Buffalo Burger Pattie Melt w/ Baked Fries

Dinner Tonight: Buffalo Burger Pattie Melt w/ Baked Fries

Heavy rains and thunderstorms throughout the night, made a perfect night of sleeping! This morning
the rains had stopped and the sun was out, and a bit cooler today. Had a light Breakfast and my morning workout then had to go pick my car up, had new front brakes installed. Stopped by Kroger on the way home for Milk, Bread, and some Boar's Head Ham. Back home had a lot of leaves and branches to pick up around the house from the storm last night, no damage anywhere though. For dinner tonight a Melted Delight, I prepared a Buffalo Burger Pattie Melt w/ Baked Fries.

I used my favorite Buffalo, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers. Just love these Buffalo Burgers; meaty, juicy and just flat out delicious! Preheated up a small skillet that I sprayed with Pam Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it about 3 minutes per side, and done. As my Burger was getting done I toasted 2 slices of Klosterman Wheat Bread and put just a dab of I Can't Believe It's Not Butter on both slices. I served my Buffalo Burger on the Toasted Wheat Bread and topped it with a slice of Simple Truth Sliced Gouda Cheese and topped with French's Spicy Brown Mustard. One delicious Sandwich! Anytime when I can use Buffalo I use it, and it always turns out delicious!

For a side I baked up some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Prepare for a whole new level of burger. Conveniently pre-made into one-third pound patties that are ever so grillable. Dinner ready. Each pack is 1 pound with 3 – 1/3 Lb patties.

Fish Sandwich w/ Baked Fries

Dinner Tonight: Fish Sandwich w/ Baked Fries

It's been one rainy day in the neighborhood today. It was in the 60's with a little burst of sunshine every now and then between storms. After getting a few things done around the house I ventured to Kroger. I was able to get in without getting rained on but leaving was an adventure, it was pouring the rain. By the time I got everything loaded in the car I was soaked, and would have been a lot worse if not for some passing West Chester Firemen. They helped me load everything and took the electric cart back in for me. And Kroger was packed, every register was opened and had several people in line at each of them. I guess people were getting their groceries for the upcoming Easter. So tonight for dinner I'm having a Fish Sandwich w/ Baked Fries.

A one pan meal!

I used a Gorton’s Fish Fillet that I baked along with some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Baked both at the same time both at 400 degrees. I served the Gorton’s Fish on a Kroger Lite Wheat Bun and topped the Fish with just a little Tarter Sauce and a slice of Sargento Ultra Thin Sharp Cheddar Cheese. With the Fries I had some Hunt’s Ketchup for dipping. Frozen foods sure come in handy for last minute meals or on those days where you just don't feel like cooking a big meal! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt. Later!

Ground Pork Burger w/ Baked Fries

Dinner Tonight: Ground Pork Burger w/ Baked Fries

It's been a cold and rainy day here all day. Possible snow flurries the next couple of days, come on Mother Nature enough is enough! Had to go the bank and then pick up a few groceries for Mom and back home, miserable outside. For dinner tonight I prepared a Ground Pork Burger w/ Baked Fries.

I had bought a 1 lb. package of Kroger Ground Pork at Kroger a couple of weeks ago and made 5 Pork Burgers out of it, freezing them. I grabbed one out of the freezer and let it thaw in the fridge overnight. To prepare it I seasoned it McCormick Grinder Sea salt and Black Peppercorn. Then pan fried it in a small skillet in Extra Virgin Olive Oil, 4 1/2 minutes per side. Served it on a Kroger Lite Wheat Bun and topped it with a slice of Simple Truth Muenster Cheese. The Ground Pork is always so moist and flavorful, again Kroger has some of the best Pork Products around. I also baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, with a side of Hunt's Ketchup for dipping. I also had some Teriyaki Marinated Mushrooms on the side. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Cubed Pork Steak Sandwich w/ Baked Fries

Dinner Tonight: Cubed Pork Steak Sandwich w/ Baked Fries

Not too bad out this morning, compared to what we've been having. Plenty of sunshine and in the 20's today. Had to go to the family Doctor for my 4 month checkup, on sugar, cholesterol, and such. Then ran an errand for Mom and stopped by Walmart, needed a package of the Aunt Mille's Reduced Calories Hamburger Buns. Walmart is the only store that carries them now for some reason. Back home and not a whole lot going on., some light housework was it. Prepared a Cubed Pork Steak Sandwich w/ Baked Fries for dinner tonight.

I had bought a couple of packages of Cubed Pork Steak at Kroger last week, I froze one and had the other package last week. Got the other package out and let it thaw overnight in the fridge. To prepare it I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn, a shake of Garlic Powder, Hungarian Paprika, and a couple of shakes of Dried Thyme. Then rolled it in flour, shaking off the excess. Next I heated up a medium size skillet, that I drizzled with Extra Virgin Olive Oil, on medium high heat. Added my Cubed Pork and fried both sides about 4 minutes per side, till each side was golden brown. As the previous package of Cubed Pork it came out delicious! Moist and very tender with a fantastic flavor from the Paprika and all the other ingredients. Served this one as a Sandwich using a Aunt Millie's Reduced Calorie Whole Grain Bun.

For a side I baked some Ore Ida Steak Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert/snack later I had some thin slices of Boar's Head Beef Salami along with some Ritz Whole Wheat Crackers.

Buffalo Burger Pattie Melt w/ Baked Fries

Dinner Tonight: Buffalo Burger Pattie Melt w/ Baked Fries

Ohhh Baby it's cold out! The temperature is in the low 20's but we have a real strong cold wind blowing which takes the wind  chill around 10 degrees. Good Super Bowl last night, came down to the final seconds before New England won it. Did a couple of loads of laundry for Mom and ran the vacuum in the afternoon. I had planned a dish that has Shrimp in it but once again, I forgot to lay an item out to thaw! So instead for dinner tonight I prepared a  Buffalo Burger Pattie Melt w/ Baked Fries

As my Burger was getting done I toasted 2 slices of Klosterman Wheat Bread. I served my Buffalo Burger on the Toasted Wheat Bread and topped it with a slice of Kroger Simple Truth Muenster Cheese and just a dab of Kraft Reduced Mayo w/ Olive Oil. One delicious Sandwich! Anytime when I can use Buffalo I do it and it always turns out delicious!

Seasoned Tilapia Sandwich w/ Baked Cracked Black Pepper and Sea Salt Country Style Fries

Dinner Tonight: Seasoned Tilapia Sandwich w/ Baked Cracked Black Pepper and Sea Salt Country Style Fries

Winter like weather has returned to our area. We've had a run of some easy Winter Days, that's ended. Windy, cold and an inch of snow on the ground. Could be a lot worse though, like along the Eastern Sea Board. Cleaned around the house and did a small load of laundry for Mom and that was it for my day. For dinner tonight it's a Seasoned Tilapia Sandwich w/ Baked Cracked Black Pepper and Sea Salt Country Style Fries.

I had purchased the Tilapia on my last visit to Costco and had them in the freezer. Tilapia is good to have in the freezer, their easily thawed, easy to prepare , and delicious! I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Seasoned Coating Mix. Pan fried them in Extra Virgin Olive Oil about 3 minutes per side. Served it on a Meijer Bakery Perfection Deli Mini Wheat Sub Bun.

Seasoned Haddock and Baked Fries

Dinner Tonight: Seasoned Haddock and Baked Fries

We finally got a break from the cold weather, sunny and about 55 degrees! Really a beautiful day out. Took my Mom's car to the local car wash and had it washed and cleaned on the inside for her and then came back and took my car up to be washed. Back home and got caught up on a few things around the house. For Dinner tonight I prepared Seasoned Haddock and Baked Fries.

I had the Haddock in the freezer so I let it thaw overnight in the fridge. To prepare it I rinsed the fillet in cold water and patted dry with a paper towel. Then sliced the fillet into smaller pieces. I then seasoned it with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Seasoned Coating Mix. Shook until all the pieces were well coated and Shook off the excess and set aside. I then pan fried them in Extra Virgin Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Coating Mix, the perfect combo. Haddock is such a meaty mild tasting fish. I love Seafood, I think I could eat it every day!

Extra Sharp Cheddar and Mushroom Buffalo Burger w/ Baked Fries

Today’s Menu: Extra Sharp Cheddar and Mushroom Buffalo Burger w/ Baked Fries

Still waiting for that slight warm up, another cold and windy day. Sort of busy today. My Birthday was in late December and forgot that my Driver's License expired. So this morning at 8:00 I was in line at our local BMV to get it renewed. I was the third person in so it didn't take long. Has anyone ever had a good picture taken for their Driver's License? Mine always turn out like a mug shot! Anyway from there I ran an errand for Mom, went to the Bank, filled the car with gas, and off to Kroger. It kept me busy today. For dinner my favorite Burger, Extra Sharp Cheddar and Mushroom Buffalo Burger w/ Baked Fries.

I then pan fried it, in Extra Virgin Olive Oil, about 3 minutes per side, and done! I topped it with a slice of Sargento Ultra Thin Extra Sharp Cheddar and Sauteed Sliced Mushrooms, served it on a Healthy Life Whole Grain Bun. Love these Wild Idea Buffalo Burgers.

Dinner Tonight: Fish Sandwich w/ Baked Fries

Another frigid morning here, -1 degrees! The wind chill dropped it to -11. They are saying by the weekend it should at least be at 32 degrees, heat wave baby! Well with the weather outside I stayed inside, Did a load of laundry and then caught up on some shows I had recorded and some reading. For Breakfast It was Turkey Goetta, 1 Egg, and Wheat Toast. Lunch was a Turkey Meatloaf Sandwich on a Whole Grain Bun and for a last minute dinner substitute, a Fish sandwich w/ Baked Fries

I had a dinner planned out but about the time I was getting ready to prepare dinner I noticed that my car was leaking antifreeze, not a good time to be leaking either with our weather! I had taken a bag of garbage out and noticed it leaking. So I took to the mechanic we always used and dropped it off. So to avoid an over crowded kitchen, Mom was wanting to prepare her dinner for her and Dad, I wanted something quickly to prepare. I used a Gorton's Fish Sandwich Fillet that I baked along with some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Baked both at the same time.

I served the Gorton's Fish on a Healthy Life Whole Grain Bun and topped the Fish with a slice of Sargento Ultra Thin Sharp Cheddar Cheese. With the Fries I had some Hunt's Ketchup for dipping. Frozen foods sure come in handy for last minute meals! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt. Later!

Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries

Dinner Tonight: Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries

The morning started of above freezing, but still a cold breeze blowing. Not a bad day out though. After Breakfast I headed to Kroger and while there picked up a small Christmas Pine Tree. From Kroger to Meijer and finished up my Christmas Shopping for theseason! For Dinner tonight it’s a Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries.

Kroger had Orange Roughy on sale so I picked up a fillet for Dinner tonight. To prepare the Orange Roughy Fillet; start by rinsing the fillet off in cold water and pat dry with a paper towel. Then season it with Sea Salt and Pepper. Combine flour and Hungarian Sweet Paprika mix well, then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dip floured fillet into Egg Beater’s, allowing excess to drip off. Then roll the fillets in the Shake and Bake Seasoned Panko. Meanwhile, heat a tablespoon of Extra Virgin Olive Oil in skillet and place the fillets in the oil and fry 4 minutes each side. It comes out a beautiful golden brown on the outside and a moist flavorful fillet on the inside! This breading will work well with almost all Fish. I served it on an Kroger Private Selection Onion Roll Bun, haven't had this Buns in forever!

To go with my Fish Sandwich I baked up some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Love Potatoes and love these fries! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Grilled Cheese and Baked Fries

Dinner Tonight: Grilled Cheese and Baked Fries

A little more energy and strength today but the big news is Mom and Dad. Both are doing much, much better today, and about time! Dad was released from the hospital late this afternoon. From people I've talked to, this strain of flu going around keeping everyone down and out for a while. I'll be glad when it passes. Been a cloudy, windy, and cold day out today. Went to Walgreen for Mom and back home. For dinner tonight it’s a Grilled Cheese and Baked Fries.

A light comfort food sounded good, real easy to prepare and delicious too! I used 3 slices of Sargento Ultra Thin Sharp Cheddar. Then for my Bread I used Klosterman Wheat Bread, 70 calories and 13 net carbs for 2 slices. Then to prepare it I got out the Flat Griddle Pan, heated it up on medium heat and coated it with a pat of I Can’t Believe It’s Not Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. Nothing like a good and toasty  Grilled Cheese on a cold Winters day!

Then for a side for my Grilled Cheese I baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Dinner Tonight: Crab Cake Slider w/ Baked Fries

Winter is here, I'm here to tell you! Went out to get the morning papers and it was 21 degrees with a wind chill of 15 degrees! Oh where are those beautiful sunny days of Fall. Still no snow but they say there's a chance overnight and Sunday to get some. Snow is no fun if your an amputee like myself, makes it a bit rough! Stopped by Kroger to pick up a few items for Mom and myself and back home for the day. For dinner tonight another favorite, Crab Cake Slider w/ Baked FriesCrab Cake Slider w/ Baked Fries.

I’m using Kroger Private Selection Maryland Style Crab Cakes. They come frozen and there’s 2 to a box. To prepare them just preheat the oven on 400 degrees and bake for 30 minutes. Nothing beats a fresh made Crab Cake, but these are too good to be frozen! They’re just the right size, about 3.5 ounces each, and full of flavor and meaty. Baked them for about 30 minutes and they were done. Served then on a Pepperidge Farm Wheat Slider Buns. Topped them with Louisiana Remoulade Dressing and Boston Bibb Lettuce. This makes one delicious Slider! The taste of the Crab Meat and Remoulade Sauce,if you want one flavorful Remoulade Sauce you have to try the LOUISIANA Remoulade Dressing. This sauce is incredible and is good on about anything you put it on!

Then I also prepared one of my favorite sides, Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Love these Fries, they’re 130 calories and 20 carbs per serving. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

LOUISIANA Remoulade Dressing

LOUISIANA Remoulade Dressing is typically a cold dressing served with chilled boiled seafood. This dressing combines the perfect blend of soybean oil, horseradish, egg yolks, tomato paste, onion, garlic and other spices. Use it as a dipping sauce for your favorite seafoods or meats.
