Ancient Grain Mini Naan Bread Pizza

Dinner Tonight: Ancient Grain Mini Naan Bread Pizza - Turkey Pepperoni and Sweet Italian Turkey Sausage

For Breakfast this morning I Poached an Egg, fried a few slices of Boar's Head Sweet Slice Ham, toasted a Healthy Life Whole Grain English Muffin, and had my morning cup of Bigelow Decaf Green Tea. Good start to a rainy Thursday morning! It started raining overnight and a few showers this morning. Cloudy and 51 degrees for a high. Stayed in most of the day and got some things done around the house. Dinner tonight; Ancient Grain Mini Naan Bread Pizza - Turkey Pepperoni and Sweet Italian Turkey Sausage.

I picked up a package of Stonefire Mini Naan Ancient Grain Bread at Meijer earlier in the week. And I'm using them to make some Mini Pizzas. For my toppings I'm using Hormel Turkey Pepperoni, Jennie - O Sweet Italian Turkey Sausages, Mushrooms, Black Olives, Green Olives, Oscar Mayer Hickory Smoked Bacon Bits, Sargento Shredded Mozzarella Cheese, and Ragu Traditional Pizza Sauce.

Preheated the oven on 400 degrees. Next I grabbed a medium size skillet, sprayed it with Pam

Cooking Spray, added a 1/2 tablespoon of Extra Light Olive Oil, and heated it on medium heat. As the skillet was heating I got 2 Jennie - O Sweet Italian Sausages and cut the end off each Sausage . Then squeezed the Sausage Meat out of the casing and formed that into small chunks. With the skillet heated I fried the Sausage pieces. When they were browned and heated through removed them from the skillet into a small bowl until ready to use.

The oven was heated up and I got the Naan Bread ready. I used a small baking sheet, lined it with foil, and sprayed it Pam Cooking Spray. I lined the 4 Naan Breads up on the baking sheet. I then brushed a light coat of Extra Virgin Olive oil on the top of them. I then baked then for about 2 minutes. Pulled the sheet out of the oven and let the Naan Bread cool for 5 minutes.

When the Bread cooled I added the toppings on top. I started with the Ragu Pizza Sauce. Next slices of Hormel Turkey Pepperoni. Then the Jennie - O Turkey Sweet Italian Sausage pieces, next the Black and Green Sliced Olives, sliced Mushrooms, Oscar Mayer Bacon Bits, and finally the Sargento Shredded Mozzarella Cheese. Slid the baking sheet back into the oven to bake.

I baked the Naan Bread Pizzas for about 8 minutes, until the ingredients had heated through and
Cheese melted. Pulled the baking sheet from the oven and let the Pizzas cool for 3 minutes. With the first bite I knew the Naan Bread was a perfect Pizza Crust! The Crust had excellent taste and baked up perfect. Then with all my toppings had some great Pizzas. Plus a lot fewer calories and carbs than normal Pizza Pies. I'll have to get a couple of packs of the Stonefire Mini Naan Ancient Grain Bread and keep them in the freezer. For Dessert/Snack later a bowl of Skinny Pop - Pop Corn and a Diet Peach Snapple to drink.

Kitchen Hints of the Day!

Slow Cooker hints.........

* Buy cheaper meat. Tougher cheaper meats are better for slow cooking. For best results when cooking meat/chicken, always brown the ingredients in a frying pan first. This locks in the flavor and produces a true slow simmered look and flavor. Be sure to remove all the sauce, juices and bits from the bottom of the frying pan to the slow cooker.
 * For even cooking, cut food into uniform-size pieces. Place firm, slow-cooking root vegetables like potatoes and carrots at the bottom of the crock and pile the meat on top.
* Keep the lid on! It is important to retain the heat when making a slow cooker meal, so avoid taking off the lid. Only remove the lid to stir or check for doneness.

Zesty Herbs and Spice Fire Grilled Wings w/ Savory Herb Potatoes and Texas Toast (Light)

Dinner Tonight: Baked Zesty Herbs and Spice Fire Grilled Wings w/ Savory Herb Potatoes and Texas Toast (Light)

For Breakfast this morning I made what's become my favorite Breakfast. I fried some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled
some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Also had my morning cup of Bigelow Decaf Green Tea. Mostly sunny and 54 degrees out, some rain showers moving in for tomorrow. Cleaned the house today, vacuum and dusted. Then did some work on the computer. Dusted and cleaned then ran all the scans and deleted old files. For Dinner tonight I prepared Baked Zesty Herbs and Spice Fire Grilled Wings w/ Savory Herb Potatoes and Texas Toast (Light).

I had tried the Cooked Perfect Buffalo Wings last week and loved them. So this week I'm trying the
Cooked Perfect Zesty Herbs and Spice Fire Grilled Wings. They come Seasoned in Thyme, Sage, and Peppers. They come frozen so you can prepare them in the microwave or in the oven, I went with the oven method.

To prepare them; Preheat the oven to 375° F.Grab a baking sheet, line with Foil, and spray it with with Pam Cooking Spray. Place the Wings on the baking sheet in a single layer. Bake for 15 minutes, turn the Wings, and bake for an additional 10-15 minutes. Let stand for 2 minutes before serving. These are just as good as the Buffalo Wings, if not better! Served with some Litehouse Lite Blue Cheese Dressing.

I could just have the Wings but Mom and Dad always have to have at least one side dish so I prepared a carton of the Little Potato Company Savory Herb Potatoes. A favorite I always pick while at Meijer are the Little Potato Company Savory Herb Potatoes. We have these quite often and really enjoy them. The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good item to have in the pantry! So easy to prepare and no clean up. I also boiled some Green Giant Mini Eras of Sweet Corn. You can't beat this corn, best there is! For Dessert later a Weight Watcher's Cookies and Cream Ice Cream Bar.

Wild Idea Buffalo Recipe of the Week - Buffalo Pot Roast

This week's Wild Idea Buffalo Recipe of the Week is a Buffalo Pot Roast. It's a Winter Comfort Food Classic - Buffalo Pot Roast! Made using the Wild Idea Buffalo Chuck Roast. You can find this recipe and purchase the Wild Idea Buffalo Chuck Roast along with all the other Wild Idea Products at the Wild Idea Buffalo website. Enjoy and Eat Healthy!  https://wildideabuffalo.com/

Nothing represents “comfort food” better than a traditional pot roast. Wild Idea’s 100% grass-fed, rich and slightly sweet bison roast, braised until tender and juicy, nestled in a bed of potatoes and carrots, and covered with pan gravy, says it all! Always a favorite, but this savory, one pot meal is a wonderful way to welcome the fall!

 Buffalo Pot Roast
Ingredients:
1 – 3 pound Wild Idea buffalo Chuck Roast
2 – tablespoons olive oil
2 – teaspoons sea salt
2 – teaspoons black pepper
2 – teaspoons garlic powder
2 – teaspoons thyme, or two to three sprigs fresh thyme *I use half fresh & half dried.
1 – teaspoon rosemary, or one to two small fresh sprigs *I use half fresh & half dried.
1 – teaspoon oregano, or one sprig oregano *I use half fresh & half dried.
2 – onions, 1 diced and 1 quartered
1 to 2 tomatoes, coarse chopped
5 – cups buffalo, vegetable or organic beef stock
6 – potatoes, quartered
3 – celery stalks, quartered
4 to 6 – carrots, peeled and quartered
½ - cup red wine
1 – tablespoon corn starch, or more if needed

Preparation:

1 - Preheat oven to 225°. Rinse bison roast, pat dry and remove string. *Removing string is optional; I usually remove for this preparation, so I don’t loose the seasoning in removing after cooking.
2 - Mix all the dried seasonings together. Rub the roast with 1 tablespoon of the olive oil, and rub the dried seasoning into the roast.
3 - In a heavy pot over high heat, heat the remaining tablespoon of the olive oil. Place the seasoned
roast into the hot oil and brown for 5 minutes. Turn roast 3 times, searing for 5 minutes each. *Positioning roast up against the pan sidewalls will help in browning the whole roast.
4 -Move the roast to the side and add the chopped onions, lifting the roast so onions cover the bottom and stir occassionally. Allow the onions to cook for about 5 minutes.
5 - Add the chopped tomatoes around the roast an pour in the stock. Let the stock come to a full boil, then cover and turn off the heat.
6 - Transfer covered roast into the preheated oven on the middle rack. Braise the buffalo pot roast for 6 hours.
7 - During the last half hour of cooking, add the potatoes, pushing them down into the juices. Cover and increase heat to 375°.
8 - Cook the potatoes for 15 minutes, then, add the celery, onion, and carrots. Cover and cook for an additional 15 minutes. Check the vegetables to insure they are cooked through, but still slightly firm. Continue to cook for a few more minutes if needed.
9 - Remove the pot roast from the oven, and transfer the roast and the vegetables to a cutting board or platter. Cover with foil.
10 - Place the pot with the juices on the stovetop over medium high heat. Bring to a boil. Mix the cornstarch into the wine, and whisk into the bubbling pan juices. If the gravy is not to your desired thickness add more wine/cornstarch mix, until desired consistency is achieved. Season to taste.
11 - Carve roast and pass with gravy and crusty bread.

Kitchen Hint of the Day!

Storing Bread........

Bread stays fresh for a longer time if you place it in an airtight bag with a stalk of celery. If you are going to freeze a loaf of bread, make sure you include a paper towel in the package to absorb moisture and prevent it from becoming mushy when thawed.

Panko Crusted Cod Fish Sandwich w/ Baked Fries

Dinner Tonight: Panko Crusted Cod Fish Sandwich w/ Baked Fries

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, fried 2 Jennie – O Turkey Breakfast Sausage Links, and made a cup of Bigelow Decaf Green Tea. Another beautiful day
out there again a bit more windy but sunny and 61 degrees!. After Breakfast did some light house cleaning and started Mom's laundry for her. After Lunch I had to back to the store, Meijer was out of all its Aunt Millie's Reduced Fat Buns and Bread. So I went back to pick some up. Back home not much else going on. For Dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Fries.

Purchased the Cod Loin Fillets at Kroger and had them in the freezer. So I laid a fillet in the fridge overnight to thaw. To prepare the Cod I rinsed the fillet off with cold water and patted dry. Then seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Combined flour and both
Garlic Powder and Onion powder. Then pressed both sides of fillet into flour for a light dusting , shaking off any excess flour. Dipped the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Placed the fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Meanwhile, heated the Extra Virgin Olive Oil in a skillet and placed the fillets in and cooked 3 minutes each side. Served on a Aunt Millie’s Reduced Calorie Whole Grain Bun. I love making Fish Sandwiches with Cod and the Panko Bread Crumbs. Cod cooks up great no matter how you prepare it. Plus it’s a very meaty Fish which makes for one excellent Fish Sandwich.

For my Fries I’m using Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder
Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. It’s an easy prepared but hot and filling meal. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

Chopped Bison Sirloin Steak w/ Cut Green Beans, Baked Potato, and Texas Toast

Dinner Tonight: Chopped Bison Sirloin Steak w/ Cut Green Beans, Baked Potato, and Texas Toast

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin that I topped with I Can't Believe It's Not Butter. Also had a cup of Bigelow Decaf Green Tea. Outside it’s sunny and 59 degrees, not bad weather for a November 27th! After Breakfast I headed out to Meijer to do some grocery shopping and then swung by Kroger for a couple of items. Stopped by the ATM and got gas before heading home. Got the cart out of the shed after Lunch. Went around the outside of the house and gathered up some leaves. Then took the leaf blower and cleaned off the deck and driveway. Really a nice day out today. For Dinner tonight I prepared a Chopped Bison Sirloin Steak w/ Cut Green Beans, Baked Potato, and Texas Toast.

For Dinner tonight it’s one of my favorites, SayersBrook Ranch Bison Chopped Sirloin Steak. I love this Chopped Steak. To start I preheated the oven on 400 degrees. To prepare it I’ll need McCormick
Grinder Sea Salt and Peppercorn Medley, McCormick Crushed Rosemary, and McCormick Thyme Leaves (all seasoning to taste). I got the Cast Iron Skillet out to prepare it. I first sprayed it with a very light coat of Pam Cooking Spray and then added a tablespoon of Extra Light Olive Oil. Heated it on medium heat. When the pan was heated I added the Chopped Steak. I cooked each side 2 minutes. Then finished it in the oven, at 400 degrees for 7 minutes. It cooked up beautifully, perfect medium rare! Had a nice little char on the outside and moist and juicy inside. These are so tender you could slice them with a spoon and have an excellent taste to them.

For a side I heated up a large can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and heat until heated through. I love all Beans but Green Beans are my favorite along with the Seasoned Pinto Beans.

I also prepared a Baked Potato. Seasoned that with the McCormick Grinder Sea Salt and Peppercorn
Medley, and topped with I Can’t Believe It’s Not Butter. I also baked a slice of New York Bakery Lite Texas Toast, One delicious meal tonight. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

SayersBrook Ranch Bison Chopped Sirloin Steak

If you like the flavor of the sirloin, love the Bison Burger but want to take it up a notch, then the Chopped Sirloin Steak is for you! 4 lbs (4 packages each with 2-8oz chopped sirloin steaks).
Great flavor of the sirloin but also extremely tender and juicy.

One of America's Favorites - Ham and Cheese Sandwich

A grilled ham and cheese sandwich, in a cast iron frying pan

A ham and cheese sandwich is a common type of sandwich. It is made by putting cheese and sliced ham between two slices of bread. The bread is sometimes buttered and/or toasted. Vegetables like lettuce, tomato, onion or pickle slices can also be included. Various kinds of mustard and mayonnaise are also common.

Sliced bread, sliced cheese, and sliced cooked ham are very readily available in Western supermarkets and as a result ham and cheese sandwiches are quick and easy to prepare. They are a common component of a packed lunch.

As recalled by ballpark concessionaire Harry Stevens in a 1924 interview, in 1894 ham and cheese
Open-faced ham and cheese tapas-style sandwiches
sandwiches were the only food sold in New York baseball parks; frankfurters were introduced fifteen years later.

An Englishwoman, writing in 1923 of her passage through Ellis Island on a trip to the U.S., noted:

I was in fear and trembling, having heard so many tales of the abuse aliens receive there.... The attendants were very kind and not at all rough with us. It was the noon hour... in a little while porters came along with baskets of very good ham and cheese sandwiches and coffee for the grown-ups and milk for the babies.
Richard E. Byrd took ham and cheese sandwiches on his 1926 polar flight as did 1927 transatlantic fliers Chamberlin and Levine.

The origin of the ham and cheese sandwich has been debated for a number of years by culinary
A grilled ham and cheese sandwich with a salad and chips
intellectuals. The leading theory as to who first started to produce a ham, cheese and bread dish is mentioned in The Larousse Gastronomique 1961. Here it notes that Patrick Connolly, an 18th-century Irish immigrant to England, sold a bread dish which:

"combined the remains of pig, cured and sliced with a topping of Leicester cheese and a kiss of egg yolk sauce (a form of mayonnaise) in a round bread roll. The dish was rather unimaginatively known as a Connolly and is still sometimes referred to as this in some parts of the Midlands in the UK."

In the UK, a common addition to a ham and cheese sandwich is pickle (a sweet, vinegary chutney originally by Branston); the snack is then known as a ham, cheese and pickle sandwich.

In French cuisine, a croque-monsieur is a type of ham and cheese sandwich. It is topped with cheese and baked or fried.

Chimichurri Sauce:
2 cups lightly packed chopped parsley
4 garlic cloves, halved
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1/2 teaspoon chili pepper flakes
2 tablespoons shallot or onion, minced
1/4 cup of vegetable or olive oil
3 tablespoons sherry wine vinegar or red wine vinegar
3 tablespoons lemon juice

Cumin Rub:
1 teaspoon granulated garlic
1/2 teaspoon smoked paprika or Hungarian paprika
1/2 teaspoon ground cumin
1 pound water-packed extra-firm tofu, cut in half lengthwise
olive oil

Grilled Garlic Bread:
8 pieces of crusty and dense Italian bread, cut 3/4 to 1 inch thick
4 large cloves garlic, peeled and cut in half
extra virgin olive oil

Cooking Directions:

1 - For Chimichurri Sauce: Place all ingredients in a blender or food processor and pulse until well chopped, but not purรฉed. Set aside.
2 - For Cumin Rub: Combine the garlic, paprika and cumin; mix well. Set aside.
3 - Cut the tofu in half lengthwise to make 2 "steaks" about 3/4-inch thick. Brush lightly with olive oil. Press the Cumin Rub into both sides of the tofu steaks.
4 - Place tofu steaks in a grill pan coated with oil or directly on the cooking grate over direct heat. Cook for 3 to 4 minutes. Turn the tofu steak with a pair of tongs and a flat spatula if necessary. Sear the second side and continue grilling until done, about 3 to 5 minutes. Cut each tofu steak in half to form 2 triangles. Serve with Chimichurri Sauce and Grilled Garlic Bread
5 - For Grilled Garlic Bread: Place bread on grill rack or in grill pan. Cook, turning once, until golden on both sides, about 2 to 3 minutes per side. Rub 1 side of each piece of bread with a half clove of garlic; rub hard for good garlicky flavor. Place each piece of bread on a serving plate and brush with a thin coating of olive oil.

Makes 4 servings.

Chili and Cheese Nachos

Dinner Tonight: Chili and Cheese Nachos

To start my day off I toasted a couple of Eggo Nutrigrain Waffles. Also had the morning cup of
Bigelow Decaf Green Tea. Not quite as cold this morning, 30 degrees. Had a high of 45 degrees and mostly sunny, not bad for this time of year. Mom went to Church and stayed home and watched Dad. So I cleaned the house and did a load of laundry. After Lunch I got the leaf blower out and cleaned the deck and driveway off, still a lot of leaves blowing around. Had everything done and caught up on some programs I had recorded. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

We love Chili and Cheese Nachos around here! It's been a while since I've made any and they sure sounded good for Dinner tonight. To make them I'll need: Tostitos Multi Grain Scoops for my Chips.
I love these with Salsa or just as snack by their selves, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives, sliced up some Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good Nachos! Especially love the Jalapenos, nice mild heat!

To prepare I preheat the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I first opened up 2 cans of the Hormel Chili with Beans and heated them up in a sauce
pan, as it was heating I added about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese. Then just pop it in the oven 10 minutes or until the Cheese had started to melt and everything heated. I love Nachos, nothing better than a big plate of Chili Cheese Nachos! Also had a Diet Dr. Pepper to drink. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Ham, Eggs, Hash Browns, and Toast

Dinner Tonight: Ham, Eggs, Hash Browns, and Toast

For Breakfast this Morning I toasted a Healthy Life Whole Grain English Muffin that I topped with Smucker's Sugar Free Blackberry Jam. Also had that morning cup of Bigelow Decaf Green Tea. This morning it was cloudy and 28 degrees. As the day went on we seen some sunshine and a high of 51 degrees. Did a few things around the house and then starting at Noon I watched College Football for the rest of the afternoon. For Dinner tonight some Breakfast! I prepared Ham, Eggs, Hash Browns, and Toast.

Breakfast for Dinner sounded perfect for Dinner tonight! I sliced up the rest of our Thanksgiving Ham off the bone. The Ham, as it is most years, was moist and delicious! We used Cook's Bone In Ham. To prepare it I used a small skillet, sprayed it with Pam Cooking Spray, and heated it on medium heat. I then took a few slices of it and reheated it i tin the skillet for about 5 minutes. I love this Ham! It has such good flavor, perfect for Breakfast or Dinner.

Next I used the same skillet and I prepared a Sunny Side Up Egg. Fried it on medium low, seasoned with Morton's Lite Salt and Ground Black Pepper.

As the the Ham and Egg were cooking, in another skillet I prepared some Simply Potatoes Shredded Hash Browns. I love these, I could have them every day! Again I used a small skillet, sprayed it with Pam Cooking Spray, added 1 tablespoon of Extra Light Olive Oil, and heated it on medium heat. I fried these for 14 minutes. When done I sprinkled some Sargento Reduced Fat Shredded Sharp Cheddar Cheese.

Finally I toasted a couple of slices of Aunt Millie's Light Whole Grain Bread. Topped them with
some I Can't Believe It's Not Butter. Had a glass of 2% White Milk to drink. For Dessert/Snack later a bowl of Skinny Pop - Pop Corn and a Coke Zero to drink.

Simply Potatoes Shredded Hash Browns

Simply Potatoes Shredded Hash Browns fry up perfectly to a crisp, golden brown because they’re
made from quality potatoes. They’re always fresh, never frozen so you’ll never have to worry about freezer burn. Fresh, delicious potatoes mean you never have to sacrifice great homemade taste.
