Dinner Tonight: Cumin Spiced Pork Chop w/ Savory Herb Potatoes and Cut Green Beans








For my Breakfast I toasted a Healthy Life Whole Grain English Muffin, topped it with a Poached
Egg, and had a cup of Bigelow Decaf Green Tea. Ahhh this Ohio Weather, It was 68 degrees yesterday and woke this morning and its 28 degrees. And we only had a high of 38 degrees, but it is Winter! I took Mom over to BMV to get her driver's license renewed. I have the up most respect for the BMV Employees! That have to deal with worst of people, and the best. But most are rude and grumpy, and the line of people never goes down. So hats off to the BMV, I couldn't deal with it. So for dinner tonight I prepared a Cumin Spiced Pork Chop w/ Savory Herb Potatoes and Cut Green Beans.






While at Meijer I picked up another of the Center Cut Pork Chop from the Meijer Meat Counter. I
really love the Meijer selection and quality of all their meats.









I almost always use my Cumin Spiced rub when I have Pork Chops, and I'm preparing that way for
Dinner. To prepare my Chops I’ll need; The Cumin Spiced Rub which consists of; 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 5 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork.





Another favorite I always pick up at Meijer are the Little Potato Company Savory Herb Potatoes. I have these quite often and really enjoy them. The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good item to have in the pantry! So easy to prepare and no clean up.







To go with my Chops and Potatoes I heated up a can of Del Monte Reduced Sodium Cut Green
Beans. I could have Beans every meal, love them! For Dessert later tonight I’ll be having a bowl of Dole Sliced Peaches.

Microwave
In three easy steps, you have perfectly steamed and seasoned potatoes!

1. Simply remove the cardboard sleeve and seasoning pack. The plastic film stays on to aid in steaming the potatoes.
2. Place the convenience tray in the microwave. Cook on high for 5 minutes*.
3. Let the tray rest for 2 minutes then carefully remove plastic film and stir in seasoning pack. Caution – the contents will be very hot. If desired, add 1 tbsp. of butter or olive oil.

Serve and enjoy!
