Baked Chicken Wings w/ Baked Fries and Light Texas Toast

Dinner Tonight: Baked Chicken Wings w/ Baked Fries and Light Texas Toast

For Breakfast this morning I toasted a Thomas Light Multi Grain English Muffin English Muffin. I
normally use Healthy Life Multi Grain English Muffins but Kroger is the only store to carry them and they haven't had any in stock for over a month. Time to switch! The Thomas Muffins are comparable to the Healthy Life, both are 100 calories and 17 net carbs. Anyway I topped the Muffin with a Poached Egg. Also had my morning cup of Bigelow Decaf Green Tea. Sunny, hot, and very humid outside today! The normal August weather has returned! After Lunch I got the leaf blower out and cleaned off the deck and driveway areas. Too humid to be outside for me. Took it easy the rest of the day. For Dinner tonight I prepared Baked Chicken Wings w/ Baked Fries and Light Texas Toast.

For the Wings I'm using Kroger Oven Roasted Chicken Wings. I started by heating the oven on  425 degrees F., same temperature I'll need for my Fries and Texas Toast. I took a small Baking Sheet and lined it with foil. Then sprayed it with Pam Non Stick Cooking Spray. Spread the Wings out across the sheet and baked them for 33 minutes, turning them once after 17 minutes. I love Wings, and these are excellent Wings! Served them with Dipping Sauces of Hidden Valley Buffalo/Ranch Dressing and Litehouse Light Blue Cheese Dressing.

With the oven already heated I baked my Fries. I used Ore Ida Crinkle Cut Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup.

I also baked up some slices of New York Bakery Light Texas Toast. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Dinner Tonight: Crab Cake Slider w/ Baked Fries

Winter is here, I'm here to tell you! Went out to get the morning papers and it was 21 degrees with a wind chill of 15 degrees! Oh where are those beautiful sunny days of Fall. Still no snow but they say there's a chance overnight and Sunday to get some. Snow is no fun if your an amputee like myself, makes it a bit rough! Stopped by Kroger to pick up a few items for Mom and myself and back home for the day. For dinner tonight another favorite, Crab Cake Slider w/ Baked FriesCrab Cake Slider w/ Baked Fries.

I’m using Kroger Private Selection Maryland Style Crab Cakes. They come frozen and there’s 2 to a box. To prepare them just preheat the oven on 400 degrees and bake for 30 minutes. Nothing beats a fresh made Crab Cake, but these are too good to be frozen! They’re just the right size, about 3.5 ounces each, and full of flavor and meaty. Baked them for about 30 minutes and they were done. Served then on a Pepperidge Farm Wheat Slider Buns. Topped them with Louisiana Remoulade Dressing and Boston Bibb Lettuce. This makes one delicious Slider! The taste of the Crab Meat and Remoulade Sauce,if you want one flavorful Remoulade Sauce you have to try the LOUISIANA Remoulade Dressing. This sauce is incredible and is good on about anything you put it on!

Then I also prepared one of my favorite sides, Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Love these Fries, they’re 130 calories and 20 carbs per serving. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

LOUISIANA Remoulade Dressing

LOUISIANA Remoulade Dressing is typically a cold dressing served with chilled boiled seafood. This dressing combines the perfect blend of soybean oil, horseradish, egg yolks, tomato paste, onion, garlic and other spices. Use it as a dipping sauce for your favorite seafoods or meats.

Chunky Baked Potato with Cheddar and Bacon Bits Soup w/ Grilled Ham and Swiss

Dinner Tonight: Chunky Baked Potato with Cheddar and Bacon Bits Soup w/ Grilled Ham and Swiss Cheese Sandwich

A cool day today but I wanted to get out and take a look at some of the beautiful trees that have all turned to their Autumn colors. So I broke out the Sweat Shirt and got the 4 wheel mobility scooter out. The trees are beautiful, especially on our main road here in the community and down around the lake and clubhouse. I just love this time of year! For dinner a simple but warming and hearty dinner, Chunky Baked Potato with Cheddar and Bacon Bits Soup w/ a Grilled Ham and Swiss Cheese Sandwich.

For my Grilled Ham and Cheese Sandwich I used Kroger Private Selection Oven Roasted Rosemary Ham (Deli Sliced). I've been using this ham for a while now. Fantastic taste and sliced real thin. It's 70 calories and 1 carb per serving (3 Slices). For the Cheese I used 2 slices of   Sargento Ultra Thin Swiss. My Cheese Brand of choice for about any dish or sandwich. The Swiss is only 40 calories a slice. For a topping spread I used Litehouse Lite Thousand Island Dressing and Dip (70 calories and 4 carbs per serving). Incredibly flavorful dressing and it's the Lite version. I served it on a couple of slices of Klosterman Wheat Bread (70 calories and 13 net carbs). To prepare just layer you Ham and Cheese on the Bread and then Butter the top and bottom of sandwich, with I Can't Believe It's Not Butter. Then I grilled it on a flat top grill sheet till each side was toasted a golden Brown.

I also used my favorite Potato Soup, Campbell's Chunky Baked Potato with Cheddar and Bacon Bits. Love this Soup, it's nice and thick with some big chunks of Potato with just the right amount of Cheddar and Bacon Bits. Plus it can't be much easier to prepare, just open the can and heat it up in a small sauce pan. Love the taste and it's only 190 calories and 19 net carbs. A good meal for an Autumn Day or any Day for that matter. For dessert/snack later I think I'll have some Pringles Fat Free Potato Chips with some Hidden Valley Smoked Bacon Dressing and Dip.

Kroger Uses Infrared Cameras To Cut Customer Wait Times

Kroger turned to high-tech infrared cameras to improve its customers’ wait times.
As described by the Wall Street Journal, these cameras are constantly monitoring and tracking the customers waiting to check out, then determining the optimal number of registers that need to be running in 30-minute increments. The software displays the suggested cashier usage on a monitor, allowing supervisors to deploy staff accordingly.
And the supermarket chain says it’s worked, with average wait times down to only 26 seconds from four minutes in 2010. The company also says data from the camera tests found that “express” lanes were clogging up in the morning and at lunch, when customers were buying only a few items at a time. Using this info, the chain opened up an additional 2,000 express lanes in its stores.
“The technology enabled us to execute at the front of the store without that additional (labor) expense,” explains Kroger’s Sr. VP of retail operations to the Journal.”It’s remarkable that we’ve been able to improve execution as much as we have without a big price tag.”
The system is being used in about 95% of Kroger stores in the U.S.

Walmart vs Kroger - The Price War, Not Really a War!

I had went to Walmart the other day and purchased 26 items. I had saved the receipt because I wanted to
compare prices on a few of the items and see who had the best prices. I had thought it would be Walmart, I just didn't think it would be as big as difference as it was! I usually buy my so called inside aisle items at Walmart and Seafood, Fruits, and Vegetables at Kroger along with a few other items. I always look for coupons and in store sales at both stores. I also go to Meijer and a local market here around the West Chester area Jungle Jim's. I compared 11 items between Walmart and Kroger and here's what I found!

Campbell's Slow Kettle Portobello Mushroom and Madeira Bisque - Walmart $3.48, Kroger $3.89 - Save .41 at Walmart

Chopped Walnuts (Huge Saving!) - Walmart  $4.18, Kroger $5.59 Save $2.41  at Walmart

Bigelow Decaf Green Tea Bags (20 count) - Walmart $2.18, Kroger $2.89  Save .71 at Walmart

Dannon Plain Greek Yogurt - Walmart  $1.00, Kroger $1.29  Save .29 at Walmart

Daisy Reduced Sour Cream - Walmart $1.98, Kroger $2.49  Save .51 at Walmart

Kraft Grated Parm Cheese - Walmart $3.50, Kroger $3.89, Save .39 at Walmart

Daisy Low Fat Cottage Cheese - Walmart $2.18, Kroger $2.49, Save .31 at Walmart

Pillsbury Baby Grands Biscuits (5) - Walmart $.88, Kroger $1.02, Save .14 at Walmart

Morton's Lite Salt - Walmart $1.58, Kroger $1.94, Save .36 at Walmart

Sea Pak Pop Corn Shrimp - Walmart $3.96, Kroger $4.62, Save .66 at walmart

Ruffles Light Chips - Walmart $3.48, Kroger $3.79, Save.31 at Walmart

Just from these 11 random items that I purchase from time to time I saved $5.57. I checked other items at Kroger like Tide, Bounce, Glade Candles and I didn't have the Walmart price but I know from purchasing quite often a huge savings at Walmart. Overall, stay out of the middle aisles at Kroger. in fact if you can find fresh produce ans Seafood at your Walmart I say purchase them there also. Look before you shop and buy!

Grilled Pork Chop w/ Roasted Red Potatoes and Blue Lake Cut Green Beans

Dinner Tonight: Grilled Pork Chop w/ Roasted Red Potatoes and Blue Lake Cut Green Beans

One day I'm going to find that hidden camera, you know the one everyone has in their house that shows other people when your away from a phone so they can call to aggravate you because you just stepped away from it! It never fails, I can be sitting there for hours with a phone next to me and it never rings. Then I get up to do something and just like clock work R-I-N-G! it happened about three different times today. The only explanation is there's a hidden camera somewhere, I'm going to find it one day! Another hot and humid day here again but they say it's going to get back to more normal temps by the weekend but rain of course. For dinner tonight I prepared a Grilled Pork Chop w/ Roasted Red Potatoes, Blue Lake Cut Green Beans, and Healthy Life Whole Grain Bread.

I had purchased a package of two big, beautiful Pork Loin Chops from Kroger the other day. I seasoned JB's Fat Boy Hawg Waush BBQ Sauce. The JB's Fat Boy Hawg Waush BBQ Sauce, in my opinion is one of the best sauces there is for Pork. The Chops came out moist and mouth watering delicious! Chops, BBQ Sauce, and Grilling. Love it!
them with McCormick Grinder Sea Salt and Black Peppercorn. I grilled them about 7 1/2 minutes per side, to 165 degrees internal temp. I basted them with

For side dishes I prepared some Roasted Red Potatoes.I took 3 Red Potatoes, that I quartered and seasoned with Dill, Sea Salt, Ground Black Pepper, and Garlic Powder. I spread them out on a baking sheet and baked them on 400 degrees for 27 minutes (fork tender). I also heated up a can of Del Monte Blue Lake Cut Green Beans. A delicious and hearty meal that was just over 400 calories. For dessert later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.

Baked Ham & Swiss Sliders w/ Baked Crinkle Fries

Dinner Tonight: Baked Ham & Swiss Sliders w/ Baked Crinkle Fries

We got some hot and humid weather coming, around 89 to 90 degrees. I can take the heat but the humidity carbs. I also used Kroger Hickory Smoker Ham and it’s 70 calories and 1 carb per serving along with Sargento Ultra Thin Swiss Cheese which is 40 calories and 1 carb per slice, but I'll only be adding a half a slice per sandwich.
is what makes me uncomfortable. For dinner one my favorite recipes, Baked Ham & Swiss Sliders w/ Baked Crinkle Fries. A while back I made some Aunt Millie’s Baked Ham & Swiss Rolls, using Aunt Millie’s Hawaiian Rolls. This time I made them using Kroger Whole Wheat Slider Buns. These are only 70 calories and 13

This is makes one tasty sandwich! This is another one of those keeper recipes. To prepare it preheat your oven to 350 degrees. Then I used the package of Slider Buns, 1 – 12 oz. Package of Kroger Private Selection Hickory Smokehouse Ham, and 1 package of Sargento Ultra Thin Swiss Cheese. I placed the bottom half of the bun in the bottom in a deep baking pan large enough to hold 12 sandwiches, about 11″ x 14″ pan. Then I topped the rolls in the pan with Ham slices, and top with the Swiss Cheese slices. and placed the top of the rolls on the sandwiches.

I then poured a topping mixture evenly over the sandwiches. To make the mixture I combined the following ingredients: 4 Tbsp. butter (1/2 stick) melted, 2 tsp. dried onion, 1 1/2 tsp. Worchestershire sauce, 1 1/2 tsp. Poppyseed dressing, and 1/2 tsp. yellow mustard. Mix well with a whisk or fork till its well combined. Pour mixture evenly over the sandwiches. Cover with foil and bake at 350 degrees for 15 minutes then remove foil and bake an additional 15 minutes to allow the rolls to crisp. Remove from oven to cool and serve. And as I said earlier they are delicious. The topping mixture is what gives it it’s fantastic flavor. I can’t wait to try this on some Grilled Cheese or Grilled Ham and Cheese Sandwiches! The recipe is for 12 sandwiches, I only made 6 Sandwiches so I cut back on the amount of Butter I used. I used Blue Bonnet Light Stick Butter, another calorie and carb saver! Just by doing the little things like going to an Ultra Thin cut of Meat or Cheese or by going with low fat, reduced fat, low carb you can end up reducing the fat, calorie and carb count on any recipe. It all adds up. Once again the Sandwiches came out absolutely delicious! It’s just the whole combination of everything that just bursts these Sandwiches with flavor. I love these sandwiches!! I’ve left the original recipe and web site link to Aunt Millie’s below.

To accompany my Baked Ham and Swiss Sandwiches I prepared some Baked Ore Ida Crinkle Fries. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.

1 1/2 tsp. Worchestershire sauce
1 1/2 tsp. Poppyseed dressing

Yield: 12 servings

Directions:

Place the bottom in a deep baking pan large enough to hold 12 sandwiches, about 11″ x 14″ pan.
Top the rolls in the pan with ham slices, and top with the Swiss cheese slices.
Place the top of the rolls on the sandwiches.
Mix together butter, onion, Worchestershire, dressing, and mustard.
Pour mixture evenly over the sandwiches.
Cover with foil and bake at 350 degrees for 15 minutes.

Simple and Hearty Dinner tonight, New England Clam Chowder w/ Ham & Swiss Toasted Sandwich. I wasn't really feeling up to par today. Anyway on to dinner! Dealing with the Phantom Pains I wanted something easy to prepare but I also wanted a hearty and hot meal. I used Campbell's Chunky New England Clam Chowder. Easy to prepare and a nice, thick, and tasty Clam Chowder. Easy to prepare as in open the can, empty into a small pot, and heat! 210 calories and 23 carbs.

For my Toasted Sandwich I used Kroger Private Selection Old fashioned Honey Cured Sliced Ham, Sargento Ultra Thin Swiss Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, and Toasted Healthy Life Whole Grain Bread. Crock Pot Baby Back Ribs w/ Mashed Potatoes, Green Beans, and...

Today’s Menu: Crock Pot BBQ Baby Back Ribs w/ Mashed Potatoes, Green Beans, and Whole Grain Bread

My Mom requested Ribs so Ribs it is! I had the ribs ready and in the crock pot by 9:30 this morning and by 1:30 the aroma of the ribs and BBQ was incredible! I had purchased the Baby Back Ribs at Kroger the day before. I used JB's Fat Boy Rub and J B's Fat Boy Haugwaush Barbecue Sauce on the ribs. I first applied a light rub of the seasoning on to the ribs and I then brushed a half a bottle of JB’s Fat Boy Haugwaush Bar B Cue Sauce. I cooked the ribs for 8 hours on low. After 5 hours I applied the other half of Haugwaush to the Ribs.  The ribs came out perfect! Tender fall off the bone delicious. No knife needed as the bones could be removed by just pulling on them. At the end of the post I left the JB's Sauce description and web site link.

For sides we had Bob Evan's Mashed Potatoes, Green Beans, and Whole Grain Bread. For dessert later I made a loaf of Pillsbury Nut Quick Bread. A slice of Nut Bread topped with a scoop of Breyer's Carb Smart Vanilla Ice Cream.

Veal Cubed Steak and Sauteed Mushrooms w/ Diced New Potatoes and Glazed Carrots

Today's Menu: Veal Cubed Steak and Sauteed Mushrooms w/ Diced New Potatoes and Honey Glazed Carrots

Veal was on the menu tonight! I used Kroger Brand Private Selection Veal Cubed Steak. If you live near a Kroger try the Private Selection Veal, I haven't had a bad one yet. It is the most tender Veal I've ever had, I sliced the one for dinner tonight with a fork. Tender and delicious! Anyway I seasoned the Veal with Sea Salt, White Pepper, and Parsley. I then lightly coated it with Italian Style Bread Crumbs and fried in Canola Oil. I fried each side for 3 minutes. I topped the Veal with Sauteed Mushrooms that were seasoned with Sea Salt, Pepper, Cumin, Parsley, and Minced Garlic. I then sauteed them in extra Virgin Olive Oil and I Can't Believe It's Not Butter. As sides I had boiled Diced New Potatoes and Green Giant Honey Glazed Carrots. Also I had a slice of Healthy Life Whole Grain Bread. Dessert/Snack later Jolly Time 100 Calorie Bag of Popcorn.

The best part is with all this flavor and being Organic it contains only 15 calories and 3 carbs! If you get a chance try a jar.
