Grecian Turkey Gobbler
Ingredients
1 tablespoon olive oil
1 tablespoon red wine vinegar
1 tablespoon lemon juice
½ teaspoon chopped fresh oregano
1 (14-ounce) can artichoke heart quarters, drained
½ cup PELOPPONESE® roasted sweet red pepper strips
2 tablespoons diced red onion
⅓ cup PELOPPONESE® olive tapenade
4 baguettes or rolls, split
8 ounces JENNIE-O® All Natural Oven Browned Turkey Breast, from the service deli
2 tomatoes, sliced
½ cup feta cheese crumbles
oregano leaves, to garnish
Directions
In small bowl, combine oil, vinegar, lemon juice, oregano, artichokes, roasted red pepper and onion.
Spread tapenade inside baguettes. Add turkey, tomatoes and artichoke mixture. Sprinkle with feta.
