Creamy Dijon Turkey Soup
Warm up with this rich, creamy soup packed with veggies and lean turkey breast. It’s low in fat and ready in under 30 minutes.
1 cup thinly sliced onion
1 cup chopped celery
1 cup shredded carrot
1 clove garlic, minced
3 tablespoons flour
4 cups milk
¼ cup Dijon mustard
2 teaspoons HERB-OX® reduced-sodium chicken bouillon
1 teaspoon chopped fresh thyme
2 cups cubed and cooked, JENNIE-O® Extra Lean Oven Roasted Turkey Breast
STEP 1: Melt butter in a large saucepan over medium heat. Add onion, celery, carrot and garlic. Cook for five minutes or until onion is softened, stirring occasionally. Stir in flour. Cook for one minute.
STEP 2: Remove pan from heat. Slowly add milk, stirring constantly. Return pan to medium-high heat.
STEP 3: Stir in mustard, bouillon and thyme. Cook for five to eight minutes or until mixture is thickened and bubbly, stirring occasionally.
STEP 4: Add turkey. Cook uncovered for two minutes or until hot. Serve.
