Baked Chicken Wings w/ Baked Fries and Light Texas Toast

Dinner Tonight: Baked Chicken Wings w/ Baked Fries and Light Texas Toast

For Breakfast this morning I toasted a Thomas Light Multi Grain English Muffin English Muffin. I
normally use Healthy Life Multi Grain English Muffins but Kroger is the only store to carry them and they haven't had any in stock for over a month. Time to switch! The Thomas Muffins are comparable to the Healthy Life, both are 100 calories and 17 net carbs. Anyway I topped the Muffin with a Poached Egg. Also had my morning cup of Bigelow Decaf Green Tea. Sunny, hot, and very humid outside today! The normal August weather has returned! After Lunch I got the leaf blower out and cleaned off the deck and driveway areas. Too humid to be outside for me. Took it easy the rest of the day. For Dinner tonight I prepared Baked Chicken Wings w/ Baked Fries and Light Texas Toast.

For the Wings I'm using Kroger Oven Roasted Chicken Wings. I started by heating the oven on  425 degrees F., same temperature I'll need for my Fries and Texas Toast. I took a small Baking Sheet and lined it with foil. Then sprayed it with Pam Non Stick Cooking Spray. Spread the Wings out across the sheet and baked them for 33 minutes, turning them once after 17 minutes. I love Wings, and these are excellent Wings! Served them with Dipping Sauces of Hidden Valley Buffalo/Ranch Dressing and Litehouse Light Blue Cheese Dressing.

With the oven already heated I baked my Fries. I used Ore Ida Crinkle Cut Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup.

I also baked up some slices of New York Bakery Light Texas Toast. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Zesty Herbs and Spice Fire Grilled Wings w/ Savory Herb Potatoes and Texas Toast (Light)

Dinner Tonight: Baked Zesty Herbs and Spice Fire Grilled Wings w/ Savory Herb Potatoes and Texas Toast (Light)

For Breakfast this morning I made what's become my favorite Breakfast. I fried some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled
some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Also had my morning cup of Bigelow Decaf Green Tea. Mostly sunny and 54 degrees out, some rain showers moving in for tomorrow. Cleaned the house today, vacuum and dusted. Then did some work on the computer. Dusted and cleaned then ran all the scans and deleted old files. For Dinner tonight I prepared Baked Zesty Herbs and Spice Fire Grilled Wings w/ Savory Herb Potatoes and Texas Toast (Light).

I had tried the Cooked Perfect Buffalo Wings last week and loved them. So this week I'm trying the
Cooked Perfect Zesty Herbs and Spice Fire Grilled Wings. They come Seasoned in Thyme, Sage, and Peppers. They come frozen so you can prepare them in the microwave or in the oven, I went with the oven method.

To prepare them; Preheat the oven to 375° F.Grab a baking sheet, line with Foil, and spray it with with Pam Cooking Spray. Place the Wings on the baking sheet in a single layer. Bake for 15 minutes, turn the Wings, and bake for an additional 10-15 minutes. Let stand for 2 minutes before serving. These are just as good as the Buffalo Wings, if not better! Served with some Litehouse Lite Blue Cheese Dressing.

I could just have the Wings but Mom and Dad always have to have at least one side dish so I prepared a carton of the Little Potato Company Savory Herb Potatoes. A favorite I always pick while at Meijer are the Little Potato Company Savory Herb Potatoes. We have these quite often and really enjoy them. The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good item to have in the pantry! So easy to prepare and no clean up. I also boiled some Green Giant Mini Eras of Sweet Corn. You can't beat this corn, best there is! For Dessert later a Weight Watcher's Cookies and Cream Ice Cream Bar.

Baked BBQ Chicken Wings, Celery Sticks, and Garlic Herb Potatoes

Dinner Tonight: Baked BBQ Chicken Wings, Celery Sticks, and Garlic Herb Potatoes

Feeling a lot better today! I even got a full night's sleep. Almost all the swelling on my right ear area is gone but my hearing isn't quite back all the way though. With feeling better I'm back to solid food.
So for Breakfast I prepared some Simply Potatoes Shredded Hash Browns, Meijer Diced Ham, 1 Egg Sunny Side Up, and a cup of Bigelow Decaf Green Tea. The Hash Browns, Ham, and Egg make a perfect Breakfast Bowl! After Breakfast I headed to Meijer to do some grocery shopping. Back home gave Mom a hand with the laundry and some house cleaning. Got the cart out for a bit. Watched some College Football then the rest of the day. For Dinner tonight I prepared Baked BBQ Chicken Wings, Celery Sticks, and Garlic Herb Potatoes.

At Meijer I bought a bag of Meijer Brand BBQ Chicken Wings. First time trying this brand Wings.Mom and Dad had been wanting some Wings so that's what we are having for Dinner. The Wings come frozen and already Seasoned.

To prepare them I preheated the oven on 375 degrees. Then got a large baking sheet, lined it with foil and sprayed the foil with Pam Cooking Spray. Lined the Wings up in the pan and when the oven was ready I baked them. for about 27 minutes. Pulled them from the oven and let them sit for 3 minutes and served! The Wings were excellent! They were nice size and the Seasoning and BBQ Sauce was spot on. Served it with Celery Sticks along with Litehouse Lite Blue Cheese Dressing.

For a side Dad wanted some Potatoes so I picked up a package of Little Potato Company Garlic and
Herb Potatoes. They come in a tin, ready for the oven container. Preheated the oven to 450 and sat the container on a small baking sheet. It comes with a Seasoning Packet of Garlic and Herb. I first brushed the Potatoes with Extra Light Olive Oil and then Seasoned them with Seasoning Packet. Baked the for 45 minutes. The Potatoes came out perfect. Really enjoyed the Seasoning on them. Served them with a side of Daisy Light Sour Cream. Wings, Celery, and Potatoes for Dinner tonight! For a Dessert/Snack later a bowl of Skinny Pop - Pop Corn and a Diet Peach Snapple to drink.

Baked Smokey BBQ Chicken Wings w/ Baked Fries

Dinner Tonight:Baked Smokey BBQ Chicken Wings w/ Baked Fries

For Breakfast this morning I made a favorite of mine, Skillet Potatoes and Ham. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare
it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped everything with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar and a fried Sunny Side Up Egg. Mom and Dad wanted McDonald’s so I went there to pick up Breakfast for them afterward. Its cold out but quite as bad as its been, 16 degrees. During the day it got up to 39 degrees and partly sunny, so not too bad today. After I brought Brekfast back for Mom and Dad I headed back out to the local Kroger and stopped by the Bank. Back home broke out the new Hoover Cordless Vacuum, works great. Then finished up a load of laundry for Mom. For Dinner tonight its Chicken and Potatoes. I prepared Baked Smokey BBQ Chicken Wings w/ Baked Fries.

I used Tyson Smoky BBQ Wings. First time I tried these I loved them! I had tried three other of the
Tyson Wings and they were all good, but the Smoky BBQ is my favorite. To prepare them I just followed the instructions on the bag. Preheated the oven to 450°F. Then lined a rimmed baking sheet with foil and sprayed with non-stick spray. Placed the frozen chicken wing sections on the pan in a single layer. Then baked the on upper rack for 38 minutes, until the juices ran clear when thickest part of the chicken temperature read 180°F. on an instant thermometer. The Wings came out perfect! They crisped up nice and had and excellent Smokey BBQ flavor, and all are above normal size Wings! I had a side of Litehouse Lite Bleu Cheese Dressing for dipping the Wings in.

To go with my Wings I baked some Alexia Organic Yukon Select Fries leftover so I prepared them to go with my Burger.Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. I had a Diet Dr. Pepper to drink. For Dessert later a 100 Calorie Breyer's Chocolate Ice Cream Cup.

Bourbon Glazed Chicken Breast Chunks w/ Crispy Parmesan Cauliflower Bites

Dinner Tonight:  Bourbon Glazed Chicken Breast Chunks w/ Crispy Parmesan Cauliflower Bites

Had a bowl of Kashi 7 Whole Grains Puffs for Breakfast, love this cereal! Did some things around the house. Then out to the shed and repaired a wooden shelf that the bracket broke that was holding up one end. Another breezy and cold day out there, mostly sunny though. Got into the shower this morning and the shower curtain rod broke as I got in the shower. So it was off to Walmart and bought a new rod and shower curtain, needed a shower curtain anyway. So for dinner tonight it was appetizers, I prepared  Bourbon Glazed Chicken Breast Chunks w/ Crispy Parmesan Cauliflower Bites.

According to Basic Food Math, doesn't 2 appetizers equal 1 dinner? Hope so because that's  my dinner tonight! I prepared Bourbon Glazed Chicken Breast Chunks w/ Crispy Parmesan Cauliflower Bites. I used PERDUE® Bourbon Glazed Chicken Breast Chunks and a container of Kroger Produce Cauliflower Florets.

As all the Perdue Chicken products it’s easy to prepare. Preheated the oven to 375°F. Sprayed a
baking sheet with Pam Cooking Spray and placed the frozen Chicken pieces in single layer on the baking sheet. Baked on the middle over rack for 25 minutes, until heated through. Turned the pieces halfway through heating time. I’ve got another Perdue Chicken Product that makes a delicious dinner! The Bourbon Glaze is outstanding. Thick and spicy, but over powering. Another great Item to have on hand in the freezer!

Breaded and Ready!

I had bought a package of the Cauliflower Florets at Kroger the other day with this recipe in mind. To prepare them I needed; 1 Package of Cauliflower Florets, 1/2 cup Flour, 1/2 cup Egg Beater's, 1 cup Shake and Bake Seasoned Panko, 1/2 cup Kraft Reduced Fat Parmesan Grated Cheese, 1 tablespoon Zatarain's Creole Seasoning, and Extra Virgin Olive Oil for frying.

To prepare them; Working in batches dredge the cauliflower florets in the flour, dip into the eggs, and
Too Good!!
coat in the mixture of the breadcrumbs, Parmesan and creole seasoning before frying them in oil heated to medium-high (~350F/180C) until golden brown and setting them aside on paper towels to drain. Love these! You could make a meal out of these alone. The only problem with this dish is trying to get them to the the table before eating them! Huge KEEPER RECIPE!! The original recipe and it's web link is at the bottom of the post. 2 Appetizers does equal 1 Dinner! For dessert later a Kashi Dark Mocha Almond Granola Bar.

Smokey BBQ Seasoned Chicken Wings w/ Celery Sticks and Bleu Cheese Dressing

Dinner Tonight: Smokey BBQ Seasoned Chicken Wings w/ Celery Sticks and Bleu Cheese Dressing

For Breakfast I had Jennie - O Turkey Breakfast Sausages, Eggo's Egg White Scrambled Egg, 2
slices of toasted Aunt Millie's Light Whole Grain Bread. and a cup of Bigelow Decaf Green Tea. Afterwards had my morning workout. Next cleaned the kitchen, and set the oven stove on clean. Mom and dad went to Church this morning and I finished up some laundry for Mom. Ran the vacuum real quick and done for the day. From there it was an afternoon of NFL Football. I put a Chuck Roast in the crock pot for Mom and Dads dinner, along with Potatoes and Carrots. I had been wanting some Chicken Wings so that's what I had for my dinner.

I had been wanting some Chicken Wings, so while at Walmart yesterday I picked up a bag of  Tyson Smoky BBQ Wings. To prepare them I just followed the instructions on the bag. Preheated the oven to 450°F. Then lined a rimmed baking sheet with foil and sprayed with non-stick spray. Placed the frozen chicken wing sections on a pan in a single layer. Then baked the on upper rack for 35 – 38 minutes, until the juices ran clear when thickest part of the chicken temperature read 180°F. on an instant thermometer.

After preparing the Tyson Wings several times I have found out to keep them from sticking, spray
both sides of the Wings with a light coat of Pam Spray. The Wings came out perfect! They crisped up nice and had and excellent Smokey BBQ flavor, and all are above normal size Wings! I had a side of Celery Sticks and Litehouse Lite Bleu Cheese Dressing/Dip. For dessert later a bowl of Holiday Chex Mix.

Buffaloed Buffalo Burger w/ Baked Potato

Dinner Tonight: Buffaloed Buffalo Burger w/ Baked Potato

This morning I made something for Breakfast I haven't had in quite a while, Eggo's! I love those
things, just never think about them when I'm in the store. But as I was going through the frozen Food Section of Meijer I seen them and grabbed a box of the Eggo's with Nutrigrain. These are lower in calories than the normal ones. Outside the weather is still the same hot, humid, and muggy! Hopefully that changes tomorrow and gives us some relief. Got the leaf blower out early this morning and blew out all the leaves and such around the house. Back inside had some computer work to catch up on and that was about it. For dinner tonight a new recipe, Buffaloed Buffalo Burger w/ Baked Potato.

I came across a recipe for Buffalo Turkey Burgers so I thought I would convert it over to a Buffaloed
Buffalo Burger.I had a 1 lb. package of Wild Idea Buffalo Ground Round, 99% Lean in the freezer so I let it thaw in the fridge overnight. To make this Buffalo creation I'll need; 2 tablespoons Frank's Hot Sauce (divided), 2 teaspoons Roasted Ground Cumin, 2 teaspoons Chili Powder, 2 Garlic Cloves (minced), 1/2 teaspoon Sea Salt, 1/8 teaspoon Ground Black Pepper, 1 pound Wild Idea Buffalo Ground Round - 99% Lean, 4 Kroger Lite Wheat Buns, 1 cup Shredded Lettuce, and 2 tablespoons Litehouse Lite Blue Cheese Dressing. I knew this was going to be good with all these ingredients!

So to prepare it I started by combining 1 tablespoon hot sauce, cumin, chili powder, garlic, salt and pepper, in a large bowl. Add the Buffalo and mixed lightly but thoroughly. Shape into four 1/2-in.-thick patties. In a large skillet coated with cooking spray I cooked the burgers over medium heat about 4 1/2 minutes on each side or until the burgers had a nice char on the outside and medium rare on the inside. Always remember when cooking Buffalo, or Bison if you prefer, meats that Buffalo gets done a lot quicker than Beef or Turkey because it's so lean. I served burgers on buns with lettuce, blue cheese salad dressing and remaining hot sauce. A 1 lb. package will make 4 Burgers. The Wild Idea Buffalo Burgers are good every time but this kicked up version takes a couple of notches higher! Moist, juicy, and delicious. The combo of the hot sauce and blue cheese is perfect with the buffalo. Another Keeper Recipe.

And if having Burgers you got to have Potatoes, and I love Potatoes. So I had a Baked Potato. I
seasoned it with McCormick Grinder Sea Salt and Peppercorn Medley and topped it with I Can't Believe It's Not Butter. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Wild Idea Buffalo - 1 lb. Ground Round, 99% Lean

We use the Top Round and the Sirloin Tip cuts and remove all visible fat, for this 99% super lean ground steak. It's deep red color, dark rich taste, is deliciously low in calories and high in protein. Substitute for any of your favorite ground dishes. Also, delicious for the popular Lebanese dish, kibbeh (pictured) - recipe with purchase. 1 lb. package.

Breaded Chicken Wings w/ Mac and Cheese

Dinner Tonight: Breaded Chicken Wings w/ Mac and Cheese

My dad is back in the hospital. He's having some internal bleeding and they are running a series of
exams to see if they can trace it down. Hoping for the best but at 93 years old it could be anything. I was up at the hospital a couple of times today. Back at home cleaned the house for Mom and did a couple of loads of laundry for her. Another very hot and humid day out again. Even worse than yesterday, about 93 today. For dinner tonight I prepared Breaded Chicken Wings w/ Mac and Cheese (2 Comfort Foods).

I had not made Chicken Wings in a long time. While at Kroger yesterday I browsing the Meat Department and I had grabbed a package of Simple Truth Thin Cut Chicken Breasts when I seen the Chicken Wings, so I got a package of Simple Truth Chicken Wings also. I really like the Simple Truth Brand Pork and Chicken Products. Then last night I scanned the internet for a Baked Chicken Wing recipe and came across one off one of my favorite sites, Taste of Home, Breaded Chicken Wings.

To make these I'll need the following; 2/3 cup dry Progresso Italian Style Bread Crumbs, 1 teaspoon Onion Powder, 1 teaspoon dried Basil, 1/2 teaspoon Garlic Salt, 1/2 teaspoon Hungarian Paprika, 1 Egg, 1 tablespoon Water, Blue Cheese or your Dipping Sauce, and 10 whole Chicken Wings (I used 6 Whole Wings).

To prepare them In a large resealable plastic bag, combine the Bread Crumbs, Onion Powder, Basil,
Garlic Salt and Paprika. In a small bowl, whisk the Egg and Water. Cut Chicken Wings into three sections; discard Wing tips. My Mom likes her Wings whole so I didn't cut them up.  Dip Wings in Egg, then place in bag and shake to coat. Place in a greased 15-in. x 10-in. x 1-in. baking pan. Bake at 425° for 30-35 minutes or until juices run clear, turning once. Yield: 6-8 servings. I baked them a total of 37 minutes. And we got us a winning Wing Recipe! The Wings came out with a nice crust, moist, and great flavor. Have to add this one to the "Keeper Recipes" collection. I had a side of Litehouse Lite Bleu Cheese Dressing for dipping my Wings.

Then for a side dish I had some of the goes good with anything side dish, Mac and Cheese. I used the easy prepared one, Velveeta Shells and Cheese – 2% Milk Cheese. It's a single serving of Shells and Cheese and it comes in a microwavable container. Just add water to the container, stir, and microwave for 3 1/2 minutes. Remove it from the microwave add the Velveeta Cheese packet and stir, and let stand for 3 minutes to thicken. Makes an easily prepared good Mac and Cheese! For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Breaded Chicken Wings Recipe
