Taking Mom out to eat, Texas Roadhouse

Today's Menu: Texas Roadhouse

We were going to go to the Texas Roadhouse for my birthday last week but the wait was too long so we went tonight and we got in right away. First time I've been to the Texas Roadhouse in many, many years. I just don't eat out very often due to my Diabetes 2 but I make exceptions for Mom. We both ordered the 6 oz. Sirloin with Sautéed Mushrooms and Baked Potato. The meal came out perfect! I had my Steak Medium Rare and it so delicious and cooked perfect. Mom had hers Medium Well and hers came out the same. Great job by Texas Roadhouse! Back to the Kitchen tomorrow, till tomorrow!

* Just stock photos of the Steak, I don't like taking pictures in restaurants.

Cumin Spiced Pork Chop w/ Sauteed Mushrooms and Baked Potato

Dinner Tonight: Cumin Spiced Pork Chop w/ Sauteed Mushrooms and Baked Potato

It's been one of those lazy Sunday afternoon's around here today! Nothing, and I mean nothing going on today. Did a bit of cleaning then it was Sofa City with the remote in hand. We have a couple of Crabapple Trees in the front yard and they are full of Robins. Every year we seem to be a layover for their treks back North, they're a bit early this year. Could it be a sign of an early Spring? For dinner tonight I prepared a Cumin Spiced Pork Chop w/ Sauteed Mushrooms and Baked Potato.

Picked my Chops up while at Meijer the other day, on sale! To prepare my Chops I’ll need; 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 11 minutes or until a thermometer registers 155° (slightly pink), turning after 5 minutes. Let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Chop! Fantastic combo of Spices, which made one incredible Crust on the Chop with the inside being tender and moist! By far my favorite Pork recipe anymore!

For one side I prepared some Sauteed Mushrooms. Using Baby Bella Mushrooms, I quartered the Mushrooms. I seasoned them with Dried Thyme, Ground Smoked Cumin, Dried Parsley, and Sea Salt. Pan fried them in Extra Virgin Olive Oil and a pat of Blue Bonnet Light Butter. Then I also had a Baked Potato, seasoned this with McCormick Grinder Sea Salt and Black Peppercorn. For dessert later tonight a Healthy Choice Dark Fudge Swirl Frozen Yogurt

5 oz. Buffalo Sirloin and Sauteed Mushrooms w/ Steakhouse Seasoned Diced Potatoes...

Dinner Tonight: 5 oz. Buffalo Sirloin and Sauteed Mushrooms w/ Steakhouse Seasoned Diced Potatoes and Green Beans

A little under the weather today, upset stomach nothing major. Fairly nice day out, a good breeze which got rid of the humidity. But not much going on, took sort of easy today. For dinner tonight my favorite Steaks. I prepared a 5 oz. Buffalo Sirloin and Sauteed Mushrooms w/ Steakhouse Seasoned Diced Potatoes and Green Beans.

I used my favorite Buffalo, the Wild Idea Buffalo 5 oz. Petite Top Sirloin Steak. I seasoned it with Sea Salt and Ground Black Pepper and pan fried it, in Canola Oil. Fried it about 4 minutes per side, to a beautiful medium rare. Nice crust on the outside and moist and juicy on the inside. The taste of Wild Buffalo Steaks are just incredible! The meat has a sweet taste to it and cooks up so easy. Just when I think I've had the best Steak ever, I prepare the next one and it's even better!  I topped it with some Sauteed Baby Bella Mushrooms.

For one side dish I prepared some of Simply Potatoes Steakhouse Seasoned Diced Potatoes. Just love using the Simply Potatoes Products, always fresh and always and delicious Potato Dish. Then I reheated some Green Beans my Mom had prepared for her and my Dad last night for their dinner. Also had a slice of Healthy Life Whole Grain Bread that I buttered with I Can't Believe It's Not Butter. For dessert later a Weight Watcher's Chocolate Brownie.

Wild Idea Buffalo 5 oz. Petite Top Sirloin Steak

Famous for their flavor, these juicy steaks are perfect for the grill. The small size makes for a great meal for one. 5 oz.

Buffalo Terres Major Fillet w/ Sauteed Mushrooms, Green Beans, and Baked Potato

Dinner Tonight: Buffalo Terres Major Fillet w/ Sauteed Mushrooms, Green Beans, and Baked Potato

About 33 degrees this morning but it's been dropping ever since. Went to the store early to pick up a few items and then had to take my Dad to the Doctor, he has a lot of heavy congestion. Not good for a person that's 92. They took some x-rays and waiting for the results tomorrow to see exactly what it is. For dinner tonight I prepared a Wild Idea Buffalo Terres Major Fillet w/ Sauteed Mushrooms, Green Beans, and Baked Potato.

This is always the tenderest cut of Buffalo Steak I can find, and one of the most delicious cuts also! I pan fried it in Canola Oil about 4 minutes per side, which gives you a perfect medium rare! The steak is so tender with just an incredible flavor. As with all the Wild Idea Buffalo cuts it has a slight sweet taste and so tender a knife isn't really needed!

For a side dish I made some Sauteed Mushrooms. I've been using Green Giant Sliced Mushrooms. Really like these, nice taste and keeps so good in a jar. I sauteed them in Extra Virgin olive Oil and a pat of I Can't Believe It's not Butter and seasoned with Sea Salt, Ground Roasted Cumin, Parsley Flakes, and Dried Thyme. I also heated up a can of Del Monte Cut Green Beans and had a Baked Potato. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.

Wild Idea Buffalo 8 oz. Terres Major Fillet

The second most tender cut on the animal. This treasured cut is found in the chuck shoulder.

Bison Sirloin & Sauteed Mushrooms w/ Baked Potato, Sugar Snap Peas, and...

Dinner Tonight: Bison Sirloin & Sauteed Mushrooms  w/ Baked Potato, Sugar Snap Peas, and Whole Grain Bread

Last week I placed an order at http://wildideabuffalo.com/ and promptly received it yesterday! The order arrived very well packaged, well sealed box with styro foam lining. I had ordered  4 premade  - 1/4 Lb  Bison patties and 2 - . 5 oz Bison Petite Top Sirloin Steaks. So for dinner tonight I went with the 5 oz. Bison Petite Top Sirloin Steak. It's just enough for one person. To prepare it I rubbed a light coating of Extra Virgin Olive Oil on it and seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it in Extra Virgin Olive Oil, about 1/2 a tablespoon, about 3 minutes on the first side and then 3 minutes on the other side. They fried up beautifully! Came out a perfect medium rare. The meat was tender and the taste was unbelievable! I noticed the meat was a darker and richer looking color than other Bison I've had, possibly due to being grain fed. These are really a great Bison Steak. I look forward to trying the Bison 1/4 pound burgers I purchased. I've left a write up and web site link to Wild Idea Buffalo at the end of the post.

Along with the Bison I had some Sauteed Baby Bella Mushrooms. I sauteed them in I Can't Believe It's Not Butter and Extra Virgin Olive Oil. Seasoned with Roasted Cumin, Parsley, and Sea Salt, sauteed for about 4 minutes on medium heat. i also had a Baked Potato AND a couple of slices of Healthy Life Whole Grain Bread. For dessert later a bowl of Breyer's Carb Smart Vanilla Ice Cream topped with Smucker's Sugarless Hot Fudge Topping.

My Order from Wild Idea Buffalo

4 - 1/4-Lb Buffalo Burgers
Prepare for a whole new level of burger. Conveniently pre-made into one-quarter pound patties that are ever so grillable. Dinner ready. Each pack is 1 pound with 4 - 1/4 Lb patties.

Petite Top Sirloin Steak
Famous for their flavor, these juicy steaks are perfect for the grill. The small size makes for a great meal for one. 5 oz.

Wild Idea Buffalo Co.

Preserving land for wild things has been the focus of Dan O’Brien’s life. Bringing buffalo back to their native homeland on the Great Plains has been at the center of his preservation efforts. In 1997, to help keep his small ranch going and to offer an alternative to the industrialized food system, he started a meat company called Wild Idea Buffalo. The idea was simple: supply delicious, healthy, 100% grass-fed meat to consumers interested in sustainability. The wild idea continues today because of Americans like you who care about the food you eat and the world we share.

Grassland restoration is at the core of the Wild Idea Buffalo Ranch. Our land and animal management practices are as close to nature’s intentions as possible. By caring for the land and giving the buffalo room to roam, the prairie is nurtured back to health. Grasses, forbs, and flowers flourish, providing a sustainable eco-system for all creatures great and small. Dan’s vision of large sweeping landscapes with roaming buffalo herds continues to grow and Wild Idea Buffalo Company is now affiliated with other like mind ranchers, including Native American ranchers and Nature Conservancy herds, positively impacting over 150,000 acres of grasslands.

The Wild Idea ranch is located on the Cheyenne River in South Dakota between the Black Hills and the Badlands National Park. Our 28,000 acre ranch winds along the river and borders the Pine Ridge Reservation and the Buffalo Gap National Grassland. We invite you to the ranch, to see the revitalized bison herds, and to join us at our table.

Black and Blue Bison Burger with Sauteed Mushrooms w/ Ore Ida Griller Seasioned Potatoes

Today's Menu: Black and Blue Bison Burger with Sauteed Mushrooms w/ Ore Ida Griller Seasioned Potatoes

It was a beautiful day in the neighborhood today! A picture perfect day, sunny, about 82 degrees with a slight cool breeze. For dinner I prepared a Black & Blue Bison Burger topped with Sauteed Mushrooms and served on a Healthy Life Whole Grain Bun. I used Great Range Ground Bison Sirloin that I seasoned with Cajun's Choice Blackened Seasoning. While making  the pattie I made a hole in the center about halfway through the pattie. I then filled it with Murray's Maytag Crumbled Blue Cheese and topped it off with the Ground Bison. So as the Burger was frying the Blue Cheese was melting on the inside and Blackened on the outside. Served it on a Healthy Life Whole Grain Bun and topped off with Sauteed Mushrooms, another one that's too good. The Burger tasted fantastic! It had that Blackened taste along with the pure taste of the Bison and the sharp taste of the Blue Cheese. For a side I had Ore Ida Griller Seasoned Potatoes. For dessert later a Pillsbury Reduced Fat Cinnamon Roll, not too bad at 130 calories and 24 carbs per serving.

Grilled London Broil w/ Red, White, and Blue Roasted Potatoes, Sauteed Mushroom Blend,..

Today's Menu: Grilled London Broil w/ Red, White, and Blue Roasted Potatoes, Sauteed Mushroom Blend, and Whole Grain Bread

I think Summertime is here! It's 90 degrees and getting very humid out, never bad enough not to grill though! I had a grilled London Broil Steak that I had seasoned with Sea Salt and Ground Black Pepper. Grilled it on medium high about 4 minutes per side. Came moist and juicy. I'm saving half the Steak for another dish Friday or Saturday. I prefer Bison but the London Broil isn't a bad substitute!

Along with the Steak I tried another new one  Red, White, and Blue Roasted Potatoes w/ Cheese and Bacon. Very good Summery potato dish. I used Red Potatoes, Fingerling Potatoes, and Purple Potatoes. First time I ever used Purple Potatoes. I found them yesterday while at Jungle Jim's Market. i quartered the potatoes and added them to a bowl that I had added and mixed Kraft Free Ranch Dressing, Sargento Shredded Italian 4 Cheese Blend, Oscar Mayer Real Bacon Bits, and Dill. Mixed the Potatoes in making sure they were coated and spooned them into a baking dish and baked at 350 degrees for 55 minutes. I left the recipe at the end of the post. I think you'll like this one the Ranch Dressing gives the Potatoes a really great flavor. I also sauteed a Mushroom Blend of Baby Bella, Shiitake, Oyster Mushrooms. I seasoned them with Sea Salt, Ground Black Pepper, Parsley, and Smoked Cumin. For bread I had Healthy Life Whole Grain Bread.

Dinner Tonight: Surf & Turf - Bison Sirloin & Sauteed Mushrooms w/ Shrimp, Baked Potato, and Whole Wheat Bread

There are meals and then there is this. I had a Bison Sirloin Steak (Turf), Gorton's Homestyle Shrimp (Surf), Baked Potato, and Healthy Life Whole Grain Bread. I seasoned the Bison with McCormick Grinder Steakhouse Seasoning and pan fried it in Extra Virgin Olive Oil about 4 minutes per side, to medium rare. Topped it with Sauteed Baby Bella Mushrooms that I seasoned with Ground Smoked Cumin, Parsley, and Sea Salt. Sauteed in Extra Virgin Olive Oil and a pat of I Can't Believe It's Not Butter.

The Turf part of the dinner I used Gorton's Home Style Shrimp, a 1/2 serving. Easily made baked at 425 degrees for 16 minutes. I had posted before this is the best boxed Shrimp around. I also had a baked Potato that I topped with I Can't Believe It's Not Butter, a dab of Reduced Fat Sour Cream, McCormick Grinder Sea Salt and Black Peppercorn. Ramen Noodle w/ Shrimp, Carrots, and Mushrooms

Dinner Tonight: Ramen Noodle w/ Shrimp, Carrots, and Mushrooms

Wasn't real sure on what I wanted for dinner so it was a last minute pot luck dinner of Ramen Noodle w/ Shrimp, Carrots, and Mushrooms, and it turned out great! I always keep packs of Chow Mein or Ramen Noodles in stock just in case of these last minute dinner ideas. Easy to fix, easy on the calories and carbs, and can go with about any type of meat or veggie. I used Maruchan Ramen Shrimp Flavored Noodles. To prepare the Noodles I used a medium size skillet and boiled one cup of water then added the Noodles. When all the water had been absorbed I added Mini Carrots, Shrimp, Mushrooms, 1 tablespoon of Cilantro Leaves, and 1 tablespoon of Light Soy Sauce.

Before I boiled the Noodles I prepared my 3 add on ingredients. I used Large Shrimp 19 - 25 Count that I boiled for 3 minutes, seasoned with Sea Salt. The Carrots were the Mini Carrots that I boiled also until the were fork tender and for the Mushrooms I used Baby Bella Mushrooms that I sauteed in Extra Virgin Olive Oil and seasoned with Sea Salt, Ground Smoked Cumin, and Parsley. It all came together for a healthy low calorie and low carb dinner! Love it when something unplanned comes together. For dessert later a bowl of Breyer's Carb Smart Vanilla Ice Cream topped with Dole Crushed Pineapple.

Bison Sliders w/ Crinkle Fries

Today's Menu: Bison Sliders w/ Crinkle Fries

Love that Bison! I had a 1 lb. package of Ground Bison Sirloin so I took enough out to make a couple of Bison Sliders. With the remaining Bison I made Bison Sloppy Joes out of it. Back to the Sliders. I made 2 of them seasoning them with McCormick Grinder Steakhouse Seasoning and lightly frying them in Extra Virgin Olive Oil, about medium rare. if you've never tried Bison it's time! They make the most delicious and juicy burgers you'll ever have. I topped them with Sauteed Mushrooms and  J&D's Baconnaise Lite Bacon-Flavored Spread and served on Peepperidge Farms Whole Grain Slider Buns. For those of you not familiar with J&D's Baconnaise Lite Bacon-Flavored Spread I left the description along with J&D's web site. It is what the name suggests Baconnaise, Bacon and Mayo. Goes great with any sandwich. I had a side of Ore Ida Crinkle Fries. For dessert later a Yoplait Delight 100 Calorie Chocolate Eclair Parfait.

J&D's Baconnaise Lite Bacon-Flavored Spread

Baconnaise - Lite. With 1/2 the fat and 1/3 fewer calories than regular mayonnaise, Baconnaise Lite will still give you tons of bacon flavor without the guilt. Great on sandwiches, salads, burgers, fries, dips and more! 15 fl oz.

Baconnaise™, available in Regular and Lite, is the newest addition to the J&D’s family.

We started with a customer request to make “spreadable bacon, namely mayonnaise.” At first, we were skeptical. Mostly because neither one of us really liked mayo much.

Then we started talking to people about whether a bacon-flavored mayonnaise would fly. We heard from a lot of people that just couldn’t wait for us to make it so they could use it on everything. They told us that sometimes they didn’t want salt, they just wanted bacon – so just mixing Bacon Salt and mayonnaise wouldn’t cut it. They wanted less mayo taste and more bacon taste – it should be Baconnaise, not “Mayocon” we heard. And many people requested a Lite and a Regular version, because some people loved Lite mayos and some people hated it (with a passion).

So we set out on another bacon-flavored adventure. Could we make a mayonnaise product that met our own high bacony standards? Could we get people as excited as they were for Bacon Salt (for which shrines have been built and songs have been written)?

It was at that point that we began a very unhealthy morning routine: eat a slice of bacon, try a version of Baconnaise, eat a slice of bacon. Compare. Improve. Repeat. Over the 6 months it took us to make Baconnaise, we estimate that we probably ate 20 pounds of bacon, consumed 5 large jars of mayonnaise and took 2 years off of our lives – looking for that exact and delicious flavor that we would be proud to call Baconnaise.

And then we did it. We tasted the smooth and slightly smoky taste that would henceforth be known as Baconnaise, The Ultimate Bacon Flavored Spread. We put it on sandwiches, salads, dips, fish, chicken, burgers and more. And they were all delicious!

But was it just us? We wanted to know. Had we ruined our taste buds eating so much bacon and mayo? So we had other people taste it. Our friends. Our family. The electrician. The box maker. The women at the deli. Anyone that came into our office. Random people on the street.
