Baked Pita Bread Pepperoni and Sausage Pizza

Dinner Tonight: Baked Pita Bread Pepperoni and Sausage Pizza

Went out and got the morning paper about 6:45 this morning and it was 50 degrees! 50 degrees in late July, odd weather this year. It was another gorgeous day out also, about 78 and sunny. For dinner wanted a hot but light meal so I prepared a Baked Pita Bread Pepperoni and Sausage Pizza.

I used my new favorite Pita Bread, Joseph's Flax, Oat Bran, and Whole Wheat Pita Bread. I've been using this for the last couple of weeks and love it. Stays very fresh, good tasting and it's only 50 calories and 7 carbs (4 Net Carbs) per serving.

For my toppings I tried to use all items that were Turkey, Low Fat, and Reduced Fat. I used Hormel Turkey Pepperoni (70 Calories and 0 Carbs), Jennie - O Lean Ground Turkey (160 Calories and 0 Carbs), Ragu Pizza Sauce (40 Calories and 5 Carbs), Sliced Black Olives (30 Calories and 1 Carb), and Kraft 2% Mozzarella (70 Calories and 1 Carb). I also had about 3 slices of Mushrooms on there also. I spread 1 brush of Extra Virgin Olive Oil on top of the Pita Bread and then layered my toppings. I then baked it on a cookie sheet at 400 degrees for about 10 minutes, until the Cheese was melted and the toppings were heated. The Pita Bread makes one fine Pizza! The Bread browned and crisped up just right and everything was so low in calories and carbs I could have a couple of them if I wanted. Pita Bread Pizzas, gotta love them! For dessert later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.

Progresso Kitchen Favorites Classic Lasagna w/ Baked Artisan Multi Grain Bread

Dinner Tonight: Progresso Kitchen Favorites Classic Lasagna w/ Baked Artisan Multi Grain Bread

CHILLY this morning about 35 degrees, 31 tomorrow morning with a freeze warning! Come on Mother Nature with that warm weather. Being Mother's Day I gave Mom a choice of what to have for Dinner. We thought about going to one of the local Steakhouses but Mom decided she wanted to eat at home and she wanted Lasagna. So for dinner I prepared; Progresso Kitchen Favorites Classic Lasagna w/ Baked Artisan Multi Grain Bread. As always I substitute Extra Lean Ground Turkey for the Beef.

This has become one of our favorite dinners and our favorite Lasagna recipes, Progresso Kitchen Favorites Goda Cheese. Gouda is such a great tasting Cheese and is a perfect melting Cheese. Basically you just layer your ingredients in a 8″ square baking dish and cover and bake at 425 degrees for 30 minutes and bake an additional 10 minutes uncovered. The product description along with full instructions are at the bottom of the post.
Classic Lasagna! It’s very easy to make as the dinner kit contains the Lasagna Pasta, Tomato Herb sauce, Ricotta Sauce Mix, and Grated Parmesan Cheese. I added 1 lb. Jennie – O Lean Ground Turkey, 1 Cup water, 2/3 Cup 2% Milk, 1 (8 oz.) Shredded Mozzarella Cheese (2 Cups), 1/2 cup Shredded dutch Gouda, and I also added a bit more seasoning (McCormick Grinder Italian Herb). I combined the Mozzarella and

Prepared by the instructions it was 390 calories but I cut that and the carb count down by using Honeysuckle White Extra Lean Ground Turkey instead of Beef and Sargento Reduced Fat 2% Mozzarella Cheese. The Lasagna came out delicious every time! Everyone really loves this. The flavor as always is excellent. The Sauce was thick and well seasoned and the same for the pasta, perfect, plus plenty leftovers to freeze for later. I also baked a loaf of the La Brea Bakery Take and Bake Artisan Multi Grain Loaf.  For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Roast Beef BBQ Sandwich w/ Loaded Mashed Potato Casserole

Today's Menu: Roast Beef BBQ Sandwich w/ Loaded Mashed Potato Casserole

Lot of rain in the area today and in fact for the next 3 days their saying. Wanted to come up with something new for dinner so Ilooked at some older recipes and scanned the internet and ended up deciding on Roast Beef BBQ Sandwich w/ Loaded Mashed Potato Casserole.

I used Hormel Slow Simmered Beef Roast Au Jus. It comes in a microwavable container. Just heat on high for 5 minutes and it's ready! It's very tender and delicious. I shredded it with a fork and added JB's Fat Boy Haugwaush BBQ Sauce to it. Great combo to make a BBQ Roast Beef with! The Beef is juicy & tender and the BBQ Sauce fills it with flavor. I served it on a Healthy Life Whole Grain Bun.

For a side dish I prepared a Loaded Mashed Potato Casseroles. First time that I made these and won't be the last! These turned out too good! I used Bob Evan's Mashed Potatoes for the Potatoes. It's loaded with Reduced Fat Philly Cream Cheese, Black Peppercorn, 2% Sharp Cheddar, Shredded Smoked Dutch Gouda Cheese, Turkey Bacon and Chives. All mixed together and baked and it comes out one delicious Potato dish! I left the full directions below. The directions will make 8 casseroles (ramekins). I made a 1/4 of the recipe that made 2 of them. These make a great Potato Dish, Mashed Potatoes with a kick! For dessert later a Blue Bunny Chocolate/Vanilla Swirl Frozen Yogurt Bar.

Loaded Mashed Potato Casserole

Ingredients:

2 Bags (24 oz. each) refrigerated Mashed Potatoes
1 Package (8oz.) Philadelphia Fat Reduced Cream Cheese
1/2 Teaspoon fresh Ground Pepper
2 Cups Kraft 2% Shredded Sharp Cheddar Cheese
1/2 Cup Shredded Smoked Dutch Gouda Cheese (Reserve a bit to top off Casseroles)
10 Slices Turkey Bacon, Crisply cooked and crumbled (Reserve a bit to top off Casseroles)
1/2 Cup Chopped fresh Chives

Directions:

1) Heat oven to 375. Spray 8 (6 oz.) individual baking dishes (Ramekins) with cooking spray. Place dishes on a cookie sheet.

2) Cook Potatoes in microwave as directed on bag. In large bowl, mix potatoes, cream cheese, and Pepper. Spoon about 1/2 cup Potato mixture into each baking dish. Sprinkle each with about 2 tablespoons Cheese, about 1 tablespoon Bacon, and 1 1/2 teasooons Chives. Repeat layers of Potatoes, Cheese, and Bacon

3) Bake uncovered 20 minutes or until thoroughly heated and Cheese is melted. Sprinkle casseroles evenly with remaining Chives, Bacon, and Gouda cheese. Let stand 5 minutes before serving.

Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers

Today’s Menu; Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers

What a day! I attempted to make a Soft Pretzel recipe I came across the other day. What a disaster!! It looked to be a fairly easy recipe but everything went wrong. I followed the recipe and got to the part where you had to put everything in a bowl and using the kneading mixer attachments, this is where it got interesting to say the least. I was let it knead on medium for 10 minutes but after about 5 minutes is where it turned into a "I Love Lucy" episode! I was catching up on doing some dishes and as I turned around the mixer started throwing dough everywhere, and I mean everywhere! So for a half hour or MORE I was cleaning up dough from all parts of the kitchen. It will be a while if ever I try this recipe again. If I crave a Soft Pretzel I'll buy some!

After cleaning and everything I wanted something real easy to make! So I went with the microwave and the Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers! They now sell it packaged for the microwave, a bit smaller size than what you get at a Skyline but just right for those still watching calories and carbs. It comes with Spaghetti topped with that wonderful Skyline Chili. You add the Cheese to make it a 3 Way. I grated a block of Kraft 2% Sharp Cheese for a topping for my Chili and also had a half serving of Skyline Oyster Crackers. Overall it's just over 400 calories and 33 carbs. For dessert later a Jello Sugar Free Chocolate Pudding.

Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers

Today’s Menu; Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers

The day consisted of cleaning the outdoor shed and then moving inside to clean and organize 2 closets. I really didn't want to have to put much effort into preparing dinner so I went the very easy route of the Microwave! I went with the Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers! Overall it was just over 400 calories and 33 carbs. I left a little history of my favorite Chili Spaghetti/Coney place here in the Cincinnati area at the end of the post. For dessert later a slice of Pillsbury Nut Quick Bread topped with a scoop of Breyer’s Carb Smart Vanilla Ice Cream.

Skyline Chili

Skyline Chili is a chain of chili restaurants based in Cincinnati, Ohio. Founded in 1949 by Greek immigrant Nicholas Lambrinides, Skyline Chili is named for the view of Cincinnati’s skyline that Lambrinides could see from his first restaurant (which has since been demolished), opened in the section of town now known as Price Hill. It is also the “official chili” of many local professional sports teams and venues, including the Cincinnati Reds, Columbus Blue Jackets and the Kings Island theme park, and also sponsors the Crosstown Shootout, an annual men’s college basketball rivalry game between the city’s two NCAA Division I teams, Cincinnati and Xavier.

In 1912, Nicholas Lambrinides immigrated to Cincinnati from Kastoria, Greece, and brought his favorite family recipes with him. To save up the money to bring his wife to America as well, he first worked as a cook for a railroad crew and in a hotel kitchen, then opened a short-order diner. After nearly a decade, his wife was able to join him in Cincinnati and they raised five sons.

By World War II, Lambrinides was working as a chef for the original Empress Chili restaurant, where he continued to tinker with a recipe which he had been developing for years. In 1949, he and three of his sons opened their own place on Glenway Avenue, near the top of a steep hill (Price’s or Price Hill). That diner was located at the intersection of what is now Quebec and Glenway Avenue. The owners named it Skyline Chili for its panoramic view of downtown Cincinnati. After some local resistance in the predominantly Roman Catholic neighborhood  Skyline developed a large and devoted following – especially on Thursdays and Saturdays, which immediately preceded and proceeded meatless Fridays.

The family opened a second restaurant in 1953 and the growth of the business accelerated in the 1960s; by the end of the century, there were 110 Skyline restaurants, mostly in Ohio, but with additional establishments in other states including Kentucky, Indiana, and Florida.

Skyline Cheese Coney
Lambrinides died in 1962 at the age of 82, but his sons continued to operate and expand the company. They retained the original recipe unchanged, though. According to William Lambrinides, “Dad always said, ‘Don’t change a thing with the recipe – don’t add anything, don’t take out anything, it’s perfect the way it is’.” As a result, Skyline’s version has largely become synonymous with “Cincinnati-style chili“. In 1998, the company was sold to Fleet Equity Partners, a New England investment firm, which promised not to change the recipe (which they reportedly keep locked in a safe).

Skyline Chili is unique in that it is not chili con carne, the meat dish that originated in (and is the state dish of) Texas. Instead, Cincinnati-style chili is a sauce usually used over spaghetti or hot dogs, containing a unique spice blend that gives it a very distinct taste. Officially, the recipe for Skyline Chili is a well-kept family secret among Lambrinides’ surviving children. However, many Skyline patrons and Cincinnatians believe that the unique taste of Skyline Chili comes from chocolate and cinnamon, spices common in Greek cuisine’s meat dishes. The general recipe is not unique to Skyline — “Cincinnati-style” chili is sold by several chili parlors in the area including Empress, Dixie, Gold Star Chili, Camp Washington, Dawson’s School House of Chili, and other chili parlors.

Skyline’s menu includes their signature dishes: cheese coneys (a hot dog topped with Skyline Chili, mustard, onions, and cheese), and 3-ways (spaghetti topped with Skyline Chili and cheese; 4-ways (choice of beans or onions added), and 5-ways (beans and onions both added). Additional menu items include burritos made with Skyline Chili, classic and Greek-style salads, french fries, and baked potatoes topped with Skyline Chili. To accommodate patrons who follow a low carbohydrate diet, Skyline has recently offered low-carb options such as a “coney bowl”—a cheese coney without the bun, and also now serves vegetarian options, using beans and rice in place of chili in many of its dishes.

Crescent Dogs

Finally got a chance to try the Crescent Dog Recipe. Easy to fix and makes a good meal. To prepare them by the Pillsbury Recipe they are 290 calories and 13 carbs and as good as they look and sounded I wanted to knock off some of the calories. So I used Ball Park Smoked White Turkey Franks, Pillsbury Reduced Crescent Rolls, and Kraft 2% Deli Sliced Sharp Cheddar. The recipe calls for you to put a slit in the Hot Dog and insert the Cheese. Instead I used a half a piece of Sliced Cheese and placed the Dog on top of the Cheese and then wrapped them. I baked them at 375 degrees for 17 minutes. They taste fantastic! I mean what's not to like, Turkey Franks, Crescent Rolls, and Cheese! I put a dab of French's Yellow Mustard on it before eating. Give them a try the leaner way you'll love them! I left the Pillsbury Recipe along with Pillsbury Link below.

Crescent Dogs

Grilled Cheese with Turkey Bacon and Thousand Island Dressing w/…..

Dinner Tonight: Grilled Cheese with Turkey Bacon and Thousand Island Dressing w/ New England Clam Chowder.

Tried a new kind of Cheese for my Grilled Cheese. I used Taleggio Cheese and Kraft 2% Sharp Cheddar Cheese. The Taleggio melted beautifully! A mild and smooth Italian Cheese. Along with the two type of Cheese it was topped  with Turkey Bacon and Thousand Island Dressing . As good as this sounds it tastes even better! The recipe for this will be at the end of the post. Along with the Grilled Cheese I had a bowl of Campbell’s Chunky New England Clam Chowder with a side of Skyline Chili Oyster Crackers. For dessert/snack later while watching some football some Jolly Time 100 Calorie Mini Bag of Pop Corn.

Grilled Cheese with Turkey Bacon and Thousand Island Dressing

2 Strips of Turkey Bacon
1 Tablespoon of I Can’t Believe It’s Not Butter
2 Slices of Healthy Life Whole Grain Bread
2 Slices of Kraft 2% Sliced Sharp Cheddar Cheese
1 Slice of Taleggio Cheese
1 Tablespoon Thousand Island Dressing

* Cook the turkey Bacon in a skillet or grill pan until crisp. Remove and drain on a paper towel lined plate.
*Heat the Butter in a skillet over medium heat. Add one slice of Bread to the pan. Top with all the cheese and the Turkey Bacon. Take the remaining slice of Bread and spread on the Thousand Island Dressing and press it on top of the slice that’s in the pan, dressing side down. Cook until the Cheese is melted and Bread is golden, about 2 -3 minutes per side.

Cincinnati Style Cheese Coney Casserole

Dinner Tonight: Cincinnati Style Cheese Coney Casserole.

If you're a fan of Cincinnati Style Cheese Coneys like myself you're going to love this easy recipe, a Crescent-topped casserole ready in only 30 minutes. Got the idea from a Pillsbury food recipe site but it was over 500 calories so it sounded delicious but I had to lighten up so I did. It's an easy recipe to make with the original calling for Chili w/ Beans, Hot Dogs, Shredded American Cheese and Crescent Rolls. I lightened it up by using Hormel Turkey Chili w/ Beans, Ball Park Smoked White Turkey Franks, Kraft 2% Shredded American Cheese, and Pillsbury Reduced Fat Crescent Rolls. Comparing those 4 items from the original recipe to the lightened up recipe there was a calorie savings of 245 calories and 2 carbs. That's the individual count among those ingredients. So this is just one recipe example of the calories and carbs you can cut by using healthier ingredients. I also added in a few dashes of Ground Cinnamon and frank's Hot Sauce. I always try to add Cinnamon, a great natural for controlling diabetes. My lighter recipe version for this follows.

Prep Time: 15 Min
Total Time: 30 Min
Makes: 6

INGREDIENTS:

2 Cans (15 oz each) Hormel Turkey Chili With Beans
1 Teaspoon Ground Cinnamon, (Optional)
3 Dashes Frank's Hot Sauce, (Optional)
8 Ball Park Smoked White Turkey Franks, Sliced
1 1/2 Cups Kraft 2% Shredded Sharp Cheddar Cheese (6 oz)
1 Can (8 oz) Pillsbury Refrigerated Reduced Fat Crescent Dinner Rolls
1 Tablespoon Sesame Seed

DIRECTIONS:

    * In 2-quart saucepan, mix Chili, Cinnamon, Frank's Hot Sauce, and sliced Turkey Franks. Heat to boiling over medium-high heat, stirring occasionally. Spoon chili mixture into ungreased 13x9-inch (3-quart) glass baking dish; sprinkle with cheese.
    * Separate or cut dough into 4 long rectangles (if using crescent rolls, press perforations to seal). Place on top of chili mixture. Sprinkle with sesame seed.
    * Bake at 375°F 15 to 20 minutes.

Had a nice looking Tilapia Fillet rolled in a Bread Crumb and Whole Wheat Flour mixture and seasoned with Sea Salt and Pepper. Fried in a 1/2 tablespoon of Extra Virgin Olive Oil. As sides had Kraft/Velveeta 2% Pasta Shells and Cheese, Green Giant Asparagus Bits, and Dixie Carb Counters Corn Muffins. First time I had tried the Dixie Corn Muffin mix and it won’t be the last! I love bread as you can tell from my previous posts. I hadn’t had a Corn Muffins in quite sometime due to the carbs in them. With Dixie Corn Muffin Mix there is only 138 calories and 8 carbs, 4 net carbs! Plus the taste is on the spot! I’ll be ordering more packages of this soon.
