Roasted Red Pepper, Cilatro and Green Chile Shrimp Tacos

Dinner Tonight: Roasted Red Pepper, Cilantro and Green Chile Shrimp Tacos




To start my Sunday morning I heated up a couple of slices of Smithfield Anytime Sliced Ham and
then served them on a toasted Healthy Life Whole Grain English Muffin. Another cool morning out, around 34 degrees. Cloudy but less windy out and it a high in the 50's. Mom and Dad went to Church so it gave me a chance to clean the house. After that Mom had a ton of old bills and such that I shredded for her. For dinner tonight I prepared Roasted Red Pepper, Cilatro and Green Chile Shrimp Tacos.








I had picked up a packet of Ortega Cilantro and Green Chile Skillet Sauce and couldn’t wait to have some Shrimp Tacos. It's been quite a while since I've made these. I used a bag of Kroger Seafood Large Shrimp along with the packet of Ortega Cilantro and Green Chile Skillet Sauce, Delallo Roasted Red Peppers, Jalapeno slices, Shredded Carrots, Chopped Scallions, fresh Shredded Kroger Private Selection Asiago Cheese, and Old El Paso 6" Flour Tortillas. The Old El Paso 6" Flour Tortillas are 150 calories and 29 carbs per serving (2 Tortillas).




I heated up a tablespoon of Extra Virn Olive Oil in a medium size skillet over medium heat. I started
by slicing the Sweet Peppers into strips and adding them to the skillet, stirring them and cooking until tender (about 4 minutes). Stirred in the Shrimp and sliced Jalapenos, stirred this until the Shrimp just started turning pink. Then added the Ortega Cilantro and Green Chile Skillet Sauce, cooking another 4 minutes till everything was heated through. What an aroma coming from the skillet! Heated up the Tortilla Wraps in the microwave for 20 seconds and added Shrimp Taco Mixture. Carrots, Scallions, then topped it some fresh grated Asiago Cheese, and served. Just a flatout delicious Shrimp Soft Taco! Had a nice heat to it but not overpowering. I need to start having these much more often! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.
