For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. Another restless and sleepless night fighting with Phantom Pains. That's twice this week I've had to deal withe Phantom Pains, twice too many! When I have these overnight it wipes my day out the next day. Outside it's a hot one, 98 degrees with a heat index around 104. So not much going on outside today. So not much going on , even in the Kitchen. So the Kitchen is closed today and it’s Izzy’s Lean -Lean Corned Beef on Whole Grain and Ruffle’s Reduced Fat Potato Chips.





I would put Izzy’s Corned Beef up against any other. Plus with their “Lean’ version of the Corned
Beef it makes it healthier also. The sandwich contains 170 calories and 16 carbs per serving (1/2 Sandwich) and 340 calories and 32 carbs for a Full Sandwich. I had the Full, as usual, along with a serving of Ruffle’s Reduced Fat Potato Chips and their 80 calories and 17 carbs per serving. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn along with a Diet Dr. Pepper to drink.

Ingredients
Ingredients:

1 (8-oz.) low-fat cream cheese, softened
2 T. instant minced onion
1/2 c. pecans, chopped (optional)
2 T. fresh green pepper, chopped
1/2 c. low-fat sour cream
2 T. skim milk
3 oz. Bison pastrami, finely chopped
1/2 tsp. white pepper


Instructions
1 - Combine all ingredients and put into 1 quart casserole dish.
2 - Bake in preheated 350° oven for 20 minutes, or until edges are bubbly.
3 - Serve with crackers or Melba toast.
Notes
Leftovers may be served cold.

Chicken Sausage Breakfast Sandwich w/ Hash Browns

For Breakfast this morning I just had a cup of Bigelow Decaf Green Tea. It was one of those long
nights dealing with Phantom Pains. They started last night around 10:00 and didn't finally let up till around 9:00 this morning. I had to be up early anyway I had to have Mom to the Eye Doctor for a follow up on her cataracts removal. She's already seeing better and the Doc said everything looked fine! The heat wave has started back up! 92 degrees and humid, the heat index is around 101 degrees! I was going to start the touch-up painting on the shed and shutters but just too tired to do it today. Spent the the day catching up on some sleep. For Dinner tonight its a Chicken Sausage Breakfast Sandwich w/ Hash Browns



It's my 3rd day of Breakfast for Dinner Meals. I made a Breakfast Sandwich using; a toasted Healthy Life Whole Grain English Muffin and lightly fried a al fresco Country Style Chicken Sausage Breakfast Patty. I topped it with a 1/2 slice of Kraft Deli Deluxe Sharp Cheddar Cheese.










To prepare the Chicken Sausage Patty; The Patties are fully cooked so all you have to do is reheat them. I used a small skillet, sprayed it with Pam Non Stick Cooking Spray, and heated it on medium heat. Added the Patty to the heated skillet and cooked it for 6 minutes a side. Easy to prepare and delicious! These have such a good taste to them. They're seasoned with Sage and Thyme. They also have some that are Maple Flavored but these are my favorites!






As the Sausage was cooking I toasted a Healthy Life Whole Grain English Muffin. I love using these by their self, Breakfast Sandwiches, Muffin Pizzas, and much more! They're 100 calories and 16 net carbs per Muffin. I served the Chicken Sausage Patty on the Muffin and topped it with a 1/2 slice of Cheese.










To go with my Dinner/Breakfast Sandwich I prepared some Simply Potatoes Shredded Hash Browns. To prepare these I took a small skillet, sprayed it with Pam Cooking Spray, added a tablespoon of Extra Light Olive Oil, and heated the skillet. Add potatoes to skillet; Cook 6-7 minutes, or until golden brown on the bottom. Drizzle with an additional 1/4 tbsp Extra Light Olive Oil. Turn potatoes over with a spatula. Continue to cook 6-8 minutes, and done! I sprinkled some Sargeto Reduced Fat Shredded Sharp Cheese over top of them to serve. Really enjoy these Breakfast/Dinners! For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Teriyaki Turkey with Brown Rice
Trade out the take-out! This Teriyaki Turkey with Brown Rice is an Asian inspired dish that will take your taste buds for a delicious ride.

INGREDIENTS
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
1 tablespoon olive oil
¾ cup chopped green onions
2 garlic cloves, minced
1 tablespoon grated ginger
½ cup shredded carrots
½ red bell pepper, sliced
2 cups broccoli florets
¼ cup plus 1 tablespoon Teriyaki Sauce
1 tablespoon Low-Sodium Soy Sauce
3 cups cooked brown rice

DIRECTIONS
1) Cook ground turkey in olive oil as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.

2) Add to the cooked turkey, green onions, garlic, ginger and cook 3 minutes. Stir in carrots, peppers, broccoli, teriyaki and soy sauce. Cook until broccoli is crisp tender. Serve over brown rice.

Flatiron Turkey Burger

Skillet Potatoes and Ham with a Sunny Side Up Egg

Dinner Tonight: Skillet Potatoes and Ham with a Sunny Side Up Egg




For Breakfast this morning I made a Breakfast Sandwich using; a toasted Healthy Life Whole Grain
English Muffin, lightly fried an al fresco Country Style Chicken Sausage Breakfast Patty, And had a cup of Bigelow Decaf Green Tea. After Breakfast I went to Menard's to pick up a small can of Black Paint and then to Kroger and picked up a couple of Donuts for Mom, she wanted Coffee and Donuts for her Breakfast. I needed the paint to touch up the trim of the shed and to touch up a couple of the shutters around the house. A bit hotter and more humid today, 88 degrees and sunny. For Dinner tonight I prepared a Skillet Potatoes and Ham with a Sunny Side Up Egg.




The 2nd day of Breakfast for Dinner tonight. Skillet Potatoes and Ham for Breakfast, I mean Dinner! I'll need; 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes, a package of Meijer Diced Ham, 1 Egg, Morton's Lite Salt, Ground Black Pepper,  Sargento Reduced Fat Shredded Sharp Cheddar Cheese, Pam Non Stick Cooking Spray, and Extra Light Olive Oil.








To start I got a large skillet and sprayed it with Pam and added 2 tablespoons of Extra Light Olive
Oil, heated it on medium heat. When the skillet was ready I added the package of the Simply Potatoes Steakhouse Seasoned Diced Potatoes. I lightly seasoned them with the Salt and stirred. Put the lid on the skillet and let them cook. Using a spatula, I turned them several times so they would cook evenly. Cooked a total of 15 minutes. With about 3 minutes of cooking time left I added the package of Meijer Diced Ham. Stirred and finished the cooking of the Potatoes. When done put them in a large bowl and set it aside.



As the Potatoes and Ham were finishing I got a small skillet sprayed it with Pam and added a 1/2 tablespoon of Extra Light Olive Oil, heated it on medium heat. When the skillet was heated I added the Egg. Seasoned it with Salt and Pepper. I grabbed a teaspoon and scooped up some of the Olive Oil and poured it on top of the Yolk. Then put a lid over the skillet and cooked my Egg. Sunny Side Eggs always cook better with a lid over the skillet and a bit of the Oil over them when cooking them. It gives the Yolk a good finish.











To put the dish together I used a bowl and made a bed of the Potatoes and Ham, seasoned them with a little of the Salt. Sprinkled some Sargento Reduced Fat Shredded Sharp Cheddar Cheese on top and then added the Sunny Side Egg. Time to Eat! I love the combo of Potatoes and Ham! Then with Egg topping it off it gave great flavor and tied the dish together. Excellent Dinner tonight. For Dessert/Snack later a bowl of Skinny Pop - Pop Corn with a Diet Tropa - Rock - A Snapple to drink.

Remember never to freeze baked goods while they are still warm. Moisture condenses on the outside. The interior dries out, but the surface turns gummy when the item is thawed.

Biscuits and Gravy w/ Turkey Breakfast Sausage Links

Dinner Tonight: Biscuits and Gravy w/ Turkey Breakfast Sausage Links






To start my morning I toasted a couple of slices of Aunt Millie's Light Whole Grain Bread and  Scrambled some Egg Beater's Egg Whites that I topped with a few shakes of Ortega Chipotle Taco
Sauce and Sargento Reduced Fat Shredded Sharp Cheddar Cheese. I also had my morning cup of Bigelow Decaf Green Tea. Mom had the cataract taken off her left eye this morning. Mom's cousin went with her for this one. So after Breakfast I headed off to Kroger for a few items for myself and Mom. Back home I got the leaf blower out and cleaned off the deck and driveway areas. Later did a load of laundry and cleaned the house. For Dinner tonight its Breakfast! I prepared Biscuits and Gravy w/ Turkey Breakfast Sausage Links.




I think I'm going with a Breakfast Menu for the next 2 or 3 Dinners, it just sounds good! Time to mix it up a bit for Dinner. I'll be using Pioneer Peppered White Gravy Mix, Pillsbury Grands Junior Biscuits, and Johnsonville Turkey Breakfast Sausage Links. I also had a glass of Kroger 2% White Milk to drink.








To make the Gravy I'm using a packet of my favorite Gravy, Pioneer Peppered White Gravy Mix. So easy to prepare and absolutely delicious! To prepare it I get a small sauce pan and give it a light spray
of Pam non Stick Cooking Spray w/ Olive Oil. I add a 1 1/2 cups of Cold Water to the pan and heat it on high to rolling boil. As that is heating up I preheated the oven for the Pillsbury Biscuits and I mixed the Gravy. In a measuring cup I added a 1/2 cup of Cold Water and then added the Gravy Mix to the Water and stirred until it smooth. When the Water was boiling I added the Gravy Mix. Turned down the heat a notch or two and started stirring the Mix and Water. Continued stirring until it started to thicken. Removed it from the heat and continued to stir it for about 30 seconds. I put the lid on the sauce pan and set it aside until I was ready to use it.


Time to bake the Pillsbury Grands Junior Biscuits! Took a small baking pan and sprayed a light coat of the Pam Cooking Spray on it. Added the Biscuits and popped the pan in the oven. I'm baking them 400áµ’ F for 10 minutes. And as all Pillsbury Biscuits, they came out perfect. Flaky, hot, and ready to serve. Put the Biscuits on a paper towel lined plate and covered them with a towel until ready to use.







Finally as the Biscuits were baking I prepared the Johnsonville Turkey Breakfast Sausage Links.Another delicious and easily prepared item. I buy these all the time, my favorite. I took a small skillet and sprayed it with the Pam Cooking Spray. Heated it on medium heat. Cooked them for 9 minutes, turning them several times. I love these Sausage Links! I prepared the whole package, Mom is having the Breakfast Dinner with me. Her surgery went great, now both eyes are done!






To serve everything, I got a bowl and added 2 Biscuits, topped them with the Gravy, and added a couple of the Sausage Links. Then chowed down! Everything is so good, Mom really enjoyed it she had not had Breakfast or Lunch. Also had a glass of 2% White Milk. For Dessert/Snack later a bowl of Skinny Pop - Pop Corn with a Diet Peach Snapple to  drink.

BEER BOTTLE BACON WRAPPED STUFFED BUFFALO BURGERS
My brother forwarded on a u-tube clip of the B.B.Q. Guys making Bacon Wrapped Beer Can Stuffed Burgers. For their recipe they used a half-pound of 80% lean ground beef, pork bacon, and then stuffed it with pulled pork, roast beef, and cheese! They had ribs grilling too, but that was just for snacking! No kidding.  I thought to myself, “heart attack” and, “I bet using Wild Idea Buffalo Bacon, and our 95% lean ground buffalo, that I could make a healthier, delicious version”.  Below are two options that I think you will really enjoy, and its Paleo friendly!

Ingredients for Meat: (makes 3 burgers)

1 – pound Wild Idea Buffalo Burger
6 – strips Wild Idea Buffalo Bacon
½ - teaspoon each salt & pepper
1 – tablespoon olive oil
1 – bottle beer

Preparation for Meat:

1)         Spread meat out onto a plate. Sprinkle the salt, pepper, and olive oil over the meat. Mix the seasoned meat together with your hands and portion into three even sized balls.

2)         Transfer the balls of buffalo meat to a platter. Press a beer bottle into the center of the portioned meat and bring the meat that squishes out to the sides, up the sides of the bottle uniformly.

3)         Wrap the meat with two pieces of Wild Idea Buffalo Bacon, overlapping the two pieces. Secure bacon with a couple of toothpicks.

4)         Remove beer bottle, and stuff with one of the fillings below, pressing in lightly.

5)         Pre-heat grill to medium high heat, around 450°. Insure grill grates are clean and oiled. Using a spatula transfer the burgers to the grill, turn the burners that they are directly under the burgers off, and drop the remaining lit burners that are to the sides or side of them to a medium low setting. This will drop your grill temperature to around 325°. Close lid and grill for about 12 minutes rotating burgers halfway through cooking. Move burgers over direct heat, and turn burner to high. Close lid and grill for about two minutes. Remove from grill and serve immediately.

I served the stuffed buffalo burgers with foil wrapped grilled potatoes, which kept all the hot cooking outside. Accompany with a green salad.

Filling Options:

Caramelized Vegetable and Mozzarella Stuffing(stuffs 3 burgers)

Ingredients:
8 – ounces crimmini mushrooms, steams removed and sliced
1 – medium sweet onion, chopped
2 – tablespoons butter
1 - tablespoon olive oil
½ - teaspoon each salt & pepper
2 – cloves garlic chopped
1/3 – cup julienned sun-dried tomatoes, chopped
4 – ounces mozzarella cheese, shredded

Preparation: 

1)         In a sauté pan over medium high heat, heat butter and olive oil. Add onions, mushrooms, salt, and pepper and sauté stirring occassionally, for about 25 minutes, or until nicely browned.

2)         Add the garlic cloves and sundried tomatoes, stirring in to incorporate. Continue cooking for another 5 minutes.

3)         Remove pan from heat and allow to come to come to room temperature.

4)         Once cooled off, stir in shredded mozzarella cheese.

This is sooo good, you will be sneaking bites out of the pan! :)

Mediterranean Stuffing:(stuffs 3 burgers)

Ingredients:
1 – cup chopped spinach
¼ - cup pepperoncini, chopped
¼ - cup kalamata olives, chopped
¼ - cup julienned sun-dried tomatoes, chopped
¼ - teaspoon each salt & pepper
5 – ounces feta cheese, crumbled

Preparation: Mix all ingredients in bowl to incorporate.

This too is super good too!

Baby Back Ribs w/ Mashed Potatoes and Mini Ears of Sweet Corn

Dinner Tonight: Baby Back Ribs w/ Mashed Potatoes and Mini Ears of Sweet Corn





For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin, Scrambled some egg Beater's Egg Whites, heated up 2 Johnsonville Turkey Breakfast Sausage links, and had my morning cup of Bigelow Decaf Green Tea. Rain and passing thunderstorms today with a high of 86 degrees. Did some house cleaning for part of the day. Then went out in the shed and replaced some shelf brackets, had a couple that were broke and the other ones were about to break. For Dinner Tonight; Baby Back Ribs w/ Mashed Potatoes and Mini Ears of Sweet Corn.



When having Ribs I usually make my Crock Pot Pork Back Ribs, I changed it up today. I've seen
Curly's Ribs advertised and in the stores forever but had never tried them before tonight's Dinner. I bought a package of the Curly's Baby Back Ribs from the local Kroger the other day. First thing I liked was that these are a lot easier and quicker to prepare.








To prepare them, it couldn't be easier; The package instructions - Heat the oven to 375 degrees F. Line a baking sheet with aluminum foil. Remove ribs from package and place on baking sheet; cover with foil. Bake 20-25 minutes.


I then I came across another way to bake them from the - Pass the Peas Please blog on blogspot, 
(http://passthegreenpeasplease.blogspot.com/2014/02/store-bought-favorite-curlys-hickory.html). Heat your oven to 300 degrees.  Line a rimmed cookie sheet with foil.  Place the ribs on the foil then cover the cookie sheet with foil.  Place in the oven and cook for 3 hours. I went with this way to preapre them. I always like the low and slow way to prepare food! For extra Sauce I used Jack Daniel's Honey Barbecue Sauce. For the last 1/2 hour of cooking time I pulled back the top foil and brushed on The Jack Daniel's BBQ Sauce across the top of the Ribs. Put the foil back on and finished cooking them.




The Ribs came out incredible! Tender, flavorful, and bursting with that BBQ flavor! So Curly's Baby Back Ribs is a very delicious and time saving way to have some Ribs! I had bought 2 packages of them, I have the other one in the freezer.












For one side I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. I just think Ribs and Mashed Potatoes were meant to be together. But being a Potato Lover I think Potatoes are meant for every meal!












For another side dish I boiled some Green Giant Mini Ears of Sweet Corn. It’s frozen Mini Ears of
Sweet Corn and you just boil for 10 minutes and you have some of the Sweetest Corn you can find! For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

SUGAR FREE MIXED BERRY JAM
Ingredients

6 cups fresh raspberries
1/3 cup sugar
3 cups fresh strawberries
1 1/2 cups Splenda No Calorie Sweetener, Granulated
1 cup cold water
1 (1.75 ounce) package SURE-JELL* For Lower Sugar Recipes Fruit Pectin
1 pint blueberries

Directions

1 - Combine raspberries and sugar in a heavy bottomed pan. Heat over medium-high heat. Boil 10-15 minutes, stirring constantly.
2 - Mash strawberries with a fork or potato masher.
3 - Add Splenda Granulated Sweetener and strawberries to raspberries. Stir constantly and boil over medium-high heat for an additional 10-15 minutes.
4 - Pour cold water into a small saucepan. Whisk pectin into water, and let stand 2-3 minutes. Allow the pectin to absorb the water.
5 - Boil water and pectin, then stir into fruit mixture and reduce heat to medium-low. Add blueberries. Simmer and stir for 5-6 minutes, until pectin is thoroughly blended with the fruit.
6 - Freeze in sterile canning jars.
