Bunyan's Diabetic Chicken Cacciatore

 Diabetic Chicken Cacciatore
Ingredients
- 2 clove minced garlic
- 1 sm diced onion
- 1 sm green bell pepper
- 3 Tbsp extra virgin olive oil
- 1 small can(s) crushed tomatoes
- 1 c water
- 1/2 bay leaf
   
- 1/2 tsp chili powder
- 1/4 tsp dry oregano
- 3/4 tsp sea salt
- 6 boneless skinless chicken breasts
- 1 c flour
- 1/2 tsp fresh cracked black pepper
- 1/4 c olive oil, extra virgin
Directions

1.   Wash the chicken under running water and drain

2.   Add the olive oil to a heavy skillet, brown the chicken lightly

3.   place chicken in a 13X9 baking pan, set aside

4.   In the same skillet used to brown the chicken, saute the garlic, onions, & peppers until tender

5.   Add tomatoes, water, bay leaf, chili powder, oregano & salt

6.   Simmer 1 1/2 hours

7.   Pour over the chicken

8.   Bake in a pre heated 325 oven for 30 mins or until the chicken is thoroughly cooked

9.   Serve
