"Meatless Monday" Recipe of the Week - Bean and Spinach Dumplings on Wild Mushrooms

Bean and Spinach Dumplings on Wild Mushrooms
Savory bean and spinach dumplings served atop sautéed wild mushrooms.

Recipe Ingredients:
1 1/2 cups cooked navy beans, drained and rinsed (or use canned, rinsed and drained)
1/2 cup onion, chopped
3 tablespoons olive oil - divided use
1 cup fresh spinach, chopped
1 tablespoon cilantro, chopped
1/2 cup cornmeal
1 cup freshly grated Romano cheese - divided use
3/4 teaspoon ground black pepper - divided use
1/2 teaspoon ground nutmeg
1 large egg white
20 fresh (or dried and reconstituted) wild mushrooms, such as morels or porcini
4 tablespoons unsalted butter
1/4 teaspoon salt - divided use
2 cloves garlic, chopped

Cooking Directions:
1 - Purée beans in a food processor or blender. Set aside.
2 - Sauté onion in 2 tablespoons oil for 2 minutes. Add bean purée and cook 1 minute. Add spinach and cilantro and cook 2 minutes. Transfer mixture to a bowl. Add cornmeal and mix well. Then add half the cheese, 1/2 teaspoon pepper, nutmeg, and egg white. Combine thoroughly.
3 - Coat a large baking dish with 1 tablespoon oil. Set aside.
4 - Bring 3 quarts of water to a boil.
5 - Dip a teaspoon in cold water, then fill the wet spoon with batter and drop the dumpling into saucepan of boiling water. Repeat until all batter is used. Cover and simmer dumplings for 2 to 3 minutes. Remove with a slotted spoon and place in baking dish. Sprinkle with remaining grated cheese and bake for 10 minutes at 350°F (175°C).
6 - If using fresh wild mushrooms, clean thoroughly. If mushrooms are dried, soak in tepid water for 20 to 60 minutes, until reconstituted. Drain thoroughly, squeezing out any excess liquid. Slice mushrooms into large pieces.
7 - Cook mushrooms in two batches. Sauté first batch in 2 tablespoons butter in a wide skillet over high heat for 2 minutes. When mushrooms begin to lose their juices, add 1/8 teaspoon each of salt and pepper, and half the garlic. Cook for another 3 minutes. Remove mushrooms from skillet and place on warm platter. Repeat for next batch.
8 - Place dumplings over mushrooms. Serve immediately.

Leftovers: Chicken and Dumplings and Cornbread!

Dinner Tonight: Leftovers - Chicken and Dumplings and Cornbread





To start my morning off I Scrambled some Egg Beater's Egg Whites, heated up a couple of Johnsonville Turkey Breakfast Sausage Links, toasted a slice of Aunt Millie's Light Whole Grain
Bread, and had a cup of Bigelow Decaf Green Tea. I really enjoy the Egg Beater's Egg Whites, they Scramble up perfect and are only 25 calories per serving (1 serving is 1/4 cup which is equal to 1 Egg) Outside had a couple of showers with a high of 83 degrees, and humid. Before the showers moved in later in the day I raked the front and side yard. Lot of leaves already. Then got the leaf blower and cleaned off the deck and driveway areas. That was about my day today. For Dinner tonight Leftovers!


No way could I let these Chicken and Dumpling leftovers go to waste! I know the carbs and calories are bit higher than I like but just had to have them one more time! I had a light Breakfast and just a 1/2 an Apple for Lunch to even up everything a bit. I've left the original post from last night below for recipe directions.



My Mom is making her Chicken and Dumplings for Dinner Tonight! She used Bisquick Heart Smart Mix for the Dumplings and Amish Chicken Breasts for the Chicken. She first made the Dumplings using a recipe found on Bisquick Boxes. Made those and set them aside until ready to use.









For the Chicken. She boiled the Skinles Chicken Breasts in a pot until they were done adding more water to them twice. After the Chicken was cooked she removed them from the pot and roughly shredded it. Returned it to the pot of Broth or Stew and added the Dumplings, reducing the heat. Cooked the two together uncovered for 10 minutes and then another 12 minutes covered until they were done.







As I said these Dumplings just melt in your mouth! Just incredible flavor with the Chicken being moist and adding it's flavor. I can't have these often, having Diabetes 2, but once in a while is fine!











As the Chicken and Dumplings were cooking I made the Cornbread. I made a small Cast iron Skillet
of Cornbread. As always I used Martha White Corn Meal Mix, something I think I could eat every meal. I like a nice fresh and hot slice with Butter on it. When I make this I just make it by the instructions on the package but I only use half the ingredients because I use a small cast iron skillet to make it. I use Egg Beaters and Extra Virgin Oil instead of Eggs and Vegetable Oil the recipe calls for. Bake at 450 degrees for about 25 minutes and you have some golden brown piping hot Cornbread! If you use a small cast iron skillet just cut the recipe in half and it comes out just right for the skillet size. What a dinner tonight!

Mettwurst on Bun w/ Spaetzle with Sage

Dinner Tonight: Mettwurst on Bun w/ Spaetzle with Sage





For Breakfast this morning I a al fresco Apple Maple Chicken Sausage Breakfast Patty. I found more
of these at Meijer the other day and picked a few of the packages up. I love making these and making them into a Breakfast Sandwich. I fried the patty for 8 minutes and as that was cooking I toasted a Healthy Life Whole Grain English Muffin. Along with my Breakfast Sandwich I had that morning cup of Bigelow Decaf Green Tea. Partly sunny with a passing shower, 77 degrees. After I had Breakfast I went up to McDonald's and picked up Breakfast for Mom and Dad. Later in the day I went to Home Depot, I'm still getting estimates and picking out back splash tiles for the kitchen. Back home did a few things around the house. For dinner tonight a little German Cuisine flair tonight, Mettwurst on Bun w/ Spaetzle with Sage.





I came across some Bluegrass Lean Mettwurst while at Jungle Jim's Market and grabbed a couple of packages of it. I froze one package and kept the other one in the fridge, and having them for Dinner tonight.














To prepare them I used a medium size skillet and added the Metts. I then added water to the pan, just enough water to cover about a 1/4 of the Mett. Turned the heat on medium and covered the pan. I turned the Metts frequently to get a nice even cook on them. When the water had boiled down I cooked them an extra 3 minutes to brown them. They turned out fantastic, nice and meaty! I served it on a Healthy Life Whole Grain Hot Dog Bun topped with French's Spicy Brown Mustard.




To go with my Mett I prepared some Maggi Spaetzle (Authentic German Dumplings). I make these
from time to time, really enjoy them. To prepare them I followed the package cooking instructions; brought 4 quarts of water to a boil in a large saucepan. Stirred in the Spaetzle; boiled uncovered, for about 27 minutes (until tender). Drained it and set aside. Then melted 2 tablespoons of Blue Bonnet Light Butter over medium heat. Added 2 tablespoons of Dried Rubbed Sage and 1 Clove Minced Garlic. Stirred frequently for another 2 minutes. Added the finished Spaetzle. Reduced the heat to low; cook, stirring occasionally, for 4 minutes. Seasoned with Sea Salt and Pepper and served. Comes out so flavorful and Dumplings so tender. Makes one excellent side dish. Something a little different, a very good dinner tonight!

One of America's Favorites - Chicken Soup

A classic preparation of chicken noodle soup 

Chicken soup is a soup made from chicken, simmered in water, usually with various other ingredients. The classic chicken soup consists of a clear chicken broth, often with pieces of chicken or vegetables; common additions are pasta, dumplings, or grains such as rice and barley. Chicken soup has acquired the reputation of a folk remedy for colds and influenza, and in many countries is considered a comfort food.








Variations on the flavor are gained by adding root vegetables such as parsnip, potato, sweet potato and celery root, herbs such as parsley, dill, other vegetables such as zucchini, whole garlic cloves or tomatoes and black pepper. The soup should be brought slowly to a boil and then simmered in a covered pot on a very low flame for one to three hours, adding water if necessary. A clearer broth is achieved by skimming the drops of fat off the top of the soup as it is cooking, first bringing the chicken to boil from a pot of cold water and discarding the water before continuing, or straining it through a strainer or cheesecloth. Saffron or turmeric are sometimes added as a yellow colorant. Then, the chicken can be shredded by hand and stored in the refrigerator until ready for use in the soup.








Chicken soup can be a relatively low fat food: fat can be removed by chilling the soup after cooking and skimming the layer of congealed fat from the top. A study determined that "prolonged cooking of a bone in soup increases the calcium content of the soup when cooked at an acidic, but not at a neutral pH".








Several terms are used when referring to chicken soups:
Homemade chicken noodle soup 

* Chicken stock is a liquid in which chicken bones and vegetables have been simmered for the purpose of serving as an ingredient in more complex dishes. Chicken stock is not usually served as is. Stock can be made with less palatable parts of the chicken, such as feet, necks or bones: the higher bone content in these parts contributes more gelatin to the liquid, making it a better base for sauces. Stock can be reboiled and reused as the basis for a new stock. Bouillon cubes or soup base are often used instead of chicken stock prepared from scratch.
* Chicken broth is the liquid part of chicken soup. Broth can be served as is, or used as stock, or served as soup with noodles. Broth can be milder than stock, does not need to be boiled as long, and can be made with meatier chicken parts.
* Chicken bouillon or bouillon de poulet is the French term for chicken broth.
* Chicken consommé is a more refined chicken broth. It is usually strained to perfect clarity, and reduced to concentrate it.
* Chicken stew is a more substantial dish with a higher ratio of solids to broth. The broth may also be thickened toward a gravy-like consistency with a roux or by adding flour-based dumplings (matzah balls do not have the same thickening effect).
* While any soup in which chicken has been simmered or with a chicken stock base is, strictly speaking, a chicken soup, chicken soup, unless qualified, implies that the soup is served as a thin broth, possibly with pieces of meat, vegetables, noodles, rice or dumplings.
* Cream of Chicken Soup is a thick, creamy soup made with chicken stock and pieces combined with milk and/or cream and flour which may or may not contain vegetable pieces, depending on the recipe.








Chicken soup has long been touted as a form of folk medicine to treat symptoms of the common cold

and related conditions. In 2000, scientists at the University of Nebraska Medical Center in Omaha studied the effect of chicken soup on the inflammatory response in vitro. They found that some components of the chicken soup inhibit neutrophil migration, which may have an anti-inflammatory effect that could hypothetically lead to temporary ease from symptoms of illness. However, since these results have been obtained from purified cells (and directly applied), the diluted soup in vivo effect is debatable. The New York Times reviewed the University of Nebraska study, among others, in 2007 and concluded that "none of the research is conclusive, and it is not known whether the changes measured in the laboratory really have a meaningful effect on people with cold symptoms."

It has also been shown that chicken soup contains the Amino acid cysteine, which is very similar to acetylcysteine, which is used by doctors for patients with bronchitis and other respiratory infections to help clear them.

Chicken noodle soup is also known as "Jewish penicillin", either as ersatz penicillin, or as alternative to penicillin.








In the United States and Canada, chicken soup often has noodles or rice in it, thus giving it its common name of "chicken noodle soup." The term may have been coined in a commercial for the Campbell Soup Company in the 1930s. The original 21 varieties of Campbell's condensed soup featured a "chicken soup with noodles", but when it was advertised on the Amos 'n' Andy radio show in the 1930s by a slip of the tongue the soup was referred to as "chicken noodle soup". Traditionally, American chicken soup was prepared using old hens too tough and stringy to be roasted or cooked for a short time. In modern times, these fowl are difficult to come by, and broiler chickens (young chickens suitable for roasting or broiling) are often used to make soup.

Typically sold as a condensed soup, canned chicken soup such as Campbell's Chicken Noodle Soup is notable for its high sodium content, 890 mg per 1/2 cup serving, giving a 1 1/2 cup bowl of soup about 2,500 mg, a full days allowance in the case of the mainstream brand, Campbell's. Other condensed chicken soups such as Chicken with Rice or Chicken & Stars Soup produced by Campbell have similar amounts, as do generic versions of the product. Canned chicken soup with much less sodium than the traditional formulation is available, including many varieties produced by Campbell's, some with at little as 100 mg of sodium. Campbell's claims production of a chicken noodle soup that will find broad consumer acceptance, in short, that will sell, is very difficult.

One of America's Favorites - Chicken and Dumplings

chicken broth being used to cook the dumplings by boiling. A dumpling in this context is a biscuit dough, which is a mixture of flour, shortening, and liquid (water, milk, buttermilk, or chicken stock). The dumplings are either formed into a ball, rolled out flat or dropped.

It is a popular comfort food dish, commonly found in the Southern and Midwestern United States, that is also attributed to being a French Canadian meal that originated during the Great Depression. Chicken and dumplings as a dish is prepared with a combination of boiled chicken meat, broth produced by boiling the chicken, multiple dumplings, and salt and pepper for seasoning. In some areas, this meal is known as chicken and sliders.

The name of the dish is sometimes printed on menus as "chicken n dumplings", "chicken 'n' dumplings", or "chicken-n-dumplings". "Dumplings" is sometimes spelled "dumplins" in this context.


Various commercial preparations of chicken and dumplings are available, including canned and frozen versions of the prepared dish. Frozen raw dumplings, typically very flat strips about 1x4 inches, can be cooked in any broth. The consistency of the prepared dish, whether homemade or purchased, varies from a thin soup to a very thick casserole-like consistency, easily eaten with a fork. Thicker preparations are made by boiling the dumplings longer and/or adding flour or another thickening agent directly to the broth. Flour tortillas or canned biscuits, rolled thin on a floured surface, cut into strips, are a quick and easy substitute for homemade dough. Butter may be added to the recipe for added richness. Since chicken meat would become dry and tough if it is boiled long enough to cook the dumplings and thicken the broth, the chicken or parts are removed from the broth before adding the dumplings. While the dumplings are cooking, the meat is separated from the bones. When the dumplings are done and the broth seasoned and thickened, the chicken is returned to the broth. The dish is then ready to be served, but may be kept on low heat so as to not further cook the chicken.

Although the dumpling has been around for many generations, each culture has its own way of individualizing the basic dumpling recipe. There are other international versions of chicken and dumplings. For instance, the Chinese culture has the wonton, which is similar to the chicken and dumplings dish as we know it today. Additionally, the Iranian-Jewish dish, called gondi, includes matzah ball dumplings, which are also common in Central European food.

Since the creation of the dumpling, various meats aside from chicken have accompanied it, such as beef, lamb and pork.



A variant known as "chicken and pastry" or simply "chicken pastry" features wide, flat noodles rolled from biscuit dough. Where such a distinction is made, it is sometimes considered a different dish from "chicken and dumplings", which is known for small balls of dough rather than flat strips. In the Appalachian region of the United States, this preparation is called chicken and slicks.

Chicken and Dumplings w/ Corn Bread

Dinner Tonight: Chicken and Dumplings w/ Corn Bread


Tried something new for dinner tonight. I made some Chicken and Dumplings w/ Corn Bread. I used Reames Homestyle Flat Dumplings, first time I tried them and will be using them again. easy to fix and 170 calories and 35 carbs. The carbs could be lower but not bad for noodles plus the other ingredients for the Dumplings aren't very high in calories or carbs. Along with the noodles I used Miller's Amish Chicken Breasts (3 pieces), sliced Mini Carrots, and Diced New Potatoes.


I boiled the Chicken seasoning it with Sea Salt, Pepper, Thyme, and Ground Smoked Cumin. After the Chicken was done I pulled each breast aprt.I also boiled the Mini Carrots ahead of time also along with boiling the Diced New Potatoes. Before putting on the noodles I made the Cornbread. i tried Marie Callender's Low Fat Original Corn Bread, first time I tried this also. This was a breeze to fix also just add 1 1/2 cups water to the one pouch of Corn Bread Mix and mix throughly. Pour into a 8"x8"x2" pan and bake at 375 degrees for 30 minutes. Came out very moist and delicious. After getting the Corn Bread in the oven I started boiling the Dumplings, boil for 30 minutes. With about 8 minutes left to boiling the Dumplings I added the Carrots, Diced Potatoes, and Chicken Breast meat and continued to boil for the 30 minutes. As I said it was the first time I had used the Reames Dumplings and Marie Callender's Corn Bread mix and I'll be using both again as both turned out great. For dessert later a Yoplait Delight Chocolate Eclair Parfait.

Chicken and Dumplings

Chicken and Dumplings

    2 Chicken Breasts

    2 Cups Heart Smart Bisquick

    3/4 Cup of 2% Milk

    Salt and Pepper

DUMPLINGS:

* Put Chicken Breasts in large pan and cover with water to about two inches above the chicken. Add 1-2 teaspoons salt. If desired, add poultry seasoning. Bring to boil and simmer chicken until very tender (about 45 minutes). The flesh should be falling off the bones. Remove chicken from the pan with a slotted spoon or tongs. Place in a bowl to cool. When cool, remove meat from bones and remove skin.

*Put 2 cups of Bisquick in a bowl and add 1/2 cup of milk. Stir. Add just enough of remaining milk to make dough stick together. Place on floured board, wax paper or cabinet. Sprinkle flour on top. Flour hands and pat down. Knead by folding dough over and pushing down with knuckles about 10 times adding more flour as needed. Pat dough out and roll very thin with a glass or rolling pin. The dough should be about 1/8 inch thick. Use a knife to cut into 1-2 inch strips.

*Bring broth to a boil over high heat. Drop in dumplings quickly and push down with a spoon. Return to boil as quickly as possible. Cover pan and turn heat down to medium. Boil for 10-15 minutes until dumplings are done. Leave pan covered as much as possible, but be sure the dumplings do not stick. When done, return chicken to pan and stir gently. When chicken is hot, remove from heat.

*If you’re really in a hurry, you can make this recipe by using cut-up canned biscuits for the dumplings.
