Monte Cristo Turkey Breakfast Sandwich
Ingredients
CRANBERRY SPREAD
⅓ cup jellied cranberry sauce
3 tablespoons orange juice
1 tablespoon cream cheese
BATTER
½ cup skim milk
½ cup liquid eggs
¼ cup water
½ teaspoon vanilla extract
1 cup flour
2 teaspoons ground cinnamon
2 teaspoons sugar
1 teaspoon baking powder
SANDWICHES
8 slices crusty bread
1 cup liquid eggs, scrambled
8 slices JENNIE-O® Maple Turkey Bacon, cooked according to package directions
8 slices JENNIE-O® sliced All Natural Oven Browned Turkey Breast, from the service deli
powdered sugar, if desired
Directions
1 - To make cranberry spread, in small bowl, combine cranberry sauce, orange juice and cream cheese; set aside.
2 - To make batter, in medium bowl, whisk together milk, ½ cup liquid eggs, water and vanilla.
3 - In medium bowl, combine flour, cinnamon, sugar and baking powder. Make well in center. Add milk mixture; mix to smooth batter.
4 - To make sandwiches, heat flat griddle. Dip each bread slice in batter. Cook on griddle 2 to 3
minutes per side or until golden.
5 - Spread half the bread slices with cranberry mixture. Top with scrambled eggs, bacon and turkey. Top with remaining battered bread slices. Cook in heated Panini press or two-sided grill for 2 to 3 minutes or until golden. Cut sandwich in half. Secure with toothpicks. Arrange on plate. Sprinkle with powdered sugar, if desired.
