Soup Special of the Day! - Confetti Bean Chili Recipe

A neighbor of mine highly reccommened this recipe, Confetti Bean Chili Recipe! She makes it all the time for her and the family. It originally came off the Tasre of Home website and magazine. Confetti Bean Chili Recipe

A medley of vegetables and beans adds color and appeal to this recipe

Ingredients
1 large onion, chopped
2 cans (14-1/2 ounces each) chicken broth
2 garlic cloves, minced
3 tablespoons chili powder
1-1/2 teaspoons ground cumin
1/2 teaspoon dried oregano
1 pound carrots, sliced
1 pound red potatoes, cubed
2 cans (14-1/2 ounces each) diced tomatoes
1 can (15 ounces) black beans, rinsed and drained
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
2-1/2 cups water
Directions
1. In a Dutch oven or soup kettle, simmer onion in broth for 5 minutes. Add next six ingredients; bring to a boil. Reduce heat. Cover; simmer 10 minutes. Add remaining ingredients. Cover; simmer 20 minutes. Yield: 12 servings.
