This week's Soup Special of the Day is Tasty Turkey Tomato Soup. This one is from the Jennie - O website. It's made with one of my favorite Jennie - O products, JENNIE-O® Extra Lean Ground Turkey Breast. I always use this for my Turkey Chili, Burgers, and such. Tasty Turkey Tomato Soup

Talk about comfort food — a savory tomato soup simmered with rice, bell peppers, celery, garlic and lean turkey breast, seasoned with fresh sage and thyme. Plus, it’s low in fat and ready in under 60 minutes!
1 (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
2½ teaspoons minced fresh sage, divided
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon course ground pepper
1½ teaspoons olive oil
¾ cup chopped red onion
1¾ cups chopped green bell pepper
¾ cup coarsely chopped celery
3 tablespoons minced garlic
2 (10¾-ounce) cans reduced-sodium tomato soup
1½ cups brown rice
2 cups water
STEP 1: Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
STEP 2: In large bowl mix turkey breast together with 1½ tablespoons thyme, 1¼ teaspoons sage, garlic powder, salt and pepper.
STEP 3: Heat oil in large, non-stick soup pot over medium heat. Add onion, bell pepper, celery and garlic. Cook, stirring occasionally, for five to seven minutes or until onion is softened. Increase heat to medium-high. Add turkey mixture, tomato soup, rice, water and remaining thyme and sage. Stir to combine. Bring to boil. Reduce heat to medium-low. Simmer, covered, stirring occasionally, for 20 minutes or until hot.
Always cook to an internal temperature of 165°F.
