Mini Carb Cakes, Wings, and Oven-Roasted Fingerling Potato Fries

Dinner Tonight: Mini Carb Cakes, Wings, and Oven-Roasted Fingerling Potato Fries

For Breakfast this morning I Scrambled an Egg and toasted a couple of slices of Aunt Millie's Light Whole Grain Bread. Also, as usual, I had my morning cup of Bigelow Decaf Green Tea. Cold morning starting off but it was sunny and 53 degrees out for the day. After Breakfast I straightened up the pantry, checking the expiration dates on everything. Then did the same in the freezer. After Lunch I got the leaf blower out and cleaned off the deck and driveway areas. That was about it for my day. For Dinner tonight it's an oven menu. I prepared Mini Carb Cakes, Wings, and Oven-Roasted Fingerling Potato Fries.

Trying a couple of new items tonight; that I purchased here at our local Kroger, Dockside Classics Mini Crab Cakes and Kroger Dry Rub BBQ Chicken Wings. I also purchased some Fingerling Potatoes while at Jungle Jim's Market a couple of days ago that I'm slicing up and baking.

The Dockside Classics Mini Crab Cakes come fresh in a package, 24 to a package. To prepare them preheat the oven to 400 degrees. Place the Mini Cakes on a baking sheet and bake for 18 minutes or until they hit an internal temperature of 160 degrees. I love these little Crab Cakes. Nice flavor and real easy to prepare. Served it with some Heinz Cocktail Sauce for dipping.

Then I also prepared some Kroger Dry Rub BBQ Chicken Wings. Like the Mini Crab Cakes I'll be
baking these also. After baking the Crab Cakes I turned the temperature up to 425 degrees. Used a baking sheet, lined it with foil and sprayed it with Pam Cooking Spray. I lined the Wings up on the foil and seasoned them with BBQ Dry Rub that came with the Wings. I then baked them for 17 minutes, flipping them over after 8 minutes. These turned out to be a very good Wing! Excellent BBQ Dry Rub. Served these with a side of Litehouse Light Blue Cheese Dressing.

Then for another side I prepared some Roasted Fingerling Potatoes. Started by washing the Potatoes off in cold water. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large
bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. Still can’t figure out why it’s so hard to find Fingerling Potatoes in this area, only 1 store around here locally that sells them (Thank you Jungle Jim’s).

Oven-Roasted Fingerling Potato Fries

Ingredients:

Fingerling Potatoes
Extra Virgin Olive Oil
Garlic Powder
Sea Salt
Pepper
Chili Powder
Kraft Reduced Fat Parmesan Grated Cheese
Directions:
1.) Thoroughly clean and scrub the potatoes.
2.) Cut the potatoes in half and add to a large mixing bowl.
3.) Add the olive oil. I used about 1 tablespoon, but this will vary by how many potatoes you use. Just use enough oil to give the potatoes a nice coat. Add your seasonings.
4.) Put on a baking sheet and sprinkle with the Parmesan Grated Cheese.
5.) Roast in the oven for 25-35 minutes at 450 degrees. The potatoes should be tender in the middle when done.

Honey-Soy Broiled Salmon
A sweet, tangy and salty mixture of soy sauce, rice vinegar and honey does double-duty as marinade and sauce. Toasted sesame seeds provide a nutty and attractive accent. Make it a meal: Serve with brown rice and sautéed red peppers and zucchini slices.......

Paprika Shrimp and Green Bean Saute
Green beans add snap and color to the garlicky shrimp and butter beans in this Spanish-inspired sauté. Slightly pricier prepeeled shrimp are worth it, given the amount of time they save on a harried weeknight. Serve with quinoa or brown rice.......

Crab Cake Burgers
These burgers have a true crab flavor that isn't masked by fillers or strong seasoning. Serve on a bun with tartar sauce or with a lemon-juice-dressed salad of greens, sprouts and sliced peaches. This recipe works best with convenient pasteurized crabmeat, usually found in the refrigerated case near the fish counter. If you prefer lump crabmeat, cut it into small, uniform pieces........

Barbecue Pulled Chicken
This BBQ pulled chicken recipe is a fanciful reinterpretation of pulled pork that slow-cooks chicken in lots of tangy tomato sauce. Have sliced jalapenos, sliced red onions and some sour cream on hand to top this barbecue pulled chicken, which makes a hearty main course. You can turn it into an unbelievable sandwich or serve it on mashed potatoes or even whole-grain spaghetti. Serve with shredded napa cabbage tossed with low-fat mayonnaise, cider vinegar, celery seed and honey to taste......

If you prefer lump crabmeat, cut it into small, uniform pieces.......

Grilled Fish Tacos
Instead of deep-frying the fish for these fish tacos, we coat the fish with a flavor-packed chile rub and grill it instead. Make sure the fillets are no more than ½ to ¾ inch thick so they cook quickly. Sometimes flipping fish on the grill can be tricky since the fish can stick to the grill or fall apart. The solution is to invest in a grill basket that easily holds 4 to 6 fish fillets and secures the fish in the basket for easy flipping. If you don't have a grilling basket, make sure the grill is hot and well oiled before adding the fish........

Dinner Tonight: Crab Cake Slider w/ Baked Fries

Winter is here, I'm here to tell you! Went out to get the morning papers and it was 21 degrees with a wind chill of 15 degrees! Oh where are those beautiful sunny days of Fall. Still no snow but they say there's a chance overnight and Sunday to get some. Snow is no fun if your an amputee like myself, makes it a bit rough! Stopped by Kroger to pick up a few items for Mom and myself and back home for the day. For dinner tonight another favorite, Crab Cake Slider w/ Baked FriesCrab Cake Slider w/ Baked Fries.

I’m using Kroger Private Selection Maryland Style Crab Cakes. They come frozen and there’s 2 to a box. To prepare them just preheat the oven on 400 degrees and bake for 30 minutes. Nothing beats a fresh made Crab Cake, but these are too good to be frozen! They’re just the right size, about 3.5 ounces each, and full of flavor and meaty. Baked them for about 30 minutes and they were done. Served then on a Pepperidge Farm Wheat Slider Buns. Topped them with Louisiana Remoulade Dressing and Boston Bibb Lettuce. This makes one delicious Slider! The taste of the Crab Meat and Remoulade Sauce,if you want one flavorful Remoulade Sauce you have to try the LOUISIANA Remoulade Dressing. This sauce is incredible and is good on about anything you put it on!

Then I also prepared one of my favorite sides, Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Love these Fries, they’re 130 calories and 20 carbs per serving. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

LOUISIANA Remoulade Dressing

LOUISIANA Remoulade Dressing is typically a cold dressing served with chilled boiled seafood. This dressing combines the perfect blend of soybean oil, horseradish, egg yolks, tomato paste, onion, garlic and other spices. Use it as a dipping sauce for your favorite seafoods or meats.

Crab Cake Slider w/ Baked Fries

Dinner Tonight: Crab Cake Slider w/ Baked Fries

We're getting a one day break from the humid weather, the humidity returns tomorrow they say though. Ran some errands for Mom and caught up on some things around the house. Dad is doing a lot better it seems, making a slow but sure progress. Fired up the grill for lunch, grilled a Bluegrass Lean Brat. Then for dinner tonight I had a Crab Cake Slider w/ Baked Fries.

Crab Cake Slider w/ Baked Fries

Dinner Tonight: Crab Cake Slider w/ Baked Fries

Went for my yearly eye check-up this morning, everything looked good; no changes. Then it turned to a frustrating day! I get my prescriptions through the mail and the drug co. said my doctor will not respond to their faxes and of course the doctor's office says they didn't receive any faxes. Finally got that straightened up and ran into a computer operating snag. Nothing major just annoying, Google Chrome bugs that wont let me access certain sites and functions. Still working to correct that. Besides all that not a bad day! For dinner tonight Crab Cake Slider w/ Baked Fries.

Once again I'm using Kroger Private Selection Maryland Style Crab Cakes. They come frozen and there’s 2 to box. To prepare them just preheat the oven on 400 degrees and bake for 30 minutes. Crab Cake Slider w/ Baked Fries

Dinner Tonight: Crab Cake Slider w/ Baked Fries

Finally a beautiful, and warm, Spring Day today! It started out in the 40′s but warmed up after that. Sunny all day and high in the 70′s! Now that’s Spring Time Weather. Went to Walmart and Kroger to pick up some items for myself and my Mom. After that started going through the shed again, throwing out some things and straightening up. Still a lot of junk to go through. For dinner tonight Crab Cake Slider w/ Baked Fries

Surf and Turf and Baked Potato

Dinner Tonight: Surf and Turf and Baked Potato

Another cool and rainy morning, about 43 degrees this morning. Finally cleared up and the sun came out in the late afternoon though. Went to the bank, mailed a few letters, and stopped by Kroger to pick up a few items for my Mom and myself. For dinner tonight it's a Surf and Turf and Baked Potato!

The Surf part is Crab Cakes. I used Kroger Private Selection Maryland Style Crab Cakes. They come frozen and there's 2 to box. To prepare them just preheat the oven on 400 degrees and bake for 30 minutes. Nothing beats a fresh made Crab Cake, but these are real good to be frozen! They're just the right size, about 3.5 ounces each, and full of flavor. Served it with some Louisiana Remoulade Dressing for dipping. I'll be keeping a box or two of these in the freezer.

Then for the Turf part I prepared a Wild idea Buffalo 5 oz. Buffalo Top Sirloin. My favorite meat, Buffalo! I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it in Extra Virgin Olive Oil about 4 minutes per side, medium rare. Absolutely love these Steaks! I also a Baked Potato that i seasoned with the McCormick Grinder Sea salt and Black Peppercorn and topped with i Can't Believe It's Not Butter. For dessert/snack later a 100 Calorie Mini bag of Jolly Time Pop Corn.

Wild Idea Buffalo - 5 oz. Petite Top Sirloin Steak
Famous for their flavor, these juicy steaks are perfect for the grill. The small size makes for a great meal for one. 5 oz.

Pulled Smoked Pork Barbecue Sandwich w/ Baked Crab Cakes

Dinner Tonight: Pulled Smoked Pork Barbecue Sandwich w/ Baked Crab Cakes

Spent the day fishing again and again didn't catch anything that was very big. But did catch about 10 small Bass and Blue Gill. Love being out with the peace and quiet. The weather was beautiful again. It was 50 degrees when I got up and it reached a high of only 77 with no humidity. Hard to beat for July weather! For dinner I prepared a Pulled Smoked Pork Barbecue Sandwich w/ Baked Crab Cakes.

I had planned on a Pulled Smoked Pork Barbecue Sandwich with some BBQ Beans or some type of a Potato Dish but I had a small container of Crab Meat that I had to use and decided to make Crab Cakes. I used Montgomery Inn Pulled Pork w/ Barbecue Sauce. This may well be the best BBQ in the land! At least Bob Hope thought so when he was alive. Mr Hope would order this straight from Montgomery Inn back then and have it shipped to wherever he was at the time. Around here it hasn't few rivals. This comes in a 2 LB. container and I just get the amount I want and freeze the rest. Incredible taste in an  excellent BBQ Sauce. Served it on a Healthy Life Whole Grain Bun, toooo good!

To go with my BBQ Sandwich I prepared some Baked Crab Cakes. I watched Bobby Deen make these
last weekend on the Cooking Channel and they looked delicious. So I thought I would give them a try. The recipe makes 12 Crab Cakes but I only had a 1/2 LB. of Crab Claw Meat so I only made 6. The recipe also called for Jumbo Crab Meat and 1 Egg, which I substituted with Egg Beater's. They turned out very good so I'm looking forward to preparing a full batch of the them using Jumbo Crab Meat instead of the Claw Meat. I served them with Louisiana Remoulade Dressing, which is perfect for any Seafood. Good Baked Crab Cake recipe to keep. I left the full recipe at the end of the post along with a link to Bobby Deen recipes. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.

Montgomery Inn Pulled Smoked Pork Barbecue

World famous. The ribs king. Hardwood smoked. Fully cooked. Genuine barbecue. Just heat & eat! US inspected and passed by Department of Agriculture. Previously frozen for your protection. The world's greatest pulled pork barbecue is now all yours! We slow-smoke our choice cuts of pork for hours over hardwood coals; blend the lean, juicy meat with our secret spices; and then add our world-famous Montgomery Inn Barbecue Sauce to give it that special flavor. Enjoy!

Directions
Refreeze or keep refrigerated. Microwave Oven: 1. Remove desired amount of barbecue from tray and place in microwave safe bowl. 2. Cover with plastic wrap and heat on High power (100%) for two (2) minutes. 3. Pull film back from edge of container and stir product thoroughly. 4. Replace film and heat for an additional 1-2 minutes or until hot! 5. Remove from oven and stir well before serving. Stove Top: 1. Place desired amount of barbecue in a medium size sauce pan. 2. Heat over medium low heat 6-12 minutes (covered) and occasionally stir so as not to burn. 3. Remove product from stove and serve. We highly recommend cooking our barbecue from a thawed state.
