Seasoned Gulf Coast Grouper Sandwich w/ Baked Fingerling Potato Wedges

Dinner Tonight: Seasoned Gulf Coast Grouper Sandwich w/ Baked Fingerling Potato Wedges

For my Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and Scrambled 2
medium size Eggs. Also had a cup of Bigelow Decaf Green Tea. Very good way to start off this cold Friday Morning. Rolled out to get the morning papers and it was cold out, 21 degrees and a wind chill near 15 degrees! And we had our first snow of the year, not much but traces on the grass and rooftops. For the day mostly cloudy and only a high of 29 degrees. Cleaned the house this afternoon, run the vacuum, dusted, and such. Back to bed afterward, still not feeling real good. For Dinner tonight its a Seasoned Gulf Coast Grouper Sandwich w/ Baked Fingerling Potato Wedges.

I love Fish and Seafood, especially this Florida Gulf Coast Grouper my friends bring me up from Florida! I had a fillet in the freezer so I sat it in the fridge to thaw overnight. To prepare the fillet I
seasoned it with just a bit of Sea Salt and put the fillet in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until it was well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a 1/2 tablespoon of Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillet, frying about 3 minutes per side until golden brown. The fillet came out Golden Brown and Delicious! I served it on a Healthy Life Whole Grain Hamburger Bun.

To go with the Fish Sandwich I baked some Fingerling Potato Wedges. I purchased these at Jungle
Jim’s last week and prepared what was left of them. To start I first washed the Potatoes off in cold water and patted dry with a paper towel. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. I love Fingerling Potatoes! I had a Peach Diet Snapple to drink with the meal. For dessert later a Weight Watcher's Cookies and Cream Ice Cream Bar.

Grouper - Firm texture, white meat with large flake and a mild flavor. Extra lean fish.

3 Bean Buffalo Chili Spaghettii w/ Shredded Sharp Cheddar and Oyster Crackers

Dinner Tonight: 3 Bean Buffalo Chili Spaghetti w/ Shredded Sharp Cheddar and Oyster Crackers

I started fasting last night at 10:00 till my doctors appointment at 10:00 this morning, nothing but water. Had a check-up and they took blood work to check my sugar, cholesterol, and such. I'll get the results in 4 days or so. Another chilly day out there, sunny but breezy and only a high of 32 degrees. Warmer starting tomorrow but a lot rain coming with it. For dinner tonight another comfort food classic, 3 Bean Buffalo Chili w/ Shredded Sharp Cheddar and Oyster Crackers!

I had some of the delicious 3 Bean Buffalo Chili leftover so I heated that up for my Chili topping. The Chili contains; Wild Idea Buffalo’s Ground Buffalo which is the best tasting Ground Buffalo that I’ve found, the 3 Beans I use are 1 Can (15 oz.) Chili Beans, 1 Can (15 oz.) Kidney Beans (rinsed), and 1 Can (15 oz.) Great Northern Beans (rinsed). Then I mix in 1 White Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Unseeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste, 1 Tbs Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 1 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). Throw in a 1/2 cup of Water and put the lid on the Crock Pot and set on low for 5-6 hours. Then you have yourself some good, comfort food Chili!

For the Pasta I used Ronzoni Healthy Harvest Whole Wheat Spaghetti, my favorite Pasta. The best tasting Whole Wheat Pasta I've found, and tried a few of them. It's 180 calories and 35 net carbs per serving. After boiling I served it up and topped it with the perfect topping, 3 Bean Buffalo Chili and Sargento Reduced Fat Shredded Sharp Cheddar Cheese! This was too good! Served with a side of Skyline Chili Oyster Crackers. This is what's called a 4 Way around this area; Spaghetti, Chili, Beans, and Cheese. You can add Chopped Onions to make it a 5 Way. Anyway you choose to make it it's Delicious! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Ronzoni Healthy Harvest Spaghetti

Here’s something to absorb: One serving of RONZONI HEALTHY HARVEST pasta has over 20% of your daily recommended fiber intake – but did you know that fiber is good for you in more ways than just digestion?

People with diets high in fiber have a lower risk for weight gain, obesity, development of insulin resistance and diabetes. Fiber also prevents constipation, hemorrhoids and diverticulosis, but it also helps reduce the risk of certain chronic diseases like colon and breast cancer. Fiber may help lower LDL (bad) cholesterol and total cholesterol, therefore reducing the risk of heart disease. It can also help lower blood sugar to better manage diabetes.

Dietary fiber is the edible part of plants, primarily carbohydrates that are resistant to digestion and absorption in the small intestine. Fiber may be digested by fermentation in the large intestine. By eating high fiber foods you feel fuller, eat less, with fewer absorbed calories.

Fiber comes in two basic forms – soluble and insoluble. Soluble fiber is found in fruits, vegetables, seeds, brown rice, oats and barley. It prevents or reduces the absorption of certain substances into the bloodstream. Insoluble fiber is found mainly in whole grains and on the outside of seeds, fruits, legumes, and other foods. It is like a sponge that swells within the intestine to promote more efficient elimination and alleviate some digestive disorders.

Fiber is found only in plant foods and passes through the digestive tract without being completely broken down. Being indigestible, fiber provides no nutrients to the body, which is why for many years it was removed from processed foods like white bread. But, nutritionists have since discovered that fiber performs valuable functions precisely because it is not digested, and it is essential to good health.

Baked Bone-In Whole Chicken Breast w/ Mashed Potatoes, Boiled Mini Carrots,..

Dinner Tonight: Baked Bone-In Whole Chicken Breast w/ Mashed Potatoes, Boiled Mini Carrots, and Baked French Bread

Last night's predicted snow and freezing rain went north of us so we avoided that one! Cloudy with a cold wind out but not so bad to where I couldn't get out. Went to the bank and dropped bu Kroger to pick up a few items. They are still saying a big warm up coming so I hope their right! For dinner tonight I prepared a Baked Bone-In Whole Chicken Breast w/ Mashed Potatoes, Boiled Mini Carrots, and Baked French Bread.

I used the PERDUE® OVEN READY Whole Seasoned Roaster Bone-In Breast ! As it says “Oven Ready’, already seasoned, and little clean-up needed plus their always delicious. To prepare it just preheat the oven to 400ºF. Cut open outer bag and remove Oven Ready Roaster Bone-In Breast, sealed in a cooking bag. Place in a shallow roasting pan, seasoned side up. Cut one small 1″ slit in cooking bag over the breast to vent during cooking. If cooking from Fresh: Place pan with breast (still in cooking bag) on lower shelf of oven and roast for approximately 80-90 minutes, until internal temperature of the breast reaches 180ºF. Comes out piping hot, well seasoned, and delicious! Plenty leftovers for Chicken Sandwiches for lunch tomorrow.

For one side I prepared some Bob Evans Mashed Potatoes, microwave a total of 6 minutes and their done and just as good as anyone’s homemade Mashed Potatoes. Then I boiled some Mini Carrots that I had picked up earlier at Kroger and I baked a loaf of Pillsbury Rustic French Bread. Before baking I brushed the top of the loaf with Extra Virgin Olive Oil and sprinkled Sesame Seeds on top. For dessert later a Del Monte No Sugar Added Peach Chunk Cup.

Grilled Pork Chop w/ Roasted Red Potatoes and Blue Lake Cut Green Beans

Dinner Tonight: Grilled Pork Chop w/ Roasted Red Potatoes and Blue Lake Cut Green Beans

One day I'm going to find that hidden camera, you know the one everyone has in their house that shows other people when your away from a phone so they can call to aggravate you because you just stepped away from it! It never fails, I can be sitting there for hours with a phone next to me and it never rings. Then I get up to do something and just like clock work R-I-N-G! it happened about three different times today. The only explanation is there's a hidden camera somewhere, I'm going to find it one day! Another hot and humid day here again but they say it's going to get back to more normal temps by the weekend but rain of course. For dinner tonight I prepared a Grilled Pork Chop w/ Roasted Red Potatoes, Blue Lake Cut Green Beans, and Healthy Life Whole Grain Bread.

I had purchased a package of two big, beautiful Pork Loin Chops from Kroger the other day. I seasoned JB's Fat Boy Hawg Waush BBQ Sauce. The JB's Fat Boy Hawg Waush BBQ Sauce, in my opinion is one of the best sauces there is for Pork. The Chops came out moist and mouth watering delicious! Chops, BBQ Sauce, and Grilling. Love it!
them with McCormick Grinder Sea Salt and Black Peppercorn. I grilled them about 7 1/2 minutes per side, to 165 degrees internal temp. I basted them with

For side dishes I prepared some Roasted Red Potatoes.I took 3 Red Potatoes, that I quartered and seasoned with Dill, Sea Salt, Ground Black Pepper, and Garlic Powder. I spread them out on a baking sheet and baked them on 400 degrees for 27 minutes (fork tender). I also heated up a can of Del Monte Blue Lake Cut Green Beans. A delicious and hearty meal that was just over 400 calories. For dessert later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.

Newman's Own Uncured Pepperoni Thin & Crispy Pizza

Dinner Tonight: Newman's Own Uncured Pepperoni Thin & Crispy Pizza

Another beautiful sunny Spring day! Mid 60's today and the 70's next week, finally! For dinner tonight I wanted something easy and light so I went with Newman's Own Uncured Pepperoni Thin & Crispy Pizza. Everything is there you just pop it in the oven at 425 degrees for about 12 minutes and you have Pizza! It's a Thin and Crispy Crust and the Pizza itself is well seasoned, a nice amount of toppings and fantastic flavor. Easy to make, a good Pizza, and a breeze to clean up. Plus it's a Newman's Own Product. Newman's Own has donated Millions to Charity from the sale of their products. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn

Newman's Own Company and Products

In 1982, Newman’s Own started as a tiny boutique operation – parchment labels on elegant wine bottles that Paul Newman filled with his homemade salad dressing and gave to his neighbors as holiday gifts. He expected train wrecks along the way and, instead, got one astonishment followed by another.

But in these thirty years we have earned over $350 million, all of which we’ve given to countless charities. How to account for this massive success? We haven’t the slightest idea but one thing we do know is we’re not stopping.

Today, Newman’s Own produces nearly 100 individual food products across 9 categories. Always great tasting, always all-natural, just the way our founder, Paul Newman, insisted. We’ll always follow his vision for putting quality first. The result: you end up with a pretty darn good meal.

http://www.newmansown.com/

This idea was in Paul Newman's heart and, today, Newman's Own continues his commitment to donate all profits from the sale of our food products to charity. That's right, all of our after-tax profits are given to Newman's Own Foundation and then dispensed to charities throughout the U.S. and around the globe. Over $350 million has been given to thousands of charities since 1982. To learn more about Newman's Own Foundation and its grantees, visit NewmansOwnFoundation.org.

Bison BBQ Sandwiches w/ Ruffle Light Chips and a Snapple!

Today's Dinner: Bison BBQ Sandwiches w/ Ruffle Light Chips and a Snapple!

Well last night's delicious and tender Braised Buffalo Chuck Roast has turned into tonight's dinner of Sliced and Shredded Bison BBQ Sandwiches! The Buffalo is every bit as delicious as it was last night and it's even more tender if that's possible. Tonight it was Bison BBQ Sandwiches w/ Ruffle Light Chips and a Peach Tea Diet Snapple.

Preparing the Buffalo Bbq Sandwiches was very easy. After dinner last night I sliced up the remaining Roast, sealed it in a Glad Plastic Container and refrigerated it. To warm it up I took a medium frying pan and added the Buffalo then turned the heat on medium and warmed for about 10 minutes. To build the Sandwich I used Aunt Millies Light Whole Grain Sandwich Bun topped it with the sliced and shredded Buffalo and topped that off with JB's Fat Boy Chipotle BBQ Sauce! JB's Fat Boy has my votes for best BBQ Sauces, bar none. The Chipotle is one of their best. You've got sweetness and then you have heat and it combines for a perfect BBQ Sauce. I had a side of Ruffles Light Potato Chips, 90 Calories 17 Carbs and 0 Fat. Then as they say "To Wash Everything Down With" I had a bottle of Peach Tea Diet Snapple, 10 Calories and 0 Carbs. For dessert later this evening a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

I left the recipe at the end of the post.  As a side I had Green Beans. A bit different for a side for a Burger but it just sounded good! Green Beans are my favorite Veggie.  i also had a bottle of the new Snapple Drink, Half and Half Iced Tea & Lemonade Diet Snapple. Really liked it, has a fantastic flavor.
