Dinner Tonight: Tuscan Seasoned Pork Medallions w/ Cut Italian Beans and Loaded Baked Potato Casserole




It's May 14th and we had to turn the heat on this morning! Come on warm weather, we are ready!
Toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker's Sugar Free Blackberry Jam. Cleaned the house today, vacuum and dusting. Then after lunch headed over to see a friend of mine who had surgery a couple of days ago and now is home. He's sore but feeling a lot better! Then I headed over to spend the afternoon with Dad at the rehab center. He's getting a little stronger but a ways away from coming home. Back at home took a short nap and back up to make dinner. Tonight I prepared Tuscan Seasoned Pork Medallions w/ Cut Italian Beans and Loaded Baked Potato Casserole.






While at Costco yesterday I bought another package of Tuscan Seasoned Pork Loin Medallions. They
cut it and seasoned it as I shopped. As the first time I purchased some the package had 24 slices. I kept 4 slices out and froze the remaining 20 pieces.









I started by preheating the oven on 400 degrees. To prepare them I used a Cast Iron Skillet. Sprayed it
with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil and heated it on medium heat. I then lightly Salted the Pork with Sea Salt and a sprinkle of McCormick Dried Parsley. Added the Pork to the skillet and cooked it for 2 minutes a side, just started to brown. Then from the stove to the oven, love Cast Iron Skillets! I then backed them to a medium rare, 145 degrees in the center of the medallions using a meat thermometer. Pork Tenderloin is one of my favorites and these rank way up the chart! The Pork was so tender and flavorful. Seasoned just right and very moist. We'll be keeping these in stock!







Then for one side dish I heated a can of Allens Cut Italian Green Beans. To prepare them just empty the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready!

Oven Directions

Best for Golden Browning
1 – PREHEAT oven to 450°F. COMBINE potatoes and sauce mix in 1 1/2 quart baking dish.
2 – STIR in 1 1/2 cups boiling water, 3/4 cup milk, and 1 1/2 Tbsp. margarine or butter with whisk.
3 – BAKE uncovered for 25 minutes or until top is golden brown and potatoes are tender (sauce will thicken slightly when cooling).
4 – Remove from oven and let stand a few minutes before serving.
BAKING NOTES: To prepare 2 casseroles at once, double all ingredients, increase baking dish size accordingly, and bake about 30 min. To bake potatoes and roast meat at the same time, bake at 375°F for about 45 min; 350°F for about 50 min; or 325°F for about 60 min.

Stove Top Directions

1 – HEAT potatoes and sauce mix, 1 1/2 cups hot water, 3/4 cup milk, and 1 1/2 Tbsp. margarine or butter to boil in 2-quart saucepan over high heat, stirring occasionally. Watch carefully to avoid boil over.
2 – REDUCE HEAT, then COVER and simmer 15 minutes, stirring occasionally, until potatoes are tender and sauce reaches desired consistency (sauce will thicken slightly when cooling).
3 – Remove from heat and let stand a few minutes before serving.
