Grilled Pork Chop w/ Roasted Red Potatoes and Blue Lake Cut Green Beans

Dinner Tonight: Grilled Pork Chop w/ Roasted Red Potatoes and Blue Lake Cut Green Beans

One day I'm going to find that hidden camera, you know the one everyone has in their house that shows other people when your away from a phone so they can call to aggravate you because you just stepped away from it! It never fails, I can be sitting there for hours with a phone next to me and it never rings. Then I get up to do something and just like clock work R-I-N-G! it happened about three different times today. The only explanation is there's a hidden camera somewhere, I'm going to find it one day! Another hot and humid day here again but they say it's going to get back to more normal temps by the weekend but rain of course. For dinner tonight I prepared a Grilled Pork Chop w/ Roasted Red Potatoes, Blue Lake Cut Green Beans, and Healthy Life Whole Grain Bread.

I had purchased a package of two big, beautiful Pork Loin Chops from Kroger the other day. I seasoned JB's Fat Boy Hawg Waush BBQ Sauce. The JB's Fat Boy Hawg Waush BBQ Sauce, in my opinion is one of the best sauces there is for Pork. The Chops came out moist and mouth watering delicious! Chops, BBQ Sauce, and Grilling. Love it!
them with McCormick Grinder Sea Salt and Black Peppercorn. I grilled them about 7 1/2 minutes per side, to 165 degrees internal temp. I basted them with

For side dishes I prepared some Roasted Red Potatoes.I took 3 Red Potatoes, that I quartered and seasoned with Dill, Sea Salt, Ground Black Pepper, and Garlic Powder. I spread them out on a baking sheet and baked them on 400 degrees for 27 minutes (fork tender). I also heated up a can of Del Monte Blue Lake Cut Green Beans. A delicious and hearty meal that was just over 400 calories. For dessert later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.

Roast Beef BBQ Sandwich w/ Loaded Mashed Potato Casserole

Today's Menu: Roast Beef BBQ Sandwich w/ Loaded Mashed Potato Casserole

Lot of rain in the area today and in fact for the next 3 days their saying. Wanted to come up with something new for dinner so Ilooked at some older recipes and scanned the internet and ended up deciding on Roast Beef BBQ Sandwich w/ Loaded Mashed Potato Casserole.

I used Hormel Slow Simmered Beef Roast Au Jus. It comes in a microwavable container. Just heat on high for 5 minutes and it's ready! It's very tender and delicious. I shredded it with a fork and added JB's Fat Boy Haugwaush BBQ Sauce to it. Great combo to make a BBQ Roast Beef with! The Beef is juicy & tender and the BBQ Sauce fills it with flavor. I served it on a Healthy Life Whole Grain Bun.

For a side dish I prepared a Loaded Mashed Potato Casseroles. First time that I made these and won't be the last! These turned out too good! I used Bob Evan's Mashed Potatoes for the Potatoes. It's loaded with Reduced Fat Philly Cream Cheese, Black Peppercorn, 2% Sharp Cheddar, Shredded Smoked Dutch Gouda Cheese, Turkey Bacon and Chives. All mixed together and baked and it comes out one delicious Potato dish! I left the full directions below. The directions will make 8 casseroles (ramekins). I made a 1/4 of the recipe that made 2 of them. These make a great Potato Dish, Mashed Potatoes with a kick! For dessert later a Blue Bunny Chocolate/Vanilla Swirl Frozen Yogurt Bar.

Loaded Mashed Potato Casserole

Baked Pork Chop w/ Spaetzle, Seasoned Black Eyed Peas, and...

Today's Menu: Baked Pork Chop w/ Spaetzle, Seasoned Black Eyed Peas, and Whole Grain Bread

I had a monster Pork Chop big enough for 2, it's going to make some delicious leftovers! I marinated the Chop in JB’s Fat Boy Haug Waush BBQ Sauce for about 3 hours. After removing from the marinade I seasoned it with McCormick Grill Mates Applewood Rub and McCormick Grinder Sea Salt and Black Peppercorn. I baked it at 350 degrees for 50 minutes turning once. As usual when using J B’s Fat Boy Sauces it came out moist and delicious!

For my sides I had Margaret Holmes Seasoned Black Eye Peas, Maggi Spaetzle, and Healthy Life Whole Grain Bread. The Margaret Holmes Seasoned Black Eye Peas I've had before but the Spaetzle is a new one. Came across it at Walmart and looked and sounded good so I thought I would give it a try, and glad I did it was delicious! A little higher in calories and carbs than what I normally have but occasionally it should be alright. I seasoned it with Sea Salt and Ground Black Pepper and added a little I Can't Believe It's Not Butter. I left the product description and little info on Spaetzle at the end of the post. For dessert another new one, Kiwi - Lemon Cheesecake. I'll leave the recipe for this on a separate post. You have to give this a try. It's a no bake and delicious!

Spaetzle

Spaetzle [SHPEHT-sluh; SHPEHT-sehl; SHPEHT-slee] Literally translated from German as "little sparrow," spaetzle is a dish of tiny noodles or dumplings made with flour, eggs, water or milk, salt and sometimes nutmeg. The spaetzle dough can be firm enough to be rolled and cut into slivers or soft enough to be forced through a sieve, colander or spaetzle-maker with large holes. The small pieces of dough are usually boiled (poached) before being tossed with butter or added to soups or other dishes. In Germany, spaetzle is served as a side dish much like potatoes or rice, and is often accompanied by a sauce or gravy. The cooked spaetzle can also be pan-fried with a little butter and onions (usually a good left-over idea).

BBQ Chicken Pizza Night

Dinner Tonight: BBQ Chicken Pizza!

Back by popular demand, my Mom, it was BBQ Chicken Pizza for dinner tonight! This is one delicious Pizza. The Chicken, Gouda Cheese, 2% Mozzarella Cheese, Pita Bread and J B's Fat Boy Sticky Stuff Sauce makes an incredible Pizza and then add in the Mushrooms and Black Olives, Too good! A note about the Gouda Cheese, I love this cheese! It melts perfectly. If you like ooey, gooey cheese you have to try this one. I've been buying block cheese and grating it myself. It's a lot cheaper by the block than buying it shredded. I also used Wheat Pita Breads from Meijer Bakery and I baked 2 Boneless Miller's Amish Chicken Breasts. After the breasts were done I shredded them.  Easy to fix and done in minutes from the oven. A lot healthier than frozen or Delivery Pizza also. I left the recipe below.

BBQ Chicken Pizza

Ingredients

1 Tablespoons Extra Virgin Olive Oil
1 Rotissiaire Chicken or 2 baked Boneless Chicken Breasts
1 Cup Barbecue Sauce (recommended: J B's Fat Boy Sticky Stuff BBQ Sauce)
2 Wheat or Whole Wheat Pita Bread
4 Medium Baby Bella Mushrooms, sliced thin
1 Can Sliced Black Olives, 1 Tablespoon on each Pizza
1 Cup Shredded Gouda, I used Murray's Dutch Gouda
1/2 Cup Shredded 2% Mozzarella

Directions

Preheat oven to 375 degrees F.

Remove the skin and pull and shred all the meat from the Rotissiaire  Chicken and store in a bowl or plastic container. After pulling all the meat add 1/2 cup of the BBQ Sauce and mix until the Chicken is coated.

Build the Pizza. Brush Pita Bread with Extra Virgin Olive Oil. Add remaining 1/2 cup BBQ Sauce and brush it on the Pita Breads. Add layer of the shredded Chicken, Black Olives, Sliced Mushrooms, Shredded 2% Mozzarella and Shredded Gouda Cheese.

Bake at 375 degrees until Cheese is melted and pizza is warmed. Enjoy!

Baked Turkey Tenderloin w/ Fresh Asparagus and...

Today's Menu: Baked Turkey Tenderloin w/ Fresh Asparagus and Penne Rigate Pasta

I used a Jennie-OTurkey Tenderloin that I seasoned with Parsley, Ground Pepper, Sea Salt, and Smoked Ground Cumin. I then marinated the Turkey Tenderloins with JB’s Fat Boy Chipotle BBQ Sauce for about 3 hours in the frige before baking. After marinating I baked it in a pan covering with foil at 350 degrees for 30 minutes and then I took it out basted it with the Fat Boy BBQ Sauce and placed 2 Pineapple Slices, plus about teaspoon of the Pineapple juice, on top of the Tenderloin returned the tenderloin to the oven uncovered and baked another 20 minutes. Moist and flavorful! I made a little extra Pasta and had about half the Tenderloin left, which will make my lunch tomorrow. As sides I had Frsh Asparagus and Dreamfields Penne Rigate Pasta. I cut the Asparagus seasoned it with Garlic Salt and Ground Pepper and then lightly fried it in Extra Virgin Olive Oil, I Can't Believe It's Not Butter, and added Sliced Almonds and Crumbled Turkey Bacon. I also used Dreamfields Penne Rigate Pasta. I usually use Ronzoni Pasta, cheaper price wise, but I found the Dreamfields on sale so I picked up a couple of boxes. After boiling the Pasta I seasoned it with McCormick Grinder Italian Seasoning, just a couple of shakes of Sea Salt , and a teaspoon of Extra Virgin Olive Oil. For a snack/dessert I'll have a bag of Jolly Time 100 Calorie Mini Bag of Popcorn.
