Pea Soup with Smoked Turkey

Here’s a take on a classic soup recipe that’s as thick as a London fog. As hearty and flavorful as it is, don’t worry — it’s low-fat, and under 300 calories per serving. Soup’s on!

INGREDIENTS

1½ cups split peas
6 cups water
1 medium potato, peeled and cubed
3 ribs celery, chopped
1 large onion, chopped
1 medium carrot, peeled and chopped
1 bay leaf
1 teaspoon marjoram
8 ounces JENNIE-O ® DELI FAVORITES® Hickory Smoked Turkey Breast, from the service deli, cubed
1 teaspoon salt, if desired
½ teaspoon freshly ground pepper
4 ounces baby spinach, chopped
DIRECTIONS

1) In large saucepan, bring split peas and water to a boil. Reduce to a simmer and add potato, celery, onion, carrot, bay leaf and marjoram. Simmer 1½ hours, stirring occasionally. Add water, if needed.
2) When peas are falling apart, add turkey, salt and pepper; stir. Cook 10 minutes. Stir in spinach and simmer just until wilted.
