Cumin Spiced Pork Loin Chops w/ Savory Herb Potatoes and Golden Hominy

Dinner Tonight: Cumin Spiced Pork Loin Chops w/ Savory Herb Potatoes and Golden Hominy

For Breakfast this morning I made a Breakfast Sandwich. I heated an al fresco Chicken Sausage Patty. Then toasted a Thomas 100 Calorie Multi Grain English Muffin and used a 1/2 of slice Boar's
Head Vermont Yellow Cheese. Excellent Breakfast Sandwich! I also had a cup of Bigelow Decaf Green Tea. The heavy rains have returned! Rain and Thunderstorms most of the day, a high of 57 degrees. All this rain is going to cause more flooding. I took Mom to get her hair done and after dropping her off I went over to see a friend of mine. He's been home bound with a broken leg. He's doing good, but has a bad case of the Cabin Fever! Back home not a lot going on, just did a few things around the house. For Dinner tonight its Cumin Spiced Pork Loin Chops w/ Savory Herb Potatoes and Golden Hominy.

I had bought a package of Center Cut Pork Loin Chops from Meijer a week or so ago and had broke the package down and had the individual Chops in plastic bags, in the freezer. I grabbed a couple of the bags and laid them in the fridge overnight to thaw. So to prepare my Chops I’ll need; The Cumin
Spiced Rub which consists of; 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. I always have some of the Rub made up in a large Spice Jar I have To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 5 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork.

For one side dish I prepared the Little Potato Co. Savory Herb Potatoes. We love these! The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good item to have in the pantry! So easy to prepare and no clean up.

For a second side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy. For those that never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. My favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish! For Dessert/Snack later a bowl of Skinny Pop - Pop Corn along with a Diet Peach Snapple to drink.

Pork Facts….
One serving of pork is 3 ounces, or about the size of a deck of cards, according to the National Heart,
Lung and Blood Institute. An image of the portion size is important because a thick pork chop can be twice that size and without realizing it you can eat double the calories. You’ll get 137 calories and 4 grams of fat from a 3-ounce pork chop. Pork is similar to chicken, with 3 ounces of chicken breast containing 140 calories and 3 grams of fat. A pork chop has 65 milligrams of cholesterol, compared to 72 grams in chicken breast, but they both have just 1 gram of saturated fat.

the Little Potato Company – Savory Herb
HERBS AND SPICES, WITH A HINT OF BACON

Evoking all the cozy feelings of home-cooking, the Savory Herb flavor combines a fun mix of red and yellow Creamer potatoes with a comforting blend of savory herbs, earthy spices and just a hint of bacon flavor.

Simply pop the tray in the microwave for five minutes and mix in the seasoning pack and voila! – you have a nutritious taste of home. This is cozy dish on its own, or combine it with other ingredients to take your meal to a whole new level of down-home goodness.

Cumin Spiced Pork Chop w/ Mashed Potatoes, and Mixed Chili Beans

Dinner Tonight: Cumin Spiced Pork Chop w/ Mashed Potatoes, and Mixed Chili Beans

To start my morning off I prepared French Toast and Sausage. For the French Toast I used Aunt Millie’s Light Whole Grain Bread, Egg Beater’s, Ground Nutmeg, and Ground Cinnamon. For the

Sausage I used Johnsonville Turkey Sausage Links. I also had my morning cup of Bigelow Decaf
Green Tea. Rain almost all day on and off, 46 degrees. Good day to stay in, which I needed. Up most of the night battling the Phantom Pains. They started about 9:00 last night and didn't let up until about 11:00 this morning. It was one long night! So after the Phantom Pains stopped I caught up on some much needed sleep. For Dinner tonight I prepared a Cumin Spiced Pork Chop w/ Mashed Potatoes, and Mixed Chili Beans.

On my last visit to Meijer I picked up a Bone – In Pork Loin Chop and had it in the freezer. I grabbed the Chop from the freezer and let it thaw overnight in the fridge. Then to prepare my Chop I’ll need;
The Cumin Spiced Rub which consists of 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 20 minutes until the thermometer registered 150, turning after 5 minutes. Let stand 10 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork!

To go with the Chop I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes
and serve, just as good as homemade, if not better. I Love the combination of Mashed Potatoes and Beans!

For a 2nd side I prepared a can of Bush’s Mixed Chili Beans – Kidney and Pinto Beans in Mild Chili Sauce. For me you just can’t beat Bush’s Beans. I’ve prepared these several times now and really
love them, nice combo using the Kidney and Pinto Beans. To prepare them just empty the Beans into a small sauce pan. Cover and heat to a simmer. Done! The only store I have found them is Meijer so far. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Hand-Chopped Steak Burgers with Caramelized Fennel
Chopping steak instead of using ground beef to make these healthy burgers gives them a more toothsome texture. Come summer, give this a cooler spin by tossing the raw fennel with 2 tablespoons vinegar and 1 tablespoon oil to serve alongside.........

Puttanesca Pork Chops
This flavorful pork chop dinner recipe is proof that bold Neapolitan puttanesca sauce can liven up more than just spaghetti. Unlike brined olives like Kalamatas, oil-cured olives have a meatier bite because they're coated in salt then macerated in oil. Look for them on olive bars or with other Italian products. Serve with sautéed broccoli rabe and whole-wheat orzo..........

Slow-Cooker Braised Beef with Carrots & Turnips
The spice blend in this healthy beef stew recipe—cinnamon, allspice and cloves—may conjure images of apple pie, but the combo is a great fit in savory applications too. Serve over creamy polenta or buttered whole-wheat egg noodles............

Collard Greens
Collard greens are meltingly tender when cooked for a long period of time. Smoked turkey in place of bacon adds the traditional smoky taste...........

Blackberry BBQ Pork Chops with Collards and Corn
Steaming corn right on top of the collards saves time and dirties fewer pots in this easy dinner recipe. Skip bottled BBQ sauce and mash blackberries with some pantry staples to yield a finger-licking-good barbecue sauce for the juicy pork chops. To make it even faster, grab a bag of prechopped collards from the produce section............

Sweet  Spicy Steam-Fried Collard Greens
In a departure from typical Southern-style all-day stewed greens, these collards are sautéed first with a small amount of fat and then steamed, meaning tender-crisp healthy greens on the table in under a half hour.

Kitchen Hint of the Day!

Bone-in or boneless Chops when grilling.........

I always try to use a Thicker Chop when preparing Pork Chops. Center-cut pork chops are more tender and turn out to be a juicy grilled pork chop. Thicker pork chops also prevent overcooking, which will lead to dry, not moist, grilled pork chops. Go Big!

Cumin Spiced Pork Chop w/ Mashed Potatoes and Mixed Chili Beans

Dinner Tonight: Cumin Spiced Pork Chop w/ Mashed Potatoes and Mixed Chili Beans

For Breakfast I prepared a Thin Cut Breakfast Pork Chop. I also prepared some Simply Potatoes
Shredded Hash Browns, toasted a slice of Aunt Millie's Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Love those Chops. After Breakfast I went to Kroger to pick up a few items for a Church Service later today at our Church. I then stopped at McDonald's and picked up Breakfast for Mom. Mom's Cataract Surgery went good, she has the the left eye done in a week. I dropped off the food at the Church and then did a couple of errands. It cooled down a bit and rain moved in, a high of 82 degrees and still humid. For Dinner tonight I prepared a Cumin Spiced Pork Chop w/ Mashed Potatoes and Mixed Chili Beans.

I had picked a Pork Tenderloin Center Cut Pork Chop at Kroger earlier. So to prepare my Chop I’ll
need; The Cumin Spiced Rub which consists of; 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper.

For one side I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better.

For a 2nd side I prepared a can of Bush’s Mixed Chili Beans – Kidney and Pinto Beans in Mild Chili
Sauce. These are fairly new and as all the Bush’s Bean Products Delicious! For me you just can’t beat Bush’s Beans. I’ve prepared these a few times now and really love them, nice combo using the Kidney and Pinto Beans. To prepare them just empty the Beans into a small sauce pan. Cover and heat to a simmer. Done! Being fairly new they are sort of hard to find. The only store I have found them is Meijer so far. I had also baked a loaf of RiverRoad Bake House Multi Grain Oval Loaf Bread. This has become the family’s favorite Baked Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

For a side dish. I prepared a package of Stouffer’s Harvest Apples, haven't had this in a while.  Easy
to prepare; It comes in a microwavable tray. Microwave on high for 6 minutes, let cool and serve! Apples and Pork Chops are always go great together. This is a good one to have in the freezer!

I prepared Roasted Asparagus for one side. To prepare the Asparagus I just needed Extra Virgin Olive Oil, Cloves Roasted Asparagus Garlic (minced), Sea Salt, Freshly grated Black Pepper, Lemon Juice, and Shredded Parmesan Cheese. Rinse clean the asparagus. Break the tough ends off of the asparagus
and discard. Lay the asparagus spears out in a single layer in a baking dish or a foil-covered roasting pan. Drizzle olive oil over the spears, roll the asparagus back and forth until they are all covered with a thin layer of olive oil. (Alternatively you can put the asparagus and oil in a plastic bag, and rub the bag so that the oil gets evenly distributed.) Sprinkle with minced garlic, salt, and pepper. Rub over the asparagus so that they are evenly seasoned. Place pan in oven and cook for approximately 8-10 minutes, depending on how thick your asparagus spears are, until tender when pierced with a fork. Drizzle with a little fresh lemon juice and shredded Parm Cheese before serving. For Dessert/Snack later a bowl of Skinny Pop - Pop Corn and a Coke Zero to drink.

Pork Facts….
One serving of pork is 3 ounces, or about the size of a deck of cards, according to the National Heart, Lung and Blood Institute.

Stouffer's Harvest Apples

Cumin Spiced Pork Chop w/ Seasoned Pinto Beans and Mashed Potatoes

Dinner Tonight Cumin Spiced Pork Chop w/ Seasoned Pinto Beans and Mashed Potatoes

For Breakfast on this morning I toasted a Healthy Life Whole Grain English Muffin. I topped it with
a Poached Egg and I also had a cup of Bigelow Decaf Green Tea. About 12 degrees out this morning, not quite as cold as it's been. Mostly cloudy and 24 degrees. Warmer temps on the way starting tomorrow, none too soon for me! Well the house is clean, the pantry is straight, oven clean, so not a thing to do today! Did a few things on the computer and then caught up on shows I had recorded. For Dinner tonight I prepared a Cumin Spiced Pork Chop w/ Seasoned Pinto Beans and Mashed Potatoes.

I picked A couple of Pork Tenderloin Center Cut Pork Chops at Meijer a while back and them in the freezer. I laid one of the Chops in the fridge overnight to thaw. They have some of the finest Pork Chops you can find.

So to prepare my Chop I’ll need; The Cumin Spiced Rub which consists of; 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. I always have some of the Rub made up in

For one side I heated up a can of Margaret Holmes Seasoned Pinto Beans. I purchased a few of cans
of this at a nearby Walmart, they carry a good selection of a lot of the Margaret Holmes Products. To prepare it just empty the contents into a medium saucepan. Cover it and bring it to a boil. Stir and reduce the heat to slow simmer and serve when ready. And I have delicious side dish! I love Beans of all kinds and these Seasoned Pinto Beans are delicious, love the Seasoning.

For a second side I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. I also baked a loaf of LaBrea Multi-Grain Bread. For Dessert later a Jello Sugarfree Dark Chocolate Pudding.

Cumin Spiced Pork Chop w/ Roasted Purple Asparagus and Diced New Potatoes

Dinner Tonight: Cumin Spiced Pork Chop w/ Roasted Purple Asparagus and Diced New Potatoes

For Breakfast this Monday morning I prepared a Potato and Ham Skillet. I prepared a bag of the Simply Potatoes Steakhouse Seasoned Diced Potatoes. Midway through the cooking time I added a
1/2 bag of Kroger Brand Diced Ham. Also had a cup of Bigelow Decaf Green Tea. A bit cooler out there this morning, 26 degrees and cloudy. But as the day went on we finally got some sunshine and 44 degrees for a high. After Lunch I made a few Christmas Candy drop offs to some friends. That was about it for my day. For Dinner tonight I prepared a Cumin Spiced Pork Chop w/ Roasted Purple Asparagus and Diced New Potatoes.

I picked a Pork Tenderloin Center Cut Pork Chops at Meijer yesterday. I really love the Meijer
selection and quality of all their meats, and all their products and produce. They have some of the finest Pork Chops you can find.

So to prepare my Chop I’ll need my favorite Pork Rub; The Cumin Spiced Rub which consists of; 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon
Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper.

I picked up more of the Purple Asparagus at Mejier, of course. It tastes like Green Asparagus but it’s less fibrous and sweeter due to a higher sugar content. I prepared it the same way as the Roasted
Asparagus I’ve made before. I’ll need; 1 bunch of Purple Asparagus (fibrous bases removed), 1 Tablespoon of Crumbled Bacon or Bacon Bits, Ground Garlic Salt, Sea Salt, Freshly Ground Black Pepper, and 1 tbsp Extra Light Olive Oil. To prepare it is easy; Preheat the oven to 400F. Place asparagus in a baking tray sheet. Add the bacon, garlic salt, salt, pepper, and olive oil and toss to coat. Bake for 12 minutes. Remove from oven. Cool a couple of minutes and serve! Comes out tender and that slight sweet taste to it. Really like the Purple Asparagus over the Green Asparagus!

For another side it was Del Monte Diced New Potatoes. I’ve had these many times and as always, delicious! To prepare these; empty the Potatoes into a small sauce pan and heat on medium heat until heated through. For Dessert/Snack later a bowl of Skinny Pop - Pop Corn and a Diet Peach Snapple.
