Jennie – O OVEN READY™ Boneless Turkey Breast w/ Mashed Potatoes and Green Beans
Dinner Tonight: Jennie – O OVEN READY™ Boneless Turkey Breast w/ Mashed Potatoes and Green Beans
The rains have moved back in overnight. Like we need more rain right now, it was just starting to dry
out. For Breakfast this morning I prepared a Egg Beater's Egg White Omelet, 2 toasted slices of Healthy Life Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. As I said the rain had returned overnight and continued on and off throughout the day, back into the 50's also. Did some laundry and cleaning around the house. For Dinner tonight I prepared a Jennie – O OVEN READY™ Boneless Skinless Turkey Breast w/ Mashed Potatoes, Green Beans, and French Bread.

I was going through our big freezer, which I rarely do, and came across a Jennie – O Oven Ready
Boneless Turkey Breast. And I found our Dinner for tonight. It's an easily prepared way to have a moist and fantastic tasting Turkey! Comes in Jennie O turkey Breast Oven Ready Bag, that you bake at 375 degrees for about 2 to 3 hour until it reads 170 degrees. It also now has a pop up inserted in the breast that pops up when done.

The Turkey comes out moist, juicy and delicious, with an excellent flavor! It’s just the right size (2-3 lbs.). Enough leftover for some great Turkey Sandwiches the next day or so.
For another side I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. Then I also heated up a can of Del Monte Cut Green Beans - Reduced Sodium. I also baked a loaf of Pillsbury French Bread. So it was a Thanksgiving Dinner come real early here tonight! After Dinner me and Mom made a big plate of this for Dad and took it over to him at the rehab unit. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

COOKING INSTRUCTIONS
SLOW COOKER:
Place cooking bag with frozen turkey in the bottom of the slow cooker. Add one cup water to the crock pot. Cut three 1/2 inch slits in top of fool proof cooking bag. Cook for approximately 3-1/2 hours with the slow cooker in high setting or 5 on low setting.
CONSUMER OVEN:
Preheat oven to 375°F. Remove frozen turkey from white outer package. Do not remove turkey from cooking bag. Place in a roasting pan with at least 2" high sides.
NOTE:
Do not increase oven temperature. Cooking bag may melt at higher temperatures. Cut three 1/2 inch slits in top of cooking bag. Place pan in oven, allowing room for bag to expand without touching the oven racks or walls. Roast the turkey until a meat thermometer reaches 165°F.
NOTE:
Meat temperature increases rapidly during last hour of cooking. Let turkey rest 10 minutes, cut open top of oven bag. Be cautious of hot steam and juices. Heat gravy as directed on pouch.
APPROXIMATE OVEN ROASTING TIMES:
FROM FROZEN:
1 hour 40 minutes in 375 °F.
FROM THAWED:
1 hour in 375 °F.

Turkey and Ham, w/ all the Trimmings - Happy Thanksgiving!
Dinner Tonight: Turkey and Ham, w/ all the Trimmings
I wish you all a "Happy Thanksgiving" today! To start my morning off I fried a couple of Jennie - O Turkey Breakfast Sausage Links, Scrambled some Egg Beater's Egg Whites, toasted a Healthy Life Whole Grain English Muffin, and my morning cup of Bigelow Decaf Green Tea. It's a cloudy Thanksgiving Day around here but had a high in the 50's. Spent most of the morning prepping dishes to prepare for our Thanksgiving Day Feast. For Dinner we are having Turkey and Ham with all the trimmings.
For the Turkey we are using a Jennie - O Oven Ready Boneless Turkey Breast. I'm saving the 13 lb. Turkey Jennie - O recently sent me for Christmas. With just Mom and Dad and myself the smaller Turkey Breast will be plenty along with a Ham we purchased. For side Dishes we'll be having; Del Monte Cut Green Beans, Green Giant Mini Ears of Sweet Corn, homemade Dressing, my Mom's World Famous Deviled Eggs, and I baked some Rolls for Mom and Dad. Along with the Turkey Breast I purchased a small Cumberland Gap Semi Boneless Ham.
As I said we are using the Jennie – O Oven Ready Skinless Boneless Turkey Breast. Such an easy way to have a moist and fantastic tasting Turkey, along with very little clean-up! Comes in a Jennie O Turkey Breast Oven Ready Bag, that you bake at 375 degrees for about 2 to 3 hour until it reads 165 degrees. It also now has a pop up inserted in the breast that pops up when done. The Turkey comes out moist, juicy and delicious, and browns up beautifully! Cooking for just myself and my parents, it’s just the right size (2-3 lbs.). Enough leftover for some great Turkey Leftover Recipes that I can't wait to try!
We baked the Cumberland Gap Ham last night so it was ready to go. Mom made the Deviled Eggs and Dressing and I made the rest of the side dishes and baked the Rolls. Everything turned out so good and the aromas coming from the kitchen was just incredible! Excellent Thanksgiving Day Dinner!
Mom also baked a Pumpkin Pie and my favorite an Apple Pie! The Apple Pie is made using Splenda. So my for my Dessert later tonight I'm having a slice of Apple Pie! Enjoy and Happy Thanksgiving everyone!

Thanksgiving Dinner!
Dinner Tonight: Thanksgiving Day Dinner!
First a Happy Thanksgiving to everyone! It's been a mostly cloudy day around here, high in the 60's. The finger I had surgery on is looking good, go next week to have the stitches removed. Not a lot going on today. It was just me, Mom, and Dad for Thanksgiving Dinner with others stopping by later in the day and evening. Spent the day as Mom's souse chef, she wanted to make dinner. For dinner tonight it's Thanksgiving Dinner!
We got the Jennie - O OVEN READY™ Whole Turkey out of the freezer and into the oven today! Jennie - O sent me this 13 lb. Bird about a month ago and we've been waiting to break it out! Jennie sends me one every year for being a member of their Switch Club, so a big thank you again to Jennie - O Turkey!
It couldn't be any easier to prepare the Turkey. It goes straight from the freezer into the oven. It
comes in a Oven Ready Bag. Preheat the oven on 375°F. Just remove it from the outer package , but leaving it in the cooking bag. Make a few of slits in the bag, place in the roasting pan, and your set. Then roast the Turkey until a meat thermometer reaches 165°F. in the breast and 180°F. in the thigh, about 4 hours. Let it rest out of the oven for 15 minutes and then let the feast begin! The Turkey, as always, came out mouth-watering delicious! Fantastic flavor, fresh tasting, and it browns up perfectly in the heating bag. So thank you again to Jennie - O for our free Turkey! Below is the rest of our Thanksgiving Menu, my Mom went over board again but she loves making Thanksgiving dinner. I kept an eye on the Bird and helped and Mom out. Enjoy everyone!

Cooking Instructions:
OVEN ROASTING:
* Preheat oven to 375°F.
* Remove frozen turkey from outer package.
* Do not remove turkey from cooking bag.
* Place in a roasting pan with at least 2-inch high sides.
* Note – Do not increase oven temperature, cooking bag may melt at higher temperatures.
* Cut six 1/2-inch slits in top of cooking bag.
* Pull bag up and away from turkey.
* Place pan in oven, allowing room for bag to expand without touching the oven racks or walls.
* Roast turkey until a meat thermometer reaches 165°F. in the breast and 180°F. in the thigh.
Note – Meat temperature increases rapidly during last hour of cooking.
* Let turkey rest 15 minutes, cut open top of oven bag.
* Be cautious of hot steam and juices.
* Prepare gravy as directed on pouch.

Baked Glazed Ham w/ Mashed Potatoes, Green Beans,Maple Bacon Pecan Roasted Butternut Squash, and Baked Crescent Rolls
Easter Dinner: Baked Glazed Ham w/ Mashed Potatoes, Green Beans,Maple Bacon Pecan Roasted Butternut Squash, and Baked Crescent Rolls
Happy Easter to everyone! And what a beautiful Easter Day outside. It started out in the 30's but we ended with a high in the 60's and sunny all day! I wanted to make Mom and Dad a special Easter Dinner, and I think it turned out really well! I prepared a Baked Glazed Ham w/ Mashed Potatoes, Green Beans,Maple Bacon Pecan Roasted Butternut Squash, and Baked Crescent Rolls
I used a Cumberland Gap Semi-Boneless Ham, I purchased it at Kroger the other day. I used the
Cumberland Gap Hams once before but it's been a few years back. Very easy to prepare; start by preheating the oven to 325 Degrees. I scored the Ham 1/4 inch with sharp knife and then placed several Pineapple Slices across the Ham. Placed the Ham in baking dish and lightly covered with foil. As it started to bake Mom made her Ham Brown Sugar Glaze, using Splenda Brown Sugar. We baked, per the instructions at 10-15 minutes per pound. In the last 1/2 hour of baking I removed the foil to add the Glaze. Continued to bake until we had an internal temperature of 150 Degrees Fahrenheit. What a Ham! Absolutely delicious, so moist and flavorful! We have plenty leftover to make some Ham Sandwiches and for some Ham and Eggs for Breakfast.
I'm always happy with just a side or two, but Mom and Dad love side dishes! So for one side I made some Maple Bacon Pecan Roasted Butternut Squash. I made this one other time and the whole family loved it. So it seemed like a perfect time to make it again, pairs perfectly with Ham. To make it I’ll need; 6 pieces of Jennie – O Turkey Bacon, 5 cups peeled and cubed Butternut Squash, 1 cup Pecans, roughly chopped, ¼ cup Maple Grove Farms Sugar Free Maple Syrup, 2-3 tablespoons Bacon Fat (rendered from cooking bacon), ½ teaspoon Ground Cinnamon, 1/2 teaspoon Ground Nutmeg, and ¼ teaspoon Sea Salt. I used Turkey Bacon instead of the regular Bacon, Sugar Free Maple Syrup, and added the dash of Nutmeg. Which varies from the other recipes I found, I always try to cut calories and carbs from all recipes.
To prepare it I preheated oven to 350 degrees. Placed the Jennie – O Turkey strips of bacon on a foil lined baking sheet. Cooked the bacon for 20 minutes. The bacon should still be slightly soft (not crispy) when you pull it out of the oven. Removed from baking sheet to cool on a paper towel lined plate. Chopped the bacon into small pieces once cooled and placed what little there was of the rendered bacon fat in a large bowl to use later. Before cutting and dicing the Squash, make sure you have a thick bladed and sharp knife. Add the cubed butternut squash, pecans, maple syrup, cinnamon, nutmeg, and salt to the large bowl with the bacon fat. Mix together to coat the squash well. Add pieces of bacon to the mixture and mix well. Add mixture to a 9×11 glass baking dish. Increased the oven temperature to 400 degrees. Placed the dish in the oven to bake for 35-40 minutes (depending on size of cubed butternut squash) or until squash is soft. It takes a little time and effort to prepare but well worth it! The Squash combined with everything is flat-out delicious! The Turkey Bacon, Pecans, and the Syrup combine to make this dish the “Bomb”. A definite keeper recipe. A perfect dish for the Holidays or any Special Dinner.
Then for the other sides I heated up some of our favorite Mashed Potatoes, Bob Evan's Mashed Potatoes. Microwave a total of 6 minutes and serve. Then I grabbed a Mason Jar of our Canned Green Beans, what's a Holiday Meal without Green Beans! Our last batch of the Canned Green Beans has been one of our better batches, and still have plenty left. Then I also baked a can of Pillsbury Reduced Fat Crescent Rolls. Wow quite an Easter Dinner. Mom and Dad loved it and that what counts! Hope everyone has a had a great Easter! For dessert later a Jello Black Cherry Sugar Free Jello.

If desired, score ham 1/4 inch - with sharp knife and insert cloves or your favorite spice
Place ham in baking dish and lightly cover with foil
Preheat oven 325 Degrees
Bake at 325 Degrees 10-15 minutes per pound
Remove foil last half-hour to glaze or garnish.
Internal temperature should reach 150 Degrees Fahrenheit

¼ cup Maple Grove Farms Sugar Free Maple Syrup
2-3 tablespoons Bacon Fat (rendered from cooking bacon)
½ teaspoon Ground Cinnamon
1/2 teaspoon Ground Nutmeg
¼ teaspoon Sea Salt
Instructions:
Preheat oven to 350 degrees
Place strips of bacon on a foil lined baking sheet
Cook bacon for 20 minutes. Bacon should still be slightly soft (not crispy) when you pull it out of the oven. Remove from baking sheet to cool on a paper towel lined plate. Chop bacon into small pieces once cooled. Place the rendered bacon fat in a large bowl.
Add the cubed butternut squash, pecans, maple syrup, cinnamon and salt to the large bowl with the bacon fat.
Mix together to coat the squash well. Add pieces of bacon to the mixture and mix well.
Add mixture to a 9×11 glass baking dish.
Increase oven temperature to 400 degrees.

Peach Pork Tenderloin w/ Mashed Potatoes and Asparagus Tips
Dinner Tonight: Peach Pork Tenderloin w/ Mashed Potatoes and Asparagus Tips
Down right cold around here! In the 20's early and then in the 30's but with one cold wind. Cloudy all day so it was a good day to stay in and be a couch potato. After a delicious Breakfast and a light Lunch it was time for dinner! I made what I had planned on making yesterday, until I was distracted by a beautiful Whole Roaster Chicken, a Peach Pork Tenderloin. Dinner tonight; Peach Pork Tenderloin w/ Mashed Potatoes and Asparagus Tips.
I came across the The Peach Pork Tenderloin recipe in an issue of Diabetes Forecast Magazine. I love Pork Tenderloin recipes and this one was no exception. A great spice seasoning mix of - 2 tsp. Ground Cumin, 1 tsp. Dried Thyme Leaves, 1 tsp. Dried Sage, 1 tsp. Ground Cinnamon, 1/4 tsp. Sea Salt, and 1/4 tsp. Ground Black Pepper. Then what really set taste buds going, 1/2 cup No Sugar Added Peach Preserves! What a great glaze this provided with for the Pork. It provided just the right amount of flavor, nothing over powering. This is one fantastic Pork Tenderloin dish, a keeper recipe! The Pork came out with that nice Peach Glaze and was moist and flavorful on the inside. Just season, baste, and bake (on 450 degrees). Bake for about 25 - 30 minutes or until the Pork reached 160 degrees by a meat thermometer in the thickest part of the Tenderloin. Easy to prepare, very little clean-up, and a delicious Pork Tenderloin with an incredible flavor.
For a side to go with the Pork I heated up my favorite Mashed Potatoes, Bob Evan's Mashed Potatoes. Just microwave for a total of 6 minutes, and done. I also heated up a can of Del Monte Asparagus Cuts and Tips. Very good for canned Asparagus. I also had a slice of Klosterman Wheat Bread. For dessert later a Jello Sugarless Chocolate Pudding.

Wow, another hot and humid day around here. They say this coming week it will be worse, thank goodness for air conditioning! It's the first few days of Summer and we have a thief in the neighborhood. Their not taking anything of much value but it's just the point of it! They got a small chase chair and a yard item from us last night. I was sent an email the Neighborhood Watch was going to expand so hopefully that will put a stop to it. For dinner Mom wanted Turkey ans as we all know "What Mom wants Mom gets". I roasted a Turkey Breast along with Stuffing, Mashed Potatoes, Cut Green Beans, and Baked French Bread.
I used a Jennie - O Oven Ready Skinless Boneless Turkey Breast. I love using the Jennie – O Oven Ready Boneless Skinless Turkey Breast. It’s an easy and delicious way to get your Turkey on! Comes in Jennie O turkey Breast Oven Ready Bag that you bake at 375 degrees for about 2 to 3 hour until it reads 170 degrees. It also now has a pop up inserted in the breast that pops up when done. The Turkey came out juicy and delicious, excellent flavor!
For side dishes I prepared a box of Stove Top Stuffing, for my parents I'm not a Stuffing fan. I also prepared some Bob Evans Mashed Potatoes, Heinz Mushroom Brown Gravy, Del Monte Low Sodium Cut Green Beans, and Baked a Loaf of Pillsbury Rustic French Bread. It was a very early Thanksgiving Dinner here today! For dessert later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.

French Bread
Wow, another hot and humid day around here. They say this coming week it will be worse, thank goodness for air conditioning! It's the first few days of Summer and we have a thief in the neighborhood. Their not taking anything of much value but it's just the point of it! They got a small chase chair and a yard item from us last night. I was sent an email the Neighborhood Watch was going to expand so hopefully that will put a stop to it. For dinner Mom wanted Turkey ans as we all know "What Mom wants Mom gets". I roasted a Turkey Breast along with Stuffing, Mashed Potatoes, Cut Green Beans, and Baked French Bread.
I used a Jennie - O Oven Ready Skinless Boneless Turkey Breast. I love using the Jennie – O Oven Ready Boneless Skinless Turkey Breast. It’s an easy and delicious way to get your Turkey on! Comes in Jennie O turkey Breast Oven Ready Bag that you bake at 375 degrees for about 2 to 3 hour until it reads 170 degrees. It also now has a pop up inserted in the breast that pops up when done. The Turkey came out juicy and delicious, excellent flavor!
For side dishes I prepared a box of Stove Top Stuffing, for my parents I'm not a Stuffing fan. I also prepared some Bob Evans Mashed Potatoes, Heinz Mushroom Brown Gravy, Del Monte Low Sodium Cut Green Beans, and Baked a Loaf of Pillsbury Rustic French Bread. It was a very early Thanksgiving Dinner here today! For dessert later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.

Pork Cube Steak w/ Mashed Potatoes, White Gravy, and Sugar Snap Peas
Dinner Tonight: Pork Cube Steak w/ Mashed Potatoes, White Gravy, and Sugar Snap Peas
I spent the morning doing some price comparing at Walmart and Kroger, you can read about that in an earlier post from today. What a beautiful morning it was this morning. I went out, about 6:30 am, and got the 2 Sunday Papers and it was a perfect morning out. Birds singing, Sunny and about 68 degrees. The sky in the east looked like a rainbow. I prepared something for dinner that I've never had a Pork Cube Steak, purchased at Walmart. I had a Beef Cube Steak before but never a Pork. For dinner I prepared a Pork Cube Steak w/ Mashed Potatoes, White Gravy, and Sugar Snap Peas.
To prepare the Pork Cube Steak I seasoned it with Sea Salt and Ground Black Pepper. I then rolled them Panko Bread Crumbs. A fantastic trio to bread most any meat. I seasoned the Flour with Sea Salt and Ground Black Pepper, added a few shakes or more of Frank's Hot Sauce to the Egg Beater's, and Garlic Powder to the Panko Bread Crumbs. After breading I pan fried them in Canola Oil to a Golden Brown, about 7 minutes per side. As I said it was the first time I tried them and really liked them better than the Beef Cube Steaks, a lot more tender. I'll be using them again!

Sort of a long day, I had some routine blood work done a couple of days ago while at a checkup with my Meds I'm taking. But when I hear of something off or not normal it always brings back some real bad memories. Staying positive, go back to the Doc on Wednesday. Then on top of that I got a letter stating that my Anthem Medicare Supplement insurance was going up $12.02 a month. Plus because I'm not 65 no other options are available so I'm at their mercy, pay it or don't have any. I've had better days! on a more positive note, for dinner I prepared a Pork Loin Boneless Roast w/ Green Beans and Mashed Potatoes.
new family doctor and I was told today that the blood work came back showing an elevated Liver count. Which is more than likely being caused by the Cholesterol
I purchased the Roast from Kroger yesterday, a Pork Loin Boneless Roast with a JB's Fat Boy Premium Rub already on it. To prepare it I laid the Roast out for about 20 minutes to get it to room temperature. I placed the roast in a shallow pan and roast in a 350 degrees F. oven for 1 hour (about 20 minutes per pound), until internal temperature on a thermometer reads 145 degrees F. Removed it from oven; let rest about 10 minutes before slicing to served. It will serve about 6-7, with leftovers! The Roast came out moist and delicious, the JB's Fat Boy Rub gave it a great flavor. The juice and drippings from the Roast were incredible! I also had a side of the JB's Fat Boy Haugwaush Sauce on the side for dipping but used very little because I kept readding the juices and drippings to the Roast and it needed no other flavor or seasoning.
I made a couple of sides to go with the Pork Roast, Mashed Potatoes, Brown Mushroom Gravy, and Cut Green Beans. The Mashed Potatoes were my favorite, Bob Evans Mashed Potatoes. The Gravy was Heinz Brown Mushroom Gravy and the Beans were Del Monte Less Sodium Cut Green Beans. A hearty and delicious dinner to end sort of a bad day. For dessert later a Skinny Cow Ice Cream Fudge Bar.

With my Mom spending almost most of her time at the rehab center I spent the day catching up on all the
housework and laundry today. Outside another cloudy and rainy day! For dinner a Pulled Buffalo Sandwich w/ Mashed Potatoes and Green Beans.
The Pulled Buffalo was from Wild Idea Buffalo, of course. It was from my last order that I had ordered from them. First time I tried it and it was incredible! So delicious in fact that I as soon I update my Blog here I'm going to order 2 more 1 lb. packages. Originally I was going to make BBQ Sandwiches out of it but as I was heating it up I sampled it and I knew right away this didn't need anything else added to it, it was perfect! It comes in 1 lb. packages already braised and seasoned. According to the package ingredients list it was braised and seasoned with Organic Apple Cider, Organic Lime Juice, Organic Onion Powder, Organic Cumin, Sea Salt, Organic Black Pepper, Organic Chili Powder, Organic Oregano, and Organic Cayenne Pepper. It all comes together to make one delicious meal! As I said earlier I was going to add BBQ Sauce but none is needed here, maybe some other time as it would make a fantastic BBQ. I served it on a Aunt Millie's Light Whole Grain Bun.
To go with the Sandwich I made sides of Mashed Potatoes and Cut Green Beans. The Mashed Potatoes were Bob Evans Mashed Potatoes and were leftover from last night's meal. The Green Beans were Del Monte Cut Green Beans in a single serve can, just heat and serve. For dessert later a Skinny Cow Fudge Ice Cream Bar.

Grilled Buffalo Terres Major Filet w/ Teriyaki Marinated Mushrooms, Mashed Potatoes,...
Spent the afternoon at the rehab center visiting my Dad. He goes in for a minor surgery Tuesday morning Terres Major Filet w/ Teriyaki Marinated Mushrooms, Mashed Potatoes, Sugar Snap Peas, and Baked Garlic Knot Rolls.and then hopefully about another week in rehab and he'll be home again. For dinner today I had a Grilled Buffalo
I had ordered some Wild Idea Ground Buffalo, Buffalo top Sirloin Steaks, and a couple Buffalo 8 oz. Terres Major Fillets. I had never tried the Terres Major cut but was told it was one of the most tender cuts of meat. I had wanting to try it but it was always sold out on Wild Idea Buffalo web site up until last week when I placed my order, and I see now it's sold out again! That's got to be a good sign for some good Buffalo Steak. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn and I then fired up the outdoor grill and grilled it. It wasn't a real thick cut so I had to a close eye on it, so not to let it burn. Buffalo or Bison cooks very quickly because it's so lean. I grilled it about 3 1/2 minutes per side and then let it sit for 5 minutes before slicing it. It came out a perfect juicy medium rare. I now know why its always sold out! As all the Wild Idea Buffalo cuts it had an incredible flavor, a wild and almost sweet flavor. Tender, so tender that it almost shreds when I cut it! Sorry Beef your not a close second to Buffalo!
To go with that juicy steak I had purchased some Teriyaki Marinated Mushrooms from Kroger Deli yesterday. Also I made a side of the Bob Evans Mashed Potatoes, heated up some Walmart Marketside Sugar Snap Peas, and baked a couple of rolls of Walmart Bakery Savory Garlic Knot Rolls. For dessert/snack later tonight a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Dinner Tonight: Breaded Pork Chops w/ Mashed Potatoes and Pork Gravy, Green Beans, and Whole Grain Bread
Flowers are coming up and the buds on the trees are coming out. We've been getting a good mix of sun and
rain showers and it shows outside as everything is getting Spring like! For dinner tonight I prepared Breaded Pork Chops w/ Mashed Potatoes and Pork Gravy, Green Beans, and Whole Grain Bread.
The Breaded Pork Chops came from an issue of Taste of Home/ Simple and Delicious. I love the Taste of Home various magazines. Their always full of great ideas and recipes. To make the Breaded Chops I’ll need 1/4 cup Egg Beater‘s, 1/4 cup 2% milk, 1/2 cup crushed low fat saltines crackers, 2 boneless pork loin chops (1-inch thick and 4 ounces each), and 1 tablespoon Canola Oil. Then to prepare them is quite easy; in a shallow bowl, combine Egg Beater’s and milk. Place cracker crumbs in another shallow bowl. Dip each pork chop in egg mixture, then coat with cracker crumbs, patting to make a thick coating. In a large skillet, cook chops in oil for 4-5 minutes on each side or until a thermometer reads 145°. Let meat stand for 5 minutes before serving. The Chops came out moist and delicious and the saltines made a great crust for the Chops. I’ve left the original recipe, which makes 6 Chops, and the link to the Taste of Home website at the end of the post.
To go with the Chops I prepared some Bob Evans Mashed Potatoes, Just heat in the microwave for a total of 6 minutes and you have some of the best Mashed Potatoes there are. Served it with Heinz Brown Pork Gravy. I also heated up a can of Del Monte Low Sodium Cut Green Beans and had a couple of slices of Healthy Life Whole Grain Bread. For dessert later a Jello Sugarless Double Chocolate pudding.
Breaded Pork Chops Recipe
Ingredients
1 egg, lightly beaten
1/2 cup 2% milk
1-1/2 cups crushed saltine crackers
6 boneless pork loin chops (1-inch thick and 4 ounces each)
1/4 cup canola oil
Directions
In a shallow bowl, combine egg and milk. Place cracker crumbs in another shallow bowl. Dip each pork chop in egg mixture, then coat with cracker crumbs, patting to make a thick coating.
In a large skillet, cook chops in oil for 4-5 minutes on each side or until a thermometer reads 145°. Let meat stand for 5 minutes before serving. Yield: 6 servings.

Country Fried Veal Cubed Steak w/ Mashed Potatoes, Green Beans, and Garlic Knot Bread
Dinner Tonight: Country Fried Veal Cubed Steak w/ Mashed Potatoes, Green Beans, and Garlic Knot Bread
The Groundhog lied! He said an early Spring. If you step outside today you can tell it's not Spring, the wind is bone - chilling! From what they are predicting it's going to be this way all week. The first day of Spring is Wednesday so we'll wait and see. For dinner I had a nice size Veal Cubed Steak in the freezer that I let thaw overnight in the fridge. So for dinner I prepared Country Fried Veal Cubed Steak w/ Mashed Potatoes, Green Beans, and Garlic Knot Bread. I also made a bit of Brown Gravy out of the Veal drippings.
To make the Counry Fried Veal Cubed Steak I needed the following; Veal Cubed Steak, Sea Salt, freshly Ground Black Pepper, 1/2 cup All-Purpose Flour, 1 whole egg, beaten or 1/4 Cup Egg Beater's, Vegetable Oil or Extra Virgin Olive Oil, 1 cup Low Sodium Beef Broth, 1/4 cup 2% Milk, and 1/2 teaspoon Dried Thyme leaves. Season the piece of veal on both sides with the salt and pepper. Place the flour into a pie pan. Place the egg into a separate pie pan. Dredge the meat on both sides in the Flour. Then follow by the egg and finally in the flour again. Place the meat onto a plate and allow it to sit for 10 to 15 minutes before cooking. Place enough of the oil to cover the bottom of a 12-inch slope-sided skillet and set over medium-high heat. Once the oil begins to shimmer, add the veal. Cook each piece on both sides until golden brown, approximately 4 to 6 minutes per side. Remove the steaks to a plate and cover tightly with foil. Set aside.
Remove all but one tablespoon of oil from the pan you cooked the veal in--don't clean the pan because you want all those brown bits. Whisk in one heaping tablespoon of the flour left over from the dredging. Add the beef broth and deglaze the pan. Whisk until the gravy comes to a boil and begins to thicken, about 3 minutes. Add the milk and thyme and whisk until the gravy coats the back of a spoon, approximately 5 to 10 minutes. Season to taste, but you probably wont need it. Serve the gravy over the steak. This came out too good! The Veal with Seasoning and Flour Crust is perfect. Along with the Gravy topping, too good! I left the recipe at the end of the post, the recipe is for 2 Veal Cubed Steaks.
For sides to go with the Veal I prepare Mashed Potatoes, Green Beans, and Baked Garlic Knot Bread. the Mashed Potatoes were Bob Evan's Brand, just heat in the microwave and their ready. I used Del Monte Cut green Beans (Single Serving Can). For this just heat in a small sauce pan until heated. The Garlic Knot Bread was from the Walmart Bakery, just heat on 425 degrees for about 6 minutes and done. For dessert later tonight a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.
Veal Country Fried Steak
INGREDIENTS (makes 2 steaks)
2 Veal Cubed Steaks (the grocery store sells them ready-cubed for you)
Sea Salt
freshly Ground Black Pepper
1 cup All-Purpose Flour
1 whole egg, beaten or 1/4 Cup Egg Beater's
Vegetable Oil or Extra Virgin Olive Oil
1 cups Low Sodium Beef Broth
1/4 cup 2% Milk
1/2 teaspoon Dried Thyme leaves

Dinner Tonight: Baked Glazed Pork Chop in Apple Cider Honey Mustard Sauce w/ Cayenne and White Cheddar Mashed Potatoes and Sugar Snap Peas
An extra tasty dinner tonight, Baked and Glazed Pork Chop in Apple Cider Honey Mustard Sauce w/ Cayenne and White Cheddar Mashed Potatoes and Sugar Snap Peas. I was at Jungle Jim's Market last week and came across the JB's Fatboy Apple Cider Honey Mustard Sauce. First time I've ever seen this Sauce from JB's Fat Boy and it looked too good to pass up. Apple Cider Honey Mustard Sauce, it just sounds like it was meant for Pork!
First I preheated the oven to 400 degrees. I then rolled my Chops in flour that was seasoned with Sea Salt and Black Pepper. I placed the Chops in a small broiler pan with a wire rack and baked until the temperature of the Chops reached 165 degrees. I turned the Chops over after 15 minutes of baking and with a small basting brush basted on the Apple Cider Honey Mustard Sauce. Continued baking until done. The Chops came out moist and full of great flavor. The Apple Cider Honey Mustard Sauce is a perfect Glaze or Dipping Sauce for Pork! Love this Sauce like the rest of the JB's Fat Boy sauces. The Apple Cider Honey Mustard Sauce is a great combo, you can taste the Mustard and the Apple Cider and then there's a sneaky hint of heat to it. Great Sauce! I think it would go well for Chicken also, I'll find out soon.
For sides to go with my pork Chops i prepared Cayenne and White Cheddar Mashed Potatoes, Sugar Snap Peas, and Aunt Millie's Light Whole Grain Bread. First time making the Cayenne and White Cheddar Mashed Potatoes. The recipe came from the Simply Potatoes web site but I'm not really a fan of their Mashed Potatoes, love their other Potato products, so I used Bob Evans "Down on the Farm" Mashed Potatoes. I microwaved the Mashed Potatoes for a total of 5 minutes and when done added a 1/ teaspoon of Cayenne Pepper and 1/2 cup of freshly shredded Murray's Light White Cheddar. Stirred until well mixed and served. I love Potatoes and this Potato recipe is fantastic!! The Cayenne and white Cheddar really lights the Mashed Potatoes up! You have to give this one a try. I left the original recipe and web link at the end of the post. I also had Walmart Marketside Sugar Snap Peas and Whole Grain Bread. For dessert later some Breyers Carb Smart Vanilla Ice Cream topped with Smucker's Sugarless Hot Fudge Topping.

Cayenne and White Cheddar Mashed Potatoes
Cheesy, peppery mashed potatoes pair well with roasted chicken for a great weeknight meal. An easy 5-minute mashed potato recipe.
1 package (24 ounces) Simply Potatoes® Traditional Mashed Potatoes
1/2 cup Crystal Farms® Wisconsin White Sharp Cheddar Cheese, shredded
1/4 teaspoon cayenne pepper
1. Peel film at corner of Simply Potatoes package to vent and heat on high for 3 minutes in microwave.
2. Completely remove film and stir.
3. Microwave on high for 1 additional minute.

Chicken Fried Veal w/ Peppered White Gravy, Mashed Potatoes,...
Dinner Tonight: Chicken Fried Steak w/ White Peppered Gravy, Mashed Potatoes, Sugar Snap Peas, and Biscuits
I wanted a tasty down home meal for dinner and this is what I prepared, Chicken Fried Steak w/ White Peppered Gravy, Mashed Potatoes, Sugar Snap Peas, and Biscuits. I used a Kroger's Private Selection Cubed Veal Steak. To prepare it I used the 3 bowl method. I first seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then rolled it in flour (1), shaking off the excess, and then rolled the Veal in Egg Beater's with added Paprika (2) and finally rolling it in a Italian Style Bread Crumb and Parmesan Cheese mix (3). I then pan fried it in Extra Virgin Olive Oil, turning once making sure both sides were a golden brown. Golden brown is what it was and with the combination of all the seasonings and coatings it turned out delicious! Veal at times can be a bit tough but this was fork tender. I topped it with White Gravy. I used Pioneer Brand White Peppered Gravy. I love this Gravy! It's easily prepared and is a thick and well seasoned Gravy.
For side dishes I had Bob Evan's Mashed Potatoes topped with the White Peppered Gravy. Bob Evan's Mashed Potatoes are as good home made Mashed Potatoes and a lot easier and quicker to make. I also warmed up the Sugar Snap Peas that were leftover from the other night along with a small can of Pillsbury Grand JR's Biscuits.The leftover Veal, Gravy and Biscuits will make a great Breakfast in the morning! For dessert a slice of the Pillsbury Nut Quick Bread with a scoop of Breyer's Carb Smart Ice Cream.

Today's Menu: Roast Beef BBQ Sandwich w/ Loaded Mashed Potato Casserole
Lot of rain in the area today and in fact for the next 3 days their saying. Wanted to come up with something new for dinner so Ilooked at some older recipes and scanned the internet and ended up deciding on Roast Beef BBQ Sandwich w/ Loaded Mashed Potato Casserole.
I used Hormel Slow Simmered Beef Roast Au Jus. It comes in a microwavable container. Just heat on high for 5 minutes and it's ready! It's very tender and delicious. I shredded it with a fork and added JB's Fat Boy Haugwaush BBQ Sauce to it. Great combo to make a BBQ Roast Beef with! The Beef is juicy & tender and the BBQ Sauce fills it with flavor. I served it on a Healthy Life Whole Grain Bun.
For a side dish I prepared a Loaded Mashed Potato Casseroles. First time that I made these and won't be the last! These turned out too good! I used Bob Evan's Mashed Potatoes for the Potatoes. It's loaded with Reduced Fat Philly Cream Cheese, Black Peppercorn, 2% Sharp Cheddar, Shredded Smoked Dutch Gouda Cheese, Turkey Bacon and Chives. All mixed together and baked and it comes out one delicious Potato dish! I left the full directions below. The directions will make 8 casseroles (ramekins). I made a 1/4 of the recipe that made 2 of them. These make a great Potato Dish, Mashed Potatoes with a kick! For dessert later a Blue Bunny Chocolate/Vanilla Swirl Frozen Yogurt Bar.
Loaded Mashed Potato Casserole
Ingredients:
2 Bags (24 oz. each) refrigerated Mashed Potatoes
1 Package (8oz.) Philadelphia Fat Reduced Cream Cheese
1/2 Teaspoon fresh Ground Pepper
2 Cups Kraft 2% Shredded Sharp Cheddar Cheese
1/2 Cup Shredded Smoked Dutch Gouda Cheese (Reserve a bit to top off Casseroles)
10 Slices Turkey Bacon, Crisply cooked and crumbled (Reserve a bit to top off Casseroles)
1/2 Cup Chopped fresh Chives
Directions:
1) Heat oven to 375. Spray 8 (6 oz.) individual baking dishes (Ramekins) with cooking spray. Place dishes on a cookie sheet.
2) Cook Potatoes in microwave as directed on bag. In large bowl, mix potatoes, cream cheese, and Pepper. Spoon about 1/2 cup Potato mixture into each baking dish. Sprinkle each with about 2 tablespoons Cheese, about 1 tablespoon Bacon, and 1 1/2 teasooons Chives. Repeat layers of Potatoes, Cheese, and Bacon
3) Bake uncovered 20 minutes or until thoroughly heated and Cheese is melted. Sprinkle casseroles evenly with remaining Chives, Bacon, and Gouda cheese. Let stand 5 minutes before serving.

Boneless Chicken Roast w/ Long Grain Rice and Mushrooms, Mashed Potatoes, Green Beans...
Dinner Tonight: Boneless Chicken Roast w/ Long Grain Rice and Mushrooms, Mashed Potatoes, Green Beans, and Whole Grain Bread
Came across a new Perdue Chicken item while at Kroger early this morning, Perdue Boneless Chicken Roast. I'm all about easy delicious food and this one's a winner! It comes in it's own cooking bag. Preheat your oven at 400 degrees and roast the Chicken for 45 - 60 minutes or until the temperature reaches 170 degrees. The Chicken came out delicious, moist and full of flavor! Plus it can't get much easier to prepare and to clean up afterwards. I left the product info along with the full instructions at the end of the post.
For side dishes I prepared Long Grain Rice and Mushrooms. I used uncle Ben's Long Grain and Wild Rice and added Sliced Portabella Mushrooms. As the Rice was heating up I sauteed the Mushrooms about 3 minutes, till their not quite done. When the Rice was ready I added the Mushrooms stirring them in, the heat of the Rice will finish the Mushrooms. I also prepared Bob Evans Homestyle Mashed Potatoes. Another easy and delicious one. It comes in a microwavable bowl. Just microwave for 6 minutes, stirring after 3 minutes. These are as good as any homemade Mashed Potatoes. I also warmed up a large can of Del Monte Cut Green Beans. I normally don't prepare 3 sides but I wanted to give my parents a good variety of side dish choices. We also had Healthy Life Whole Grain Bread. For dessert a slice of Pillsbury Nut Quick Bread topped with a scoop of Breyer's Carb Smart Vanilla Ice Cream. I had the Nut Bread frozen in a mini loaf pan.
PERDUE® OVEN READY Boneless Chicken Roast (1.75 lbs.)
Our OVEN READY Cook-in-the-Bag products are pre-seasoned, so no preparation is necessary. Fully sealed in its own cooking bag for easy clean-up – just open, cook and serve.
Directions:
1) Preheat oven to 400 degrees. Cut open outer bag and remove Oven Ready Boneless Chicken Roast, sealed in cooking bag. Place in a shallow roasting pan or baking dish, seasoned side up.
2) Cut a 1" slit in cooking bag over roast to vent during cooking. NOTE: Cooking bag will expand during cooking; allow enough room for the bag to expand without touching oven rack or walls.
3) Place pan or baking dish with Boneless Chicken Roast (still in cooking bag) on lower shelf of oven and roast for 45 - 55 minutes until a meat thermometer registers an internal temperature of 1470 degrees in the roast.
4) Remove from oven and let stand for 10 minutes. Cut open cooking bag (use care to avoid hot steam and juices) and transfer Boneless Chicken Roast to serving plate or cutting board. Remove string from roast before carving. Remaining juices in bag can be used for a delicious seasoned gravy.

Today's Menu: Grilled Pork Chop w/ Cinnamon Apples, Yellow Carrots & Sugar Snow Peas, and Mashed Potatoes
Tried one of the Pork Loin Chops I purchased at Costco the other day. So now I know along with the tender Top Sirloin Steak they have they also have some mighty tender and delicious Pork Loin Chops! The Chops grilled up beautifully. I rubbed a light coating of Extra Virgin Olive Oil and seasoned them with McCormick Grinder Sea Salt and Black Peppercorn. I grilled them 4 1/2 minutes per side. As I said earlier they came out moist and tender and love those grill marks! I topped the Chops with a tablespoon of the Counry Crock Cinnamon Apples leftover from the other night.
For sides it was leftover Heaven! I warmed up all the leftovers from the past day or so; Country Crock Cinnamon Apples Sugar Snow Peas, Yellow Carrots, and Bob Evans Mashed Potatoes. Great variety and all were just as good as the first time around. For dessert later a Jello Sugar Free Chocolate Pudding topped with Coll Whip Free.

Today's Menu: Shredded Turkey BBQ w/ Seasoned Blackeye Peas, Mashed Potatoes, and Whole Grain Bread
September is starting out beautiful outside! The weekend is going to sunny and the highs in the low 70's, I love it! For dinner I prepared Shredded Turkey BBQ w/ Seasoned Blackeye Peas, Mashed Potatoes, and sliced Whole Grain Bread. I used Jennie - O Slow Roasted Turkey Pot Roast. Easy to fix, you can microwave it in its own container or bake it at 375 degrees for 1 hour which was the way I prepared it. After I hour I removed it from the oven and the aroma was fantastic! I pulled the bone out of the meat and then using two forks shredded the meat. When preparing this before I would combine it with brown gravey and make it as a Pot Roast. This time I just shredded the Turkey and added JB's Fat Boy Sticky Stuff BBQ Sauce. I served it on a Healthy Life Whole Grain Bun. This makes one delicious sandwich! The Turkey is so tender it melts in your mouth and combined with BBQ Sauce it makes a fantastic combo.
For sides i prepared a can of Margaret Holmes Seasoned Black Peas, Bob Evans mashed Potatoes, and sliced Healthy Life Whole Grain Bread. What a meal! Everyone enjoyed it. For dessert later a bowl of Blue Bunny Naturally Frozen Chocolate/Vanilla Yogurt.

Pan Fried Pork Chop w/ Shellie Beans, Mashed Potatoes, and 9 Grain Baked Bread
Today's Menu: Pan Fried Pork Chop w/ Shellie Beans, Mashed Potatoes, and 9 Grain Baked Bread
For dinner this evening I pan fried a Center Cut Pork Loin Chop that I lightly rolled in flour and seasoned with McCormick Grinder Sea Salt and Black Peppercorn. I fried it on medium heat in Canola Oil about 4 1/2 minutes per side. The Chop came out perfect! Nice brown crust, moist and delicious. I topped it with Bronco Bob's Tangy Apricot Chipotle Sauce, what a great combination of flavors! I still love my JB's Fat Boy Sauces but Bronco Bob's are giving them a run for their money. This sauce is perfect for Pork. You get the fresh and cool taste of the Apricot and then a hint of heat from the Chipotle. Perfect combo! If you get a chance try Bronco Bob's Sauces. For sides I heated up a can of Libby's Shellie Beans, Bob Evan's Mashed Potatoes, and I baked the other half of the loaf of Walmart Bakery 9 Grain Bread. I really like this bread! For dessert later a bowl of the mixed No Sugar Added Sliced Fruits; Peaches, Pears, and Pineapples.
