Southwest White Bean Stew
Ingredients
3 cups white beans, cooked and drained
1 tablespoon canola oil
1/2 cup diced red onion
1 1/2 assorted bell peppers, diced
2 jalapeños, seeded and diced
3 garlic cloves, minced
1 cup low-salt chicken or vegetable broth
2 tablespoons sherry or red wine vinegar
1 14.5-ounce can low-salt diced tomatoes
1 tablespoon kosher salt
2 tablespoons chopped cilantro
Directions
1 - Puree 1 cup of the cooked beans and combine with the whole beans.
2 - Heat the oil in a soup pot over medium heat. Sauté the onions, bell peppers, jalapeños and garlic in the oil until the onions are translucent, 4–5 minutes.
3 - Add the bean mixture and broth. Stir constantly until the beans are thoroughly heated, 3–4 minutes.
4 - Add the vinegar, tomatoes, and salt and remove from the heat when hot. Stir in the cilantro just before serving.
Yield: 4 servings.
Serving size: 1/4 of recipe.

Spicy Orange Teriyaki Turkey Tenderloin
From the Jennie - O Turkey website, I'm passing along a recipe for a Spicy Orange Teriyaki Turkey Tenderloin. This one is made using a package of JENNIE-O® Spicy Orange Teriyaki Turkey Breast Tenderloins along with Orange Peel, Green Onion, Red Bell Pepper, Jalapeno Pepper, and Quinoa. Spicy Orange Teriyaki Turkey Tenderloin
Tanginess and heat join forces in this turkey teriyaki bowl surging with flavor, coursing with citrus, and peppered with peppers! They come pre-marinated to simplify your prep time. Get out your chopsticks and enjoy!
INGREDIENTS
1 (24-ounce) package JENNIE-O® Spicy Orange Teriyaki Turkey Breast Tenderloins
3 oranges, peel and pith removed, and coarsely chopped
2 limes, peel and pith removed, and coarsely chopped
½ cup chopped green onion
1 red bell pepper, thinly sliced
1 jalapeño, seeded and thinly sliced
¼ cup chopped fresh cilantro leaves
1 tablespoon olive oil
½ teaspoon kosher salt
½ teaspoon sugar
2 cups cooked quinoa
DIRECTIONS
1) Cook tenderloin as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
2) In medium bowl, combine, oranges, limes, green onion, bell pepper, jalapeño, cilantro, olive oil, salt and sugar.
3) Slice tenderloin and serve over quinoa with orange mixture.
* Always cook to an internal temperature of 165°F.

Saturday's Chili - Fireside Chili

Fireside Chili
Savor the flavor of this chili, filled with hot and spicy ingredients slowly simmered with stew meat and hamburger.
Recipe Ingredients:
2 pounds beef stew meat, diced
1 pound lean ground beef
2 cups hot water
1 (8-ounce) can tomato sauce
2 onions, peeled and chopped
1 jalapeño chile, seeded and minced
2 cloves garlic, chopped
1 teaspoon hot pepper sauce
3 tablespoons chili powder
1 tablespoon crushed dried oregano
1 tablespoon ground cumin
1 teaspoon paprika
1 teaspoon dry mustard
1 teaspoon salt
1/4 teaspoon cayenne pepper
Cooking Directions:
In a large, heavy-bottomed pot, brown stew meat and beef; drain.

Add water, tomato sauce, onion, jalapeño, garlic and hot pepper sauce. Bring to a oil, reduce heat and simmer for 30 minutes.
Stir in chili powder, oregano, cumin, paprika, dry mustard, salt and cayenne pepper. Gently simmer for 1 1/2 hours. Serve warm.
Makes 8 servings.
