Swiss and Chicken Sandwich w/ Baked Potato Puffs

Dinner Tonight: Swiss and Chicken Sandwich w/ Baked Potato Puffs






I toasted a couple of Eggo's and my morning cup of Bigelow Decaf Green Tea for Breakfast this
morning. After Breakfast I did a couple of loads of laundry for Mom. Then outside did the daily sweeping of the wooden deck and driveway. This morning it was 58 degrees, a little taste of Fall there! Another nice day out. A little warmer but still low humidity but the warmer temps and high humidity are on the way back. Had everything done for the day so I got the cart out and rode around the neighborhood for a while. For Dinner tonight it's a Swiss and Chicken Sandwich w/ Baked Potato Puffs.





It just felt like a Swiss/Chicken kind of day. I used the PERDUE® Crispy Chicken Strips, which I
just had the night before. To prepare it I preheated the oven to 425°F . Sprayed a small baking sheet with cooking spray. Placed frozen strips in single layer on baking sheet. Baked for 16 to 18 minutes, or until heated through. Internal temperature should reach 150°F – 160°F. Turn the Strips halfway through heating time. They come out golden brown and delicious!






I served them on an Aunt Millie's Reduced Calorie Hamburger Bun and topped the Chicken with a slice of Sargento Ultra Thin Swiss Cheese and some Hidden Valley Ranch/Buffalo Dressing.












Then for a side dish for my Sandwich I prepared some Alexia Potato Puffs. To prepare them; Preheat the oven to 425 degrees F. Arrange the frozen potatoes in a single layer on a baking sheet lined with foil. Baked for 25, stirring halfway through the cooking time. And we have another Keeper Potato Product! Browned up perfect with excellent seasoning. Perfect Potato side dish. For dessert later a Weight Watcher's Cookies and Cream Ice Cream Bar.

PRODUCT HANDLING
COOKING & PREP
Conventional/Toaster Oven (Preferred Methods) Preheat Oven to 425°F. Spray baking sheet with cooking spray. Place frozen strips in single layer on baking sheet. Bake on middle oven rack for 16 to 18 minutes, or until heated through. Internal temperature should reach 150°F – 160°F. Turn patties halfway through heating time. Microwave Oven Place 4-6 frozen strips in single layer on a microwave safe plate lined with paper towel. Heat, uncovered, on high for 2 to 3 minutes, turning halfway through heating time. Let stand for 1 to 2 minutes before serving.

You could tell it was going to be an uncomfortable day outside by 7:00 this morning, it was already 71 degrees and muggy out. They say we have a lot of rain moving in later, wait and see I guess. For Breakfast this morning I prepared 2 Jennie Turkey Sausages, 1 Egg Sunnyside Up, and 2 slices of toasted Healthy Life Whole Grain Bread (Lightly Buttered). Also had my morning cup of Bigelow Decaf Green Tea. Finished up some laundry for Mom and cleaned up around the house. After Lunch I headed to the Rehab Center to see Dad and also to a Birthday Party for my Aunt who is also over there. Back home and for Dinner tonight I prepared Baked Ham, Salami, and Swiss Mini Sub w/ Baked Crinkle Fries.


To make the sandwich I’ll need; Kroger 100% Whole Wheat Hoagie Rolls, Boar’s Head Black Forest Smoked Ham, Boar’s Head Salami, Sargento Ultra Thin Swiss Cheese, Kraft Lite Italian Dressing,
Kraft Reduced Fat Mayo w/ Olive Oil, and Extra Virgin Olive Oil (for brushing the tops of the buns).



I used Boar’s Head Smoke Master Beechwood Smoked Black Forest Ham. I had purchased the Ham at Kroger, on sale the other day. I love all the Boar’s Head Meats and Cheese. Always fresh and lower in calories and sodium, the Ham is 60 calories per serving. Then I also used Boar's Head Salami, 110 calories per serving. For the Cheese I used Sargento Ultra Thin Swiss Cheese which is only 40 calories per slice.To make the Sub I put a slathering of the Kraft Mayo on the bottom half of the Bun. Then layered the Ham, the Salami, Swiss Cheese, Kraft Lite Italian Dressing, and topped with the  top half of the Bun. To help the bun brown a bit I brushed the top of Bun with Extra Virgin Olive Oil. I had already preheated the oven to 400 degrees, I then laid the Sub on a small baking sheet and baked it for about 12 minutes. Took it out and the Sub was a light golden brown and the Cheese was melted. Love these Ham and Swiss Subs, along with the added Salami! I prepared one for Mom when she got home later.




I also served the Mini Sub with some Ore Ida Crinkle Fries, served with a side of Hunt's Ketchup. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Happy Labor Day everyone, hope you had a fun one! It's been real muggy out today, and a rain shower late afternoon which made it worse. Not much going on, went to the store early and that was about it. For dinner tonight I prepared a Baked Ham and Swiss Hoagie w/ Baked Fries.





I used Aunt Millie’s Deli Style Whole Grain Mini Sub Buns and then for the Ham I used Kroger Brand Private Selection Oven Roasted Rosemary Ham. This has become my favorite packaged Hams incredible taste and it’s 70 calories and 1 carb per serving. The slices are very thin so I used a double serving of it on the Hoagie. I topped it with a new spread/dressing, Hidden Valley Smoked Bacon Ranch Sandwich Spread. Word of caution, this stuff is so good you'll get a spoon and just eat from the jar! I think it's new, I had a coupon I got from Sunday's Paper and that's how I found out about it. When at Walmart earlier I seen they had it in stock. They had about 4 different varieties of it and I went with the Smoked Bacon Ranch Dressing. I also topped it with 2 slices of Sargento Ultra Thin Swiss Cheese.    





I preheated the oven to 350 degrees and while that was heating up I combined 1Tbsp. of Blue Bonnet Light Butter (Melted) , 1/2 tsp. dried onion, 1 tsp. Worcestershire sauce, 1 1/2 tsp. Poppy Seed dressing, and 1/2 tsp. yellow mustard. Mixed it to it was well combined. Poured the mixture over the sandwich. Covered it with foil and baked at 350 degrees for 15 minutes then remove foil and bake an additional 10 minutes to allow the rolls to crisp. Remove from oven to cool and served. Great recipe for Baked Ham and Swiss Sandwiches! The Poppy Seed Dressing Mixture that tops the Hoagie pulls everything together, all kinds of flavor! I also baked some of the Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, love these fries! For dessert later a bowl of fresh sliced Peaches.

Simple and Hearty Dinner tonight, New England Clam Chowder w/ Ham & Swiss Toasted Sandwich. I wasn't really feeling up to par today. I'm dealing with those painful Phantom Pains that amputees so commonly have to deal with. Sometimes they aren't too bad but today's has been extremely painful and it really just wears you out.

Anyway on to dinner! Dealing with the Phantom Pains I wanted something easy to prepare but I also wanted a hearty and hot meal. I used Campbell's Chunky New England Clam Chowder. Easy to prepare and a nice, thick, and tasty Clam Chowder. Easy to prepare as in open the can, empty into a small pot, and heat! 210 calories and 23 carbs.

For my Toasted Sandwich I used Kroger Private Selection Old fashioned Honey Cured Sliced Ham, Sargento Ultra Thin Swiss Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, and Toasted Healthy Life Whole Grain Bread. For dessert one of my favorite things to make Pillsbury Nut Quick Bread. A slice of the Nut Bread topped with a scoop of Breyer's Carb Smart Ice Cream.

A very simple but hearty dinner tonight. I had Grilled Turkey and Swiss Cheese Sandwich w/ Tomato Soup. I used Aunt Millie's Whole grain Bread topped with Oscar Mayer Carver Board Sliced Turkey, Sargento Ultra Thin Swiss Cheese, Amy's Organic Low Fat Cream of Tomato Soup. To grill the bread I used I Can't Believe It's Not Butter. Assembled the sandwich with a slice of Swiss, then Turkey, Kraft Reduced Fat w/ Olive Oil, and another slice of Swiss. Buttered the outside of the bread on bottom and top and grilled it in a small skillet till the cheese was starting to melt and bread was browned, flipped the sandwich one time.

The soup was Amy's Organic Low Fat Cream of Tomato. Love this soup! Great creamy flavor and only110 calories and 19 carbs. For dessert Breyer's Carb Smart Vanilla Ice Cream topped with Sliced Peaches. The Peaches are from South Carolina that we had frozen. These have got to be juiciest and most delicious Peaches i have ever had! We only have 1 bag left in the freezer so I'm going to enjoy these before their gone.
