Baked Rigatoni with Turkey w/ Baked Multi Grain Loaf Bread

Dinner Tonight: Baked Rigatoni with Turkey w/ Baked Multi Grain Loaf Bread

For my Breakfast this morning I prepared a 2 Egg Scrambled Eggs, that I topped with Sargento
Reduced Fat Shredded Sharp Cheddar Cheese and Ortega Smoky Chipotle Taco Sauce. I also toasted a couple of slices of Healthy Life Whole Grain Bread, lightly buttered with I Can't Believe It's Not Butter. And as every morning a cup of Bigelow Decaf Green Tea. Outside its partly cloudy with a high around 85 degrees and a bit more humid. After Breakfast I went to the Post Office for Mom, picked up a prescription at Kroger, and stopped by the bank ATM machine. Back home not a lot going on today. After a light Lunch I headed out to Meijer Lawn and Garden. looking for some solar lights for the yard. For Dinner tonight a new recipe, Baked Rigatoni with Turkey w/ Baked Multi Grain Loaf Bread.

This 1 of 2 Pillsbury based recipes that I'm trying this week. The Baked Rigatoni with Turkey that I'm
preparing was orginaly made with Ground Beef but as I do with a lot of recipes I put my little spin on them. To make the dish I'll need; 2 1/2 cups uncooked Rigatoni Pasta (about 7 oz) - I used Racconto Rigatoni, 1 lb Jennie - O Extra Lean Ground Turkey Breast, 1 jar (23.9 oz) Ragu Mushroom Sauce, 1 1/2 cups Sargento Shredded Mozzarella Cheese (6 oz), 1/4 cup Kraft Reduced Fat Grated Parmesan Cheese, and Dried Basil Leaves.

Then to prepare it; I started by preheating the oven to 350°F. Next spray 11x7-inch (2-quart) glass
baking dish with Pam Cooking Spray. Cook and drain the Pasta as directed on package, using the minimum cooking time. Meanwhile, in 10-inch nonstick skillet, cook the Jenni - O Turkey over medium-high heat about 12 minutes, stirring occasionally, until thoroughly cooked; drain.

In baking dish, stir together cooked Pasta, Turkey, Sauce and 1 cup of the Mozzarella Cheese.
Sprinkle with remaining 1/2 cup Mozzarella Cheese and the Parmesan Cheese. Bake uncovered for 20 minutes or until thoroughly heated. Garnish with the Basil and serve! I have another one of those "keeper recipes", it turned out great! Rigatoni is incredible all by itself, but add in the Turkey, Sauce, and Cheese and you have a winning dish. I always substitute Beef with Jennie - O Turkey or Wild Idea Buffalo. Ground Buffalo would go great with also. I've left the original Pillsbury recipe and web link at the end of the post.

To go with Pasta I baked a loaf of the La Brea Bakery Multi Grain Loaf Bread. For Dessert/Snack later tonight a bowl of Skinny Pop - Pop Corn and a Diet Peach Snapple.

Pepperoni Pizza Bake

Dinner Tonight: Pepperoni Pizza Bake

Started off with breakfast, workout, and shower. Cooler outside today after 68 degrees yesterday.
Rain on and off almost all day. So not much going on outside, stayed inside and cleaned the house today. Had to have the repairman we always use to come and do for work for us today also. We had a kitchen drawer break its slider bracket and we had to have the heating tape for our waterlines replaced. It seems lately it's always something, be it the house or car that needs repaired! For dinner tonight a new recipe, Pepperoni Pizza Bake.

Came across this Pillsbury recipe and one other in a cooking magazine and couldn't wait to give them a try. I'm preparing the Grands Pepperoni Pizza Bake, I'm saving the other recipe for later (Sausage Crescent Cheese Balls). To make this dish I'll need just 4 ingredients; 1 can (16.3 oz) Pillsbury™ Grands!™ Homestyle refrigerated original biscuits, 1 can (8 oz) pizza sauce, 2 cups finely shredded mozzarella cheese (8 oz), and 16 slices pepperoni (1 1/2 inch). I used Ragu Homestyle Pizza Sauce, Hormel Turkey Pepperoni, and Sargento Shredded Mozzarella Cheese (Traditional Cut).

To prepare the dish I started by heating the oven to 375°F. Sprayed 13x9-inch (3-quart) baking dish
with Pam with Olive Oil Cooking Spray. Separate the dough into 8 biscuits. Cut each biscuit into 8 pieces. Then in large bowl, toss with biscuit pieces, pizza sauce and 1 cup of the cheese.Top with pepperoni and remaining 1 cup cheese. Baked for 23 minutes, and the biscuits were golden brown. The dish turned out incredible! Just a fantastic combination of 4 ingredients that work together. The Pillsbury Grands Biscuits gives it that Pizza texture and taste. You could add Mushrooms, Sausage or any of your favorite Pizza toppings to the dish. I've left the original recipe and web link at the end of the post. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

Deep Dish Pizza Casserole

Dinner Tonight: Deep Dish Pizza Casserole

It's been humid and cloudy out today here in west Chester, with showers. We finally have some cooler and humid free weather moving in, high in the low 70's! Looking forward to that. Fall is coming up and it's my favorite time of the year, love Fall weather! Had to get the leaf blower out, lot of leaves every morning. After lunch I had to go to Cincinnati, Sharonville to be exact, I neede a couple of new Walkers. The 2 I have are worn out and falling apart. It's a shame the cost of medical accessories. Quite a business they got going across the Country! Back at home just did a few things around the house. For dinner tonight it's a Deep Dish Pizza Casserole.

I had made this about 2 weeks ago and Mom and Dad wanted it again! So I’m preparing it again for dinner tonight. To make this Pizza I’ll need the following: 1 (13 ounce) Pillsbury™ Refrigerated Pizza Crust, 1 1/2 cups Ragu Pizza Sauce, Jennie – O Lean Ground Turkey Breakfast Sausage ( 1 lb. package and precooked) , Sliced Black and Green Olives, Sliced Mushrooms, 2 1/2 cups of your favorite cheese (I like using Sargento Reduced Fat Shredded Italian Blend Cheese or Sargento Reduced Fat Shredded Mozzarella Cheese), Hormel Turkey Pepperoni, and 1/3 cup Kraft Reduced Fat Grated Parmesan Cheese.

To start I fried the Ground Turkey, till no longer pink, and sliced the Olives. Then to prepare the dish I preheated the oven to 425°F. Greased a 9×13 inch baking dish with Pam Cooking Spray w/ Olive Oil and sprinkled Corn Meal across the bottom of the dish. I like using the Corn Meal when making
Pizza, the Corn meal on the bottom of the crust gives it nice texture and helps keep it from sticking to the dish or pan. I unrolled the Pillsbury Pizza Dough, and pressed it into the bottom and halfway up sides of prepared baking dish. Then spread the dough with the Ragu Pizza Sauce, and then sprinkle the cooked Jennie – O Ground Turkey and Sliced Mushrooms, and the Sliced Olives over the top. Cover the Pizza with Cheese and then top with Turkey Pepperoni. Sprinkle the Parmesan over top. Bake for 15-20 minutes or until crust is golden brown and the Cheese is melted. Remove from the oven and sprinkle with more Parmesan. And we have a Deep Dish Pizza Casserole. I’ll start off by saying this is one of those Keeper Recipes and already a family favorite! The crust came out a perfect golden brown. And all the toppings combined to make it one delicious Pizza. Plus you can use what ever toppings you want for this. Mom and Dad both said it was one of the best Pizzas they had ever had, so it’s Parent Approved! For dessert later a bowl of Del Monte Sliced Peaches.

Deep Dish Pizza Casserole

Ingredients
1 (13 ounce) Pillsbury™ refrigerated pizza crust
1 1/2 cups pizza sauce
2 1/2 cups of your favorite cheese (I like using a mix of provolone, mozzarella and cheddar)
1/3 cup Parmesan cheese, grated
12 whole pepperoni (optional)
1/2 pound cooked ground spicy Italian sausage (optional)

Directions
1 – Preheat oven to 425°F. Grease a 9×13 inch baking dish with cooking spray or olive oil.
2 – Unroll the pizza dough, and press it into the bottom and halfway up sides of prepared baking dish.
3 – Spread the dough with some pizza sauce and, if using, sprinkle the cooked spicy Italian sausage over the top. Cover the pizza with cheese and then top with pepperoni (if using). Sprinkle the Parmesan over top.
4 – Bake for 15-20 minutes or until crust is golden brown and the cheese is melted. Remove from the oven and sprinkle with more Parmesan if desired. Serve immediately.

Deep Dish Pizza Casserole

Dinner Tonight: Deep Dish Pizza Casserole

It was a beautiful Summer Morning here in West Chester. But watching the early morning news it
was a bad day out on the inter-states. 3 major wrecks had 2 different interstates shutdown this morning, slow down people and take your time! After a light Breakfast I ventured out to Meijer, went for just a few items and ended up with a cart full! Luckily I didn't need gas, gas prices shot up over $3 a gallon overnight! Back home finished up a couple of loads of laundry for Mom and did some cleaning around the house. With everything done got the cart out for a while to enjoy the day. For dinner tonight I prepared a new recipe, Deep Dish Pizza Casserole.

I've got a winning Pizza recipe to pass along tonight! I came across this recipe on a Pillsbury Recipe Email and couldn't wait to give it a try. As I said earlier I went to Meijer this morning and picked up a couple of ingredients for tonight's meal. So to make this I'll need the following; 1 (13 ounce) Pillsbury Refrigerated Pizza Crust, 1 1/2 cups pizza sauce (Ragu Pizza Sauce), 2 1/2 cups of Sargento Shredded Mozzarella Cheese, 1/3 cup Kraft reduced Fat Grated Parmesan Cheese, Sliced Black and Green Olives, 12 whole Pepperoni (Hormel Turkey Pepperoni), and 1/2 pound cooked Jennie - O Italian Lean Seasoned Ground Turkey. I added sliced Olives to the recipe and substituted Jennie - O Lean Italian Seasoned Ground Turkey for the Spicy Italian Sausage. The Ground Turkey I'm using was one of the packages sent to me from Jennie - O yesterday. The Original Recipe along with the web link is at the end of the post.

To prepare the dish I preheated the oven to 425°F. Greased a 9x13 inch baking dish with Pam

Chili and Cheese Coneys!

Dinner Tonight: Chili and Cheese Coneys!

Only about 40 degrees this morning, Spring time? The high for the day wasn't much higher and there was a cold breeze blowing all day. But 70's and 80's coming the upcoming week. Ran Mom around for a few errands and home. For dinner tonight, nothing but comfort food! Tonight it's Chili and Cheese Coneys!

I used Oscar Mayer Extra Lean Turkey Franks. Just boiled them for 5 minutes and they were ready. A very lean Hot Dog, only 50 calories and 4 carbs per Hot Dog. Then for the Chili I used Hormel Turkey Chili with Beans. One of the best canned Chilis there is, in my opinion. It's a nice thick Chili and seasoned just right with plenty of Beans. Emptied the can into a small sauce pan and heated it up for about 10 minutes or so. I did add a few shakes of Frank’s Red Hot Sauce to the Chili as it was heating up.

Served everything on a Healthy Life Whole Grain Hot Dog Bun. Topped the Dog with French’s Yellow Mustard, Sargento Reduced Fat Shredded Sharp Cheddar Cheese, and then the Chili and they were ready to go! Nothing better than a couple of Cincinnati Style Chili and Cheese Coneys for dinner! For dessert later, I had baked some Pillsbury Nut Quick Bread. Instead of adding 2 Eggs to the batter I used Egg Beaters, 2 Eggs (Medium size) is 140 calories while 2 servings of Egg Beaters is only 50 calories. So I'll have a slice of the Nut Quick Bread topped with a scoop of Breyer's Carb Smart Vanilla Bean Ice Cream.

These hardwood smoked, bun length turkey franks are 95% fat free and only 50 calories per serving. Enjoy this lean poultry option the next time you’re looking for a hot dog, but without all the fat and calories of a beef frank.

Jennie – O OVEN READY™ Boneless Skinless Turkey Breast w/ Mashed Potatoes,....

Dinner Tonight: Jennie – O OVEN READY™ Boneless Skinless Turkey Breast w/ Mashed Potatoes, Canned Green Beans, and Crescent Rolls

It was about 20 degrees and sunny when I headed out this morning, which is a lot better than it's been around here! Ended up sunny all day and hit close to 40 degrees, plus they say in the upcoming days 50 and close to 60! Headed out and stopped at the Bank, Post Office and a couple of stores for groceries. Dinner tonight was a Holiday Comfort Food Dinner, I prepared a Jennie – O OVEN READY™ Boneless Skinless Turkey Breast w/ Mashed Potatoes, Canned Green Beans, and Crescent Rolls.

As I said I used the Jennie – O Oven Ready Skinless Boneless Turkey Breast. A perfect way to have a moist and fantastic tasting Turkey! Comes in Jennie O turkey Breast Oven Ready Bag,  that you bake at 375 degrees for about 2 to 3 hour until it reads 170 degrees. It also now has a pop up inserted in the breast that pops up when done. The Turkey comes out moist, juicy and delicious, with an excellent flavor! So cooking usually for just myself and my parents, it's just the right size (2-3 lbs.). Enough leftover for some great Turkey Sandwiches the next day or so!

Home canned Green Beans

For one side I heated up some Bob Evan's Mashed Potatoes, microwave for a total of 6 minutes and ready. Then we broke out a jar of the Canned Green Beans, we canned these last year. Love Canned Beans, taste just as fresh as fresh Green Beans. I also whipped a box of Stove Top Low Sodium Turkey Stuffing for Mom and Dad, they love Stuffing. And finally I baked a can of Pillsbury Reduced Fat Crescent Rolls. It was a Thanksgiving Dinner come early! For dessert later a couple of Del Monte Mini Bananas.

Seasoned Fried Haddock w/ Potato Pancakes and Cut Green Beans

Dinner Tonight: Seasoned Fried Haddock w/  Potato Pancakes and Cut Green Beans

Another day and another cleaning up after a snowy night! We ended up with about 5" or a tad more along with about a 1/4" of ice below it. Wow, this is getting old! We have about 1/2 a bag of Driveway Salt left, more than most people, and there is none anywhere to be bought. After cleanup did some cleaning and organizing the pantry. For dinner I prepared Seasoned Fried Haddock w/  Potato Pancakes and Cut Green Beans.

I had some Haddock Fillets in the freezer, bought on sale at Kroger last week. I laid the fillets out in the fridge overnight to thaw. To prepare it I rinsed the fillet in cold water and patted dry with a paper towel. Then sliced the fillet into smaller pieces. I then seasoned it with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. I then pan fried them in Canola Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s is a perfect combo, delicious every time!

For a side dish I made some Potato Pancakes. I used Manischewitz Potato Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes). I also heated up a can of Del Monte Cut Green Beans and baked a loaf of Pillsbury Rustic French Bread. Before baking the bread I buttered the top of it with Garlic Butter. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Zatarain’s Lemon Pepper Fish-Fri

The secret of authentic Lemon Pepper Style fried fish is the crispy combination of corn flour, spices and lemon pepper captured in this special Zatarain’s Frying Mix.

Hardwood Smoked Turkey Sausage Sandwich w/ Spicy Asian Carrot Soup

Dinner Tonight: Hardwood Smoked Turkey Sausage Sandwich w/ Spicy Asian Carrot Soup

Cloudy most of the day but no snow or rain, about 38 degrees out. A big thank you to one of my neighbors for finding Driveway Salt! It's really hard to come by, even Highway Maintenance Departments are finding it hard to come by. And we'll need it the way it sounds with heavy snow coming in Sunday and Monday. Hope they miss this forecast! For dinner something new, I prepared Hardwood Smoked Turkey Sausage Sandwich w/ Spicy Asian Carrot Soup.

To make the Hardwood Smoked Turkey Sausage Sandwich, I used Butterball Hardwood Smoked Turkey Sausage. I took one of the Sausages and cut it up into 3 equal pieces. Then I split those pieces in half, slicing them in the middle length wise. Using a medium size skillet, I sprayed it with Pam cooking Spray, added a tablespoon of Extra Virgin Olive Oil, and heated it on medium. When the skillet was heated up I added the Turkey Sausage skin down. I cooked it until the the skin casing started to brown and then flipped it over and continued cooking for another 4 minutes. When browned and heated through I served it on an Aunt Millie's Reduced Calorie Whole Grain Bun. On the bottom bun I laid a slice of Murray's Dutch Gouda Cheese. Then the split Sausage and topped it all with Kraft Reduced Fat Mayo w/ Olive Oil. One delicious Sandwich!

Then to go with the Sandwich I made a pot of Spicy Asian Carrot Soup. First time I prepared this, and it won't be the last! It turned out to be one thick and rich Soup. I had come across it in a Pillsbury Magazine and it looked and sounded like a winner. Among other ingredients it has Carrots, Yellow Onions, 1/2 and 1/2, Garlic, Ginger, Honey and Soy Sauce. Sound Good? You mix all but 2 of the ingredients in a Crock Pot and let them cook on low for 9 hours. When the Carrots and all the ingredients have heated and softened carefully ladle 4 1/2 cups soup mixture into blender. Cover; blend on low speed until smooth. Transfer to large bowl. Repeat with remaining soup mixture. Return soup to slow cooker. Stir in 1/2 cup of the half-and-half. Increase heat setting to High. Cover; cook 15 to 20 minutes or until soup is hot. Ladle the soup into serving bowls. To garnish, drizzle about 1 tablespoon of the remaining half-and-half over top of each bowl; swirl gently with tip of knife. Sprinkle with cilantro. And you have one decadent hot bowl of Spicy Asian Carrot Soup! Plus it's only 100 calories and 11 net carbs per serving. The full recipe along with it's web link is at the bottom of the post. I really enjoyed this dinner. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Seasoned Turkey Breast Steak w/ Steam Crisp Sweet Corn Kernels, Mashed Potatoes,...

Dinner Tonight: Seasoned Turkey Breast Steak w/ Steam Crisp Sweet Corn Kernels, Mashed Potatoes, and Baked French Bread

Another sunny but frigid day out again, minus 3 with the wind chill. Got out this afternoon and finished clearing the driveway again. From that to, I went to the bank, post office, and stopped by Walmart to pick up a few items and a prescription. For dinner prepared the Jennie - O Seasoned Turkey Breast Steak. Tonight I prepared a Seasoned Turkey Breast Steak w/ Steam Crisp Sweet Corn Kernels, Mashed Potatoes, and Baked French Bread.

I came across the Jennie – O Turkey Breast Steak at Walmart a while back, and been using regular ever since! It comes Seasoned and it’s only 130 calories and 3 carbs per serving. You can prepare it several ways, I pan fried mine. To prepare it just preheat a large skillet over medium heat, spray it with nonstick spray. Cook the steaks, turning 2-3 times until meat thermometer inserted into thickest portion of meat reached 165°F, approximately 19-21 minutes. Covered with lid for the last 5 minutes of cooking. Remove from stove top, cover, and let rest for 5-10 minutes before slicing. Then you have a fine and tasty Turkey Breast Steak! As usual it's another winner from Jennie – O! It was well seasoned, I did add a couple of shakes of Sea Salt while it was cooking.

For one side dish I heated up a can of Green Giant Steam Crisp Super Sweet Yellow and White Kernel Corn, my favorite canned Corn. Then I tried a new Mashed Potato, Betty Crocker Creamy Buttery Mashed Potatoes. Comes in a microwavable container, just add water and heat. It came out very good. I normally buy the Idahoan Mashed Potatoes but Walmart had the Betty Crocker ones on sale so I went with that. Then I baked a loaf of Pillsbury Rustic French Bread. Lightly brushed the top of the loaf with Extra Virgin Olive Oil and sprinkled Sesame Seeds on top before baking. For dessert tonight a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

One of America's Favorites - Pigs in Blankets

American-style pigs in a blanket

Pigs in blankets (also known as Wesley Dogs in parts of the US, and kilted sausages in Scotland[citation needed] refers to a variety of different sausage-based foods in the United States, United Kingdom, Denmark, Australia, Ireland, Germany, Belgium, Russia, Canada, and Japan. They are typically small in size and can be eaten in one or two bites. For this reason, they are usually served as an appetizer or hors d'oeuvre or are accompanied by other dishes in the 'main course' section of a meal. In the West, especially in the United States and Canada, the bite-sized variety of pigs in a blanket is a common hors d'oeuvre served at cocktail parties and is often accompanied by a mustard or aioli dipping sauce.
Pigs in a blanket are usually different from sausage rolls, which are a larger, more filling item served for breakfast and lunch in parts of Europe, Australia, New Zealand, and, more rarely, the United States and Canada.

In the United States, the term "pigs in a blanket" often refers to hot dogs, Vienna sausages, cocktail or breakfast/link sausages wrapped in biscuit dough, pancake, or croissant dough, and baked. The dough is sometimes homemade, but canned dough is most common. They are somewhat similar to a sausage roll or (by extension) a baked corn dog. They are served as an appetizer, a children's dish, or as a breakfast entree. A common variation is to stuff the hot dog or sausage with cheese before wrapping it in dough.
At breakfast or brunch, the term "pigs in a blanket" refers to sausage links with pancake wrapped around it.
In regions heavily influenced by Polish immigrants, such as northern Pennsylvania, the southern tier of New York, and northeastern Ohio, the term usually refers instead to stuffed cabbage rolls, such as the Polish gołąbki.
In much of central and southeast Texas (including Austin and Houston) the term "kolache" has been widely misappropriated to describe a variety of dough-wrapped breakfast goods, including sausages of several types wrapped in both biscuit and croissant dough.[citation needed] It would seem that the term "klobasnek" is more technically correct for this variety; perhaps[tone] "kolache" was deemed easier to pronounce and was therefore seized upon by local merchants. They can be found in virtually every doughnut shop, and at least one "kolache-themed" chain is currently in operation.
The American Farm Bureau Foundation's Dates to Celebrate Agriculture calendar includes a "National Pigs-in-a-Blanket Day" to be observed every April 24.

Christmas Dinner in the UK - pigs in blankets at top right of plate

In the United Kingdom, "pigs in blankets" refers to small sausages (usually Chipolatas) wrapped in bacon. They are a traditional accompaniment to roast turkey for Christmas dinner. They are also known as Tiger tails in The Westcountry. Pigs in blankets can be accompanied with devils on horseback, an appetizer of prunes, or less commonly dates, wrapped in bacon.

The name can also refer to klobasnek (a kind of kolache filled with sausage or ham slices). The German Würstchen im Schlafrock ("sausage in a dressing gown") uses sausages wrapped in puff pastry or, more rarely, pancakes. Cheese and bacon are sometimes present.
In Russia, this dish is named Сосиска в тесте (Sosiska v teste, "sausage in dough").
In Israel, Moshe Ba'Teiva (Moses in the ark) is a children's dish consisting of a hot dog rolled in a ketchup-covered sheet of puff pastry or phyllo dough and baked.
In Denmark, they have a dish similar to the British-style dish known as the "Pølse i svøb" which means "Sausage in blanket". The American-style Pigs in a blanket are known as "Pølsehorn", meaning "Sausage horns".
In Finland, pigs in blanket is known as "nakkipiilo", which means "hidden sausage" if it is translated freely.
In Mexico, the sausage is wrapped in tortilla and deep fried in vegetable oil. The name "salchitaco" comes from the fusion of the words "salchicha"(sausage) and taco (sausage taco).

Here's my favorite way to make a Pig in the Blanket, from http://www.pillsbury.com/recipes/crescent-dogs/b19c6c07-bad8-45b5-8a4e-e604f30baa98?p=1  When I make these I use Hillshire Farms Turkey Lil Smokies and the Pillsbury Reduced Fat Crescent Rolls.

Crescent Dogs

Ingredients:
8 hot dogs
4 slices (3/4 oz each) American cheese, each cut into 6 strips
1 can (8 oz) Pillsbury® refrigerated crescent dinner rolls

Directions:

1 - Heat oven to 375°F. Slit hot dogs to within 1/2 inch of ends; insert 3 strips of cheese into each slit.
2 - Separate dough into triangles. Wrap dough triangle around each hot dog. Place on ungreased cookie sheet, cheese side up.
3 - Bake at 375°F. for 12 to 15 minutes or until golden brown.

Keeper Recipe Alert! Buffalo Chicken Nachos Grande

Want an appetizer that's real good, just not good but down right delicious? Look no further, from Pillsbury it's Buffalo Chicken Nachos Grande! Just a warning, these are addictive! I came across these on a Pillsbury Recipe email update the other day and it sounded too good to pass up, and they were.

The recipe calls for 4 cups shredded deli rotisserie chicken, 3/4 cup Buffalo wing sauce, 1 bag (18 oz) restaurant-style tortilla chips, 3 cups shredded mozzarella cheese (12 oz), 1/2 cup finely chopped celery, and 1 cup crumbled blue cheese (4 oz). Sort of sounds like Buffalo Wings. I used a Walmart Rotisserie Chicken, Kroger Brand Medium Wing Sauce, Mission Round Tortiia, Sargento Reduced Fat Shredded Mozzarella, I was out of Celery so I didn't add any, and Mayfield Crumbled Bleu Cheese. I think chopped Celery or maybe even chopped Green Onions would both work. Even add a sliced Jalapeno Pepper on top for added heat.

To prepare them just Heat your oven to 350°F. and in large bowl, toss chicken and 1/2 cup of the wing sauce to coat. Spray two large (14-inch) pizza pans with cooking spray. Arrange half of the tortilla chips on one pizza pan; top with 2 cups of the chicken and 1 1/2 cups of the mozzarella cheese. Repeat on second pizza pan. Bake 8 to 10 minutes or until cheese is melted. Top each pan with celery and blue cheese; drizzle with remaining 1/4 cup wing sauce. To serve; slide one pan of nachos off onto other pan to make one large mound of nachos. Serve immediately. I wanted to try a small batch of these so I only made one baking sheet of them. As I said earlier these are delicious! Perfect for those tailgate football gatherings, parties, or even a main meal. Easily made and they are good leftovers; just put them on a plate with a paper towel over them and reheat in the microwave about 30 - 40 seconds. So if your looking for a new snack or appetizer, here it is! Thank you Pillsbury!

Lemon-Baked Cod w/ Cauliflower with Cheese, Green Beans, and.....

Dinner Tonight: Lemon-Baked Cod w/ Cauliflower with Cheese, Green Beans, and Baked French Bread

Well we've really been blessed with a lot of beautiful days out this Autumn and today was no exception! Sunny and in the low 50's. Went out early to pick up a few things at the store and then home to do some yard work, that I was able to do. I also took apart the old gas grill. We had since about 2002 so it served it's purpose. It was lot easier taking apart than it was putting it together! For dinner tonight, Lemon-Baked Cod w/ Cauliflower with Cheese, Green Beans, and Baked French Bread.

Picked up some beautiful Cod Fillets at Kroger this morning. So I pulled out a favorite Cod recipe of mine; Lemon-Baked Cod . Cod is such a mild Fish and meant for baking. If you like Cod you’ll love this recipe. You’ll need; 1 lb Cod Fish Fillets, 1/4 cup Blue Bonnet Light Butter, melted, 2 tablespoons Lemon Juice, 1/4 cup all-purpose Flour, 1/2 teaspoon Morton’s Light Salt, 1/8 teaspoon White Pepper, and Paprika. To prepare it mix butter and lemon juice in a bowl. Then in another bowl, mix flour, salt and white pepper. Dip the fish into butter mixture; coat fish with flour mixture and place fish in ungreased square baking dish, 8x8x2 inches. Pour remaining butter mixture over fish; sprinkle with paprika ( You can also sprinkle a bit of Bread Crumbs on it also to give it a bit of a crust topping). Cook uncovered in 350 degree oven until fish flakes easily with fork, 25-30 minutes. Garnish with parsley sprigs and lemon slices if desired. The Cod has such a great flavor to it from the Lemon, Butter, and spices! Had some leftover so I'll make a sandwich with it for lunch tomorrow.

For a side dish I heated up some Green Giant Cauliflower and Cheese Sauce. I'm not a huge fan of Cauliflower but I love it in this Cheese Sauce from Green Giant. It comes frozen in a box with about 3 servings per container. To prepare it just make a small slit in the plastic bag and microwave it for 4-5 minutes. The Cheese Sauce is fantastic on the Cauliflower and it's only 50 calories and 5 net carbs per serving! i also heated up a small can of Walmart Brand of Cut Green Beans and Baked a loaf of Pillsbury Simply Rustic French Bread. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.

Lemon-Baked Cod

Ingredients:
1 lb Cod Fish Fillets
1/4 cup I Can’t Believe It’s Not Butter, melted
2 tablespoons Lemon Juice
1/4 cup all-purpose Flour
1/2 teaspoon Morton’s Light Salt
1/8 teaspoon White Pepper
Paprika

Directions:
*If fish fillets are large, cut into serving pieces.
*Mix butter and lemon juice.
*In another bowl, mix flour, salt and white pepper.
*Dip fish into butter mixture; coat fish with flour mixture.
*Place fish in ungreased square baking dish, 8x8x2 inches.
*Pour remaining butter mixture over fish; sprinkle with paprika.
*Cook uncovered in 350 degree oven until fish flakes easily with fork, 25-30 minutes. Garnish with parsley sprigs and lemon slices if desired.

Seasoned Fried Haddock w/ Macaroni and Cheese and French Bread

Dinner Tonight: Seasoned Fried Haddock w/ Macaroni and Cheese and French Bread

Beautiful outside and spent most of it at a local County Park, Winton Woods. It's located in the neighboring County, Hamilton County. It's the largest County Park around. A good size lake and some beautiful scenery. Another 2 or 3 weeks and the leaves will have turned colors and it will be a gorgeous site. For dinner I prepared a Seasoned Fried Haddock w/ Macaroni and Cheese and French Bread.

Love that Haddock that I’ve been buying from our local Kroger Seafood Department. To prepare it I rinsed the fillet in cold water and patted dry with a paper towel. Then sliced the fillet into four pieces. Delicious! Haddock and Zatarain’s is a perfect combo!

I had been craving some Macaroni and Cheese for some time now. So for a side I heated up an individual cup of Bob Evan's Macaroni and Cheese. Just microwave for 1 1/2 minutes and you have your Mac. First time I tried the Bob Evan's Mac and Cheese and was very pleased with it. Excellent Cheesy flavor and the Pasta was spot on, Good job there Bob! I baked a loaf of Pillsbury Rustic French Bread also. For dessert/snack tonight some Cheese and Crackers! Bought some Boar's Head Colby Longhorn Cheese, at Jungle Jim's Market, and served it on some Ritz Whole Grain Crackers. My favorite pair of sweat pants, t-shirt, remote, and in my favorite chair, it's going to be a good night!

Prime Rib w/ Mashed Potatoes, Brown Mushroom Gravy, Green Beans, and..

Christmas Dinner: Prime Rib w/ Mashed Potatoes, Brown Mushroom Gravy, Green Beans, and Baked Rustic French Bread

First off Merry Christmas Everyone! Now let's talk about our Christmas Dinner Feast. I prepared a Prime Rib w/ Mashed Potatoes, Brown Mushroom Gravy, Green Beans, and Baked Rustic French Bread.

We purchased our annual Christmas Prime Rib Roast a couple a weeks ago from the local GFS Store. We always purchase one there and have never had a bad one. I put the Prime Rib in the oven at 1:30 PM at 250 degrees. At 3:30 I checked the temperature and it was spot on at 120 degrees, rare. I pulled it out of the oven and let it sit for 15 minutes before slicing. Letting it sit lets it finish cooking and absorb some of the delicious juices. When I sliced it the juices just flowed! Moist, tender and delicious!

For sides I prepared Bob Evans Mashed potatoes, Heinz Savory Mushroom Brown Gravy, 2 large cans of Del Monte Low Sodium Cut Green Beans, and baked a loaf of Pillsbury Rustic French Bread. For dessert later a bowl of Breyer's Carb Smart Vanilla Ice Cream topped with Del Monte No Sugar Added Sliced Peaches.

New England Clam Chowder w/ Ham & Swiss Toasted Sandwich

Dinner Tonight: New England Clam Chowder w/ Ham & Swiss Toasted Sandwich

Simple and Hearty Dinner tonight, New England Clam Chowder w/ Ham & Swiss Toasted Sandwich. I wasn't really feeling up to par today. I'm dealing with those painful Phantom Pains that amputees so commonly have to deal with. Sometimes they aren't too bad but today's has been extremely painful and it really just wears you out.

Anyway on to dinner! Dealing with the Phantom Pains I wanted something easy to prepare but I also wanted a hearty and hot meal. I used Campbell's Chunky New England Clam Chowder. Easy to prepare and a nice, thick, and tasty Clam Chowder. Easy to prepare as in open the can, empty into a small pot, and heat! 210 calories and 23 carbs.

For my Toasted Sandwich I used Kroger Private Selection Old fashioned Honey Cured Sliced Ham, Sargento Ultra Thin Swiss Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, and Toasted Healthy Life Whole Grain Bread. For dessert one of my favorite things to make Pillsbury Nut Quick Bread. A slice of the Nut Bread topped with a scoop of Breyer's Carb Smart Ice Cream.
