Seasoned Haddock w/ Mac and Cheese

Dinner Tonight: Seasoned Haddock w/ Mac and Cheese







For Breakfast I made my Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. Topped it with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar. Also had my morning cup of Bigelow Decaf Green Tea. In the 40's this morning and a high in the 70's with no humidity! After Breakfast I took Mom and Dad to Dad's doctor appointment, just a checkup. Back home I was all caught up on the chores so I got the cart out and did a little yard work and then rode around the neighborhood and enjoyed the beautiful day. For Dinner tonight it's a Seasoned Haddock w/ Mac and Cheese.


I had purchased the Haddock from our local Kroger and had 3 bags of it in the freezer. So I grabbed a
bag and let it thaw in the fridge overnight. I had already rinsed the fillet and cut it into smaller pieces. So to prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. Shook off the excess and pan fried them in Extra Virgin Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love Haddock it cooks up so nicely and I love the flavor and how meaty it is.



For the Mac and Cheese I used the Kraft Macaroni and Cheese – Triple Cheese. It comes in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese! For dessert later a bowl of Dole Sliced Peaches.

Seasoned Haddock w/ Mac and Cheese

For Breakfast I had one of my favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare
it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. Just love this skillet meal! So after Breakfast caught up on house cleaning. I usually do this on Sunday but I have a small party set up for Mom and Dad's anniversary over at the rehab unit where Dad is. So I wanted to get everything done today. I pick the cake up tomorrow at 1:00. So I spent most of the day getting stuff done around the house. I did get the cart out for about an hour this afternoon, around the neighborhood and lake. For dinner tonight I prepared Seasoned Haddock w/ Mac and Cheese.


I had purchased the Haddock from our local Kroger and had it in the freezer. So I grabbed a bag and
let it thaw in the fridge overnight. I had already rinsed the fillet and cut it into smaller pieces. So to prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. Shook off the excess and pan fried them in Extra Virgin Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love Haddock it cooks up so nicely and I love the flavor and how meaty it is.



For the Mac and Cheese I used the Kraft Macaroni and Cheese – Triple Cheese again. Used this for the first time last week and using it again. It comes in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese! For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.

Restless night dealing with those dreaded Phantom Pains. Oh how I wish they would come up with a cure for these, they are so painful! Anyway for Breakfast I toasted a Healthy Life Whole Grain
English Muffin and topped it with a Poached Egg. I also had my morning cup of Bigelow Decaf Green Tea. After Breakfast finished up some housework and cleaned a bit outside. After Lunch I laid down for afternoon nap, needed to catch up on some sleep since I had very little overnight. The Phantom Pains finally eased up around noon. I didn't get to go see dad today but he's actually doing a lot better! They have him out of the wheelchair and he's using a walker now. Hopefully he'll be home before long. For Dinner tonight it's a Seasoned Haddock w/ Mac and Cheese.

Triple Decker Sandwich - Ham, Turkey Pastrami, Turkey Bacon, Swiss Cheese,.....

Dinner Tonight: Triple Decker Sandwich - Ham, Turkey Pastrami, Turkey Bacon, Swiss Cheese, and Boston Bib Lettuce



It's the lazy, hazy, days of Summer, In May! Don't mind the heat but the humidity, I can't stand! We have another one of those days out again. After Breakfast I went to the local Meijer, they had a lot of good 2 Day Savings going on, 5% off every item was one of them! After Lunch I got the cart out for a bit and grabbed a weed puller and went around the yard and flower beds and got rid of some weeds, lot of Dandelions this year. For dinner tonight a Triple Decker Sandwich and a 1/2 of a Baked Potato.





I had something else planned but a good ole Triple Decker just sounded too good! For the Meat I
used Boar's Head Honey Smoked Ham, Jennie - O Turkey Pastrami, and Jennie - O Turkey Bacon. Using these Meats I save a lot of Calories and Carbs using Boar's Head and Jennie - O Turkey Products. For addtional toppings I used Kraft Reduced Fat Mayo w/ Olive Oil, Sweet Hot Stone Ground Mustard, Boston Bib Lettuce, Sargento Ultra Thin Swiss, and Klosterman Wheat Bread. To build this "Bad Boy of Sandwiches"; I first toasted my Bread (3 slices). Got the first slice and layered it the Kraft Mayo, then a layer of the Boar's Head Ham, a slice of Swiss, and topped it with the second slice of Bread. On top of that the Boston Bib Lettuce, two pieces of Turkey Bacon, then I layered the Turkey Pastrami, spread the Stone Ground Mustard, a slice of Swiss Cheese, and the last slice of Bread. Now this is a Sandwich! This hit the spot, fresh, delicious, and not to filling. I also had a side of Ruffles Baked Cheddar and Sour Cream Chips and an ice-cold Diet Dr. Pepper that I had in the freezer for about 10 minutes! For a dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Baked Cold Cut Trio Mini Sub w/ Creamy Tomato Soup

Dinner Tonight: Baked Cold Cut Trio Mini Sub w/ Creamy Tomato Soup








It's been a long day! Dealing with my Sinuses all day, as has everyone in the area I hear. Mom had some errands and the went to see Dad at the rehab center and I stayed home and caught up on all the house work and laundry. It's a real pain trying to put sheets on the bed with one leg, Ugh! But I managed to get everything done. For dinner tonight I prepared a Baked Cold Cut Trio Mini Sub w/ Creamy Tomato Soup.








I used a Trio of Cold Cuts for my Baked Mini Sub; Kroger Private Selection Old World Hard Salami, Kroger Private Selection Off – the Bone Smokehouse Ham, and Kroger Private Selection Old World Pepperoni. For toppings Sargento's Ultra Thin Provolone Cheese and Kraft Reduced fat Mayo w/ Olive Oil. For the Bun I used Perfection Deli Mini Wheat Sub Buns, I buy these at Meijer. To prepare it I spread the Mayo on the bottom bun and layered my Cold Cuts on top of that. Topped that with Cheese and spread more Mayo on the bottom of the top bun. To help the bun brown a bit I brushed the top with Extra Virgin Olive Oil. I had already preheated the oven to 400 degrees, I then laid the Sub on a small baking sheet and baked it for about 12 minutes. Took it out and the Sub was a light golden brown and the Cheese was nice and melted. Now tis is a Baked Sub! The trio of Cold Cuts, Provolone Cheese, and the Mayo all work perfectly!







Then I also heated up some Amy’s Organic Creamy Tomato Soup. My favorite Tomato Soup by far. I’ve been using this a couple of years now. Creamy with a fantastic flavor and it’s 110 calories and 19 carbs. I also had a Diet Dr. Pepper to drink. For dessert/snack later some slices of fresh Mozzarella Cheese and Ritz Whole Grain Crackers.

It's been very humid out all day. I went out to fetch the morning paper and when I opened the door it was like opening an oven door. Not too nice today but better weather by Thursday, highs in the low 70's! A bowl of Honey Nut Cheerios Medley Crunch Cereal to start the day. Went to Walmart and Kroger early today and back home. For dinner tonight, Panko Crusted Orange Roughy Fillet w/ Sharp Cheddar and Bacon Mac & Cheese.








I used the other half of the Orange Roughy for my dinner tonight, preparing it the same way as last night. To prepare the Orange Roughy Fillets rinse fillets and pat dry fillets and season with Sea Salt and Pepper. Combine flour and Hungarian Sweet Paprika mix well, then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dip floured fillets into Egg Beater’s, allowing excess to drip off. Then roll the fillets in the Shake and Bake Seasoned Panko. Meanwhile, heat a tablespoon of Extra Virgin Olive Oil in skillet and place the fillets in the oil and fry 4 minutes each side. It comes out a beautiful golden brown on the outside and a moist flavorful fillet on the inside!








Then to go with my fillet I made some Kraft Homestyle Sharp Cheddar and Bacon Mac & Cheese. Love Mac and Cheese but just don't eat too often anymore due to a higher calorie and carb count than most sides I eat anymore. But every now and then is ok, and today is one of those days. That and I've been wanting some for a while now! So I picked up a package of the Kraft Homestyle Sharp Cheddar and Bacon Mac & Cheese, first time I've tried this one from Kraft. It comes in a plastic microwavable bowl. Just add water and microwave for 4 1/2 minutes. Once heated stir in the Sharp Cheddar Cheese and Bacon Bits. You have a nice tasting bowl of Kraft Mac and Cheese! Plenty of Bacon Bits with that Kraft Cheesy flavor. If they could lower the calories and carbs I would have this a lot more often, very good! For dessert later a Jello Sugar Free Double Chocolate Pudding.








Kraft Homestyle Sharp Cheddar and Bacon Mac & Cheese

Skillet Eggplant Parmesan w/ Rustic French Bread

Partly sunny and about 80 today, more humid out though. For Breakfast this morning I started off with whats become one of my favorites, Goetta! This is so good, fry it up to nice golden brown and it's hard to beat! Got the Cart out and cleaned it up and tightened up a few things on it and then went out riding most of the afternoon. For dinner tonight I tried a new recipe,  Skillet Eggplant Parmesan. Tonight it's Skillet Eggplant Parmesan w/ Rustic French Bread.








Found the recipe in the latest issue of Kraft's Food and Family Magazine. It's my favorite Cooking Magazine, it only comes about every 4 months plus a Holiday Issue. Wish it was a monthly Magazine, it's always packed with some great recipes and tips. Anyway when I seen this recipe I couldn't wait to give it a try! Egg Plant, Panko Bread Crumbs, and Cheese; you know it has to be good. To prepare it I needed the following ingredients; 1/2 cup Egg Beater's (2 Eggs), 1 pkg.  (5.5 oz.) SHAKE ‘N BAKE Seasoned Panko Seasoned Coating Mix, 1  eggplant (1-1/2 lb.) (cut crosswise into 9 slices), 2 Tbsp.  Extra Virgin Olive Oil, 1 jar  (24 oz.) Spaghetti Sauce, 1/4 cup  Water, and 1-1/2 cups  KRAFT Shredded Italian Five Cheese. Now those are winning ingredients! I l left the original recipe at the end of the post along with its web link. I substituted Egg Beater's for the Eggs and I only used 1 large Eggplant.







Then to prepare it I put the 1/2 cup of Egg Beater's in a shallow dish. Then empty the coating mix into separate shallow dish. Dip eggplant slices in egg, then in coating mix, turning to evenly coat both sides of each slice. Gently press coating mix into eggplant slices to secure. Spray both sides of eggplant slices with cooking spray.

Brushed 2 tsp. oil onto bottom of large skillet; heat on medium heat. Add 1/2 of the eggplant; cooked 1 to 2 min. on each side or until crisp and evenly browned. Transferred to a plate. Repeated with remaining oil and eggplant.

Mix the spaghetti sauce and water; spread 3/4 cup onto bottom of skillet. Cover with layers of 1/3 of the eggplant, 3/4 cup of the remaining sauce and 1/2 cup cheese; repeat layers. Top with remaining eggplant and sauce; cover.

Cooked on medium-low heat 20 to 25 min. or until heated through. Sprinkled with the remaining cheese. Remove it from the heat. Let stand, covered, 5 min. or until cheese is melted.


This came out incredible! The Egg Plant was so tender and full of flavor, it almost tasted like you were eating slices of Beef. Excellent recipe, another Keeper Recipe! I also baked a loaf of Pillsbury Rustic French Bread. Then for dessert later a bowl of Del Monte No Sugar Added Peach Chunks.








Skillet Eggplant Parmesan

what you need
2  eggs
1 pkg.  (5.5 oz.) SHAKE ‘N BAKE Seasoned Panko Seasoned Coating Mix
2  eggplants (1-1/2 lb.), each cut crosswise into 9 slices
2 Tbsp.  oil
1 jar  (24 oz.) spaghetti sauce
1/4 cup  water
1-1/2 cups  KRAFT Shredded Italian* Five Cheese with a TOUCH OF PHILADELPHIA

BEAT eggs in shallow dish until blended. Empty coating mix into separate shallow dish. Dip eggplant slices in egg, then in coating mix, turning to evenly coat both sides of each slice. Gently press coating mix into eggplant slices to secure. Spray both sides of eggplant slices with cooking spray.

We got some hot and humid weather coming, around 89 to 90 degrees. I can take the heat but the humidity carbs. I also used Kroger Hickory Smoker Ham and it’s 70 calories and 1 carb per serving along with Sargento Ultra Thin Swiss Cheese which is 40 calories and 1 carb per slice, but I'll only be adding a half a slice per sandwich.
is what makes me uncomfortable. For dinner one my favorite recipes, Baked Ham & Swiss Sliders w/ Baked Crinkle Fries. A while back I made some Aunt Millie’s Baked Ham & Swiss Rolls, using Aunt Millie’s Hawaiian Rolls. This time I made them using Kroger Whole Wheat Slider Buns. These are only 70 calories and 13



This is makes one tasty sandwich! This is another one of those keeper recipes. To prepare it preheat your oven to 350 degrees. Then I used the package of Slider Buns, 1 – 12 oz. Package of Kroger Private Selection Hickory Smokehouse Ham, and 1 package of Sargento Ultra Thin Swiss Cheese. I placed the bottom half of the bun in the bottom in a deep baking pan large enough to hold 12 sandwiches, about 11″ x 14″ pan. Then I topped the rolls in the pan with Ham slices, and top with the Swiss Cheese slices. and placed the top of the rolls on the sandwiches.



I then poured a topping mixture evenly over the sandwiches. To make the mixture I combined the following ingredients: 4 Tbsp. butter (1/2 stick) melted, 2 tsp. dried onion, 1 1/2 tsp. Worchestershire sauce, 1 1/2 tsp. Poppyseed dressing, and 1/2 tsp. yellow mustard. Mix well with a whisk or fork till its well combined. Pour mixture evenly over the sandwiches. Cover with foil and bake at 350 degrees for 15 minutes then remove foil and bake an additional 15 minutes to allow the rolls to crisp. Remove from oven to cool and serve. And as I said earlier they are delicious. The topping mixture is what gives it it’s fantastic flavor. I can’t wait to try this on some Grilled Cheese or Grilled Ham and Cheese Sandwiches! The recipe is for 12 sandwiches, I only made 6 Sandwiches so I cut back on the amount of Butter I used. I used Blue Bonnet Light Stick Butter, another calorie and carb saver! Just by doing the little things like going to an Ultra Thin cut of Meat or Cheese or by going with low fat, reduced fat, low carb you can end up reducing the fat, calorie and carb count on any recipe. It all adds up. Once again the Sandwiches came out absolutely delicious! It’s just the whole combination of everything that just bursts these Sandwiches with flavor. I love these sandwiches!! I’ve left the original recipe and web site link to Aunt Millie’s below.


 To accompany my Baked Ham and Swiss Sandwiches I prepared some Baked Ore Ida Crinkle Fries. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.




Aunt Millie’s Baked Ham & Swiss Rolls
Fresh from the oven!

Ingredients:
1 package Aunt Millie’s Hawaiian dinner rolls. 12 ct.
1 – 12 oz. Package of ham slices
1 – 8 oz. package of Swiss cheese, slices
8 Tbsp. butter (one stick) melted
2 tsp. dried onion
1 1/2 tsp. Worchestershire sauce
1 1/2 tsp. Poppyseed dressing
1/2 tsp. yellow mustard
Yield: 12 servings



Directions:
Cut rolls in half.
Place the bottom in a deep baking pan large enough to hold 12 sandwiches, about 11″ x 14″ pan.
Top the rolls in the pan with ham slices, and top with the Swiss cheese slices.
Place the top of the rolls on the sandwiches.
Mix together butter, onion, Worchestershire, dressing, and mustard.
Pour mixture evenly over the sandwiches.
Cover with foil and bake at 350 degrees for 15 minutes.
Remove foil and bake an additional 15 minutes to allow the rolls to crisp.
Remove from oven to cool and serve.

Italian Pasta Salad


I had a box of Ronzoni Garden Delight Tri Color Rotini Pasta in the pantry so I decided to make a  Italian Pasta Salad for lunch. I used about  1/4 of the box of the Pasta, enough for a couple of servings. Light and tasty dish that includes  Ronzoni Garden Delight Tri Color Rotini Pasta, Black Olives, Kalamata Olives, Hormel Turkey Pepperoni, Anchovies, Kraft Shredded Parmesan, Kraft Zesty Italian Fat Free Dressing, and McCormick Grinder Italian Seasoning. Boil the Pasta according to the box and add all the ingredients and refrigerate. Too Good!

Today’s Menu: Spaghetti and Turkey Meatballs w/ Baked Parm Toast




It was Spaghetti and Meatballs tonight! used Ronzoni Healthy Harvest Whole Wheat Spaghetti along with Honeysuckle White Turkey Meatballs. Topped everything with Kraft Shredded Parmesan Cheese and Bella Vita Low Carb Pasta Sauce (Meat Flavored). Along with the great taste the Sauce is only 70 Calories and 6 Carbs! At the end of the post I left the product description for the Ronzoni Spaghetti and the Bella Vita Pasta Sauce.

I also had healthy Life Whole Grain Bread that I buttered with I Can’t Believe It’s Not Butter and then sprinkled with Shredded Parm Cheese. Then I baked it at 350 degrees for 7 minutes. Makes an quick and easy way for a side of Bread for Pasta Dishes. For dessert/snack a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Chicken Parmesan w/ Whole Grain Spaghetti and Italian Loaf Bread


Today's Menu: Chicken Parmesan w/  Whole Grain Spaghetti and Italian Loaf Bread




It's Chicken Parmesan night! I'm going with an easy Chicken Parmesan recipe. I used a package of Thin Cut Chicken Breasts. I seasoned them with Sea Salt and Ground Black Pepper I then whisked together 1 egg and a 1/2 cup of 2% milk. Then dip the chicken breasts in milk and egg mixture and then in Italian Style Bread Crumbs. Heat olive oil in a large skillet over medium-high heat. Brown the chicken in the hot oil on both sides until golden, about 3 to 4 minutes on each side. Set chicken in a baking dish.
Slice 8 pieces of mozzarella cheese and put two on each chicken breast. Pour 1 jar of your favorite spaghetti sauce over all. Sprinkle with Parmesan cheese and a little more mozzarella and bake at 350° for about 25 to 30 minutes, or until bubbly. It's a simple but delicious recipe! If you like Chicken Parm try this one out one night. The Chicken is just too good!

I served the Chicken Parm on a bed of Spaghetti. I used Ronzoni Healthy Harvest Whole Grain Spaghetti. I also baked some Walmart Marketside Italian Loaf Bread. For dessert later a Blue Bunny Frozen Vanilla Bean/Chocolate Yogurt Bar.




Chicken Parmesan

Ingredients:

4 boneless Chicken Breasts, pounded to 1/2 inch thickness or Thin Cut Chicken Breasts
1 Egg or 1/4 Cup Egg Beaters
1/2 cup 2% Milk
Progresso Italian Style Seasoned Bread Crumbs
2 to 3 tablespoons Extra Virgin Olive Oil
1 small container of Baby Bella Mushrooms, Sliced
8 slices Kraft Sliced Provolone/Mozzarella Cheese, or more
1 jar (16 oz) spaghetti sauce, I used LaRosa Pasta Sauce
Parmesan Cheese
Sea Salt and Ground Black Pepper, to taste
Serve with: Ronzoni Healthy Harvest Whole Grain Spaghetti, Optional

Preparation:

One of America's Favorites - Macaroni and Cheese


Macaroni and cheese, also known as "mac and cheese", "macaroni cheese" in Australian English, British English & New Zealand English or "macaroni pie" in Caribbean English, is a dish consisting of cooked elbow macaroni and cheese sauce.

Macaroni and cheese is a casserole, but "macaroni and cheese" often refers to the popular packaged dry macaroni and cheese mix pioneered by Kraft Dinner in 1937 and widely copied.
The dish is essentially a noodle gratin (scalloped potatoes) with macaroni pasta in place of potatoes.

A similar traditional dish in Switzerland is called Älplermagronen (Alpine herder's macaroni), which is also available in boxed versions. Älplermagronen are made of macaroni, cream, cheese, roasted onions, and potatoes. In the Canton of Uri, the potatoes are traditionally omitted, and in some regions, bacon or ham is added.

Macaroni ("Maccheroni" in Italian) is mentioned in various medieval Italian sources, though it is not always clear whether it is a pasta shape or a prepared dish. However, pasta and cheese casseroles have been recorded in cookbooks as early as the Liber de Coquina, one of the oldest medieval cookbooks. A cheese and pasta casserole known as makerouns was recorded in an English cookbook in the 14th century. It was made with fresh, hand-cut pasta which was sandwiched between a mixture of melted butter and cheese. It was considered an upperclass dish even in Italy until around the 18th century.
"Maccaroni" with various sauces was a fashionable food in late eighteenth century Paris. The future American president Thomas Jefferson encountered the pasta in both Paris and in northern Italy. He drew a sketch of the pasta and wrote detailed notes on the extrusion process. In 1793, he commissioned American ambassador to Paris, William Short, to purchase a machine for making it. Evidently, the machine was not suitable, as Jefferson later imported both macaroni and Parmesan cheese for his use in Monticello. In 1802, Jefferson served a "macaroni pie" at a state dinner.
Since that time, the dish has been associated with America and especially the American South. A recipe called "macaroni and cheese" appeared in the 1824 cookbook "The Virginia Housewife" written by Mary Randolph, Jefferson's cousin. Randolph's recipe had three ingredients: macaroni, cheese, and butter, layered together and baked in a 400-degree F. oven. The cookbook was the most influential cookbook of the 19th century, according to culinary historian Karen Hess. Similar recipes for macaroni and cheese occur in the 1852 Hand-book of Useful Arts, and the 1861 Godey's Lady's Book. By the mid 1880's, cookbooks as far west as Kansas included recipes for macaroni-based casseroles.

Pasta was however, still made by hand – a laborious process that often exploited slave labor and servants. Randolph's cookbook addressed housewives in comfortable circumstances.[6] Cooking was done in kitchens kept in a separate building for reasons of safety and summer heat. At its heart was a large fireplace where cauldrons of water and broth simmered during most of the day. A brick oven used for baking was located next to the fireplace. Although the first American pasta "factory" opened in Philadelphia in 1798, most pasta factories emerged with the rapid American industrialization following the American Civil War. Crucial was the development in 1878 of the Marseilles Purifier – a device to improve semolina, the first hydraulic press in 1882, and the first steam powered mill in 1884. Also important in these developments were the influx of Italian immigrants increasing the demand in America for pasta. High class Americans would still purchase imported pasta for the snob appeal. In 1914, an artificial drying process drastically lowered prices of factory pasta. The First World War brought pasta imports to a halt, creating an opportunity for American factories. The number of pasta factories rose from 373 to 575 between 1914 and 1919.
Paralleling this was the introduction of cheesemaking factories. The first American cheesemaking factory was founded by Jesse Williams in 1851. Generic factory cheese, cheddar, became so common it was called "store cheese" or "yellow cheese." The earlier recipes cited by Randolph probably used harder cheeses such as Parmesan. These economies of scale were driven both by the move of the population to the cities and the efficiencies of the railroad.

With the lowering of price of the factory-produced product, macaroni, and thus macaroni and cheese, lost its cachet. Fashionable restaurants in New York — even Italian ones — did not serve it. Food science, a new discipline from the 1890s, proclaimed fruits and vegetables were of little nutritional value and cost too much based on bread. In the 1920s, the millers promoted macaroni as "the divine food" and sponsored "eat more wheat" campaigns. It was at this time the practice of serving Swedish meatballs with buttered egg noodles emerged.
Boston Market, a ready to eat take-out, and Michelina's and Stouffer's, frozen food, are some of the more widespread brands of macaroni and cheese available in the United States. The dish still retains its Southern associations and is a common side at barbecue and soul food restaurants, but it has long held its place in higher end Southern establishments and working class cafeterias. Additional novelties include deep-fried mac and cheese found at fairs and mobile vendors (food carts). A precooked version known as "macaroni and cheese loaf" can be found in some stores.

Since the 1990s various "gourmet" mac and cheese dishes have emerged in fine "non-regional" North American restaurants. Since 2005 a number of restaurants operating on a fast-food model -- but serving only macaroni and cheese -- have opened in places such as New York City, Oakland, Portland, St. Louis, Manchester and Vancouver, Canada.

Packaged versions of the dish are available as a boxed convenience food, consisting of uncooked pasta and either a liquid cheese sauce or powdered ingredients to prepare it. The powdered cheese sauce is mixed with either milk or water, and margarine, butter, or olive oil. In preparing the dish, the macaroni is cooked and drained, then mixed with the cheese sauce. These products are prepared in a microwave, in a stove pot, or baked in a oven, often with any of the extra ingredients mentioned above.
A number of different products on the market use this basic formulation with minor variations in ingredients.
Kraft Dinner was introduced as a packaged mix in 1937 with the slogan "make a meal for four in nine minutes." It was an immediate success in the US and Canada amidst the economic turmoil of the depression. During the Second World War, rationing of meat and dairy products lead to Kraft's wide popularity. During this time it also became an acceptable entree rather than a side dish. Wartime popularity of the Kraft product lead to common variations of the dish made with processed cheese in the postwar era. The 1953 Better Homes and Gardens Cookbook includes a recipe for the dish with Velveeta, which had been reformulated in that year.
In Canada, the Kraft product is so popular that "Kraft Dinner" has become a generic trademark of sorts. The item is Canada's number one selling grocery item and has assumed an iconic status akin to Vegemite in Australia, but is also stereotyped as a food staple for students and those in lower income levels.

Velveeta Cheesy Skillet Nacho Supreme w/...

Dinner Tonight: Velveeta Cheesy Skillet Nacho Supreme w/ Tostio's Scoops


Tried another of the Kraft/Velveeta Cheesy Skillets Dinner Kits. They have different kinds and I tried the Nacho Supreme this time. This dinner kit includes: Pasta, Velveeta Cheese Sauce, Salsa and Seasoning Pack. All I had to do was add the water and 1lb. of Ground Turkey. It’s ready in about 20 minutes. I’ll leave the instructions at the end of the post. It’s 360 calories and 31 carbs but that’s your complete meal. I had a side of Tostio's Whole Grain Scoops. When you get the chance try the new Velveeta Cheesy Skillet Dinners, the Nacho Supreme is as good as the Ultimate Cheeseburger, both are delicious.

Ingredients:
* 1 LB. Ground Beef or Ground Turkey
* Cups Water
* Nacho Chips (Optional)
* 1 Velveeta Cheesy Skillets Dinner Kit/Nacho Supreme

Instructions:
* Brown 1 LB. Ground Turkey in large skillet. Drain
* Add 2 cups water, seasoning and pasta. Bring to a boil. Reduce Heat.
* Cover, Simmer and stir often until most of water is gone about 9-11 minutes. Remove from heat.
* Add Cheese from Velveeta Cheese Pouch and Salsa Pouch. Stir in Cheese Sauce and serve!
* You can add Nacho Chips as a side or crumble some chips and add them to the mixture

Shrimp w/ Whole Grain Rotini and…


Dinner Tonight: Baked Shrimp on a bed of Whole Grain Rotini and Cheese & Bacon




Had Baked Shrimp on a bed of Whole Grain Rotini and Cheese & Bacon.
I used Pop Corn size Rock Shrimp rolled in a Whole Grain Flour and Bread Crumb mixture and
seasoned with Sea Salt and Grinder Black Peppercorn. Baked at 450 degrees for
10 minutes. As the sides I had Velveeta/Kraft Whole Grain Rotini and Cheese w/ Turkey
Bacon Pieces, fried up 2 pieces of Turkey Bacon and crumbled them and added to Rotini,

and a slice of Kroger Bakery Harvest Grain Bread. I also had been wanting to try
this Shrimp Dipping Sauce I had found a while back so I made a side of it to test just how
good it was. Turned out great! I’ll use it again sometime, the recipe for it follows:

Ingredients
1/3 Cup of Non – Fat Greek Yogurt
2 Tablespoons Of Reduced Fat Mayo
1 Tablespoon Lime Juice
1 Lime Zested
1/2 Teaspoon Ancho Chili Powder
