BBQ Pulled Chicken Breast Pita Bread Pizza

Dinner Tonight: BBQ Pulled Chicken Breast Pita Bread Pizza

Went to the store and bank early, before the rain moved in. Then it was a day of cleaning. We have a walk-in closet that was packed full of basically junk. So that took up all afternoon. 1 more junk closet to go. For dinner tonight, BBQ Pulled Chicken Breast Pita Bread Pizza.

Just add the Cheese and ready for the oven!

Pizza, Pizza, tonight for dinner! I used the leftover PERDUE OVEN READY Whole Seasoned Roaster Bone-In Breast, from dinner 2 nights ago. We had quite a bit of it leftover so we'll get a couple of Pizzas and Chicken Sandwiches out of it. I pulled the Breast Meat apart and took enough to make 2 small Pita Bread Pizzas out of it. Covered it in a bowl and reheated it in the microwave. I used a Joseph's Oat Bran and Stone Ground Whole Wheat Pita Bread for my Pizza Bread. I love using Joseph's pita Breads, always fresh and they're only 60 calories, 1.5 grams fat, and 5 net carbs! Then along with the Pulled Chicken for toppings I used; Sliced Green and Black Olives, Sargento Reduced Fat Shredded Mozzarella Cheese, Sliced Mushrooms, and instead of normal Pizza Sauce I used JB's Sticky Stuff BBQ Sauce. If you've never had this Sauce you have to give it a try! For dessert later a Jello Sugar Free Dark Chocolate Pudding

I preheated the oven on 400 degrees. To bake the Pizza I used a large Cookie Sheet. To prepare them I brushed them with a light coat of Extra Virgin Olive Oil, the coating of Oil  browns it up just right. I then baked it for 5 minutes, just to brown it up a bit. Removed them from the oven and made my Pizzas. I put a layer of the Sticky Stuff BBQ Sauce, added the Chicken, the Olives, Mushrooms, and topped it with Shredded Mozzarella Cheese. It took less than 10 minutes in the oven until everything heated up and the Cheese melted.Pizza is served! The Pita Bread makes one fine Pizza, along with the Chicken and JB's Sticky Stuff BBQ Sauce. Delicious! For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Cast Iron Skillet Baked Pork Chop w/ Sliced New Potatoes, 3 Bean Salad, and...

Dinner Tonight:  Cast Iron Skillet Baked Pork Chop w/  Sliced New Potatoes, 3 Bean Salad, and Whole Grain Bread.

I had a Pork Chop stored in the freezer that I put in the fridge to thaw overnight. Next day I marinated the Chop in JB’s Fat Boy Haug Waush BBQ Sauce for 4 hours in the fridge. To prepare it I used a Cast Iron Skillet, just something about the Cast Iron Skillets that I love using them. Added about 1/2 tablespoon of Canola Oil to the Skillet and browned both sides I then moved to the oven, which I had preheated on 400 degrees. I then baked it for about 22 minutes. I pulled it out when it hit 155 degrees (internal temperature) and let it set for 5 minutes to let it finish cooking. I love Chops marinated in JB's BBQ Sauce, and this one was delicious! The JB’s BBQ Sauce is the perfect marinade for any Pork.

For one side dish I heated up a can of Del Monte Sliced New Potatoes, boiled until heated and seasoned with Sea Salt, Ground Black Pepper, and Parsley Flakes. I also prepared a can of Read 3 Bean Salad. It comes in a can and you can prepare it various ways. I just opened the can and put it in a plastic bowl, put the lid on, and set in the refrigerator to chill for a couple of hours or so. I served these cold. I also had a slice of Klosterman Wheat Bread that I buttered with I Can't Believe It's Not Butter. For dessert later a Del Monte No Sugar Added Peach Chunk Cup.

Read 3 Bean Salad

Fresh green and yellow string beans, wholesome red kidney beans, spicy onions, and red peppers in delicately flavored tangy vinaigrette are what our 3 bean salad is all about. For added flavor and a different twist, try our 4 bean mixture with garbanzo beans. Made with the finest kidney and black beans, whole kernel corn, hominy, and red and green peppers, our read southwestern bean salad is a remarkably versatile product. It’s perfect for use in wraps, tacos, burritos, or as a main dish by adding shredded chicken or beef. Use in a dip with tortilla chips or put some on a bed of lettuce topped with tomatoes to create a healthy, nutritious salad.

Pulled Buffalo BBQ Sandwich w/ Green Leaf Lettuce and Radish Salad

Dinner Tonight: Pulled Buffalo BBQ Sandwich w/ Green Leaf Lettuce and Radish Salad

Another gorgeous Fall like day around the neighborhood today! 39 degrees this morning and a high around 68 with sunshine and blue skies above! Out riding the four wheel for a while and doing some outside cleaning. For dinner tonight a Pulled Buffalo BBQ Sandwich w/ Green Leaf Lettuce and Radish Salad.

A light and healthy dinner tonight. I used Wild Idea Buffalo Pulled Buffalo, a 1 lb. package. A great item to have in the freezer, just thaw and heat it up! After heating it up I served it on a Healthy Life Whole Grain Bun and topped it with JB's Fat Boy Chipotle BBQ Sauce. I love BBQ Sandwiches but using Pulled Buffalo makes that much more delicious! The Pulled Buffalo is so moist and flavorful, not to mention healthier than Beef.

For a side to go with my Sandwich I went this morning and bought some fresh Green Lettuce and Radishes. I made a Green Lettuce and Radish Salad, adding a sprinkle of fresh grated Parmesan Cheese, sliced Pepadews, J and D's Bacon Croutons, and topped with Ken's Light Options Sweet Vandalia Onion Dressing. It's been a while since I've had a Salad. For some reason it's hard for me to digest green vegetables and later will give me an upset stomach. But I miss having a Salad so it was worth it. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.

Crock Pot Pork Back Ribs w/ Scalloped Red Potatoes and Green Beans

Dinner Tonight: Crock Pot Pork Back Ribs w/ Scalloped Red Potatoes and Green Beans

Sunday afternoon and Football is back! Opening week of the NFL and it was couch potato heaven! College football started last week and now the big boys have fired it up. Nice relaxing day of football most of the day. For dinner tonight my Mom bought some Ribs yesterday so today it was Ribs! I prepared Crock Pot Pork Back Ribs w/ Scalloped Red Potatoes and Green Beans. I also baked a loaf of Sourdough Bread for Mom and Dad.

The ribs came from Kroger, they always have top quality Pork. Last night before I went to bed I cut the Ribs in half, so they’ll fit in the Crock Pot, and put each half in a Hefty Gallon Plastic Bag then covered the Ribs in JB’s Fat Boy Hawg Waush BBQ Sauce to marinate all night in the fridge. Then this morning I got out the Crock Pot, lined it with a Reynold’s Crock Pot Plastic Liner, and sprayed that with Pam Non-Stick Spray. Got the Ribs out of the fridge, discarded the Hefty Bags, and put them in the Crock Pot where I let them cook and simmer, on low,e. for about 8 hours. Long up in the afternoon you can start smelling the aroma of the Ribs, intoxicating! After 8 hours their ready and now for the hard part of cooking them, getting them out whole without breaking them up! Their that tender, when eating them you need no knife, the bones just slide out. Tender, moist and just full of flavor! For all of us JB’s Fat Boy Sauces and Rubs can’t be beat. The Ribs were incredible! Plus I love using that Crock Pot, no mess and with the plastic liner in the Crock Pot no clean-up. Just wipe it down and store it for the next time.

For one side dish I prepared Idahoan Premium Steakhouse Scalloped Red Potatoes. As all the Idahoan Potato Products the Scalloped Red Potatoes are easy to fix and a delicious Potato Dish. The box contains the Potatoes, Sauce, and Crunchy Onion Topping. I added 2 Tbsp. of Butter, 1/2 cup 2% Milk, and Water. Just mix all the ingredients, pre-heat the oven to 450 degrees, and bake uncovered for about 25 minutes. Let it set for 5 minutes before serving, that lets the Sauce thicken up. I also heated up some Del Monte Cut Green Beans and I baked a loaf of Sour Dough Bread for Mom and Dad, I passed on the Bread to save on the carbs and calories. One fine meal that everyone enjoyed! For dessert later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Baked Pork Chop w/ Bacon Potato Pancake with Toasted Corn Salsa...

Dinner Tonight: Baked Pork Chop w/ Bacon Potato Pancake with Toasted Corn Salsa, and Green Beans

Rain and humidity, that says it all about the weather! We do need the rain though. Tried another new recipe for dinner tonight, a Bacon Potato Pancake with Toasted Corn Salsa. So for dinner tonight i prepared  Baked Pork Chop w/ Bacon Potato Pancake with Toasted Corn Salsa, and Green Beans.

I purchased a package of two Pork Chops from Kroger the other day, Huge Chops! Big enough for my dinner and some leftover for Breakfast. I marinated it in J B’s Fat Boy’s Haug Waush Barbecue Sauce. I marinated the Chop in the Sauce and refrigerated it for 6 hours. I removed the Chop from the fridge and shook off any excess of the sauce and then seasoned it with McCormick Grinder Sea Salt and Grinder Black Peppercorn and then applied a light rub of McCormick Grillmate’s Applewood Rub. I then pan fried the Chop, in a Cast Iron Skillet, browning both sides then baked the Chops at 350 degrees for about 20 minutes and then flipping the Chops over and baking another 25 minutes or until temperature reads 165 degrees. The Chop came just dripping with flavor! Love those JB's Sauces!

The Bacon Potato Pancake with Toasted Corn Salsa is another one of those keeper recipes! It turned out as one delicious side. There's quite a few ingredients so I'll just leave the original recipe at the bottom of the post. I found this one on the http://www.potatogoodness.com/ web site, which is full of great tips and recipes for Potatoes. There was an Avocado Cream topping that I didn't add, no Avocados and not a huge fan of them. The Bacon Potato Pancake by itself is delicious but topped with Daisy Reduced Fat Sour Cream and the Toasted Corn Salsa it makes it special. Anyway the recipe is at the end of the post. I also had some left over Green Beans from last night that I warmed up. Quite a dinner! For dessert/snack later some Ritz Whole Grain Crackers topped with Philly Fat Free Cream Cheese.

Bacon Potato Pancake with Toasted Corn Salsa

Yield: 12 Servings
Prep Time: 1 Hours
Ready Time: 1 Hours 30 Minutes
Cook Time: 30 Minutes
This recipe, courtesy of Simply Gourmet, was part of the Amazing Appetizers Culinary Challenge at Eat, Write, Retreat.

Ingredients
1 ½ pounds yellow potatoes, diced, peeling optional
5 slices bacon
1/4 cup diced green onions
1/2 cup grated Gruyère cheese, grated
1 egg
1/4 cup all-purpose flour (or white rice flour for gluten free)
1/4 teaspoon pepper
1 to 2 teaspoons salt
Avocado Cream--recipe below
Grilled Corn Salsa--recipe below
Preparation
In a large pot, add diced potatoes and fill with water until just above potatoes. Bring to a boil. When potatoes are done (they can be split with a fork) DRAIN the water.  Let the potatoes dry out in the pot for a minute or two.

Fry up your bacon and cut into small pieces. Save the grease and use this for frying up the potato pancakes.  (I always keep my bacon grease; I do have extra if I need more while frying up the pancakes.)

In a medium bowl, combine the bacon, green onion, cheese, egg, flour, salt, and pepper.

Using a potato ricer, rice the potatoes into the bowl with the other ingredients.  Stir to combine. The consistency will be very thick. Use an ice cream scoop to portion the pancakes, then shape them into 2-inch disks.

Using bacon grease in a pan, fry the potato pancakes until they are golden brown.  Remove them to a wire rack over paper towels.

Top with avocado cream and grilled corn salsa.

Avocado Cream (Makes 2 cups)

2 ripe avocados 1/2 lime, juiced
1/2 cup sour cream ½ teaspoon salt to
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Combine avocado, sour cream, lime juice, salt, garlic powder, and onion powder into a small bowl. Mash with fork, and then whip until smooth with a wire whisk. If you have one, you can use a food processor.

Toasted Corn Salsa

1(14.5) can yellow corn, drained well (you can also substitute fresh grilled corn)
1/4 cup chopped cilantro
2 tablespoons small-dice orange bell pepper
1/4 cup small-dice red onion
1 teaspoon light olive oil
1 lime, juiced
½ teaspoon salt

Heat a cast-iron pan until very hot. Add the corn and toast on all sides, stirring frequently so it does not burn. Remove once it has a nice brown color. In a medium bowl, add corn and the remaining ingredients. Serve hot or cold.

Pork Loin Boneless Roast w/ Roasted Carrots and Red Potatoes

Dinner Tonight: Pork Loin Boneless Roast w/ Roasted Carrots and Red Potatoes

Wow its miserable outside today! I went out to get the paper this morning at 6:30 am and it was so humid then you couldn't breathe. Very humid and a chance of some severe storms coming our way later tonight, have to keep the weather radio on tonight. For dinner tonight I prepared a  Pork Loin Boneless Roast that was rubbed with JB's Fat Boy Premium All Purpose Rub. Dinner; Pork Loin Boneless Roast w/ Roasted Carrots and Red Potatoes.

The Roast was about 2.5 lbs and Rubbed with JB's Fat Boy Premium All Purpose Rub. A perfect blend of spices for Pork or Beef. To prepare the Roast heat your oven to 375 degrees F. Place roast in shallow roasting pan and roast for 45-60 minutes. Roast until internal temperature on a thermometer reads 145 degrees F. Remove roast from oven; let rest about 10 minutes. I took the juice and scrappings from the pan and poured them back over the Roast as it was resting. The Roast came out mouth watering delicious! The flavor of the Roast with the rub just incredible.

For a side to go with the Roast i prepared Roasted Red potatoes and Carrots. This dish also was baked at 375 degrees F. To prepare it I needed Red Potatoes, 8 to 10 small to medium size, Carrots, 1 bunch, Dried or Fresh Sage, 2 to 3 tablespoons, Dried or Fresh Rosemary, 1 to 2 tablespoons, Dried or Fresh Thyme, 1 to 2 tablespoons, Vegetable Broth, 1 cup, Extra Virgin Olive Oil, and Sea Salt and Ground Black Pepper to taste. To prepare it I scrubbed the potatoes and cut them into quarters. Then rinsed and peeled the carrots, slicing them into thick rounds. Then toss the vegetables and herbs together in big roaster pan.  Season with salt and pepper and drizzle with a little olive oil.  Stir it all together until the vegetable are well coated with the oil. Add the broth.  I use it to keep them from getting too browned and sticking to the pan.  It also added a little extra flavor. Bake at 375 for 45 minutes to an hour, or until they’re tender. Stir them up in the roaster pan to mix all the herbs, oil and remaining broth.  Paired with the Roast a delicious and hearty dinner. For dessert later a Jello Sugar Free Double Chocolate Pudding.

Today's Menu: Shredded Buffalo Chuck Roast BBQ Sandwich w/ Baked Potato

A rainy morning turned into a beautiful and sunny day, with a beautiful weekend in store! Went to Walmart
for milk, bread, and some chicken thighs to grill for tonight but choose to have some leftovers I had in the fridge. I still had some of the Wild Idea Buffalo Chuck roast left so for dinner I prepared a Shredded Buffalo Chuck Roast BBQ Sandwich w/ Baked Potato.

I hated to waste any food especially the Buffalo Chuck Roast! It's so tender and with such an incredible flavor. I warmed it up and then shredded what was left. Served it on a Aunt Millie's Reduced Calorie Whole Grain Bun and topped it with JB's Fat Boy Chipotle BBQ Sauce. What a great trio; Wild Idea Buffalo, JB's Fat Boy Sauce, and Aunt Millie's. I also had a Baked Potato topped with Sea Salt, Ground Black Pepper, and I can't Believe It's Not Butter. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Grilled BBQ Pork Chop w/ Mashed Potatoes, Green Beans, and Whole Grain Bread

Dinner Tonight: Grilled BBQ Pork Chop w/ Mashed Potatoes, Green Beans, and Whole Grain Bread

Well my Dad was moved this afternoon from the hospital to a rehab center, at least 2 weeks or more till he
regains his strength. The weather, it's a sunny but cool day again. Where is our warm Spring weather? I found time this afternoon to work on the gas grill. Cleaned the burner and gas line, and got it going again! I think it's about worn out, hopefully I'll get another Summer out of it. For dinner tonight; a Grilled BBQ Pork Chop w/ Mashed Potatoes, Green Beans, and Whole Grain Bread. My first grilled Chop of the Spring!

I used a Costco Center Cut Pork Loin Chop. I love Costco's Meats. If you've never tried them you should. After warming up the grill I seasoned my Chop with McCormick Grinder Sea Salt and Black Peppercorn. It was a fairly thick cut Chop so I had to keep it on the grill a little longer than normal. When the Chop was done I immediately brushed both sides with my favorite BBQ Sauce, JB 's Fatboy Haugwaush Sauce. I just love all the JB 's Fatboy BBQ Sauces and Rubs but the Haugwaush Sauce is my favorite! It's a flavorful thick Sauce with a perfect blend of spices and ingredients. Another must try if you haven't. The Chop was juicy and full of flavor! Love that Grill!

For sides I warmed up some Idahoan Homestyle Mashed Potatoes. I used the single serve microwavable one. I also warmed a single serve can of Del Monte Cut Green Beans and had Healthy Life Whole Grain Bread topped with a bit of I Can't Believe It's Not Butter. For dessert later a Healthy Life Chocolate Swirl Frozen Yogurt.

JB 's Fatboy Haugwaush Sauce

Product Description
Be happier than a pig in sauce after adding Haugwaush to any meat product. Serve direct as a condiment or coat on grilled meats the last few minutes of cooking time. Sauce will caramelize on meat when heated through.
Warning: Consumer should be aware that frequent use of this sauce may result in the temptation to ‘pig out’ at the dinner table.
Shake well before using. Refrigerate after opening. Made in the USA.
Ingredients: Red ripe tomatoes, brown sugar, mustard, natural smoke flavor, filtered water, vinegar, honey, kosher salt, onion, garlic, natural flavor, turmeric, tamarind, and spices.

Baked Barbecued Country-Style Ribs w/ Mashed Potatoes, Sugar Snap Peas,...

Dinner Tonight: Baked Barbecued Country-Style Ribs w/ Mashed Potatoes, Sugar Snap Peas, and Whole Grain Bread

Rain, sleet, and snow take your pick around here today, it's switching back and forth all morning. Late afternoon it's turned to all snow. Come on Springtime Weather! I picked up a package of Country Style Pork Ribs at the store yesterday so for dinner I tried a new recipe with them, Baked Barbecued Country-Style Ribs. For dinner; Baked Barbecued Country-Style Ribs w/ Mashed Potatoes, Sugar Snap Peas, and Whole Grain Bread. Need an easy and delicious recipe for Country Style Pork Ribs or for other Pork cuts, you have to try this one!

First time try with this recipe for the Country Style Pork Ribs, and will not be the last! To prepare I needed; 1 1/2 to 2 pounds Boneless Country-Style Ribs, 3 teaspoons Cajun Seasoning, 1/4 teaspoon Garlic Powder, 1/2 teaspoon Onion Powder, 1/2 teaspoon Chili Powder, 1/2 teaspoon Ground Cumin, 1 teaspoon Dried Cilantro, and 3/4 cup JB's Fat Boy Haug Waush Barbecue Sauce. You can tell by these ingredients this was going to be delicious, and it was! I started by washing ribs and patting them dry. Combined all the seasoning and mixed. Rub the seasoning mixture over the ribs. Line a shallow baking pan with foil; oil or spray with nonstick cooking spray. Arrange ribs on the foil. Cover with another piece of foil and bake at 325° for 1 hour and 15 minutes, or until very tender. Remove the top piece of foil and brush with Barbecue Sauce; bake uncovered for about 15 minutes longer, or broil for about 5 minutes. The combination of all the spices make a fantastic flavor for the Pork! A little heat and a little sweetness then with the added JB's Fatboy Haug Waush BBQ Sauce, PERFECT! The Pork came out flavorful and moist, another keeper recipe!

For side dishes I had Bob Evans Mashed Potatoes, Walmart Marketside Sugar Snap Peas, and Aunt Millie's Whole Grain Bread topped with I Can't Believe It's Not Butter. The Mashed Potatoes and Sugar Snap Peas are both prepared by heating in the microwave. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

BBQ Baked Pork Chop w/ Sliced New Potatoes, Seasoned Blackeye Peas, and...

Dinner Tonight: BBQ Baked Pork Chop w/ Sliced New Potatoes, Seasoned Blackeye Peas, and Whole Grain Bread

Not much going on around here today and outside it's gloomy, cold, and snow flurries, BLAH! For dinner I prepared a  BBQ Baked Pork Chop w/ Sliced New Potatoes, Seasoned Blackeye Peas, and Whole Grain Bread.

I had a Center Cut Pork Loin Chop in the freezer that I set out over night in the fridge to thaw. About noon today I marinated it in JB's Fat Boy HaugWaush BBQ Sauce until I was ready to bake it. To prepare I baked it a small broiler pan that has a rack in it. After I preheated the oven to 400 degrees I baked the Chop for    minutes, until the temperature reached 165 degrees. The Chop came out moist and flavorful. The JB's Fat Boy Sauces are the best, whether it's Pork, Chicken, or Beef their sauces are hard to beat.

For  side dishes I had Del Monte Sliced New Potatoes, Margaret Holmes Seasoned Blackeye Peas, and a baked small castiron skillet of Martha White Cornbread. For the Potatoes and Blackeye Peas just empty the cans into a small sauce pan and heat and serve. The Cornbread was made with Martha White Brand Corn Meal. For dessert later a Jello Sugarless Dark Chocolate Pudding.

Crock Pot Pork Back Ribs w/ Potatoes Au Gratin, Green Beans, and Whole Grain Bread

Dinner Tonight: Crock Pot Pork Back Ribs w/ Potatoes Au Gratin, Green Beans, and Whole Grain Bread

Rain and more rain has started here, for the next 5 days! Started the morning off with some Turkey Goetta, 1 Egg Sunnyside Up, and some lightly buttered Whole Wheat Toast. Then for lunch a Salmon Burger on a Whole grain Bun and for diner Ribs! My Mom purchased the Ribs yesterday at Kroger. She said it had been quite a while since I made any for her so as I always say, "What Mom wants Mom gets!" So I prepared Crock Pot Pork Back Ribs w/ Potatoes Au Gratin, Green Beans, and Whole Grain Bread.

I love fixing these Ribs! The night before I cut the rack in half so they fits in the Crock Pot. I then rub in JB’s Fat Boy Haugwaush BBQ Sauce and place them in Hefty Zip Lock Bag, then into the fridge to marinate all night. JB’s Fat Boy has several sauces and rubs for all meats. I’ve use them all and purchase them at a local Kroger. So back to the ribs. Next day I line my Crock Pot with a Reynolds Crock Pot Bag. Another fantastic invention! No scrubbing the Crock Pot with these after using just throw the bag away and wipe out the Crock Pot of any moisture, clean up done! I spray the bag with Pam Spray and add my ribs to the Crock Pot. I just tighten the lid, turn it on low, and I’m done. I cook them anywhere from 7 – 8 hours, I cooked these for dinner tonight for 8 hours. After about 5 hours I poured about a half bottle of the BBQ Sauce over top the ribs. The aroma through out the day is amazing! The only hard part is trying to get the ribs out whole, they’re so tender they fall apart. No knives needed, the bones just pull out. Fantastic flavor, moist and tender, and very easy to prepare.

For side dishes my Mom prepared some more of the fresh Green Beans, or a Mess of Beans as she says, she had purchased from Jungle Jim's Market and i prepared some Idahoan Au Gratin Homestyle Casserole, along with Aunt Millie's Light Whole Grain Bread. I left the Idahoan Product info and instructions at the end of the post. For dessert a slice of baked Pillsbury Nut Quick Bread with 2 scoops of Breyer's Carb Smart Vanilla Ice Cream.

Bison BBQ Sandwiches w/ Ruffle Light Chips and a Snapple!

Today's Dinner: Bison BBQ Sandwiches w/ Ruffle Light Chips and a Snapple!

Well last night's delicious and tender Braised Buffalo Chuck Roast has turned into tonight's dinner of Sliced and Shredded Bison BBQ Sandwiches! The Buffalo is every bit as delicious as it was last night and it's even more tender if that's possible. Tonight it was Bison BBQ Sandwiches w/ Ruffle Light Chips and a Peach Tea Diet Snapple.

Preparing the Buffalo Bbq Sandwiches was very easy. After dinner last night I sliced up the remaining Roast, sealed it in a Glad Plastic Container and refrigerated it. To warm it up I took a medium frying pan and added the Buffalo then turned the heat on medium and warmed for about 10 minutes. To build the Sandwich I used Aunt Millies Light Whole Grain Sandwich Bun topped it with the sliced and shredded Buffalo and topped that off with JB's Fat Boy Chipotle BBQ Sauce! JB's Fat Boy has my votes for best BBQ Sauces, bar none. The Chipotle is one of their best. You've got sweetness and then you have heat and it combines for a perfect BBQ Sauce. I had a side of Ruffles Light Potato Chips, 90 Calories 17 Carbs and 0 Fat. Then as they say "To Wash Everything Down With" I had a bottle of Peach Tea Diet Snapple, 10 Calories and 0 Carbs. For dessert later this evening a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Baked Glazed Pork Chop in Apple Cider Honey Mustard Sauce w/...

Dinner Tonight: Baked Glazed Pork Chop  in Apple Cider Honey Mustard Sauce w/ Cayenne and White Cheddar Mashed Potatoes and Sugar Snap Peas

An extra tasty dinner tonight, Baked and Glazed Pork Chop  in Apple Cider Honey Mustard Sauce w/ Cayenne and White Cheddar Mashed Potatoes and Sugar Snap Peas. I was at Jungle Jim's Market last week and came across the JB's Fatboy Apple Cider Honey Mustard Sauce. First time I've ever seen this Sauce from JB's Fat Boy and it looked too good to pass up. Apple Cider Honey Mustard Sauce, it just sounds like it was meant for Pork!

First I preheated the oven to 400 degrees. I then rolled my Chops in flour that was seasoned with Sea Salt and Black Pepper. I placed the Chops in a small broiler pan with a wire rack and baked until the temperature of the Chops reached 165 degrees. I turned the Chops over after 15 minutes of baking and with a small basting brush basted on the Apple Cider Honey Mustard Sauce. Continued baking until done. The Chops came out moist and full of great flavor. The Apple Cider Honey Mustard Sauce is a perfect Glaze or Dipping Sauce for Pork! Love this Sauce like the rest of the JB's Fat Boy sauces. The Apple Cider Honey Mustard Sauce is a great combo, you can taste the Mustard and the Apple Cider and then there's a sneaky hint of heat to it. Great Sauce! I think it would go well for Chicken also, I'll find out soon.

For sides to go with my pork Chops i prepared Cayenne and White Cheddar Mashed Potatoes, Sugar Snap Peas, and Aunt Millie's Light Whole Grain Bread. First time making the Cayenne and White Cheddar Mashed Potatoes. The recipe came from the Simply Potatoes web site but I'm not really a fan of their Mashed Potatoes, love their other Potato products, so I used Bob Evans "Down on the Farm" Mashed Potatoes. I microwaved the Mashed Potatoes for a total of 5 minutes and when done added a 1/ teaspoon of Cayenne Pepper and 1/2 cup of freshly shredded Murray's Light White Cheddar. Stirred until well mixed and served. I love Potatoes and this Potato recipe is fantastic!! The Cayenne and white Cheddar really lights the Mashed Potatoes up! You have to give this one a try. I left the original recipe and web link at the end of the post. I also had Walmart Marketside Sugar Snap Peas and Whole Grain Bread. For dessert later some Breyers Carb Smart Vanilla Ice Cream topped with Smucker's Sugarless Hot Fudge Topping.

Dinner Tonight:  Baked Country Style Pork Loin Boneless Ribs w/ White Sweet Corn, Baked Potato, and Whole Grain Bread

One last warm day before it's predicted to turn a lot cooler! Started the day off by going to Costco and loaded up on some great meat and fish Items. We'll be having Top Sirloin Steak, Pork Chops, Country - Style Boneless Pork Loin Ribs, and Tilapia for a while, found some really great buys today. Also found out they'll be getting their Prime Rib in for the Holiday's on Nov. 21. On to dinner!

I prepared Baked Country Style Pork Loin Boneless Ribs w/ White Sweet Corn, Baked Potato, along with Whole Grain Bread. I believe it's the first time I prepared the Country - Style Ribs.Their really a nice lean cut of Pork. I preheated the oven on 325 degrees. I started off by making a rub for them consisting of 1/2 teaspoon of Roasted Ground Cumin, 1/2 teaspoon Garlic Salt, 1/2 teaspoon Parsley Flakes, and a healthy couple of shakes of Sea Salt and Ground Black Pepper. Made sure the Rub covered all sides of the Ribs and then basted them with JB's Fat Boy Haugwaush BBQ Sauce. I baked them for 1 hr and 30  minutes. I basted them every 30 minutes with the Haugwaush. The Ribs came out fantastic! Moist and tender and full of flavor. I'll be having these again soon.

For my side dishes I had Green Giant White Sweet Corn, a Baked Potato, and Healthy Life Whole Grain Bread. The White Sweet Corn was leftover from last night's meal so I just warmed that up in the microwave. For my Baked Potato I topped that with Sea Salt, Ground Pepper, and I Can't Believe It's Not Butter. For desert later I'm sticking with just some fruit, a Mini Banana and some Honey Crisp Apple slices.

What Are Country Style Ribs?

*Country-style ribs – Country-style ribs are cut from the blade end of the loin close to the pork shoulder. They are meatier than other rib cuts. They contain no rib bones.

Crock Pot Baby Back Ribs w/ Mashed Potatoes, Green Beans, and…

Dinner Tonight: Crock Pot BBQ Baby Back Ribs w/ Mashed Potatoes, Green Beans, and Whole Grain Bread

My Mom requested Ribs so Ribs it was, Crock Pot Ribs for dinner!  We purchased some Pork Baby Back Ribs from a local Kroger and used J B‘s Fat Boy Haugwaush Barbecue Sauce on the ribs. Last night I cut the Ribs in half so they would fit the Crock Pot and then used a half bottle of the JB’s Fat Boy Haugwaush Bar B Cue Sauce, rubbing it by hand on to the Ribs. I put the Ribs in a Hefty Zip Plastic Bag and let them marinate over night. The next morning put the Ribs in the Crock Pot and cooked them on low  for 8 hours. After 5 hours I applied the other half a bottle of Haugwaush to the Ribs.  The ribs came out perfect! Tender fall off the bone delicious. No knife needed as the bones could be removed by just pulling on them.  The hardest part of this is getting the Ribs out of the Crock Pot without them falling apart. At the end of the post I left the J B’s Sauce description and web site link.

For sides we had Bob Evan’s Mashed Potatoes, Green Beans, and Whole Grain Bread. For dessert I grabbed a mini loaf of Pillsbury Nut Quick Bread out of the freezer and let it thaw. Then had a slice of Nut Bread topped with a scoop of Breyer's Carb Smart Vanilla Ice Cream.

Crock Pot Baby Back Ribs w/ Mashed Potatoes, Green Beans, and…

Dinner Tonight: Crock Pot BBQ Baby Back Ribs w/ Mashed Potatoes, Green Beans, and Whole Grain Bread

While relaxing and watching TV and working a crossword last night my Mom came in from the grocery and brought me a bag and said "Fix these for dinner tomorrow". So as I always say what Mom wants Mom gets! So Ribs it was for dinner Wednesday! Last night before I went to bed I cut the rack of Ribs in half and put them in a Hefty Zip Bag along with about a half a bottle of JB’s Fat Boy Haugwaush Bar B Cue Sauce. I love using JB's Sauce for any meat, it's by far my favorite! This morning I already had the Ribs and the Crock Pot ready. So after a light breakfast I had the Ribs in the Crock Pot by 8:00 a.m. cooking on low. By lunch the aroma of the Ribs were all through the kitchen and dining room. My parents wanted to eat early to make a Church function this evening. The Ribs were ready and falling off the bone by a little after 4 p.m. I was tempted to eat then also but I waited to later. The Ribs as usual were incredible! Using the Crock Pot for the Ribs produces the most tender and moist Ribs you'll ever have. Include the  JB’s Fat Boy Haugwaush Bar B Cue Sauce and you have the tastiest also!  The only problem, getting them out of the Crock Pot without them falling apart!

For sides we had Bob Evan’s Mashed Potatoes, Shellie Beans, and Healthy Life Whole Grain Bread. I baked a loaf of Pillsbury Rustic french Bread for my parents. For dessert later a bowl of Breyer's Carb Smart Vanilla Ice Cream topped with Del Monte No Sugar Added Sliced Peaches.

Today's Menu: Pork, Potato and Bean Stew w/ Corn Bread

I tried a new recipe for dinner tonight, Pork, Potato and Bean Stew w/ Corn Bread. A really hearty and simple recipe. Using Cannelini Beans, Spicy Chili Beans, New Potatoes, and Pulled Smoked Pork. It all comes together to make a tasty and different stew. The Smoked Pork along with the Beans and Potatoes make a natural and delicious mix. I used Montgomery Inn Smoked Pork Barbecue for the meat and a 1/2 Cup JB's Fat Boy Haugwaush Barbecue Sauce for that extra kick. I left the recipe at the end of the post.

I also made a small  Cast Iron Skillet of Corn Bread using Martha White White Corn Meal. First Corn Bread I've made in a while and it's just as good as it always was! What better side for a hearty stew than Corn Bread. For dessert later another new item. This one from Blue Bunny, Blue Bunny Naturally Frozen Yogurt Chocolate/Vanilla Swirl. It's 110 calories and 19 carbs. I'll leave a separate post on this and how it tasted tomorrow, it looks delicious!

Grilled Chipotle London Broil Wrap

Dinner Tonight: Grilled Chipotle London Broil Wrap

I used the leftover London Broil from the other day and I had the begining of some fantastic Wraps! I sliced the remaining London Broil into thin slices and wrapped them in paper towels and warmed them up in the microwave. For the Wrap I used Flatout Light Italian Flat bread. Love these they are 100% Whole Wheat , High Fiber, and only 90 calories and 16 carbs, I left the info and web link at the end of the post. I topped the Steak with JB’s Fat Boy Chipotle Sauce, sliced Deli Jalapenos, sliced Black Olives, Lettuce, Daisy Reduced Fat Sour Cream, fresh Grated Havarti Cheese and fresh grated Smoked Dutch Gouda. After assembling the wrap and folding it I put it in the microwave for 35 seconds. The lean and delicious Steak along with heat of the Jalapenos, Chipotle Sauce, and the fresh and creaminess of the Smoked Gouda Cheese and Havarti Cheese just makes an unbelievable Wrap! For dessert later a Mango-Cheesecake Parfait that I had made yesterday. You can find the recipe for this on an earlier post from today.
