried Catfish, Fried Potatoes, Green Beans, and Corn Bread. Then for Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Catfish
The most commonly eaten species in the United States are the channel catfish and the blue catfish,
both of which are common in the wild and increasingly widely farmed. Farm-raised catfish became such a staple of the diet of the United States that on 25 June 1987, President Ronald Reagan established National Catfish Day to recognize “the value of farm-raised catfish.”

Catfish is eaten in a variety of ways. In Europe it is often cooked in similar ways to carp, but in the United States it is popularly crumbled with cornmeal and fried.… Wikipedia
