Baked Battered Cod Sandwich w/ Baked Crinkle Fries

Dinner Tonight: Baked Battered Cod Sandwich w/ Baked Crinkle Fries

Another beautiful Fall Day around the neighborhood! Mostly Sunny and in the 70's. After breakfast headed out to Meijer and stopped by Kroger for Mom. Back at home did a few things around the house and headed over to the rehab center to see Dad. He's doing a lot better and hopefully will be released and back home Friday!

Trident PubHouse Battered Cod. I always buy a couple of boxes of this when I’m at Jungle Jim’s
International Market, it’s the only place I’ve come across that sells it here locally. They have all different types and breading of Fish fillets. I like the Battered Cod because it’s a little lower in calories and carbs than the others. I baked the Cod at 425 degrees for 16 minutes, turning once. Nice size Fillets with an excellent Beer Batter Breading! Served it on a Aunt Millie's Reduced Calorie Hamburger Bun.

I also baked some Ore Ida Crinkle Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.
