Beer-Glazed Chicken with Grilled Vegetables
Need a new chicken dinner idea? Try this grilled chicken and vegetable dish from chef Rick Bayless. Grilling the chicken and summer vegetables is a no-brainer, but in colder months, you may wish to move indoors and roast the chicken, along with some root vegetables. Whatever the weather, it's worth seeking out piloncillo for the beer glaze. This unrefined sugar used in Mexican cooking is made from evaporated cane juice. Its complex caramelized flavor balances any bitterness in the beer. Look for it in Latin markets and online..............
Open-Face Italian Chicken Sandwiches with Avocado Slaw
The quick tomato topping on these hearty and healthy chicken sandwiches will remind you of pizza. The accompanying slaw swaps out mayo for healthier avocado. Cook the chicken breasts on the grill if you prefer (see Tip) and consider making a double batch of the chicken for lunches and dinners later in the week........
Chicken Pesto Pasta with Asparagus
This healthy chicken pesto pasta is easy to make thanks to convenience ingredients like rotisserie chicken and store-bought pesto. The addition of fresh asparagus—which is cooked in the same pot as the pasta—brightens up the look and the flavors of this family-friendly and easy one-pot dinner. Fresh basil, if you have it on hand, is a nice finishing touch............

One of America's Favorites - Grilled Cheese
![]() |
| Grilled Cheese Sandwich |
Cheese sandwiches commonly referred to as a grilled cheese sandwich or a cheese toastie, are sandwiches that can be grilled so that the bread toasts and the cheese melts. A grilled cheese is often heated by placing the buttered slices of bread, with the cheese between the slices, on a frying pan or griddle. Grilled cheese is not typically made on a grill.
Another form of cooked cheese sandwich is the cheese toastie or toastie, a dish particularly popular in the United Kingdom that is prepared by either baking or grilling a cheese sandwich in an oven, or toasting bag in an electric toaster, or using a pie iron in order to toast the bread and melt the cheese. Cheddar is the most common cheese used in a toastie. It is usually served as a snack, or as a (usually lunchtime) meal, in most cases with a side of salad.
Cooked bread and cheese is an ancient food according to food historians, popular across the world in many cultures. Evidence indicates that, in the U.S., the modern version of the grilled cheese sandwich originated in the 1920s when inexpensive sliced bread and American cheese became readily available. The cheese dream, an open-faced grilled cheese sandwich, became popular in the U.S. during the Great Depression.
U.S. government cookbooks describe Navy cooks broiling "American cheese filling sandwiches" during World War II. Many versions of the grilled cheese sandwich can now be found on restaurant menus across the U.S. and internationally.
In the United States, grilled cheese sandwiches are often served with soup (usually tomato soup), and may be served as a whole meal.
A grilled cheese sandwich is assembled by creating a cheese filling between two slices of bread,

Some restaurants, food carts and food trucks in the United States specialize in the grilled cheese sandwich. The Grilled Cheese Grill restaurants are a combination of reclaimed vehicle and food cart restaurants that focus on gourmet grilled cheese sandwiches in Portland, Oregon. The Grilled Cheese Truck is an American food truck company serving gourmet "chef driven" grilled cheese sandwiches. The company started in Los Angeles, California in 2009, and has since expanded throughout Southern California, Phoenix, San Antonio and Austin. The American Grilled Cheese Kitchen is a restaurant in San Francisco, California that specializes in the sandwich.

Kitchen Hint of the Day!
Simmer the Soup.........
Once soup has come to a boil, reduce to a simmer and make sure that it stays there. Boil things too vigorously, and the vegetables will get mushy, the meat will toughen, and the noodles will start to break down.

Chunky Baked Potato Soup with Cheddar and Bacon Bits w/ Grilled Cheese
Dinner Tonight: Chunky Baked Potato Soup with Cheddar and Bacon Bits w/ Grilled Cheese
For Breakfast I prepared a favorite of mine. I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hash Browns in a bow and sprinkled some Sargento Reduced Fat Sharp
Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Outside the weather isn't quite as bad, but it was still about minus 1 this morning. It became sunny and a high of 21 degrees. I was able to get out a bit today. Cleared off both of snow and started both and let them run for a few minutes. Threw some salt out on part of the driveway that had ice on it. Later on caught up on a couple of movies that I recorded. For Dinner tonight its all Comfort Food! I prepared Chunky Baked Potato Soup with Cheddar and Bacon Bits w/ Grilled Cheese.
With the Weather still bad it just seemed like a perfect day for Soup and Grilled Cheese! For my Soup I heated up a can of Campbell’s Chunky Baked Potato Soup with Cheddar and Bacon Bits. Another easy to prepare item; just empty the contents of the can into a sauce pan and heat. Heated it on medium low heat, stirring often. I love a thick and hearty Soup and this one is perfect. Campbell’s Chunky Baked Potato Soup with Cheddar and Bacon Bits is the best there is, at least to me.
Then for my Grilled Cheese I’ll be using; Kraft Sliced Sharp Cheddar Cheese, Blue Bonnet Light
Butter, and Healthy Life Whole Grain Bread. I started by buttering the outside half of a slice of bread. Layered 2 slices of the Sharp Cheddar on top. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.
Campbell’s Chunky Soup – Baked Potato with Cheddar and Bacon Bits
Campbell’s Cheddar and Bacon Bits Chunky soup satisfies hunger with big chunks of real baked
potatoes and crisp bacon bits in a creamy soup base with cheddar cheese. Campbell’s Chunky soup is the soup that eats like a meal. Eat it for lunch and this thick and hearty Campbell’s baked potato soup will fill you up and stick with you through the day. When hunger calls, answer with chunky Campbell’s canned soup. You can heat it on the stove or in a microwave. Either way, satisfaction is just minutes away.
* Soup that eats like a meal
Ingredients
Water, Chicken Stock, Potatoes, Baked Potatoes, Cream, Vegetable Oil, Modified Food Starch, Cheddar Cheese, Pasteurized Process Cheddar Cheese.
