Ham and Swiss Sandwich w/ Mashed Potatoes and Deviled Egg
Dinner Tonight: Ham and Swiss Sandwich w/ Mashed Potatoes and Deviled Egg
I toasted a Thomas Light 100% Multi Grain English Muffin and topped it with Smucker's Sugarless Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. Mostly Cloudy and 76 degrees out today. After Lunch I got the rake, leaf blower, and the cart out. Did yard work today. Later on I took a ride around the neighborhood. Then went down by the lake. Not too bad out. For Dinner it's Easter Dinner Leftovers. I made a Ham and Swiss Sandwich w/ Mashed Potatoes and Deviled Egg.
Plenty of leftovers from the Easter Dinner Feast! Good thing we like Ham, there's a ton leftover. We almost always use Cook’s Ham when we bake a Ham. So with the Ham I baked yesterday, we made some into Ham Sandwiches. Just took a few slices and serving it on Aunt Millie’s Light Whole Grain Bread. The Ham is so delicious and moist. And as always with Cook’s Ham, perfect seasoning! We’ll have quite a few Breakfasts and Lunches out of this. To make the Sandwich I used Aunt Millie’s Light Whole Grain Bread. Topped it with a bit Kraft Light Mayo with Olive Oil, French's Yellow Mustard, and a slice of Boar's Head Swiss Cheese. Love this Sandwich!
For a side I heated up the leftover Bob Evan's Mashed Potatoes and I had a leftover Deviled Egg. Just love these leftovers! It's sometimes better the second time around! For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Semi-Boneless Hams
Cook’s Semi-Boneless Hams are now fully cooked! This means they may be eaten cold or heated. The ham only needs to be heated through if serving warm.
With fewer bones and less fat, Cook’s Semi-Boneless Hams are a great value. With two of the three bones removed, carving and serving are much easier. With only the center bone remaining, your family can still can enjoy the great taste and flavor that only a Cook’s bone-in ham can offer, plus the added value of more lean meat and the convenience of less bone.

Make extra when cooking.......
While you’re making pasta sauce, casserole or soup, make double (or even quadruple) the quantity you need. Freeze the remainder in meal portions, and you have ready-made meals for later in the week or month. Save time and money when you can!

Slow Cooker BBQ Pulled Pork w/ Mashed Potatoes, Green Beans, Baked Sesame Loaf Bread
Dinner Tonight: Slow Cooker BBQ Pulled Pork w/ Mashed Potatoes, Green Beans, Baked Sesame Loaf Bread
For Breakfast I had a couple of Nutri Grain Eggos and cooked up a couple of Johnsonville Turkey Breakfast Sausage Links. I also had my morning cup of Bigelow Decaf Green Tea. Did my morning workout and grabbed a shower then back to bed! Another one of those nights and mornings of dealing with Phantom Pains. These really wipe me out for the day if they are bad, and these were quite painful. So nothing going on today. For Dinner tonight its Slow Cooker BBQ Pulled Pork w/ Mashed Potatoes, Green Beans, Baked Sesame Loaf Bread.
We had a lot of Pulled Pork Boston Butt leftover from Dinner last night. It was so delicious we we
were not going to let it go to waste! So I heated up the leftovers in a large sauce pan. Heated it on medium low and just let it simmer to heat up.
As the Pulled Pork was heating I prepared the Mashed Potatoes. I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better.
For a second side I opened up another jar of the Canned Green Beans. Just heated them up in a large sauce pan and done! I love our Canned Beans, fresh Green Beans in Winter! To put the Dish together I made a bed with Mashed Potatoes. Topped them with Pulled Pork and topped the Pork with some of the JB's Fat Boy HaugWaush BBQ Sauce. Served it with the Green Beans and Sesame Bread. I also baked a Kroger Bakery Rustic Sesame Loaf Bread. For Dessert/Snack I had a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.
Crock Pot BBQ Pork Shoulder or Boston Butt
INGREDIENTS
Pork Shoulder or Boston Butt, about 4 to 7 pounds, bone-in or boneless
1/4 cup of Water
JB’s Fat Boy Premium All-Purpose Rub
JB’s Fat Boy HaugWaush BBQ Sauce
PREPARATION
1 – The night before apply the Rub all over Pork Shoulder and seal in a plastic bag. Refrigerate until ready to use the next day.
2 – Place the meat in the slow cooker with water.
3 – Cover and cook on HIGH for 1 hour. Turn to LOW and cook 7 to 9 hours longer, until very tender. Remove roast and discard fat and juices. Chop or shred the pork; return to slow cooker. Mix a little barbecue sauce into the meat for flavor. Cover and cook on LOW for about 1 hour longer, until hot.
4 – Serve on sandwich buns with coleslaw (Optional) and extra barbecue sauce on the side.

Dinner Tonight: Leftover - Shrimp and Smoked Turkey Sausage Gumbo
Dinner Tonight: Leftover - Shrimp and Smoked Turkey Sausage Gumbo
For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese.
Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off! One delicious Breakfast! We were fogged in this morning! Heavy fog until about 11:00 this morning. But then it turned sunny and a high of 46 degrees. The snow is melting! After Breakfast I went to Meijer to do some grocery shopping. I was at the Kroger up the road from us yesterday but their prices are so much higher than Meijer or Walmart! So after Meijer I stopped and got gas and then to McDonald's to pick up Breakfast for Mom. Later on went outside and cleaned up around the driveway and deck. Then kicked back the rest of the afternoon. For Dinner tonight Leftover: Shrimp and Smoked Turkey Sausage Gumbo. I wasn't going to let these leftovers go to waste! I've left the original post from yesterday for details of the dish, Enjoy!
One of my favorite meals tonight, Shrimp and Smoked Turkey Sausage Gumbo! To make it I used a box of Zatarain’s Gumbo Pasta Dinner Mix for the Gumbo base, 1 1/2 Butterball Hardwood Smoked Turkey Sausages (sliced into bite size slices), a bag of Meijer Brand Jumbo Shrimp and Frank’s Red Hot Sauce. I precooked the Sausage and Shrimp, according to the package instructions, before adding it to the Gumbo.
The Zatarain’s Gumbo Pasta Dinner Mix uses Pasta instead of Rice. It’s very easy to prepare, takes about 25-30 minutes. To start; I just boil the stock that’s in the packet, add the sliced the Turkey Sausage to the stock along with a few shakes of Frank’s Red Hot Sauce and continued to cook for 10-15 minutes. Then I added the Shrimp and simmered another 2-3 minutes. And the Gumbo is ready to serve and It turns out fantastic! Nice flavor, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one easily prepared hearty and delicious dish. Plus enough leftovers for a couple of lunches too! Then for Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Leftovers – Shrimp w/ Pasta Roni – Angel Hair Pasta with Herbs
Dinner Tonight: Leftovers – Shrimp w/ Pasta Roni – Angel Hair Pasta with Herbs
For Breakfast I Scrambled some Egg Beater's Egg Whites and topped those with some Sargento Reduced Fat Shredded Sharp Cheddar Cheese. Then I toasted a couple of slices of Aunt Millie's Light
Whole Grain Bread, lightly buttered with I Can't Believe It's Not Butter. Also had a cup of Bigelow Decaf Green Tea. More rain today, heavy at times. High of 47 degrees. Cleaned the house today, dusted and vacuumed. Caught up on everything so I caught up on some shows I had recorded. For Dinner tonight Leftovers – Shrimp w/ Pasta Roni. I’ve left the original post from yesterday for the dish preparation and description.
So for the Shrimp part of the dish I used Meijer Brand Jumbo Shrimp. This is my frozen Shrimp of choice, best I’ve found. I had them in the freezer so I let them thaw overnight in the fridge. I love
Shrimp and all Seafood. For the Shrimp; I started by rinsing the Shrimp off in cold water and letting it dry in a colander. Using a medium size skillet, that I sprayed with Pam Cooking Spray and a 1 tablespoon of Extra Virgin Olive Oil, that I heated on medium heat. I seasoned them with Old Bay Seasoning and a sprinkle of Morton’s Lite Salt and added the Shrimp to the skillet. Cooked them 2 minutes per side, turning the Shrimp once. And as the Shrimp was cooking I started to prepare the Pasta.
I love having Shrimp with the Pasta Roni – Angel Hair Pasta with Herbs. It comes with the Pasta Special Seasonings Packet and I added; 1 1/3 cups of water, 2/3 cups of 2% milk, and 2 tablespoons
of Blue Bonnet Light Butter. Then to prepare it; In a medium saucepan bring water, milk, margarine or butter to a boil. Then slowly stir in pasta and Special Seasonings. Separate pasta with a fork, if needed. Return to a boil. Reduce heat to medium. Boil uncovered, 4-5 min. or until pasta is just tender, stirring frequently. Sauce will be thin. Let stand 3-5 min. to thicken. There’s 2 servings per box. Nice seasoning and the Parmesan Sauce is very flavorful. I topped the Pasta with some Kraft Reduced Fat Grated Parmesan Cheese and the Shrimp. Too good, this makes one delicious Shrimp and Pasta Dish! For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Our Pasta Roni Angel Hair Pasta with Herbs flavor blends delicate angel hair pasta in a creamy herb
sauce with other natural flavors. This delicately flavored dish is the perfect complement to your family’s favorite Italian-inspired recipes.

Baked Ham/Swiss and Turkey /Cheddar Sliders w/ Thanksgiving Leftovers
Dinner Tonight: Baked Ham/Swiss and Turkey /Cheddar Sliders w/ Thanksgiving Leftovers
For Breakfast this morning I heated up the leftover Diced Potatoes and Diced Ham that I had prepared yesterday. Not a bad day out today, 54 degrees and mostly cloudy. After Lunch I took Mom's car up to have it washed and then I cleaned all of the inside windows and vacuumed it out for her. Later on I entered a Scrabble Tournament online. I love Scrabble! For Dinner tonight I used the Leftovers from Thanksgiving. I prepared Baked Ham/Swiss and Turkey /Cheddar Sliders w/ Thanksgiving Side Leftovers.
For Dinner its Baked Ham and Swiss Sliders along with Turkey and Vermont Cheddar Sliders. To make them I’ll need; King's Hawaiian Sweet Rolls (Cut in half), leftover Ham, leftover Turkey Breast, Sargento Swiss Cheese, Boar's Head Vermont Yellow Cheddar, Blue Bonnet Light Butter – 4 Tbsp (original recipe called for 8), 2 tsp. Dried Onion Powder, 1 1/2 tsp. Worchestershire Sauce, 1 1/2 tsp. Ken’s Light Poppyseed Dressing, and 1/2 tsp. French’s Yellow Mustard.
Next I made my Bun Topping Sauce. I grabbed a medium size bowl to mix my ingredients in. I then mixed the Butter, Onion Powder, Worchestershire Sauce, Ken’s Light Poppyseed Dressing, and French’s Yellow Mustard together. Stirred until well mixed and sit it aside until ready to use it.
Then to prepare the Sliders; preheat your oven to 350 degrees. Then I got an 11 x 14 baking pan that I
lined with foil and sprayed with Pam Non-Stick Cooking Spray. I placed the bottom half of the Slider Buns in the bottom of the baking pan. Next I placed the Sweet Sliced Ham and Sliced Turkey Breast on top of each Bun. You can put as much of the Ham or Turkey you want on each. I then placed a 1/2 a slice of the Swiss on the Ham and Cheddar cheese on top of the Turkey. Then added the the top 1/2 of each bun to each Slider. Then topped all the Sliders with Topping Sauce Mixture. Covered the baking pan with foil and baked at 350 degrees for 15 minutes. Removed the foil and baked an additional 15 minutes to allow the rolls to crisp. Remove from oven to cool and serve.
These Baked Ham Sliders are incredible! The Ham, Turkey, Cheese, and Buns are all great but the Topping Sauce makes the Dish. The Sauce gives it such great flavor, love these Sliders! Plus a great way to use those Thanksgiving Leftovers!
Then I also heated the leftover Mashed Potatoes and Green Beans. Those Canned Green Beans are so delicious! We had canned these during Summer and broke out the first jar for Thanksgiving, so good! For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Kitchen Hint of the Day!
Turkey Leftovers Storage........
You can store your leftovers in the refrigerator for up to four days. Try to reheat only what you'll be serving at one time rather than reheating the entire portion. It's safe to heat it all and then re-store what you don't use, but the food will continue to lose flavor and moisture the more it's reheated.
Use a thermometer to make sure your leftovers are reheated to 165 degrees F. Sauces, soups and gravies should come to a full boil. If you're using the microwave, cover the food and rotate it frequently to make sure it heats evenly.

Make space for Thanksgiving by cleaning out leftovers and expired condiments and using up as much as possible of what’s in the freezer and the refrigerator.
You can store hearty produce, like apples, fresh cranberries, and potatoes, in a cool, dry place, like the trunk of the car or the basement. We made a covered shelf in our shed, it works great as long as the weather stays cold.

Leftovers - Shrimp w/ Pasta Roni – Angel Hair Pasta with Herbs and Garlic Oval Loaf Bread
Dinner Tonight: Leftovers - Shrimp w/ Pasta Roni – Angel Hair Pasta with Herbs and Garlic Oval Loaf Bread
For Breakfast I just made a cup of Bigelow Decaf Green Tea. Partly cloudy and 84 degrees out today,
also more humid. After my Tea I headed out to do some grocery shopping at Meijer. Also stopped by McDonald's to pick up Breakfast for Mom. I didn't do a whole lot today I've been having some back problems. So with not much to do I got some rest with a heating pad this afternoon. For Dinner tonight Leftovers - Shrimp w/ Pasta Roni. I've left the original post from yesterday for the dish preparation and description.
So for the Shrimp part of the dish I used Meijer Brand Jumbo Shrimp. This is my frozen Shrimp of
choice, best I've found. I had them in the freezer so I let them thaw overnight in the fridge. I love Shrimp and all Seafood.
I also baked a loaf of RiverRoad Bake House Garlic Oval Loaf Bread. Love this Bread! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Mango Snapple to drink.

Leftover: Crispy Cheddar Bacon Chicken w/ Cheesy Rotini Pasta
Dinner Tonight: Leftover: Crispy Cheddar Bacon Chicken w/ Cheesy Rotini Pasta
For Breakfast this morning to start my Saturday off I prepared a Skillet Potatoes and Ham for
Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese. Sunny, hot, and humid out today. Summer like weather has returned! Got the cart out of the shed and did some yard work before it got too hot and humid out. Cleaned off the deck and driveway areas also. Then it was an afternoon of College Football. For dinner tonight Leftovers: Crispy Cheddar Bacon Chicken w/ Cheesy Rotini Pasta.
Made an easy Dinner tonight, warmed up leftovers! I had the leftover Crispy Cheddar Bacon Chicken w/ Cheesy Rotini Pasta from last night. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.
To make the dish I’ll need; 1 Box Betty Crocker Crispy Cheddar Bacon Chicken – Chicken Helper and 2 Perdue Perfect Portions Chicken Breasts.
I love the Betty Crocker Crispy Cheddar Bacon Chicken – Chicken Helper. I’ve tried a few of them
now but this is my favorite by far. This really turns out delicious and an easy meal to prepare! The Rotini and Cheese Sauce is excellent and the Seasoned Crumb Coating with Natural Bacon Flavor for the Chicken is one of the better Crumb Coatings I’ve had for Chicken. To prepare it first go ahead and make the Pasta, by the box directions. Just boil, stir, and season.
As the Pasta was cooking I prepared the Chicken, I used Perdue Perfect Portions Chicken Breasts. I
cut each Breast into 3 pieces. Coated each piece with the provided Seasoned Crumbs and fried until done. The full instructions are at the end of the post. The Chicken Helper box contains Rotini Pasta with Naturally Flavored Cheesy Sauce Mix and Seasoned Crumb Coating with Natural Bacon Flavor. I added the Chicken, Water, 2% Milk, Extra Light Olive Oil, Sea Salt and Pepper.
I also baked a loaf of the RiverRoad Bake House Garlic Oval Loaf Bread. This has become the family’s favorite Baked Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Peach Diet Snapple to drink.

Leftovers; Cumin Spiced Pork Tenderloin w/ Slow Cooker Parmesan Potatoes and Green Beans
Dinner Tonight: Leftovers; Cumin Spiced Pork Tenderloin w/ Slow Cooker Parmesan Potatoes and Green Beans
For Breakfast this morning I prepared a Chicken Sausage Patty Breakfast Sandwich. I toasted a Healthy Life Multi Grain English Muffin, heated up a al fresco Country Style Chicken Sausage Patty,
and topped it with a 1/2 slice of Kraft Deli Deluxe Sharp Cheddar Cheese. Love these Breakfast Sandwiches! Also I had my morning cup of Bigelow Decaf Green Tea. After Breakfast I went to Meijer for a couple of items. Then stopped by McDonald's to pick up Breakfast for Mom. Did some things around the house, inside and outside. For Dinner tonight Leftovers; I reheated the Cumin Spiced Pork Tenderloin w/ Slow Cooker Parmesan Potatoes and Green Beans.
That Pork Tenderloin was so delicious last night I wasn't about to let it go to waste! So I reheated everything and I had Dinner! I've the original post from last night for description, instructions, ans pictures. Till tomorrow!
I purchased the Pork Tenderloin from Kroger yesterday, a small one at just over 1 lb. To make the dish I’ll need; 1 tablespoon Extra Virgin Olive Oil, 1 pork Tenderloin, 1 tbsp Roasted Cumin, 1 tsp
Garlic Powder, 1 tsp Cumin Spiced Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 350°. Combine all the ingredients; rub it all over the pork. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 4 minutes, browning on all sides. From the stove to the oven; Bake at 400° for 10 minutes or until a thermometer registers 155° (slightly pink), turning after 7 minutes. Remove from the skillet into a platter or dish and let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which makes one incredible Crust on the Pork with the inside being tender and moist!

I also baked a loaf of RiverRoad Bake House Garlic Oval Loaf Bread. This has become the family’s favorite Baked Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn. I had an Ice- Water to drink.

Leftovers: Chicken and Dumplings and Cornbread!
Dinner Tonight: Leftovers - Chicken and Dumplings and Cornbread
To start my morning off I Scrambled some Egg Beater's Egg Whites, heated up a couple of Johnsonville Turkey Breakfast Sausage Links, toasted a slice of Aunt Millie's Light Whole Grain
Bread, and had a cup of Bigelow Decaf Green Tea. I really enjoy the Egg Beater's Egg Whites, they Scramble up perfect and are only 25 calories per serving (1 serving is 1/4 cup which is equal to 1 Egg) Outside had a couple of showers with a high of 83 degrees, and humid. Before the showers moved in later in the day I raked the front and side yard. Lot of leaves already. Then got the leaf blower and cleaned off the deck and driveway areas. That was about my day today. For Dinner tonight Leftovers!
No way could I let these Chicken and Dumpling leftovers go to waste! I know the carbs and calories are bit higher than I like but just had to have them one more time! I had a light Breakfast and just a 1/2 an Apple for Lunch to even up everything a bit. I've left the original post from last night below for recipe directions.
My Mom is making her Chicken and Dumplings for Dinner Tonight! She used Bisquick Heart Smart Mix for the Dumplings and Amish Chicken Breasts for the Chicken. She first made the Dumplings using a recipe found on Bisquick Boxes. Made those and set them aside until ready to use.
For the Chicken. She boiled the Skinles Chicken Breasts in a pot until they were done adding more water to them twice. After the Chicken was cooked she removed them from the pot and roughly shredded it. Returned it to the pot of Broth or Stew and added the Dumplings, reducing the heat. Cooked the two together uncovered for 10 minutes and then another 12 minutes covered until they were done.
As I said these Dumplings just melt in your mouth! Just incredible flavor with the Chicken being moist and adding it's flavor. I can't have these often, having Diabetes 2, but once in a while is fine!
As the Chicken and Dumplings were cooking I made the Cornbread. I made a small Cast iron Skillet
of Cornbread. As always I used Martha White Corn Meal Mix, something I think I could eat every meal. I like a nice fresh and hot slice with Butter on it. When I make this I just make it by the instructions on the package but I only use half the ingredients because I use a small cast iron skillet to make it. I use Egg Beaters and Extra Virgin Oil instead of Eggs and Vegetable Oil the recipe calls for. Bake at 450 degrees for about 25 minutes and you have some golden brown piping hot Cornbread! If you use a small cast iron skillet just cut the recipe in half and it comes out just right for the skillet size. What a dinner tonight!

I never let these leftovers go to waste, Shrimp and Smoked Turkey Sausage Gumbo leftovers! So for
Dinner tonight I reheated the leftover Shrimp and Smoked Turkey Sausage Gumbo. I had froze them from the other night so I sat the container in the fridge overnight to thaw. The dish reheats perfectly! It’s just as good the second time around, if not better! I also reheated a couple of slices of Garlic Loaf Bread that was leftover also. For Dessert later a Jello Sugar Free Dark Chocolate Pudding. I have left the original post from the other day that has the ingredients and instructions for the Shrimp and Smoked Turkey Sausage Gumbo. Enjoy!
Nice flavor, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one easily prepared hearty and delicious dish.I also heated up some of the RiverRoad Bake House Garlic Oval Loaf Bread I had yesterday for Dinner.
