Fried Ocean Perch w/ Mac and Cheese

Dinner Tonight: Fried Ocean Perch w/ Mac and Cheese





It was Steak and Eggs to start my day off today. For my Steak I fried up a SayersBrook 4 oz. Bison Fillet Mignon. I just seasoned it with some McCormick Grinder Sea Salt and Peppercorn Medley. It came out a perfect medium rare! It was so tender and juicy.Then I Scrambled a couple Eggs, toasted 1 slice of Aunt Millie's Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Good way to start the day! Mostly sunny, humid, and 94 degrees out to day. Took my Hoveround Chair outside and gave it a good cleaning, a much needed cleaning! That was about it for the day. Still fighting with my insurance so I was on the phone again for about 40 minutes! Very upset over this! For Dinner tonight I prepared Fried Ocean Perch w/ Mac and Cheese.



I picked up the Ocean Perch at Kroger the other day, cleaned them and had them in the freezer. Really
love the Kroger Seafood Department, good selections. I laid the bag in the fridge to thaw overnight. To prepare them I preheated a medium size skillet, that I had sprayed with Pam Cooking Spray and added Extra Light Olive Oil, on medium heat. Lightly seasoned them with the McCormick Sea Salt. I then put them in a Hefty Zip Lock Bag and added Zatarain’s Seasoned Fish Fri, shaking the bag then until the Perch Fillets were coated. Added the Fillets to the heated skillet and fried them 3 minutes per side. They came out Golden Brown! Delicious and fresh tasting, I love all Fish and Seafood!



Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac
Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack later a bowl of Skinny Pop - Pop Corn with a Coke Zero to drink.











Ocean Perch

Ocean perch is mild tasting yet a bit sweet, with a moderately firm texture. The meat is lean, moist
and flaky. Large ocean perch develop a coarse texture. Deep-skinned ocean perch with the fat line removed has the most delicate flavor. The flesh is white, though not as light as cod, and it turns opaque white when cooked.Whole fish may have bulging eyes and distended air bladders, which is a result of being brought up from great depths, not an indication of poor quality.

Dinner Tonight: Seasoned Gulf Coast Grouper w/ Cheddar Potato Bake




For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a
bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. After Breakfast I headed out to Meijer. I wanted to pick up a small Prime Rib and I needed some new shoes. Having one leg, left leg amputated, I have a collection of new left shoes. Anyway my Tennis Shoe is worn out so i bought a pair of new ones and also a pair of Boots. I love one stop shopping! For Dinner tonight it's a Seasoned Gulf Coast Grouper w/ Cheddar Potato Bake.



I love Fish and Seafood, especially this Florida Gulf Coast Grouper my friends keep bringing me
back up from Florida! It’s good to have friends that also own a house off the South Florida Gulf side.I had a fillet of it in the freezer, laid it in the fridge overnight to thaw. To prepare the fillets I seasoned them with just a bit of Sea Salt and put the fillets in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until the fillets were well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 1/2 minutes per side until golden brown. Grouper is so meaty and flavorful. Love Fish and Love this Grouper!




Then to go with my Grouper, I prepared a Stouffer’s Cheddar Potato Bake. Another easy to prepare and delicious dish. To prepare this one I’m using the microwave. It comes in a microwavable tray. I just slit the film cover on the tray and microwaved it for 6 minutes, Done! I love this side by Stouffer’s! Delicious Potato Dish, really like the bread crumb topping. For dessert later a Weight Watcher’s Cookie and Cream Ice Cream Bar.

To start my Wednesday morning off I prepared some Simply Potatoes Shredded Hash Browns, 2 Jennie - O Turkey Breakfast Sausage Links, 1 toasted slice of Healthy Life Whole Grain Bread (lightly buttered), and my morning cup of Bigelow Decaf Green Tea. Outside its another day in the low 80's and mostly sunny. The weather will be changing though, back into the low 60,s for tomorrow. Cleaned the house today, ran the vacuum and dusted. Then got the cart out to enjoy the rest of the day. For Dinner tonight, Seasoned Gulf Coast Grouper w/ Savory Herb Potatoes and Cut Green Beans.





I love Fish and Seafood, especially this Florida Gulf Coast Grouper my friends keep bringing me
back up! I had it in the freezer so I grabbed 3 fillets and let them thaw overnight in the fridge. It’s more of those beautiful Grouper fillets! To prepare the fillets I seasoned them with just a bit of Sea Salt and put the fillets in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until the fillets were well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Light Olive Oil. While at Meijer I picked up a package of the Little Potato Company Savory Herb Potatoes. I had these a few times now and really enjoyed them. The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good item to have in the pantry! So easy to prepare and no clean up.









Then I also heated up a can of Del Monte Low Sodium Cut Green Beans. Then I boiled some Green Giant Mini Ears of Sweet Corn. As good and sweeter than fresh Corn on the Cob. For dessert later a bowl of Dole Sliced Peaches.

3. Let the tray rest for 2 minutes then carefully remove plastic film and stir in seasoning pack. Caution – the contents will be very hot. If desired, add 1 tbsp. of butter or olive oil.

Serve and enjoy!

It was scrambled Eggs and Toast for Breakfast this morning. I Scrambled 2 medium sized Eggs and
topped them with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese. Then I toasted 2 slices of Healthy Life Whole Grain Bread, lightly buttered with I Can't Believe It's Not Butter. Also the morning cup of Bigelow Decaf Green Tea. What a beautiful Summer morning! I went out about day break to get the morning papers and the East horizon was just bursting with dazzling colors - Blues, Pinks, Reds, and Orange had it lit up! Another nice day again also, sunny and 85 degrees and a bit more humid. A little warmer and more humid than the last 2 days. After Breakfast I went to Kroger for Mom for a few items. Did some quick cleaning and then headed up to the hospital to see dad. He's doing real good, nice color and strong voice. They are going to do more tests later this afternoon. Hopefully he'll be released by tomorrow, it's his Birthday he'll be 95! For Dinner tonight I prepared a Seasoned Gulf Coast Grouper w/ Savory Herb Potatoes and Cut Green Beans.

Love Fish, Love Seafood! Plus as you can tell as big as these  fillets are there will be plenty of leftovers for lunch tomorrow!


While at Jungle Jim’s I picked up a package of the Little Potato Company Savory Herb Potatoes. I
had these once before and really enjoyed them. The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good item to have in the pantry! So easy to prepare and no clean up. Then I also heated up a can of Del Monte Low Sodium Cut Green Beans. For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream.
