Turkey Ham and Corn Chowder
A rich, creamy homemade broth combined with corn and turkey ham makes the perfect weeknight dinner. And at less than 300 calories per serving, comfort food just got even more comforting.

INGREDIENTS
1 cup chopped onion
1 tablespoon vegetable oil
3 tablespoons flour
½ teaspoon black pepper
4 cups milk
2 cups frozen hash brown potatoes
2 (11-ounce) cans corn with red and green peppers
¾ pound JENNIE-O® Turkey Ham, cut into ½-inch cubes

DIRECTIONS
1)  In 3-quart saucepan over medium-high heat, saute onion in vegetable oil 3 minutes or until tender. Blend in flour and black pepper. Remove pan from heat; slowly add milk; stirring constantly. Return pan to heat.
2) Add hash brown potatoes; bring mixture to boil, stirring constantly. Add corn and ham; return mixture to boil. Reduce heat to low and simmer 15 minutes or until potatoes are tender and mixture has thickened.

Hash Brown Casserole with Bacon
Ingredients
1 package (32 ounces) frozen Southern-style hash brown potatoes, thawed
1 container (16 ounces) fat-free sour cream
1 can (10 3/4 ounces) condensed cream of chicken soup, undiluted
1 1/2 cups (6 ounces) shredded sharp Cheddar cheese
3/4 cup thinly sliced green onions
4 slices bacon, crisp-cooked and crumbled
2 teaspoons hot pepper sauce
1/4 teaspoon garlic salt

Directions
1 - Preheat oven to 350°F. Spray 13×9-inch baking pan with nonstick cooking spray.

2 - Combine potatoes, sour cream, soup, cheese, green onions, bacon, hot pepper sauce, and garlic
salt in large bowl. Spoon evenly into prepared dish.

3 - Bake 55 to 60 minutes or until potatoes are tender and cooked through. Stir before serving.

Yield: 12 servings. Serving size: about 3/4 cup per serving.

SLOW COOKER POT ROAST SOUP
Ingredients

1 beef Shoulder Roast Boneless (2-1/2 pounds)
2 cups chopped onions
1 can (14-1/2 ounces) diced tomatoes with green peppers and onions, undrained
1 cup frozen hash brown potatoes (cubes)
1 cup beef broth
1 tablespoon minced garlic
1 teaspoon dried thyme leaves
1/4 teaspoon pepper
2 cups broccoli slaw
1/2 cup frozen peas

Directions

Cut beef roast into 12 equal pieces.
Place in 4-1/2 to 5-1/2-quart slow cooker. Add onions, tomatoes, potatoes, broth, garlic, thyme and pepper.
Cover and cook on HIGH 5 to 6 hours, or on LOW 8 to 9 hours, or until beef is fork-tender. (No stirring is necessary during cooking.)
Stir in broccoli slaw; continue cooking, covered, 30 minutes or until broccoli slaw is crisp-tender. Turn off slow cooker. Stir in peas; let stand, covered, 5 minutes.

Recipe Yield: Yield: 6 servings

Spicy Turkey Breakfast Skillet

Spicy Turkey Breakfast Skillet
Some mornings need a serious kick-start. This breakfast skillet recipe is just the thing — chopped chipotle peppers, jalapeño jack cheese and lean turkey sausage. Under 300 calories per serving!

INGREDIENTS
2 teaspoons canola oil
½ cup diced onion
½ cup diced red bell pepper
½ cup diced green bell pepper
2 cups southern-style hash browns
1 (12-ounce) package JENNIE-O® Lean Turkey Breakfast Sausage Links
2 chipotle chilies in adobo sauce, finely chopped
2 cups baby spinach leaves
1 cup shredded jalapeño jack cheese
1 tablespoon lime juice
1 avocado, diced
cilantro leaves

DIRECTIONS
1) In large skillet, heat oil over medium-high heat. Add onion and peppers. Cook 5 minutes or until softened, stirring occasionally; set aside.
2) In same pan, cook hash browns over medium-high heat 10 to 15 minutes or until golden brown, stirring occasionally. Return pepper mixture to skillet.
3) Cook links as specified on the package. Always cook to well-done,165°F. as measured by a meat thermometer. Cut sausage into 1-inch lengths. Add to skillet.
4) Add chipotle chilies and spinach. Stir to combine. Sprinkle with cheese. Stir to combine. Remove from heat. Drizzle lime juice over avocado. Pile avocado in center of skillet. Scatter with cilantro leaves.
* Always cook to an internal temperature of 165°F.

One of America's Favorites - Slinger (dish)

"St. Louis Slinger"
A slinger is a Midwestern diner specialty typically consisting of two eggs, hash browns, and a hamburger patty (or any other meat) all covered in chili con carne (with or without beans) and generously topped with cheese (cheddar or American) and onions. The eggs can be any style. Hot sauce is usually served on the side. The slinger is considered to be a St. Louis late-night culinary original. It is described as "a hometown culinary invention: a mishmash of meat, hash-fried potatoes, eggs, and chili, sided with your choice of ham, sausage, bacon, hamburger patties, or an entire T-bone steak.


Variations
There are numerous variations of the basic slinger:

* "Top one": has a tamale served on top of the slinger
* "Vegetarian": uses veggie burgers and veggie chili
* "The Toby"/"the Hoosier": slinger that has white gravy instead of chili. (Named after a customer at Tiffany's Original Diner).
* "Yin and yang": slinger covered in half chili and half gravy. A customer favorite at Tiffany's Original Diner, and named by manager Tom Gray. (The yin and yang is both light and dark in color).
* "The Jared": slinger with equal amounts of chili and white gravy
* "The JP slinger": slinger with hamburger patty, extra onions and extra chili
* "Devil's delight": slinger without the hamburgers patties at Courtesy Diner
* "Chicago style": served with white bread toast on the side, burgers are specified as "cheeseburger patties", eggs are specified as over easy, and must contain grilled onions.

Easy Corn Chowder
Cream-style corn and frozen diced hash browns put the 'easy' in this hearty corn chowder.

Recipe Ingredients:
6 bacon slices, cooked and crumbled
2 (17-ounce) cans cream-style corn
4 cups milk
3 cups frozen diced hash brown potatoes
3 green onions, chopped
1 teaspoon salt or to taste
Freshly ground black pepper to taste

Cooking Directions:
1 - Combine first 5 ingredients in heavy medium saucepan.
2 - Simmer over medium heat until soup is slightly thickened, stirring occasionally.
3 - Season with salt and pepper and serve.

Slow Cooker Pot Roast Soup
Put this make-ahead soup on early in the day to serve an easy, near-effortless "meal-in-a-bowl" that evening.

This recipe is an excellent source of protein, niacin, vitamin B6, vitamin B12, iron, selenium and zinc; and a good source of fiber.

Recipe Ingredients:

One of America's Favorites - Hash Browns

Hash browns or hashed browns are a simple preparation in which potatoes are pan-fried after being shredded, diced, julienned or riced, in the style of a Swiss Rösti. In some cultures, hash browns or hashed browns can refer to any of these preparations, while in others it may refer to one specific preparation. Hash browns are a staple breakfast food at diners in North America and the UK, where they are often fried on a large common cooktop or grill.

In some parts of the United States, hash browns strictly refer to shredded or riced pan-fried potatoes and are considered a breakfast food, while potatoes diced or cubed and pan-fried are also a side dish called country fried potatoes or home fries (though many variations of home fries are par-cooked before frying). Some recipes add diced or chopped onions.

Hash browns are a popular mass-produced product sold in both refrigerated and frozen varieties. Hash browns are also available in dehydrated form.


Originally, the full name was "hashed brown potatoes" (or "hashed browned potatoes"), of which the first known mention is by American food author Maria Parloa (1843–1909) in 1888. The name was gradually shortened to 'hash brown potatoes'. Bite sized Hash Browns are small cylindrical dumplings, known as Tater Tots in the U.S. and Potato Gems in Australia, and are sold commercially at diners and in frozen food aisles in packets.



The word "hash" is derived from the French word "hacher" which means to hack or chop. This means hashed browned potatoes literally translate to "chopped and fried potatoes".

A chef may prepare hash browns by forming riced potatoes into patties before frying with onions
(moisture and potato starch can hold them together); however, if a binding agent is added (egg or oil for example), such a preparation constitutes a potato pancake. Frozen hash browns are sometimes made into patty form for ease of handling, and the compact, flat shape can also be cooked in a toaster oven or toaster. If a dish of hash browned potatoes incorporates chopped meat, leftovers, or other vegetables, it is more commonly referred to as hash.

Hash browns are also manufactured as a dehydrated food, which is sometimes used by backpackers.

In parts of England, the term can refer to a patty of hashed potatoes, a kind of hash brown. These are available pre-made and frozen in supermarkets and are served by many restaurants, such as fast food stands, often as part of the breakfast menu. It can also refer to a sort of potato pancake.

Best eaten warm, with baked beans, as part of a full English breakfast.

Another variant popular in the United Kingdom is prepared from cold mashed potatoes and fresh eggs. The two ingredients are combined together, then fried until crispy on the outside.

In Australia and England potato cakes in the form of thin slices of potato, battered and deep-fried, are commonly sold in fish and chip shops and takeaway food shops. The terminology used in Australia differs from state to state. In New South Wales, Queensland, and the ACT they are usually referred to as "potato scallops", or simply as "scallops" (to avoid confusion, scallops eaten as seafood may be known as "sea scallops". In Tasmania and Victoria, the term "potato cakes" is used, while in South Australia and Western Australia "potato fritter" is most common.

Potato scallops originate from central England and are common in fish and chip shops there. This variant is normally a thin slice of potato, dipped in batter and deep fried, with no additional flavoring added except salt and vinegar. This type of "potato scallop" is also found in New Zealand fish and chip shops, however it is referred to as a potato fritter, not scallop. More commonly in New Zealand, a potato cake is made from either mashed or grated potato and is not covered in batter or deep fried. Hash browns, which are also widely available, are distinctly different. In Scotland what are known as potato cakes in Australia are known as potato fritters and are of the same type as the English variant. They are very common in fish and chip shops and are often the cheapest item on the menu.

The term may refer to a preparation of mashed potatoes baked in the form of pie or a scallop made using potatoes or potato flour.

Scottish tattie scones and Lancashire potato cakes are made from mashed or reconstituted potato and flour and baked on a griddle. They are typically served fried with breakfast or as a snack with butter or margarine, although they are often served with other toppings such as baked beans, scrambled eggs, garlic butter or tomato ketchup.








Irish potato cakes
Irish potato cakes are typically made from mashed potato and flour or baking soda, and are usually fried. This is not the same dish as boxty, because boxty is made using raw potatoes whereas potato cake is made using cooked potatoes. In Ireland, potato cakes are typically known as potato bread, or spud bread, and are served in traditional breakfasts along with soda bread and toast.

One of America's Favorites - Hash Browns


Hash browns or hashed browns are a simple preparation in which potatoes are pan-fried after being

shredded, diced, julienned or riced, in the style of a Swiss Rösti. In some cultures, hash browns or hashed browns can refer to any of these preparations, while in others it may refer to one specific preparation. Hash browns are a staple breakfast food at diners in North America and the UK, where they are often fried on a large common cooktop or grill.

In some parts of the United States, hash browns strictly refer to shredded or riced pan-fried potatoes and are considered a breakfast food, while potatoes diced or cubed and pan-fried are also a side dish called country fried potatoes or home fries (though many variations of home fries are par-cooked before frying). Some recipes add diced or chopped onions.

Hash browns are a mass-produced product that are purveyed in refrigerated and frozen varieties. The product is also manufactured in dehydrated form.

Originally, the full name was "hashed brown potatoes" (or "hashed browned potatoes"), of which the first known mention is by food author Maria Parloa (1843–1909) in 1888. The name was gradually shortened to 'hash brown potatoes'. Bite sized Hash Browns are small cylindrical dumplings, known as Tater Tots in the USA and Potato Gems in Australia, and are sold commercially at diners and in frozen food aisles in packets.

(moisture and potato starch can hold them together); however, if a binding agent is added (egg or oil for example), such a preparation constitutes a potato pancake. Frozen hash browns are sometimes made into patty form for ease of handling, and the compact, flat shape can also be cooked in a toaster oven or toaster. If a dish of hash browned potatoes incorporates chopped meat, leftovers, or other vegetables, it is more commonly referred to as hash.

Hash browns are also manufactured as a dehydrated food, which is sometimes used by backpackers.

Bob Evan's Sausage Patty Burger w/ Hash Browns

Dinner Tonight: Bob Evan's Sausage Patty Burger w/ Hash Browns






For Breakfast toasted a couple Eggo Waffles and a cup of Bigelow Decaf Green Tea. After Breakfast I went to the local Kroger for a few items and stopped by McDonald's to pick up Breakfast for Mom and Dad. Back home got the leaf blower out and cleaned on and around the deck and driveway areas. Did a load of laundry and I'm done for the day and ready for an afternoon of NFL Football! For Dinner tonight it's a Bob Evan's Sausage Patty Burger w/ Hash Browns.





I used Bob Evan's Sausage Patties for my burger. I enjoy these but they are very difficult to find.
Anymore we can only find them at Jungle Jim's and they sell out of them as quick as they get them. They are a Pork Sausage Patty and they come 6 to a box (1 lb.box).









They fry up real easy. Just add them to a cold skillet and fry 7 minutes per side. After flipping the patty I added a slice of Kraft Sharp Cheddar. Excellent taste, as all Bob Evan's products, and only 140 calories per patty. I served it on a Healthy Life Whole Grain Hamburger Bun. Topped it with the Kraft Cheese and Lettuce.









For a side I fried up some Simply Potatoes Hash Browns. Seasoned them with Sea Salt and Ground Black Pepper. I love all the Simply Potatoes products! Also had a Diet Peach Snapple to drink. For dessert later a bowl of Dole Peach Slices.

Diabetic Dish of the Week - Hash Brown Strata

This week's Diabetic Dish of the Week is a Hash Brown Strata. Made with diced hash brown potatoes with onion and peppers, chopped turkey bacon or turkey ham, Egg product, and cheese. You can make this dish ahead of time, just make it, but don't bake it, cover and chill for up to 24 hours. Hash Brown Strata

A strata (Italian for 'layered') is an egg-and-bread casserole. In this extra-easy version, frozen hash browns make a time saving substitute for the bread.

Recipe Ingredients:

Nonstick cooking spray
2 cups loose-pack frozen diced hash brown potatoes with onion and peppers
1 cup broccoli florets
1/3 cup finely chopped turkey bacon or turkey ham (about 2-ounces)
1/3 cup evaporated fat-free milk
2 tablespoons all-purpose flour
2 (8-ounce) cartons refrigerated or frozen egg product, thawed
1/2 cup shredded reduced-fat cheddar cheese (2-ounces)
1 tablespoon snipped fresh basil or 1/2 teaspoon dried basil, crushed
1/4 teaspoon freshly ground black pepper
1/8 teaspoon salt

Cooking Directions:

1 - Coat a 2-quart square baking dish with cooking spray. Arrange hash brown potatoes and broccoli in bottom of the prepared baking dish; top with turkey bacon. Set aside.
2 - In a medium bowl gradually stir milk into flour. Stir in egg product, half of the cheese, the basil, black pepper, and salt. Pour egg mixture over potato mixture.
3 - Bake in a 350°F (175°C) oven for 40 to 45 minutes or until a knife inserted near the center comes out clean. Sprinkle with the remaining cheese. Let stand for 5 minutes. If desired, garnish with additional fresh basil.
Makes 6 servings.

Make-Ahead Tip: Assemble strata as above but do not bake. Cover and chill for 4 to 24 hours. To serve, uncover and bake as above.
