Leftovers; Cumin Spiced Pork Tenderloin w/ Slow Cooker Parmesan Potatoes and Green Beans

Dinner Tonight: Leftovers; Cumin Spiced Pork Tenderloin w/ Slow Cooker Parmesan Potatoes and Green Beans

For Breakfast this morning I prepared a Chicken Sausage Patty Breakfast Sandwich. I toasted a Healthy Life Multi Grain English Muffin, heated up a al fresco Country Style Chicken Sausage Patty,
and topped it with a 1/2 slice of Kraft Deli Deluxe Sharp Cheddar Cheese. Love these Breakfast Sandwiches! Also I had my morning cup of Bigelow Decaf Green Tea. After Breakfast I went to Meijer for a couple of items. Then stopped by McDonald's to pick up Breakfast for Mom. Did some things around the house, inside and outside. For Dinner tonight Leftovers; I reheated the Cumin Spiced Pork Tenderloin w/ Slow Cooker Parmesan Potatoes and Green Beans.

That Pork Tenderloin was so delicious last night I wasn't about to let it go to waste! So I reheated everything and I had Dinner! I've the original post from last night for description, instructions, ans pictures. Till tomorrow!

I purchased the Pork Tenderloin from Kroger yesterday, a small one at just over 1 lb. To make the dish I’ll need; 1 tablespoon Extra Virgin Olive Oil, 1 pork Tenderloin, 1 tbsp Roasted Cumin, 1 tsp
Garlic Powder, 1 tsp Cumin Spiced Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 350°. Combine all the ingredients; rub it all over the pork. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 4 minutes, browning on all sides. From the stove to the oven; Bake at 400° for 10 minutes or until a thermometer registers 155° (slightly pink), turning after 7 minutes. Remove from the skillet into a platter or dish and let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which makes one incredible Crust on the Pork with the inside being tender and moist!

I prepared a Potato Recipe that I had not had in a while, Slow Cooker Parmesan Potatoes. Got the

I also baked a loaf of RiverRoad Bake House Garlic Oval Loaf Bread. This has become the family’s favorite Baked Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn. I had an Ice- Water to drink.

Cumin Spiced Pork Tenderloin w/ Slow Cooker Parmesan Potatoes and Green Beans

Dinner Tonight: Cumin Spiced Pork Tenderloin Slow Cooker Parmesan Potatoes Green Beans

I had a Poached Egg and a toasted slice of Aunt Millie’s Light Whole Grain Bread. Also had a cup of Bigelow Decaf Green Tea. Mostly cloudy and 73 degrees out today, but no rain! Did a little yard work. Got the leaf blower out and cleaned off the deck and driveway areas. Then swept the shed out and straightened it up. For Dinner tonight I prepared a Cumin Spiced Pork Tenderloin w/ Slow Cooker Parmesan Potatoes and Green Beans.

Fried Walleye Fillet w/ Fresh Green Beans and AppleWood Smoked Bacon Potato Casserole

Dinner Tonight: Fried Walleye Fillet w/ Fresh Green Beans and AppleWood Smoked Bacon Potato Casserole

To start the morning off I had a cup of Bigelow Decaf Green Tea. No appetite this morning. After my Tea and morning workout I went to McDonald's to pick up Breakfast for Mom. I headed back out and went to Menard's. I'm looking for a battery operated weed trimmer. Stopped off at the Post Office and mailed a few letters for Mom. Partly sunny and humid out today, high of 84 degrees. For Dinner tonight I prepared a Fried Walleye Fillet w/ Fresh Green Beans and AppleWood Smoked Bacon Potato Casserole.

While at Meijer a while back I bought a few fillets of Walleye. I had used a couple of them and had
the last one in the freezer. So I grabbed that bag and sit in the fridge overnight to thaw. To prepare it I first rinsed the fillet in cold water and patted it dry with paper towel. Then I seasoned it with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillet in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried it in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

For a side I cooked up the last bag of the fresh Green Beans. Mom’s Cousin dropped some more of them off to us that they had grown. Had to string them and break them up. Then boiled them with a piece of Fatback Pork in the kettle. Love these fresh Green Beans!

Then I also prepared a box of Idahoan Applewood Smoked Bacon Homestyle Casserole. Like the
other Idahoan dishes their a breeze to prepare and a delicious Potato Dish. And like the others this turned out fantastic! Very well seasoned, and you can taste that Applewood bacon flavor. I love my Potatoes! I also had a slice of Aunt Millie's Light Whole Grain Bread that I lightly Buttered with I Can't Believe It's Not Butter. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

Tuscan Seasoned Pork Medallions w/ Roasted Butternut Squash and Green Beans

Dinner Tonight: Tuscan Seasoned Pork Medallions w/ Roasted Butternut Squash and Bourbon and Fresh Green Beans

For Breakfast this morning I prepared a Poached Egg and served it on a toasted Healthy Life Multi
Grain English Muffin. I also had a cup of Bigelow Decaf Green Tea. Another day of scattered rain and high of 80 degrees. Plenty of rain, and we needed it. Cleaned the Kitchen and Pantry then after Lunch I did some work on my computer. Took the processor apart and cleaned out all the dust. Then ran scans and deleted a lot of old files and pictures. For Dinner tonight its – Tuscan Seasoned Pork Medallions w/ Roasted Butternut Squash and Bourbon and Fresh Green Beans.

On my last visit to Costco I had bought another package of the always delicious Tuscan Seasoned
Pork Loin Medallions. They cut it fresh for me and seasoned it as I shopped. The package had 20 slices in it and have them in the Freezer. So Last night I grabbed the last couple of packages out of the freezer and let them thaw overnight in the fridge.

To start I preheated the oven on 400 degrees. To prepare them I used a Cast Iron Skillet. Sprayed it
with Pam Cooking Spray and added 1 tablespoon of Extra Light Olive Oil and heated it on medium heat. I then lightly Salted the Pork with Sea Salt and a sprinkle of McCormick Dried Parsley. Added the Pork to the skillet and cooked it for 2 minutes a side, as it just started to brown. Then from the stove to the oven, love Cast Iron Skillets! I then backed them to a medium rare, 145 degrees in the center of the medallions using a meat thermometer. Pork Tenderloin is one of my favorites. The Pork is so tender and flavorful. Seasoned just right and so moist. I’ll have to get to Costco to pick up another package of these soon!

For a side dish I prepared some Roasted Butternut Squash, easy recipe for some delicious Butternut
Squash! I purchased 1 small package of Diced Butternut Squash at Kroger. They sell packages of it that they dice up. This is a lot easier than peeling and seeding one yourself, especially if you don’t have a good knife to cut it. I’ll need; 1 package of Diced Butternut Squash, Walnut Pieces, 1 tablespoon Extra Light Olive Oil, 1 1/2 teaspoons McCormick Grinder Sea Salt, and 1 teaspoon McCormick Grinder Peppercorn Medley.

To prepare it; Preheat the oven to 400 degrees F. Place the Squash on a sheet pan and drizzle with the
Olive Oil, Salt, and Peppercorn and toss well. Arrange the squash in one layer and roast for 25 to 30 minutes, until the Squash is tender, turning once with a spatula. And done, very easy to prepare. With the small amount of Seasoning and Olive Oil, it really brings out the flavor of Butternut Squash! The Walnuts work perfect with the Squash.

For another side I cooked up the last bag of the fresh Green Beans. Mom’s Cousin dropped some
more of them off to us that they had grown. Had to string them and break them up. Then boiled them with a piece of Fatback Pork in the kettle. Love these fresh Green Beans! For Dessert/Snack later a bowl of Skinny Pop - Pop Corn with a Diet 1/2 and 1/2 Snapple to drink.

Pork Facts….
One serving of pork is 3 ounces, or about the size of a deck of cards, according to the National Heart,
Lung and Blood Institute. An image of the portion size is important because a thick pork chop can be twice that size and without realizing it you can eat double the calories. You’ll get 137 calories and 4 grams of fat from a 3-ounce pork chop. Pork is similar to chicken, with 3 ounces of chicken breast containing 140 calories and 3 grams of fat. A pork chop has 65 milligrams of cholesterol, compared to 72 grams in chicken breast, but they both have just 1 gram of saturated fat.

Cast Iron Skillet Buffalo Hanging Steak w/ Baked Potato and Green Beans

Dinner Tonight: Cast Iron Skillet Buffalo Hanging Steak w/ Baked Potato and Green Beans

For Breakfast morning I toasted a Healthy Life Multi-Grain English Muffin that I buttered with I
Can't Believe It's Not Butter and had my morning cup of Bigelow Decaf Green Tea. After Breakfast I went to Home Depot to check out the Grills. They had a few on sale I wanted to check out. Didn't purchase a Grill but picked up Mom a couple of Hanging Baskets of Flowers for outside. Not much else going on today! For Dinner tonight I prepared a Cast Iron Skillet Buffalo Hanging Steak w/ Baked Potato and Green Beans.

Wild Idea Buffalo had their 16 oz. Hanging Tender Steaks on sale a weeks ago and I ordered a couple
of them. I had prepared 1 of them a few weeks ago and I’m having the other one for Dinner tonight. I had it in the freezer so I laid it in the fridge overnight to thaw. To season it I’ll need; McCormick Grinder Sea Salt and Grinder Peppercorn Medley, Dried Rosemary, and Extra Light Olive Oil.

For the Steak; I rinsed the Hanger Steak and pat it dry. Then I grabbed a sharp fillet knife and ran the
knife along one side of the sinew that runs down the center, creating two fillets. Remove the sinew from fillet that it remains attached to half of the fillet with knife. When I first found this recipe I didn’t know what the word “sinew” meant. I looked it up and the definition is; sinew – a piece of tough fibrous tissue uniting muscle to bone or bone to bone; a tendon or ligament. Learned something new! Which is why I enjoy cooking so much, you’re always learning something! To continue, next I rubbed the steaks with the Olive Oil, Sea Salt, Pepper, and Rosemary . Cover and allow it to rest at room temperature for 2 hours. I cut the other half of the Steak in half again and I’ll be having them for a couple of Steak and Eggs Breakfasts with them.

To start I got out a Cast Iron Skillet out. Sprayed it with Pam Cooking Spray and added a 1/2
tablespoon of Extra Light Olive Oil. Heated the Skillet on medium heat. Next I preheated the oven to 400 degrees. Then to start I pan fried it, on medium heat about 2 minutes per side. Starting out cooking it on the stove gave it a nice sear to start. Then I put the Skillet in the oven and roasted it until it had internal temperature of 145 degrees for a medium rare, and it came out perfect, love using Cast Iron Skillets; from the stove to the oven! After removing it from the oven I put the Steak on a plate and lest it rest for 5 minutes before serving. These Steaks are so moist and tender and have that distinct Wild idea Buffalo flavor. The juices off the Steak was just incredible! I also prepared some sauteed Mushrooms to go with Steak.

For a side I prepared a Baked Potato. Seasoned that with the McCormick Grinder Sea Salt and
Peppercorn Medley, and topped with I Can’t Believe It’s Not Butter.

Then for another side I prepared some fresh, just picked Green Beans. Mom's Cousin, who used to
bring me the Lake Okeechobee Crappie, called and said their Green Beans were in and come out and pick some up. We love fresh Green Beans! She gave us 2 large gallon plastic bags full. So we cooked them up for Dinner tonight. Nothing like fresh Green Beans! Then for Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Wild Idea Buffalo - 16 OZ. HANGING TENDER STEAK

Also known as the hanger steak, this is a coveted favorite of butchers. There is only one hanging tender steak per bison and it is cut from the primal plate. The deep rich flavor and delicate tenderness requires less cooking time. Roast whole or cut for medallions or kebabs. 1 lb.

BISON TENDERLOIN STEAKS AT THE WHITE HOUSE
Because South Dakota bison steaks were the center of the plate for the 2013 Inaugural Luncheon, I
was asked by a local newspaper to re-create the Bison portion of the menu. After reviewing the menu and the recipes, I decided to give the whole menu a try. Below are each of the recipes in their original form, with my notes in italics. It was great fun and a wonderful learning experience. I hope you enjoy some of the recipes too and have the opportunity to create your own Inaugural Meal, presidential or otherwise. Cheers! Jill (Makes 4 servings)

Bison Steaks

Due to a blizzard, outdoor grilling was not an option. I prepared steaks as listed below, but replaced minced garlic with garlic powder, because it will burn. I seared the tenderloin steaks in a 500*+ cast iron skillet for 3 minutes each top & bottom, and seared the sides until just brown, about a minute total. Remove steaks and cover, allowing to rest for 5 minutes before serving. I did not use hickory, as indoor cooking did not allow. Although I have not tried hickory smoked tenderloin, with the other flavors would not probably use.

Ingredients

4 - 5 oz. Petite Tenderloin Filets
1 - tablespoon extra virgin olive oil
1/4 - tablespoon garlic, minced
1 - tablespoon rosemary, fresh, rough chopped
1 - tablespoon kosher salt
1 - teaspoon cracked black pepper
1 - quart hickory wood chips, for grilling
Preparation

1 - Marinate bison steaks overnight with oil, garlic, rosemary and black pepper.
2 - Remove the steaks from the refrigerator, remove the large pieces of rosemary and then season with salt and pepper on all sides of bison.  Allow the steaks to sit at room temperature for 20 minutes to allow the salt to dilute and penetrate the meat.
3 - For grilling of the steaks, you will need to soak the wood chips in warm water for 30 minutes prior to grilling.  The wood chips should be added to your charcoal 5 minutes prior to grilling to allow them to burn and produce the necessary smoke you will need for the flavor in the steaks.
4 - Grill steaks on each side for approximately 5-8 minutes for a medium rare steak, depending on thickness of the pieces.  Remove from grill and allow to rest for 5 minutes prior to serving.
Wild Huckleberry Reduction

I made my own demi glace, used blueberries instead of huckleberries (very close to the same), but otherwise followed the recipe. The recipe states to use the blueberries when cooking and when finishing, I used them when cooking, but would add a few at the end for presentation. In making other like fruit sauces, I have found that tarter fruits such as chokecherries or plums, complement the grassiness of the meat a bit better, allowing the real meat flavor to shine through. I would also omit finishing the sauce with butter and chocolate. Although the sauce was very good, I might save it for a fuller bodied roast or cut.

Ingredients

4 ounces veal demi glace, can be purchased at gourmet markets or online
1 cup huckleberries, fresh (when in season) or frozen
1 teaspoon bitter chocolate
1/2 tablespoon butter
2 cups port wine
1 cup mirepoix, (medium dice of carrot, celery, onion and leek)
1/2 tablespoon extra virgin olive oil
Preparation

1 - In a heavy sauce pot, sauté mirepoix for 8 minutes on med heat.
2 - Add the port wine, 1 cup of the huckleberries and demi glace allowing this to reduce by half.  Strain through a sieve and return to a clean sauce pot.
3 - Prior to serving bring sauce to simmer and add the chocolate, huckleberries and butter.  Serve
Pureed Butternut Squash

This dish turned out very nicely. I followed per instructions and seasoned with a little more salt and a squeeze of lemon juice to liven it up.

Ingredients

1/2 piece butternut squash, approximately 2 pounds, roasted
1 tablespoon butter
1 pinch kosher salt
1 pinch white pepper
1/2 tablespoon maple syrup, medium amber
Preparation

1 - Pre heat oven to 400º F, place squash with cut half facing down on a sheet pan in oven and cook until tender, approximately 25 minutes.
2 - Remove from oven and allow to cool for 5 minutes.  Scoop flesh into a blender using a spoon.
3 - Place the butter, maple syrup, salt and pepper into blender.  Puree on high speed until smooth, adjusting the seasoning as needed.  Place puree in a small sauce pot and cover.
Baby Golden Beets and Green Beans

Unfortunately and fortunately I was unable to find golden beets or fresh green beans. With all of the other flavors going on, my palate was happy for the simplicity of blanched asparagus. I used a method of preparation from Mark Bittman. Peel asparagus stalks, reserve peelings, slice stalks on the bias, leaving tips whole. I did blanch the stalks and tips for 30 seconds in salted, boiling water. Toss asparagus, including pealing with a drizzle of olive oil. Delicious and easy!

Ingredients

8 each baby golden beets, peeled, cut in half
4 ounces green beans, ends snipped, cut 1 inch on bias
1/2 tablespoon extra virgin olive oil
1/2 tablespoon shallot, minced
1/2 tablespoon kosher salt
1 pinch white pepper
2 quarts water
Preparation

1 - Bring 2 quarts of water to a boil and add ½ tablespoon kosher salt.
2 - Place beets into water gently and allow to cook for 5 minutes or until tender.  Remove beets using a strainer and set in a bowl.
3 - Allow water to return to a boil and gently add the green beans for 3-4 minutes until tender.  Remove the beans from the pot using a strainer and add to the bowl with the beets.
4 - Place olive oil in a sauté pan on medium heat, add the shallots to cook until tender. Add the beets and beans and season with salt and pepper to taste.
Red Potato Horseradish Cake

I prepared as recipe suggested, but thought the salt and cream might be a little much, so I added salt to taste, (about 1½ tsp.) during the mashing and used only 2 Tb. of the cream. I did press into a cake and broil as recommended. This was a good dish, but preferred it as a mash, as it left it a bit cleaner in taste .

Ingredients

1 pound red potato, medium sized, cut 1 inch dice, skin on
1 tablespoon prepared horseradish
1/2 tablespoon Dijon mustard, whole grain
3 tablespoons butter
1/2 cup heavy cream
2 tablespoons kosher salt
1 teaspoon white pepper
1/4 cup chives
1/2 gallon water
1 cup micro greens, available at specialty markets
Preparation

1 - Place potatoes, ¼ to ½ gal water (or just enough to cover potatoes) and 1 tablespoon salt in a heavy bottom pot and bring to a boil.
2 - Allow to simmer for approximately 10-15 minutes until tender.  Drain water and allow to sit in strainer for 5 minutes to allow all water to drain.
3 - Place potatoes, Dijon, horseradish, 2 tablespoons butter, heavy cream, remaining salt, pepper and chives back into the same pot you used to boil potatoes.
4 - With a large kitchen spoon, stir and smash potatoes until mixed but still chunky.  Adjust seasoning with salt and pepper.
5 - Using an ice cream scoop, portion a 3 oz. scoop onto a greased baking sheet.  Form potatoes into a cake shape and top with remaining 1 tablespoon of butter dividing equally among the 10 cakes.
6 - Place potatoes under the broiler for 4-5 minutes or until golden brown
Strawberry Preserve and Red Cabbage

This sounded so curious to me. The end result was very good, and complimented all of the other dishes nicely. After cooking for two hours, I became a bit impatient and turned the heat up to speed things along. My total time was 2.5 hours. A sweet and tangy flavor, that was good warm, but delicious room temp or chilled.

Ingredients

1/4 red cabbage, shaved thin
1 pint apple cider vinegar
1 cup sugar
2 quarts water
1/4 cup strawberry preserves
1/2 tablespoon kosher salt
Preparation

1 - Place the cabbage, vinegar, sugar and water in large heavy bottom pot.
2 - Bring liquid to a boil then reduce heat and simmer for 2 to 3 hours or until liquid has reduced to a syrup like consistency, stirring occasionally.
3 - Add the strawberry preserves to the cabbage and stir until fully incorporated.  Adjust sweetness with salt if too sweet to your liking.

Catfish Nuggets w/ Potato Pancakes and Cut Green Beans

Dinner Tonight: Catfish Nuggets w/ Potato Pancakes and Cut Green Beans

For Breakfast this morning I fried up a package of Thin Cut Breakfast Pork Chops. I purchased these at Meijer. I had been wanting something different and I saw the Chops. So I seasoned them with Sea
Slat and Ground Black Pepper and then put a light coat of flour on them. I sprayed a large skillet Pam Cooking Spray and added a 1/2 tablespoon of Extra Light Olive Oil. Fried them on medium heat for 2 minutes per side, and done! To go with the Chops I fried some Simply Potatoes Shredded Hash Browns, Scrambled some Eggs, and toasted slices of Aunt Millie's Light Whole Grain Bread. I skipped the Eggs, they were for Mom and Dad. Cloudy and 65 degrees today, rain moved in later in the day. After Lunch I went to a Medical service Warehouse and picked up a wheel chair for Dad. He really needed this. Back home just did some odds and ends jobs around the house. For Dinner tonight one of my favorites, Catfish Nuggets w/ Potato Pancakes and Cut Green Beans.

Picked up the Catfish Nuggets at Meijer yesterday. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty. You can bake Catfish but for me you just can’t beat fried Catfish.

The whole family love’s Potato Pancakes! So for a side I prepared some Manischewitz Potato
Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes).

Next I heated up a can of Del Monte Cut Green Beans. Just open the can and heat the beans up in a small sauce pan. The Beans are done! I also baked a loaf of Pillsbury French Bread, Mom has to have Bread with every meal. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Catfish
The most commonly eaten species in the United States are the channel catfish and the blue catfish, both of which are common in the wild and increasingly widely farmed. Farm-raised catfish became such a staple of the diet of the United States that on 25 June 1987, President Ronald Reagan established National Catfish Day to recognize “the value of farm-raised catfish.”

Catfish is eaten in a variety of ways. In Europe it is often cooked in similar ways to carp, but in the United States it is popularly crumbled with cornmeal and fried.… Wikipedia

Cumin Spiced Pork Chop w/ Mashed Potatoes, Green Beans, and Multi Grain Bread

Dinner Tonight: Cumin Spiced Pork Chop w/ Mashed Potatoes, Green Beans, and Baked Muti Grain Bread

To start my morning off I had Steak and Egg. I fried up a SayersBrook 4 oz. Bison Filet Mignon. I just seasoned it with some McCormick Grinder Sea Salt and Peppercorn Medley. I then grabbed a small skillet, sprayed it with Pam Cooking Spray, and added a 1/2 tablespoon of Extra Light Olive Oil. Heated it on medium heat. Fried the first side 3 minutes and flipped it over and cooked it another 2 minutes. I it came out a perfect medium rare! It was so tender and juicy. Then I fried up a Sunny Side Egg and toasted a couple of slices of Healthy Life Whole Grain Bread. Sure tough to beat a Steak and Egg Breakfast! Also, as usual, my morning cup of Bigelow Decaf Green Tea. Since I've been drinking Green Tea, 11 years ago, I've never had a bad check-up on my Sugar. Some say it helps and others say not enough evidence. All I know is my Diabetes 2 is under control!

Sunny and 66 degrees for our high today, beautiful Fall Day! After Breakfast I headed to Meijer, I need some some Jennie - O Turkey Products and Meijer is the only store that sells a wide variety of the Jennie - O products. Not much else going on today. So for Dinner tonight I prepared a Cumin Spiced Pork Chop w/ Mashed Potatoes, Green Beans, and Baked Multi Grain Bread.

I picked the Chop up at Meijer earlier today. I really love the Meijer selection and quality of all their meats, and all their products and produce.

So to prepare my Chops I’ll need; The Cumin Spiced Rub which consists of; 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 5 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork.

For one side I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better.

For a second side I heated up a can of Del Monte Reduced Sodium Cut Green Beans, love my beans! Then I also baked a loaf of La Brea Multi Grain Bread. For Dessert later a Weight Watcher's Cookies and Cream Ice Cream Bar.

Pork Facts….

One serving of pork is 3 ounces, or about the size of a deck of cards, according to the National Heart, Lung and
Blood Institute.
