Dinner Tonight: Fish Sandwich w/ Mac & Cheese




I had a meal planned out but as they say, "the best laid plans....." I had went to our local Kroger and

picked some more coasters for furniture early this morning. So after breakfast I was putting the coasters underneath the couch in the living room and as I was sitting the end of the couch down I got my ring finger of my lefthand caught underneath the leg of the couch, Ouch!! As the day went on it started to swell and a pea size ball form on the side of the finger, so I thought I better go have it checked out. Went to the Little Clinc inside Kroger and they said I had a contusion and it looked as though I had a blood blister that formed. So just keep ice on it and it should go down in a couple of days without having to lance it. By the time I got back home I really didn't feel like cooking a big dinner so I hit the freezer and came up with the last minute, easy to prepare, dinner! Tonight it's a Fish Sandwich w/ Mac & Cheese.





I used Gorton’s Fish Fillet that I baked at 400 degrees. I served the Gorton’s Fish on a Kroger Lite Wheat Bun. Then for a side I microwaved Stouffer’s Classic Mac & Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Finally a great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.
