Kitchen Hint of the Day!

Pass the Olive Oil..........

Instead of tossing a pat of butter into your frying pan, try a splash of extra-virgin olive oil or canola oil.

Kitchen Hint of the Day!

Increase your Omega-3........

Select oils that provide omega-3 fatty acids, such as canola or flax seed oil. Also add walnuts to cereal, salads or muffins. Try walnut oil in salad dressings, too.

Kitchen Hint of the Day!

Add the Canola Oil.....

To saute or fry with butter, margarine, or lard, add a small amount of canola oil to raise the smoke point. This will keep the solid fat from breaking down at a higher temperature.

Panko Crusted Cod Fish Sandwich w/ Baked Fries

Dinner Tonight: Panko Crusted Cod Fish Sandwich w/ Baked Fries

Another cloudy Spring Day here in good old West Chester! In the 60's again, so not all bad. Well with the Spring come the Cardinals. Perhaps one of the goofiest birds I've ever seen. Every Spring we have to put towels over our side car mirrors. For some reason they perch on the mirrors and peck at the mirrors and the car door. Then on top of that we have to clean up their messes, I'm using the word "mess" instead of a couple other descriptive words. A neighbor of ours has the same problem, it's always with the Cardinals and no other bird. Strange Birds indeed! For dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Fries.

To prepare the Cod I rinsed the fillets off with cold water and patted dry. Then seasoned them with
Sea Salt and Pepper. Combined the flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dip the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Place fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Meanwhile, heat canola oil in a skillet and place the fillets in and saute 3 minutes each side, or until fillets are heated through and Panko Crust has browned. Served the fillet on a Kroger Lite Wheat Hamburger Bun.

To go with my Cod Sandwich I baked up some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Love Potatoes and love these fries! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Fried Red Snapper w/ Hash Browns and Cut Green Beans

Dinner Tonight: Fried Red Snapper w/ Hash Browns and Cut Green Beans

Another cold but sunny day out. Made a Bob Evan's Pork Sausage Pattie Sandwich for Breakfast this morning, first one I've had in quite a while. After Breakfast got a load of laundry started and then a couple of errands for Mom and back home. For dinner tonight Red Snapper! I prepared Fried Red Snapper w/ Hash Browns and Cut Green Beans.

Some good friends of mine just returned from Florida and brought me a few fillets of Red Snapper they caught while down there, it doesn't get much better! I love Gulf Coast Fish, always such a fresh taste to them. To prepare them, I first rinsed the Snapper off in cold water and patted dry with a paper towel. I seasoned it with McCormick Grinder Sea Salt. Then put the fillet in a Hefty Zip Plastic Bag and added Zatarain's Lemon Pepper Breading Fish Fri. Then shook the bag until the Fillet was well covered, removed from the bag shaking off the excess. I then pan fried it in a Cast Iron Skillet, that I had preheated, in Canola Oil. I fried it skin side down for 4 minutes and then flipped it over to the flesh side and fried it another 3 minutes. Golden brown and nothing but delicious! The fresh taste of the Snapper combined with the Zatarain's Lemon Pepper Breading Fish Fri is a perfect pairing.

For one side I prepared some Simply Potatoes Hash Browns, I always use Simply Potatoes Hash Browns. Fried them in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. I also heated up a can of Del Monte Cut Green Beans. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Catfish Nuggets w/ Hash Browns and Cut Green Beans

Dinner Tonight: Catfish Nuggets w/  Hash Browns and Cut Green Beans

Rainy night last night and a cool and cloudy day out today. With colder temps on the way, highs in the low 40's. Finished up some housework for Mom and moved some outside furniture in the shed for the Winter. For dinner tonight it's Catfish Nuggets. I prepared Catfish Nuggets w/ Hash Browns and Cut Green Beans.

Picked these up at Meijer yesterday, on sale. Washed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Pan fried them in a medium size skillet in Canola Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty. I really like using all the Zatarain's Products!

Dinner Tonight: Fried Okeechobee Crappie w/ Hash Browns and Cut Green Beans

Went out this morning around 6:50 this morning to get the morning papers and it was a bit nippy out! The wind was howling, with snow flurries, and the wind chill made it feel like the mid 20's. The high is only going up to around 40 but with the wind chill will having it feel like the 30's. And Winter begins! Did some laundry and settled in for a day of College Football. For dinner tonight Fried Okeechobee Crappie w/ Hash Browns and Cut Green Beans.

I love my Fish, all Fish, but my favorite eating Fish has to be Crappie, Lake Okeechobee Crappie! But my stock of the Crappie has now ran out. Very sad when the year’s supply is gone. So I laid my last 2 bags of the Crappie out of the freezer and in to the fridge overnight to thaw. To start I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Crispy Southern Fish Fri Breading Mix. Pan fried them in Canola Oil about 3 minutes per side. As always they came out Golden Brown and delicious! It’s hard to even describe how much I love eating Crappie. especially the Lake Okeechobee Crappie. All out of Crappie until next year!

To go with the Crappie I prepared some Hash Browns, Potatoes are perfect with Fish. I always use Simply potatoes Hash Browns. Fried in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. Then I heated up a can of Del Monte Cut Green Beans, Green Beans go well with any meal as far as I'm concerned. Green Beans was my favorite Vegetable growing up even. One fantastic Crappie Meal tonight, but my last for a while. For dessert later a SO Delicious Dairy Free Coconut Milk Mini Ice cream Sandwich, one of my new dessert favorites. Made with Coconut Milk and only 80 calories and 12 net carbs per serving (1 Mini Sandwich).

Seasoned Haddock w/ Potato Pancakes and Cut Green Beans

Today’s Menu: Seasoned Haddock w/ Potato Pancakes and Cut Green Beans

Beautiful Fall Like morning out again, 44 degrees and sunny. Warmed up to about 70, gorgeous outside! i had an early morning check-up at my new Oncologist, real nice guy and should work out great. My old Oncologist retired earlier this year. Came home did a little housework and got the cart out and enjoyed the beautiful day. For dinner tonight I prepared Seasoned Haddock w/ Potato Pancakes and Cut Green Beans.

I had the fillet of Haddock in the freezer so I let it thaw overnight in the fridge. To prepare it I rinsed the fillet in cold water and patted dry with a paper towel. Then sliced the fillet into smaller pieces. I then seasoned it with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. Shook off the excess and pan fried them in Canola Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The more I have Haddock the more I like it. It's a meaty delicious and mild tasting fish.

For a side dish I made some Potato Pancakes. I used Manischewitz Potato Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes). I also heated up a can of Del Monte Cut Green Beans. For dessert later a Healthy Choice dark Fudge Swirl Frozen Greek Yogurt.

Bison Sirloin Steak w/ Sauteed Mushrooms, Roasted Asparagus, and Baked Potato

Today’s Menu: Bison Sirloin Steak w/ Sauteed Mushrooms, Roasted Asparagus, and Baked Potato

It's been overcast and a lot cooler out today, high of 71! Went to the store early and picked up a couple of things for dinner and ran an errand for Mom, back home. Got the cart out for a while this afternoon, hadn't had it out in a while Dad came home yesterday from rehab and is very glad to be back home. He's having a bit of trouble adjusting back home. At the rehab he was used of pressing a button and having a nurse do everything for him, it's not going to happen here. He's very capable to get up do things for himself, plus doing it for himself gets him up and moving, Rehab told us to make him do things and quit sitting around all the time. He'll be fine though. For my dinner tonight I prepared a Bison Sirloin Steak w/ Sauteed Mushrooms, Roasted Asparagus, and Baked Potato.

I used a Great Range Bison Sirloin. Great Range is a very good Bison Meat. It’s sold here locally at Kroger. I seasoned it with McCormick Grinder Sea salt and Black Peppercorn and pan fried it in Canola Oil, about 4 minutes per side. Medium rare with a nice char on the outside and a little pink and moist and tender inside, love Bison or Buffalo!

For one side I prepared some Sauteed Mushrooms, seasoned with Roasted Cumin, Sea Salt, and Parsley. I also had a Baked Potato and Roasted Asparagus. Then I also had a Baked Potato along with some Kroger Private Selection Handpicked Asparagus Spears. Another microwave side, microwave on high for 5 minutes and they’re ready! Very good side, good to have at hand in the freezer. Comes in a steamable microwave bag, seasoned it with Sea Salt, Pepper, and Kraft Reduced Fat Grated Parm Cheese. For dessert later a Healthy Choice Dark Fudge Swirl Greek Frozen Yogurt.

Cheddar and Mushroom Turkey Burger w/ Baked Fries

Dinner Tonight: Cheddar and Mushroom Turkey Burger w/ Baked Fries

It's been a very humid and hot day out today! For Breakfast I prepared a Fried Turkey Spam, Cheddar, and Scrambled Egg English Muffin. Love that Turkey Spam! Spent the Morning at the Hospital with Dad, who is doing and looking a lot better today! In fact they are moving him from the hospital to a rehab center. He's an amazing 92 year old man. For dinner I prepared a Grilled Cheddar, Mushroom, and Sweet and Hot Mustard Turkey Burger w/ Baked Fries.

I’m using the Jennie – O Turkey Burger Patties. Their already pre-made Patties so all I did was season them with Sea Salt and Ground Black Pepper and fry! I was going to grill them but it is just too humid out there for me so I pan fried them. I fried them in Canola Oil about 8 1/2 minutes per side. I served the Burgers on Aunt Millie’s Reduced Calorie Hamburger Buns and topped the Pattie with some Sweet Hot Stone Ground Mustard, some sautéed sliced Baby Bella Mushrooms, and a slice of Sargento Ultra Thin Sharp Cheddar Cheese. I also baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries for a side dish. For dessert later Jello Sugar Free Dark Chocolate Pudding.

Fried Okeechobee Crappie w/ Hash Browns and Mini Ears of Sweet Corn

Dinner Tonight: Fried Okeechobee Crappie w/ Hash Browns and Mini Ears of Sweet Corn

For Breakfast I warmed up a piece of the leftover Cubed Pork Steak and served it on a Healthy Life Whole Grain English Muffin and topped it with some Sweet and Hot Stone Ground Mustard. Along with my morning cup of fresh brewed Bigelow Decaf Green Tea. It was bit warmer out today, high of 81 degrees, but still sunny and low humidity. Went and had my car washed and the inside cleaned and come back home and had the cart out most of the day. For dinner tonight it’s Fried Okeechobee Crappie w/ Hash Browns and  Mini Ears of Sweet Corn.

I love Walleye and all other Fish but my favorite eating Fish has to be Crappie, Okeechobee Crappie! But my stock of the Crappie is running low, maybe only a bag or two left. Very sad when this year's supply is gone. So I laid 3 of bags of the Crappie out in the fridge overnight to thaw. To start I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Crispy Southern Fish Fri Breading Mix. Pan fried them in Canola Oil about 3 minutes per side.As always they came out Golden Brown and delicious! It’s hard to even describe how much I love eating Crappie. especially the Lake Okeechobee Crappie.

To go with the Crappie I prepared some Hash Browns, Potatoes are perfect with Fish, so Hash Browns it is! I always use Simply potatoes Hash Browns. Fried in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. Then I boiled some Green Giant Mini Ears of Sweet Corn. A great replacement, and sometimes better, for fresh Corn on the Cob. As good as last night's dinner was, this one was even better! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Seasoned Haddock w/ Potato Pancakes and Cut Green Beans

Dinner Tonight: Seasoned Haddock w/ Potato Pancakes and Cut Green Beans

I had those Phantom Pains for almost 24 hours, WAY too long! I went to bed around midnight and they finally stopped sometime during the night. Fairly nice day out a bit more humid and about 84 degrees today. Went to Kroger for a few items for Mom and took it easy after that, the last 24 hours really wore me down. For dinner tonight I prepared Seasoned Haddock w/ Potato Pancakes and Cut Green Beans.

I picked up a fillet of Haddock while at Kroger this morning. To prepare it I rinsed the fillet in cold water and patted dry with a paper towel. Then sliced the fillet into smaller pieces. Kitchen Hint of the Day!

Use canola oil for frying. It is low in saturated fat, has a high burning point, and does not detract from the flavor of the food you are frying.

Dinner Tonight: Panko Crusted Cod Fish Sandwich w/ Baked Fries

Not quite as hot or humid out, bit of break. Went to the Kroger up the road and picked up a couple of items for myself and also a few items for Mom. Came home to find a gift box from Jennie - O Turkey as part of the  Jennie – O Switch Club that I am a member of. It contained 3 different of the Turkey Franks, Coupon, and a Meat Thermometer. You can read more on this in a previous post I posted earlier today. They came and measured for our new Kitchen Floor that will be installed later. So for dinner tonight it's Panko Crusted Cod Fish Sandwich w/ Baked Fries.

To prepare the Cod I rinsed the fillets off with cold water and patted dry. Then seasoned them with Sea Salt and Pepper. Combined the flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dip the floured fillet into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Place fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Meanwhile, heat canola oil in a skillet and place the fillets in and saute 3 minutes each side, or until fillets are heated through and Panko Crust has browned. Served the fillet on a Healthy Choice Whole Grain Hamburger Bun. Panko and Fish are perfect together! Mom and dad both said it was one of the best Fish Sandwiches that they had ever had.

For a side I baked up some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Weight Watcher's Snack Size Dutch Chocolate Ice Cream Sandwich.

Seasoned Fried Haddock w/ Red Beans & Rice and Sliced Carrots

Dinner Tonight: Seasoned Fried Haddock w/ Red Beans & Rice and Sliced Carrots

A cloudy morning turned into a beautiful afternoon. Had the cart out for most of the afternoon. Went down to the lake and around the neighborhood, great to get outside. For dinner tonight I prepared Seasoned Fried Haddock w/ Red Beans & Rice and Sliced Carrots.

I had some Haddock Fillets in the freezer, which I always have in stock, that I laid out in the fridge overnight to thaw. I then pan fried them in Canola Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix is a perfect combo.

For one side I prepared some of Grandma Maud’s Red Bean and Rice, first time in a while since I've prepared this.  Just follow the easy instructions on the package and you have some great Red Beans and Rice! It had a good Cajun Seasoning to it and was only 100 calories and 16 net carbs. Then I also heated up a small can of Walmart Brand Sliced Carrots and had a slice of Klosterman Wheat Bread. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.

Fried Okeechobee Crappie w/ Canned Green Beans, Fried Potatoes, and...

Dinner Tonight: Fried Okeechobee Crappie w/ Canned Green Beans, Fried Potatoes, and Corn Bread

I think Spring may have a foot hold on our weather finally! The Winter that wouldn't go away has finally did just that, go away. Windy but sunny all day and about 70 degrees, My Mom's Easter Flowers are up and getting ready to bloom, our neighbors are already in bloom. More rain coming, deal with that when it happens. Got the 4 wheel mobility cart out for a while today. It's still running good and I think I've had now for 5 or 6 years now. My Mom's cousin and her husband stopped by and brought me 10 big and beautiful bags of Okeechobee Crappie, or Specks as they call them in Florida! I love all Fish and Seafood but these have to be my favorite. So for dinner tonight it's Fried Okeechobee Crappie w/ Canned Green Beans, Fried Potatoes, and Corn Bread.

They brought them straight up from Florida sealed and frozen. I laid 2 bags out in the fridge overnight to thaw. I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Crispy Southern Fish Fri Breading Mix. Pan fried them in Canola Oil about 3 minutes per side. As usual this year's batch of Crappie is just as good as previous years. They came out Golden Brown and delicious! I could just eat these fillets for dinner, or any meal, with no sides needed!

For one side I peeled and sliced some Red potatoes up. Seasoned with Morton's Salt Substitute and ground Black Pepper. Fried them in a Cast Iron Skillet in Canola Oil, fried on medium high and turned with a spatula several times until both sides started browning. I rarely fix Potatoes like this, but I should. The Potatoes come out so delicious prepared this way. Then for another side I heated up a Mason Jar of the canned Green Beans that we had canned back last Summer. They taste as if they were just picked from the garden. I also had a slice of Klosterman Wheat Bread but Mom and Dad wanted some Cornbread so I prepared them a small Cast Iron Skillet of Martha White Cornbread. For dessert later a Jello Sugar Free Double Chocolate Pudding topped With a dab of Cool Whip Free.

Lake Okeechobee Crappie Fishing

The Florida Crappie fishing, speckled perch or speck’ as they are called throughout the State of Florida is the most sort after pan fish on Lake Okeechobee. Although the Florida crappie can be caught during the summer months, they really are at their best from late fall to early spring.

Go Lake Okeechobee freshwater fishing with your family and friends together for an affordable day of Florida crappie fishing on Lake Okeechobee. Lake Okeechobee comprises a 730-square-mile area and is the second-largest natural lake in the U.S., holding more than a trillion gallons of water.

Most fishing takes place along the southeastern, west and north portions of the lake within a mile of the shoreline. Look for hyacinths, hydrilla and other water plants where big bass ambush shiners, bluegills and other scaled groceries. They also pounce on frogs, crickets, worms, grasshoppers and pretty much any fish smaller than itself. Plastic imitations of those baits work well.

You know the deal black crappies speckled perch to most Floridians are about as smart as a dead bird, but fortunately they are a lot more abundant. Stick a minnow in their face, set the hook and start heating up the frying-pan as we say here on Okeechobee.

Blackened Tilapia Fish Sandwich w/ Baked Fries

Dinner Tonight: Blackened Tilapia Fish Sandwich w/ Baked Fries

When it rains it pours, especially around here! It started raining about 9:30 this morning and hasn't let up since, even a couple of thunderstorms passing through. They say we have a day or two of this and then clearing and 70 degrees, hope they're right! Not much going on today. For dinner tonight I prepared a Blackened Tilapia Fish Sandwich w/ Baked Fries.

I purchased the Tilapia from Kroger Sunday. To prepare it I rinsed the fillet off in water and patted dry with a paper towel. I seasoned it with a bit of Sea Salt. Then I melted a 1/2 tablespoon of Blue Bonnet Light Stick Butter down and rubbed the fillet down with it, covering both sides. I then covered both sides, with Zatarain’s Blackening Seasoning. I added Canola Oil to a Cast Iron Skillet and preheated it until the Oil was almost ready to start smoking and I added the Tilapia. Just a word of warning have your window open and overhead stove fan a working, it will smoke! I cooked the fillet for 3 minutes each side and it was fork tender and ready. I love the smokey and heated flavor the Zatarain’s Seasoning provides. I served it on an Aunt Millie's Reduced Calorie hamburger Bun. I topped it with some Hidden Valley Spicy Chipotle Pepper Sandwich Spread & Dip. If you haven’t tried this Spread, and you like some added heat this is your Spread! It’s not that over powering heat but it is Spicy. It’s a creamy and thick Spread so if you like Spicy give it a try.

For a side I baked some of my favorite Fries, Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Served them with a bit of Hunt’s Ketchup. Had a Snapple Diet Peach Drink also. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.

Cubed Steak Sandwich w/ Baked Fries

Dinner Tonight: Cubed Steak Sandwich w/ Baked Fries

A lot of rain the past day or so, we even have a Flood Alert issued for the County. Did get a break from the rains in the afternoon though and the sun even came out for a while. Cool down coming in the morning, low of 36 degrees. Found a new recipe I'm going to be trying for Saturday. Stopped by Meijer and Kroger to pick up some items to prepare it with and the home. For dinner tonight its a Cubed Steak (Topped with Sauteed Mushrooms) Sandwich w/ Baked Fries.

I used my absolute favorite Cubed Steak, Meijer Cubed Steak. The best Cubed Steak I have ever found or had. I purchased some earlier last year and been buying them ever since! It’s about the only Beef I ever have, normally it’s Buffalo, Fish, Chicken, or Pork. They’re good size patties so I was able to cut them in half and get 2 meals out 1 pattie. To prepare them I seasoned them with Sea Salt and Ground Black Pepper and I then rolled them in flour that I had mixed with a bit of Hungarian Paprika. Shook off the excess flour and pan fried them in Canola Oil, about 4 minutes per side. They came out delicious! Excellent flavor and very tender, especially for Cubed Steak which sometimes can be somewhat tough and stringy. Served it on a Aunt Millie’s Reduced Calorie Hamburger Bun and topped it with some Sauteed Mushrooms.

I also baked a serving of the Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Then for dessert later/snack later, sliced Cracker Barrel 2% Cheese with Ritz Whole Wheat Crackers.

Cube Steak

Cube steak is a cut of beef, usually top round or top sirloin, tenderized by fierce pounding with a meat tenderizer, or use of an electric tenderizer. The name refers to the shape of the indentations left by that process (called “cubing”). Many professional cooks[who?] insist that regular tenderizing mallets cause too much mashing to produce a proper cube steak, and insist on either using specialized cube steak machines, or manually applying a set of sharp-pointed rods to pierce the meat in every direction. This is the most common cut of meat used for chicken fried steak.

In Canada as well as in some parts of the United States, cube steak may be called a minute steak, because it can be cooked quickly.
Others distinguish minute steak as:
* simply referring to the cut, which is not necessarily tenderized;
* thinner than cube steak (hence does not need tenderizing);
* cut from sirloin or round, while cube steak cut is from chuck or round.
The term “minute steak” is also used in the United Kingdom, where the term “cube steak” is little known.
