Chunky Baked Potato with Cheddar and Bacon Bits Soup w/ Grilled Ham and Swiss

Dinner Tonight: Chunky Baked Potato with Cheddar and Bacon Bits Soup w/ Grilled Ham and Swiss Cheese Sandwich

A cool day today but I wanted to get out and take a look at some of the beautiful trees that have all turned to their Autumn colors. So I broke out the Sweat Shirt and got the 4 wheel mobility scooter out. The trees are beautiful, especially on our main road here in the community and down around the lake and clubhouse. I just love this time of year! For dinner a simple but warming and hearty dinner, Chunky Baked Potato with Cheddar and Bacon Bits Soup w/ a Grilled Ham and Swiss Cheese Sandwich.

For my Grilled Ham and Cheese Sandwich I used Kroger Private Selection Oven Roasted Rosemary Ham (Deli Sliced). I've been using this ham for a while now. Fantastic taste and sliced real thin. It's 70 calories and 1 carb per serving (3 Slices). For the Cheese I used 2 slices of   Sargento Ultra Thin Swiss. My Cheese Brand of choice for about any dish or sandwich. The Swiss is only 40 calories a slice. For a topping spread I used Litehouse Lite Thousand Island Dressing and Dip (70 calories and 4 carbs per serving). Incredibly flavorful dressing and it's the Lite version. I served it on a couple of slices of Klosterman Wheat Bread (70 calories and 13 net carbs). To prepare just layer you Ham and Cheese on the Bread and then Butter the top and bottom of sandwich, with I Can't Believe It's Not Butter. Then I grilled it on a flat top grill sheet till each side was toasted a golden Brown.

I also used my favorite Potato Soup, Campbell's Chunky Baked Potato with Cheddar and Bacon Bits. Love this Soup, it's nice and thick with some big chunks of Potato with just the right amount of Cheddar and Bacon Bits. Plus it can't be much easier to prepare, just open the can and heat it up in a small sauce pan. Love the taste and it's only 190 calories and 19 net carbs. A good meal for an Autumn Day or any Day for that matter. For dessert/snack later I think I'll have some Pringles Fat Free Potato Chips with some Hidden Valley Smoked Bacon Dressing and Dip.

It's been a cloudy and rainy day today but at least it's warm out! For dinner I prepared one of my favorite Chicken dishes; Baked Buffalo Chicken Breast Sandwich w/ Baked Potato. Grilled Ham and Cheese Sandwich w/ Chunky Baked Potato & Cheddar and Bacon Bits Soup

Today's Menu: Grilled Ham and Cheese Sandwich w/ Chunky Baked Potato & Cheddar and Bacon Bits Soup

Another one of those day's where I planned on a bigger meal but was running late helping my Mom out, still has a bad case of the flu. Fortunately I have a full freezer and pantry where I can make last minute dinners.

I went with a Grilled Ham and Cheese Sandwich w/ Chunky Baked Potato & Bacon Bits Soup. Always a hearty, quick and easy dinner! I used Oscar Mayer Carver Board Ham, Sargento Ultra Thin Colby - Jack Cheese, Litehouse Lite Thousand Island Dressing, and Healthy Life Whole Grain Bread to make my sandwich with. Thousand Island Dressings is a great way to liven up any sandwich, especially when you can find a great tasting Lite or Reduced Fat one. The Litehouse Lite is only 70 calories and 4 carbs per serving. To make the sandwich I butter both pieces of the bread with I Can't Believe It's Not Butter and then on the unbuttered sides I spread the Thousand Island Dressing, then layer the Ham, and then the Cheese. I heated a small frying pan spraying it with Pam Spray and melting about a 1/2 pat of I Can't.. butter in the pan. When the butter stops bubbling I add my sandwich. I grill it on both sides until they are golden brown and the cheese is just starting to melt. A Grilled Cheese is good anytime of the day but one with added Ham and the Thousand Island Dressing makes it special!

Along with the sandwich I had a bowl of Campbell's Chunky Baked Potato with Cheddar and Bacon Bits Soup, 200 calories and 24 carbs per serving. One of Campbell's Better Soups. Very good tasty, thick and hearty Soup. I topped with a some Kraft 2% Shredded Sharp Cheddar Cheese. A warm and hearty last minute meal! For dessert later  a Jello Sugarless Dark Cherry Jello.

Tailgate Food Dinner

Today's Menu: Chili Dogs and Jalapeno Bottle Caps

It's Sunday and a full day of football and a big Sunday night Football game for the hometown Cincinnati Bengals! So what better than to fix a tailgate meal for dinner. I used to tailgate before all the Bengal games years ago but being in a wheelchair takes a little fun out of it so I catch all the games at home sweet home. But I can still fix some of the foods we used to prepare for the tailgate parties. For dinner I prepared Chili Dogs and Jalapeno Bottle Caps.

For the Chili Dogs I used Ball Park Smoked White Turkey Franks. These are my favorite Turkey Dogs. Low cal, low carb, and great tasting! I left the item description at the end of the post. I served it on a Healthy Life Whole Grain Bun and topped it with a splash of French's Yellow Mustard, Hormel Turkey Chili with Beans, and Kraft 2% Shredded Sharp Cheese. Ahh these are just too good!

I also prepared a batch of Jalapeno Bottle Caps. If your looking for a unique and delicious appetizer look no further! These are addicting once you start eating them. I've left the full recipe at the end of the post. Just to tell you a bit about them, you slice your Jalapenos into slices about the size of bottle caps and dip them in a beer batter and deep fry until browned. You do have to cut the seeds out of Jalapenos though. They come out flat - out delicious! A little heat but they actually come out with almost a sweet taste. You serve with a side of Bleu Cheese dressing, I used Litehouse Lite Bleu Cheese Dressing and Dip ( 80 calories and 3 carbs). Your going to love these! For dessert later a Blue Bunny Frozen Chocolate/Vanilla Swirl Yogurt Bar.

Lunch Time Salad

After an early breakfast I headed to Grocery Shopper's Heaven, Jungle Jim's Market. As I've said before to see everything at the Jungle it would take a full day. I loaded up on fresh Olives, Marinated Mozzarella Balls, Fresh Produce, and Seafood. They had the samples of different Hot Sauces out already this morning. They carry so many different Hot Sauces they put them in alphabetical order, 3 rows! Anyway I came awy with some crisp and beautiful Lettuce, Mushrooms, Pine Nuts, and a new dressing Litehouse Light Thousand Island. It's hard to beat Litehouse brand Dressing. Fantastic tasting Dressing with plenty of variety. I left the product info and web link at the end of the post. For lunch I made a fresh salad; Lettuce sliced Mushrooms, Pine Nuts, Olives, and topped with the Litehouse Light Thousand Island Dressing. Time to enjoy this!

Chili Lime Seasoned Wings w/ Baked Crinkle Fries

Today's Menu: Chili Lime Seasoned Wings w/ Baked Crinkle Fries

It was an easy to prepare Lip Smackin' good dinner tonight. I purchased a bag of Tyson Chili Lime Seasoned Chicken Wings at Walmart earlier today and prepared them for dinner tonight. I preheated the oven to 425 degrees and lined a large cookie baking sheet with foil. I then baked them for 35 minutes. The wings came out perfect! It was the first time we tried the Chili Lime Wings and won't be the last. The Chili Lime Seasoning provides a fantastic flavor. Just a hint of heat with the cool Lime made a beautiful glaze on the Wings. We'll be having these again! I served them with Litehouse Gorgonzola Dressing and Dip. Along with the Wings we had Ore Ida Baked Crinkle Fries. Dessert later a bowl of Breyer's Carb Smart Vanilla Ice Cream topped with Dole mango Slices.
