Sweet corn is at its best during the late summer months to early fall. An exception to that is in Florida where sweet corn is harvested from fall to spring. To receive the best flavor from sweet corn, it should be eaten as soon as possible after it is picked because the sugars will begin to convert to starches as soon as it has been picked.

Sweet Corn Ice Cream
Here's one I had to pass along from the PBS website, Sweet Corn Ice Cream! I had not heard of this one until I read the article from PBS. I left the recipe below and a link to the recipe and article. Enjoy!
Sweet Corn Ice Cream
This ice cream tastes exactly like sweetened corn. It’s smooth in texture, and the perfect way to use up the end-of-summer corn
Ingredients
1 1/2 cups whole milk
*1 to 2 corn on the cobs, husk removed, kernels cut off and cobs cut into 2-inch chunks
1/4 teaspoon salt
4 large egg yolks
1/2 cup white granulated sugar
1 cup heavy cream
Directions
In a medium saucepan, pour in the whole milk, add the corn kernels, cob chunks and salt. Turn the flame to medium and heat the corn and milk mixture until hot to the touch, about 1 minute. Immediately turn off the heat and cover the pan. Allow the mixture to steep for 1 hour. At the 1-hour mark, remove the cobs and discard. Using a hand immersion blender, pulse the milk and corn kernels together until smooth. Alternatively, you could transfer the milk and corn kernel mixture to a blender and pulse until smooth. Place a sieve atop the saucepan and pour the mixture through, discarding the corn pulp (this is great to add to compost!).
To a bowl, prepare an ice bath by adding 10 or so ice cubes and adding a few splashes of water. Set a slightly smaller bowl inside the bigger bowl and set a sieve or strain inside the smaller bowl. Set the whole ice bath contraption aside.
In a medium mixing bowl, beat the egg yolks and sugar until the mixture turns a pale yellow and looks very smooth, about 1 minute. Next you’re going to temper the egg yolks. Whisking the entire time, add about 1/4 cup of warm milk to the egg yolks. Add the remainder of the milk to the egg yolk mixture and whisk. Return the entire mixture back to the saucepan and place over medium-low heat. Cook the milk and yolk mixture, stirring constantly, until the thermometer reads 170 to 175 degrees F; the mixture should appear thick and coat the back of the spoon.
Pour the custard through the sieve into the bowl. Stir in the heavy cream. Keep mixing until the mixture is room temperature. Wrap the bowl in plastic and transfer it to the fridge for 4-5 hours, or overnight, until very cold.
Churn the mixture into the bowl of your ice cream maker, according to your ice cream maker’s instructions. Serve immediately for soft serve or alternatively transfer to a freezer-safe container and freeze overnight.
Tips/Techniques
The amount of corn you’ll need for this recipe will depend on how sweet and flavorful the corn you get from the market is. Give a kernel a taste, if it’s really milky and sweet, you should only need one corn on the cob for this recipe. If it’s mild in flavor, add one cob for good measure!

Fried Okeechobee Crappie w/ Hash Browns and Mini Ears of Sweet Corn
Dinner Tonight: Fried Okeechobee Crappie w/ Hash Browns and Mini Ears of Sweet Corn
For Breakfast I warmed up a piece of the leftover Cubed Pork Steak and served it on a Healthy Life Whole Grain English Muffin and topped it with some Sweet and Hot Stone Ground Mustard. Along with my morning cup of fresh brewed Bigelow Decaf Green Tea. It was bit warmer out today, high of 81 degrees, but still sunny and low humidity. Went and had my car washed and the inside cleaned and come back home and had the cart out most of the day. For dinner tonight it’s Fried Okeechobee Crappie w/ Hash Browns and Mini Ears of Sweet Corn.
I love Walleye and all other Fish but my favorite eating Fish has to be Crappie, Okeechobee Crappie! But my stock of the Crappie is running low, maybe only a bag or two left. Very sad when this year's supply is gone. So I laid 3 of bags of the Crappie out in the fridge overnight to thaw. To start I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Crispy Southern Fish Fri Breading Mix. Pan fried them in Canola Oil about 3 minutes per side.As always they came out Golden Brown and delicious! It’s hard to even describe how much I love eating Crappie. especially the Lake Okeechobee Crappie.
To go with the Crappie I prepared some Hash Browns, Potatoes are perfect with Fish, so Hash Browns it is! I always use Simply potatoes Hash Browns. Fried in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. Then I boiled some Green Giant Mini Ears of Sweet Corn. A great replacement, and sometimes better, for fresh Corn on the Cob. As good as last night's dinner was, this one was even better! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

The secret of authentic Southern style fried fish is the crispy combination of cornmeal, corn flour, spices and lemon juice captured in this special Zatarain’s Frying Mix.

Dinner Tonight: Seasoned Turkey Breast Steak w/ Steam Crisp Sweet Corn Kernels, Mashed Potatoes, and Baked French Bread
Another sunny but frigid day out again, minus 3 with the wind chill. Got out this afternoon and finished clearing the driveway again. From that to, I went to the bank, post office, and stopped by Walmart to pick up a few items and a prescription. For dinner prepared the Jennie - O Seasoned Turkey Breast Steak. Tonight I prepared a Seasoned Turkey Breast Steak w/ Steam Crisp Sweet Corn Kernels, Mashed Potatoes, and Baked French Bread.
I came across the Jennie – O Turkey Breast Steak at Walmart a while back, and been using regular ever since! It comes Seasoned and it’s only 130 calories and 3 carbs per serving. You can prepare it several ways, I pan fried mine. To prepare it just preheat a large skillet over medium heat, spray it with nonstick spray. Cook the steaks, turning 2-3 times until meat thermometer inserted into thickest portion of meat reached 165°F, approximately 19-21 minutes. Covered with lid for the last 5 minutes of cooking. Remove from stove top, cover, and let rest for 5-10 minutes before slicing. Then you have a fine and tasty Turkey Breast Steak! As usual it's another winner from Jennie – O! It was well seasoned, I did add a couple of shakes of Sea Salt while it was cooking.
For one side dish I heated up a can of Green Giant Steam Crisp Super Sweet Yellow and White Kernel Corn, my favorite canned Corn. Then I tried a new Mashed Potato, Betty Crocker Creamy Buttery Mashed Potatoes. Comes in a microwavable container, just add water and heat. It came out very good. I normally buy the Idahoan Mashed Potatoes but Walmart had the Betty Crocker ones on sale so I went with that. Then I baked a loaf of Pillsbury Rustic French Bread. Lightly brushed the top of the loaf with Extra Virgin Olive Oil and sprinkled Sesame Seeds on top before baking. For dessert tonight a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Dinner Tonight: Crock Pot Pork Back Ribs w/ Mashed Potatoes, Mini Ears of Sweet Corn, and 3 Bean Salad
The temps weren't too bad this morning when I ventured out to fetch the paper, above zero at least and little to no wind. But as the day went on it gradually got colder and it's supposed to keep dropping, minus 10 by Tuesday morning! Everyone wanted Ribs for dinner so I cut the rack of ribs up and let them marinate overnight in the fridge. Dinner tonight, i prepared Crock Pot Pork Back Ribs w/ Mashed Potatoes, Mini Ears of Sweet Corn, and 3 Bean Salad.
I purchased the Ribs from Kroger the other day. They always have some of the best top quality Pork, too bad their Beef isn’t as good! Last night before I went to bed I cut the Ribs in half, so they’ll fit in the Crock Pot, and put each half in a Hefty Gallon Plastic Bag then covered the Ribs in JB’s Fat Boy Haug Waush BBQ Sauce to marinate all night in the fridge. Then this morning I got out the Crock Pot, lined it with a Reynold’s Crock Pot Plastic Liner, and sprayed that with Pam Non-Stick Spray. Got the Ribs out of the fridge and the bags, discarded the Hefty Bags, and put them in the Crock Pot where I let them cook and simmer, on low, for about 8 hours. Long up in the afternoon you can start smelling the aroma of the Ribs, intoxicating! After 8 hours their ready and now for the hard part of cooking them, getting them out whole without breaking them up! Their that tender, when eating them you need no knife, the bones just slide out. Tender, moist and just full of flavor! For all of us JB’s Fat Boy Sauces and Rubs can’t be beat. The Ribs are incredible! Plus I love using that Crock Pot, no mess and with the plastic liner in the Crock Pot no clean-up. Just wipe it down and store it for the next time.
For one side I heated up some Bob Evan's Mashed Potatoes, just microwave for a total of 6 minutes and their ready. Then I boiled some Green Giant Mini Ears of Sweet Corn. A great replacement, and sometimes better, for fresh Corn on the Cob. Then I opened up a can of Read 3 Bean Salad. A delicious Sunday Dinner! For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Pork ribs are a cut of pork popular in North American and Asian cuisines. The ribcage of a domestic pig, meat and bones together, is cut into usable pieces, prepared by smoking, grilling, or baking – usually with a sauce, often barbecue – and then served.
Several different types of ribs are available, depending on the section of rib cage from which they are cut. Variation in the thickness of the meat and bone, as well as levels of fat in each cut, can alter the flavor and texture of the prepared dish. The inner surface of the rib cage is covered by a layer of connective tissue (pleura) that is difficult to cook tender; it is usually removed before marinating or cooking.
The temps weren't too bad this morning when I ventured out to fetch the paper, above zero at least and little to no wind. But as the day went on it gradually got colder and it's supposed to keep dropping, minus 10 by Tuesday morning! Everyone wanted Ribs for dinner so I cut the rack of ribs up and let them marinate overnight in the fridge. Baked Red Snapper With Garlic w/ Asparagus, Golden Sweet Corn, and...
Dinner Tonight: Baked Red Snapper With Garlic w/ Asparagus, Golden Sweet Corn, and Whole Grain Bread.
They had a fantastic selection of Red Snapper Fillets at Kroger's Seafood Department this morning. So needless to say it was Red Snapper for dinner tonight, Baked Red Snapper With Garlic w/ Asparagus, Golden Sweet Corn, and Whole Grain Bread. i tried a new recipe for the Red Snapper, Baked Red Snapper With Garlic. Place the snapper fillets in a baking dish which has been sprayed with Pam Baking Spray. In a skillet, melt butter with garlic, Worcestershire sauce, Creole seasoning blend, pepper, parsley, and chives, if using. Cook on low for 2 minutes, just to blend flavors. Brush both sides of fish fillets with the butter and herb mixture. Toss bread crumbs in the remaining butter mixture; sprinkle over the fillets. Bake at 400° for about 12 minutes, depending on thickness of fillets, until fish flakes easily and is no longer translucent. The full recipe and instructions are listed at the bottom of the post. I have a new favorite Red Snapper recipe! This turned out lip smacking delicious. The butter, spices, and bread crumbs combine to make the Red Snapper burst with flavor. This is a keeper recipe.
For side dishes I had Asparagus, the leftover Golden Sweet Corn, and Healthy Life Whole Grain Bread. The Asparagus comes from Kroger Produce and it come's in a microwavable steaming bag. Heat for 2 - 3 minutes and it's done, about 2 servings per bag and it's 20 calories and 7 carbs. The Sweet Corn was leftover from last night, I just reheated it in the microwave. For dessert a Jello Sugarless Chocolate pudding.
Baked Red Snapper With Garlic
Ingredients:
2 red snapper fillets, about 6 to 8 ounces each
4 tablespoons butter (I Can't Believe It's Not Butter)
1 medium clove garlic, pressed or minced
3 or 4 drops Worcestershire sauce
1/2 teaspoon Creole or Cajun seasoning, or your own favorite seasoning blend, with salt
1/8 teaspoon fresh ground black pepper
1 teaspoon minced fresh parsley
1 teaspoon snipped fresh or frozen chives, optional
3 to 4 tablespoons plain or seasoned bread crumbs (Progresso Italian Style Bread Crumbs)
2 tablespoon freshly grated Parmesan cheese, optional
Preparation:
