Dinner Tonight: Tangy Apricot Chipotle Sauce Marinated Pork Chop w/ Seasoned Blackeye Peas, Diced New Potatoes, and Whole Grain Bread.
I am a lover of Sauces! While at Jungle Jim's Market last week I picked up a couple of new Marinade Sauces.The one I'm trying today is Bronco Bob's Tangy Apricot Chipotle Sauce. Bronco Bob has a whole line of Chipotle Sauces, I left the description and web site link at the bottom of the post.
Anyway I did a little taste test on the Bronco Bob's Tangy Apricot Chipotle Sauce and it's a winner! It gives you the heat of the Chipotle and the tangy sweetness of the Apricot. So I marinated my Pork Chop about 3 hours in the frig. Removed it from the marinade, shaking off the excess, and seasoned it with Morton's Salt Substitute and Ground Black Pepper. I grilled it over medium heat about 3 1/2 minutes per side, the chop was a thin chop. The marinade was meant for Pork! A great combination of heat and sweetness and griiled the chop to make it that much better. Can't wait to try the other flavors. For sides I had a can of Margaret Holmes Seasoned Blackeye Peas along with Diced New Potatoes that i boiled. I also had a slices of Aunt Millie's Light Whole Grain Bread. I think for dessert/snack later some Jif Reduced Fat Peanut Butter on Ritz Whole Grain Crackers.
