One of America's Favorites - Omelets

Plain omelette with garnish

In cuisine, an omelette or omelet is a dish made from beaten eggs fried with butter or oil in a frying pan (without stirring as in scrambled egg). It is quite common for the omelette to be folded around a filling such as cheese, chives, vegetables, mushrooms, meat (often ham or bacon), or some combination of the above. Whole eggs or egg whites are beaten, sometimes with a small amount of milk, cream, or water.

The fluffy omelette is a refined version of an ancient food. According to Alan Davidson, the French word omelette came into use during the mid-16th century, but the versions alumelle and alumete are employed by the Ménagier de Paris (II, 5) in 1393. Rabelais (Pantagruel, IV, 9) mentions an homelaicte d'oeufs, Olivier de Serres an amelette, François Pierre La Varenne's Le cuisinier françois (1651) has aumelette, and the modern omelette appears in Cuisine bourgeoise (1784).
An omelette foldover

According to the founding legend of the annual giant Easter omelette of Bessières, Haute-Garonne, when Napoleon Bonaparte and his army were traveling through southern France, they decided to rest for the night near the town of Bessières. Napoleon feasted on an omelette prepared by a local innkeeper, and thought it was a culinary delight. He then ordered the townspeople to gather all the eggs in the village and to prepare a huge omelette for his army the next day.

On March 19, 1994, the largest omelette (128.5 m2, 1,383 sq ft) in the world at the time was made with 160,000 eggs in Yokohama, Japan, but was subsequently overtaken by another, weighing 2,950 kilograms (6,500 lb), made by the Canadian Lung Association at the Brockville Memorial Centre in Brockville, Ontario, Canada, on May 11, 2002. In turn, that record was surpassed on August 11, 2012, by an omelette cooked by the Ferreira do Zêzere City Council in Santarém, Portugal. This record-breaking omelette weighed 6,466 kg (14,255 lb), and required 145,000 eggs and a 10.3-metre (34 ft) diameter pan.

Variations
* Nargesi or Spinach Omelette, an Iranian dish, is made with fried onions and spinach, and is spiced with salt, garlic, and pepper
* A Chinese omelette can be egg foo yung or an oyster omelette.
Denver omelette served with hash browns and English muffin
* A Denver omelette, also known as a Southwest omelette or Western omelette, is an omelette filled with diced ham, onions, and green bell peppers, though there are many variations on fillings. Often served in the Southwestern United States, this omelette sometimes has a topping of cheese and a side dish of hash browns or fried potatoes.
* A Hangtown fry, containing bacon and breaded oysters, is an unusual omelette that originated in Placerville, California, during the gold rush.
* An egg white omelette is a variation which omits the yolks to remove fat and cholesterol, which reside exclusively in the yolk portion of an egg.
* The French omelette is smoothly and briskly cooked in an extremely hot pan specially made for the purpose. The technique relies on clarified butter (to ensure a high smoke point) in relatively great ratio to the eggs (prevents sticking and cooks the eggs more quickly). Good with just salt and pepper, this omelette is often flavored with tomato and finely chopped herbs (often fines herbes or tarragon, chervil, parsley and chives) or chopped onions.
* A frittata is a kind of open-faced Italian omelette that can contain cheese, vegetables, or even leftover pasta. Frittata are cooked slowly. Except for the cooking oil, all ingredients are fully mixed with the eggs before cooking starts.
* The Spanish tortilla de patatas, or tortilla española in other Spanish-speaking countries, is a traditional and very popular thick omelette containing sliced potatoes sautéed in cooking oil. It often includes sliced onions (tortilla de patata con cebolla) and less commonly other additional fillings, such as cheese, bell peppers, and cooked diced ham.
* In Japan, tamagoyaki is a traditional omelette in which eggs are beaten with mirin, soy sauce, bonito flakes, sugar and water, and cooked in a special rectangular frying pan. The omelette is cooked by frying a thin layer of egg mixture and then rolling it up quickly with a pair of chopsticks to form a sausage shape in one end of the pan. Another thin layer of egg is then added to the bottom of the pan and is again rolled, with the original rolled, cooked egg at the centre, over to the other end of the pan. This is repeated until all the egg has been used up, resulting in a dense cylindrical omelette containing many thin layers. This is then squeezed into a rectangular or circular cross-section using a sushi mat, and sliced into segments for serving. Omelette (pronounced omuretsu) can mean a Western omelette. Omurice (from the English words "omelette" and "rice") is an omelette filled with rice and usually served with a large amount of tomato ketchup. Omu-soba is an omelette with yakisoba as its filling.
* In Thai cuisine, a traditional omelette is called khai chiao ไข่เจียว (khai meaning "egg", and chiao meaning oil-fried), in which the beaten egg mixture and a small quantity of fish sauce is deep fried in a wok filled with 1-2 cups of vegetable oil and served over steamed rice. The dish is usually served with Sriracha sauce and cilantro. A variation on this dish is khai chiao songkhrueang, where the plain egg omelette is served together with a stir-fry of meat and vegetables. Yet another type of Thai omelette is khai yat sai, literally "eggs filled with stuffing".
* In Parsi cuisine, an omelette is called Pora which consists of eggs, onion, tomato, green chillies, coriander leaves. Usually had for breakfast with Indian/Irani tea and bread.

Drunken Kidneys

Meat guru, Hugh Fearnley Whittingstall, inspired this recipe. In his rendition, he states that, “If you don’t like kidney, or you’re not quite sure, this recipe will convert you.” I fell in the “not quite sure category”, but I also believe it’s important to consume the whole animal, so thought I would give it a try. I was quickly converted. It is a delicious dish, and would make a terrific hors d’oeuvre for your next party.

Ingredients:
1 – Wild Idea Buffalo Kidney
1 – cup milk
2 – tablespoons olive oil
1 – teaspoon salt
1 – teaspoon black pepper
1 – cup mushrooms, chopped
2 – tablespoons cider vinegar
¼ – cup red current or plum jelly
1 – cup dry sherry
1 – cup white wine
2 – teaspoons Worcestershire sauce
¼ – teaspoon cayenne, *I added more
1 – tablespoon, Dijon mustard
1 – tablespoon cream or sour cream
fresh parsley and chives, chopped

Preparation:
1) Rinse kidney, pat dry, and cut into pieces. Place kidney in a bowl and cover with the milk. Soak for 2 to 24 hours. Drain the milk from the kidney and pat dry.

2) In a sauté pan over medium high heat, heat oil. Add the kidney and season with the salt and pepper. Sauté until browned, tossing or stirring occasionally.

3) Stir in the mushrooms and sauté for a couple more minutes.

4) Add the cider vinegar and then the jelly. Stir to incorporate.

5) Add the sherry, wine, Worcestershire, cayenne, and Dijon. Stir to incorporate. Cover, reduce heat to low, and simmer for about 30 minutes.

Wild Mushroom and Polenta Casserole
In this vegetarian polenta casserole recipe, the choice of cheese is as important as which wild mushroom you use. Morel or hen of the woods (maitake) mushrooms give a more “meaty” experience, while chanterelle or cremini mushrooms will have a milder flavor. The polenta recipe calls for rich, nutty Taleggio or fontina cheese, but you can also use a good-quality washed rind cheese like Brie or Gouda.............

Spinach and Warm Mushroom Salad
In this hearty mushroom and spinach salad recipe, sturdier “mature” spinach leaves hold up better than baby spinach when tossed with the warm mushroom-and-bacon vinaigrette........

Spinach and Tuna Noodle Casserole

Kitchen Hint of the Day!

Cooking Mushrooms...........

Mushrooms are very high in water content and need room around them when they cook.  If you put them too close to each other, they will steam, not sauté. One of the best ways to enjoy mushrooms is when they are caramelized, which is almost impossible if they are crowded.

Also, don’t be impatient.  When you want to develop that lovely caramelized outside, be sure to let them site before stirring or turning.  Walk away for just a few minutes.  You will be glad you did! Enjoy those Mushrooms!

Leftovers -Banquet Homestyle Bakes Pizza Pasta w/ French Bread

Dinner Tonight: Leftovers - Banquet Homestyle Bakes Pizza Pasta w/ French Bread

Toasted a couple of Nutri Grain Eggo Waffles and a cup of Bigelow Decaf Green Tea for Breakfast.
After Breakfast I headed back to Lowe's to exchange Grills. The one we had ordered just would not work in the confined space we have. So I ended up buying a more expensive Grill but more compact. So they'll deliver the new one and take back the other one sometime next week. A lot cooler out today, only in the 40's and rain on and off all day. For Dinner tonight its all leftovers! I heated up the leftover Banquet Homestyle Bakes Pizza Pasta w/ French Bread. I reheat everything in the microwave. I've left the original post below for description. Enjoy!

The Banquet Homestyle Bakes Pizza Pasta  has two of my favorites in it, pasta and pizza! The box
contains 1 can of Pizza Sauce w/ Pepperoni and Sausage and 1 Pouch of Rotini Pasta. I also added a few slices of Turkey Pepperoni and sliced Portabello Mushrooms to the mix. For the preparation you can bake it or prepare it on the stove top, which is how I prepared it. Add 1 cup of water, stir and mix, and simmer and you have your dinner! This came out fantastic! Really had a good Pizza flavor to it and excellent Sauce! The Sauce with the Mushrooms, Sausage, and Pepperoni provides the great flavoring. Easily prepared and makes a hearty and delicious meal. I know it’s a boxed meal, I can’t help it. It’s always been a favorite of mine since the first time I tried it!

Along with the Pizza Pasta I also baked a loaf of Pillsbury French Bread. For Dessert/Snack later a
bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

Banquet Homestyle Bakes Pizza Pasta w/ Cheesy Bread

Dinner Tonight: Banquet Homestyle Bakes Pizza Pasta w/ Cheesy Bread

I made a Ham and Cheese Omelet for Breakfast this morning. I used Egg Beater's Egg Whites, Meijer
Diced Ham, and Sargento Reduced Fat Shredded Sharp Cheddar Cheese. I also toasted a slice of Aunt Millie's Light Whole Grain Bread and had a cup of Bigelow Decaf Green Tea. Rain Showers and windy out today, high of 75 degrees. Not much going on today. I haven't felt up to power the couple of days. Back in 2003 when my Cancer Trial ended I have days that I get chills and it almost feels like the flu. It lasts about 3 days, and this is the 3rd day so hopefully I'll be better tomorrow. I don't have these too often, thankfully! So it was a lot of rest today. For Dinner tonight I prepared Banquet Homestyle Bakes Pizza Pasta w/ Cheesy Bread.

We Love this Pizza Pasta from Banquet! This is one of my favorite boxed foods, Banquet Homestyle
Bakes Pizza Pasta. Nothing like a quick, easy and delicious comfort food. I can only find it at Walmart or online now.

Chopped Bison Sirloin and Sauteed Mushrooms w/ Baked Potato and Texas Toast (Light)

Dinner Tonight: Chopped Bison Sirloin and Sauteed Mushrooms w/ Baked Potato and Texas Toast (Light)

For Breakfast this morning it was French Toast and Turkey Sausage Links. I used Aunt Millie's Light Whole Grain Bread, Egg Beater's, Ground Nutmeg, Ground Cinnamon, and 2% Milk to make the French toast. For toppings I used log Cabin Sugar Free Maple Syrup and I Can't Believe It's Not Butter. For the Sausage I used Johnsonville Turkey Breakfast sausage Links. I also had my morning cup of Bigelow Decaf green Tea. It's a mostly cloudy day and 65 degrees outside today. Trees and flowers are heading to full blooms, its beautiful outside! Got the cart out and did some yard work and then later took a ride around the neighborhood. For Dinner tonight its Chopped Bison Sirloin and Sauteed Mushrooms w/ Baked Potato and Texas Toast (Light).

Mom loves these Chopped Bison Steaks from SayersBrook Bison Ranch! I had them in the freezer so I grabbed a bag of it and let it thaw in the fridge overnight. To start I preheated the oven on 400 degrees. To prepare it I’ll need McCormick Grinder Sea Salt and Peppercorn Medley, McCormick Crushed Rosemary, and McCormick Thyme Leaves. I got the Cast Iron Skillet out to prepare it. I first sprayed it with a very light coat of Pam Cooking Spray and then added a tablespoon of Extra Light Olive Oil. Heated it on medium heat. When the pan was heated I added the Chopped Steak. I cooked each side 2 minutes. Then finished it in the oven, at 400 degrees for 7 minutes. It cooked up beautifully, perfect medium rare! Had a nice little char on the outside and moist and juicy inside. These are so tender you could slice them with a spoon and have an excellent taste to them. Just another very good item from SayersBrook Ranch!

I topped the Chopped Steak with some A-1 Sauce Thick/Hardy. Also cooked up some Sauteed
Mushrooms.

I also prepared a Baked Potato. Seasoned that with the McCormick Grinder Sea Salt and Peppercorn
Medley, and topped with I Can’t Believe It’s Not Butter. I also baked a slice of New York Bakery Lite Texas Toast, One delicious meal tonight. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

SayersBrook Ranch Bison Chopped Sirloin Steak

If you like the flavor of the sirloin, love the Bison Burger but want to take it up a notch, then the Chopped Sirloin Steak is for you! 4 lbs (4 packages each with 2-8oz chopped sirloin steaks).
Great flavor of the sirloin but also extremely tender and juicy.

JILL and JULIA’S BISON BOURGUIGNON
I have made a couple of variations of this amazingly delicious, classic dish, but after reading Julia and Julia a few years back, I had to check out Julia Child's recipe in, Mastering The Art of French Cooking.

My modifications to Julia’s recipe were based on using 100% grass-fed bison, my personal taste, and the steps I thought unnecessary. Specific changes made; I omitted the bacon, as I feel the smokiness overwhelms the dish and added butter for additional flavor and fat. I also used homemade buffalo broth, but in a pinch have used organic beef or chicken broth/stock, and added celery and brandy. Although a bit more extensive, I thought it was worth the extra steps. *However, I have noted in the recipe one-pot shortcuts. Recipe can be made ahead and reheated for entertaining convenience! Fabulous!

Ingredients for Bourguignon: (Serves 6 to 8)
2 - pounds Wild Idea Buffalo Stew Meat
1 - teaspoon black pepper
1 - teaspoon salt
3 - tablespoon olive oil
1 - tablespoon unsalted butter
1 - carrot, quartered
1 - onion, quartered
1 - celery stalk, quartered
1 - ounce brandy
4 - cups red wine (Bordeaux, Burgundy, or Chianti)
1 - cup buffalo broth, or organic beef or chicken broth
1 - teaspoon thyme
1 - teaspoon rosemary leaves, finely chopped
1 - teaspoon basil leaves
2 - bay leaves
3 - cloves garlic, minced
1 - tablespoon tomato paste
1 - tablespoon arrowroot or cornstarch, or more per your thickness preference
¼ - cup sherry
¼ - cup parsley, chopped fine

Ingredients for Mushrooms and Onions:
18 - Small White Onions
1 ½ - tablespoons each Butter & Olive Oil
¼ - cup buffalo or other stock
¼ - cup red wine
4 - parsley sprigs, 1 bay leaf, ½ tsp. thyme
1 - pound mushrooms, quartered
2 - tablespoon butter
1 - tablespoon olive oil

Preparation:
For Bison Bourguignon:

Pre-heat oven to 325*.

Rinse bison meat and pat dry, removing all dampness with paper towels. Season meat with salt and pepper.

In a heavy stockpot, over medium heat add one tablespoon of the olive oil.

Increase heat to medium high and brown the meat in 3 to 4 batches. Do not hurry to turn, allow the meat to brown. This was tedious, but worth it. Add additional olive oil before each batch as needed.

Remove the last batch of meat from the pan and drain any oil left in the pan. Add the butter, and the quartered vegetables and sauté vegetables for 4 minutes.

Add the brandy to stockpot and carefully tilt to flame. Or, cover the pot for a minute if you do not want the brandy to flame.

Return browned meat to stockpot, and add 3 cups red wine, stock, herbs, garlic, and tomato paste. Bring to a simmer. Cover and place in pre-heated oven.

Braise bison for 1 hour or until the meat is tender.

Remove stockpot from oven and discard vegetables. Return meat with juices to the stovetop over medium high heat and bring to a simmer.

Mix the remaining cup of red wine with the thickening ingredient and whisk until smooth.

Slowly stir into the Bourguignon. Adjust thickness as desired.

Season sauce to taste and stir in the sherry right before serving.

For Onions – Prepare while Bourguignon is in the oven:

*For Shortcut: Add the onions and mushrooms directly to the stockpot in step 5 and omit the quartered onion. Do not discard the onions & mushrooms when discarding other quartered vegetables in step 9.

In an oven proof sauté pan over medium heat, add butter and oil, and let come to a bubble.
Add onions, tossing to brown evenly.

Add the stock, wine and herbs and bring to a simmer.

Transfer the sauté pan with the onions to the oven and bake for 40 minutes or until liquids have evaporated.

Remove from oven and set aside until ready to serve. Reheat if needed. *Or for shortcut add to the Bourguignon after cooking.

For Mushrooms:

In saucepan over medium heat, add butter and oil, and let come to a bubble.

Add quartered mushrooms. Toss the pan, browning the mushrooms on all sides, about 5 minutes.

Remove from heat and set aside. Reheat with onions if needed before serving. *Or for shortcut add to the Bourguignon after browning.

To assemble: Plate the prepared pasta, potatoes, or rice and ladle on the Bourguignon, then place the onions and mushrooms on top and sprinkled with parsley. Julia recommends accompanying with Minted, Buttered Peas, but most often I serve a nice green salad, before or after the Bourguignon.

Bison Chopped Sirloin Steak w/ Baked Fries

Dinner Tonight: Bison Chopped Sirloin Steak w/ Baked Fries

Just a cup of Bigelow Decaf Green Tea for Breakfast this morning. Had another rough night dealing with Phantom Pains. These were very painful through out the night so I got little to no sleep. Outside its rain and thunderstorms on and off, 47 degrees. I was all caught up on work so I tried to get some sleep after the Phantom Pains finally let up around 9:00 this morning. For Dinner tonight I prepared a Bison Chopped Sirloin Steak w/ Baked Fries.

I love the SayersBrook Bison Ranch – Bison Chopped Sirloin Steak! I had a package of 2 in the
freezer so I laid it in the fridge overnight to thaw. I've got Mom eating these now, she loves them after trying them.

I preheated the oven on 400 degrees. To prepare them I’ll need McCormick Grinder Sea Salt and Peppercorn Medley, McCormick Crushed Rosemary, and McCormick Thyme Leaves (all seasoning to taste). I got the Cast Iron
Skillet out to prepare these. I first sprayed it with a very light coat of Pam Cooking Spray and then added a tablespoon of Extra Virgin Olive Oil. Heated it on medium heat. When the pan was heated I added the Chopped Steaks. I cooked each side 2 minutes. Then finished it in the oven, at 400 degrees for 6 minutes. It cooked up beautifully, perfect medium rare! Had a nice little char on the outside and moist and juicy inside. I cooked Mom's a bit longer, she likes hers medium well. These have an excellent taste to them and cook up beautifully, another very good item from SayersBrook Ranch! I topped the Chopped Steak with some Sauteed Mushrooms and A-1 Sauce Thick/Hardy.

I also baked some Ore Ida Golden Fries, served with a side of Hunt’s Ketchup. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

For Breakfast on this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I

Did a load of laundry after Breakfast. Then later I went to Walmart for printing ink for my printer and a couple of other items. Back home I got caught up a couple of shows I had recorded. For Dinner tonight Mom wanted Pizza so.......

I ordered Mom's favorite, Domino’s Hand Tossed Pizza Large with Cheese, Sauce, Pepperoni, Italian
