Today's Dinner: Bison BBQ Sandwiches w/ Ruffle Light Chips and a Snapple!




Well last night's delicious and tender Braised Buffalo Chuck Roast has turned into tonight's dinner of Sliced and Shredded Bison BBQ Sandwiches! The Buffalo is every bit as delicious as it was last night and it's even more tender if that's possible. Tonight it was Bison BBQ Sandwiches w/ Ruffle Light Chips and a Peach Tea Diet Snapple.



Preparing the Buffalo Bbq Sandwiches was very easy. After dinner last night I sliced up the remaining Roast, sealed it in a Glad Plastic Container and refrigerated it. To warm it up I took a medium frying pan and added the Buffalo then turned the heat on medium and warmed for about 10 minutes. To build the Sandwich I used Aunt Millies Light Whole Grain Sandwich Bun topped it with the sliced and shredded Buffalo and topped that off with JB's Fat Boy Chipotle BBQ Sauce! JB's Fat Boy has my votes for best BBQ Sauces, bar none. The Chipotle is one of their best. You've got sweetness and then you have heat and it combines for a perfect BBQ Sauce. I had a side of Ruffles Light Potato Chips, 90 Calories 17 Carbs and 0 Fat. Then as they say "To Wash Everything Down With" I had a bottle of Peach Tea Diet Snapple, 10 Calories and 0 Carbs. For dessert later this evening a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Chicken Marsala With Linguine and Mushrooms w/ Whole Grain Bread

Tried another of the Progresso Kitchen Favorites tonight for dinner, Chicken Marsala With Linguine. I just had the Lasanga dinner last night and it was delicious so I was looking forward to this tonight. Like the other one it was easy to prepare and just as delicious! The dinner kit included Linguine Pasta, Marsala Sauce Seasoning, Marsala Cooking Wine, and Seasoned Flour. I just added the Boneless Chicken Breasts, Extra Virgin Olive Oil, Mushrooms, I Can't Believe It's Not Butter, and Hot Water. I've left the ingredients and full instructions at the bottom of the post. It's ready in about 20 minutes. Just boil your pasta, prepare the Chicken, and serve! There's 330 calories and 30 carbs.

The dinner came out mouth watering delicious! The Pasta was tender and the Chicken with the Mushrroms and Marsala Sauce and seasoning is incredible! I'm a huge sauce lover and this Marsala Sauce is one of the best I've had. These Progesso Kitchen Favorites are going to become part of the dinner menu's for us. We also had Aunt Millie's Whole Grain Bread. For dessert later a Jello Sugar Free Chocolate Pudding.

Ingredients

Directions
Ready in about 20 minutes. You Will Need: 1 lb uncooked boneless skinless chicken breasts; 3 tablespoons vegetable oil; 3/4 cup hot water; 1 tablespoon butter. Pasta: Fill 3-quart saucepan 2/3 full of water. Heat to boiling; stir in Pasta. Gently boil uncovered 10 minutes, stirring occasionally. Remove pasta from heat; let stand up to 5 minutes before draining. Drain pasta before serving; cover to keep warm. While water is heating and pasta is cooking, continue with chicken. Chicken: Cut each chicken breast into 5 or 6 pieces (3 x 1 inch). Empty Seasoned Flour into medium bowl or food-storage plastic bag. Coat chicken with flour; discard any remaining flour. Heat oil in 10-inch skillet over Medium-High heat; rotate skillet until oil covers bottom. Carefully add chicken to hot oil; cook 2 to 5 minutes on each side or until deep golden brown. Reduce heat to Medium. Cut off 3/4-inch corner of Cooking Wine pouch. Carefully pour wine into skillet with chicken; cook uncovered 30 seconds. Stir in Seasoning and hot water. Simmer uncovered about 3 minutes, stirring occasionally, until chicken is no longer pink in center. Serve: Stir butter into chicken and sauce until melted (if sauce becomes too thick, stir in 2 to 3 tablespoons hot water, 1 tablespoon at a time). Remove from heat. Serve chicken and sauce over pasta. Refrigerate leftovers. Kitchen Tip: Kitchen Tip: While chicken is simmering, stir in 4 to 6 oz sautéed fresh mushrooms or canned (drained) mushrooms.

Dinner Tonight: Turkey Burger, Crumbled Bleu Cheese, and Sauteed Mushrooms w/ Glazed Carrots


Tried Jennie - O Turkey Burgers for dinner tonight. They fried up real easy. Good taste and juicy! Plus ony 180 calories and 0 carbs per patty. I also purchased Jennie - O Turkey Sausage Links I'll let you know how those are later. Along with the Turkey Burger I topped it with Crumbled Bleu Cheese, Sauteed Mushrooms and served it on an Aunt Millie's Thinwich Whole Grain Bun. As a side I had some Glazed Carrots leftover from the other night and warmed those up. Dessert later Walmart Bakery Sugar Free Angel Food Cake w/ Del Monte Sugarless Peach Slices.

Baked Salmon w/ Brown Rice

Dinner Tonight: Baked Salmon w/ Brown Rice and Hearth Whole Grain Bread.





Healthy and delicious was Dinner tonight! I had Baked Salmon along with Brown Rice. I was at Walmart earlier and as going by the Meat and Seafood Dept. they had some beautiful Salmon Fillets. That was the first time I tried the Salmon from Walmart and it was delicious! I seasoned it with Sea Salt, Grinder Black Pepper, Parsley, and topped with Sesame Seeds and lightly rubbed with Extra Virgin Light Olive Oil. I baked it at 400 degees for 12 minutes. I used Uncle Ben's Brown Rice and and I also had a slice of Aunt Millie's Hearth Whole Grain Bread.

Bison Sirloin Steak and Mushrooms w/....

Dinner Tonight: Bison Sirloin Steak and Sauteed Mushrooms w/ Green Beans and Hearth Whole Grain Bread.

Love that Bison! And why not it's low calorie, low carb, tender and delicious. Had a Bison Sirloin Steak cooked medium rare and seasoned with McCormick Grinder Steakhouse Seasoning. I topped it with Sauteed Mushrooms and seasoned those with Sea Salt, Ground Pepper, Parsley, Cumin, Thyme, and Sauteed in a 1/2 tablespoon of Extra Virgin Olive Oil and a touch of I Can't Believe It's Not Butter. Also had a slice of Aunt Millie's Hearth Whole Grain Bread.

Good Earth Glazed Shrimp Dinner


Dinner Tonight: Good Earth Spicy Citrus Glazed Shrimp w/ Angel Hair Pasta.

Had the Good Earth Spicy Citrus Glazed Shrimp tonight with the leftover Shrimp from last night. Also had Aunt Millie's Whole Grain Bread. I had included the instructions on this dinner from a previous posting and thought I would include it again. These dinners are great, just add the Chicken or Shrimp, 2 Tablespoons of Extra Virgin Olive Oil, and 1 Tablespoon of I Can’t Believe it’s Not Butter.

Ingredients

1 Box of Good Earth Spicy Citrus Glazed Shrimp
1 Lb. uncooked Shrimp (26 – 32 Medium), thawed
2 Tablespoons Extra Virgin Olive Oil
1 Tablespoon “I Can’t Believe It’s Not Butter“

*Fill 2 quart sauce pan 2/3 full of water. Heat to boiling and stir in Pasta.
*Gently boil uncovered for 5 minutes, stirring occasionally.
*While Pasta is cooking empty Whole Wheat Flour into medium bowl or food storage bag.Coat well drained thawed Shrimp with Flour.
*Heat oil in non-stick 10″ skillet over medium – high heat. Carefully add Shrimp to hot oil and cook 1 – 2 minutes on each side or until golden brown.
*Reduce heat to medium. Cut off 3/4 inch corner of Spicy Citrus Glaze pouch. Carefully pour glaze into skillet with Shrimp. Cook uncovered 1 to 2 minutes, stirring frequently, until Shrimp are cooked through and coated with glaze.
*Drain Pasta. Add Butter and Pasta Seasoning to Pasta and toss with fork to coat.
Serve Shrimp with Pasta.

1 Cup prepared has 290 Calories and 38 Carbs.

Had a Bison Sirloin Steak, cooked medium and seasoned with McCormick Grinder Steakhouse Seasoning topped with Sauteed Mushrooms. As sides had  Asparagus Spears seasoned with Garlic Salt and Black Pepper, sprinkled with sliced Almonds. I also had Diced Potatoes along with Aunt Millie’s Hearth Whole Wheat Bread.

Crappie Tonight!!



Dinner Tonight: Crappie w/ Velveeta/Kraft Shells and Cheese and Hearth Whole Grain Bread

Everyone has their favorite foods mine Bison and Crappie! I know Spring is just around the corner when my Mom’s cousin’s family are returning from their annual winter retreat from Lake Okeechobee. Which also means they bring me a
fresh batch of Lake Okeechobee Crappie or Specks as they call them down in Florida. I could eat these every day and not get tired of them. This year’s catch is a tasty one, as I found out for dinner!
I had Crappie rolled in a Whole Wheat Flour and Bread Crumb mixture and seasoned with Sea Salt, Pepper, McCormick ParmesanSeasoning, and Parsley. Lightly pan fried in Extra Virgin Olive Oil, just lightly browned. As sides had Velveeta/Kraft 2% Shells and Cheese and a slice of Aunt Millie’s Hearth Whole Grain Bread. Did I tell you I love eating Crappie?

Cincinnati Style Chili Spaghetti 4 Way w/ Hearth Whole Grain Bread

Dinner Tonight: Cincinnati Style Chili Spaghetti 4 Way w/ Hearth Whole Grain Bread


Nothing like a Chili Spaghetti 4 Way especially when I can make it lower in calories and carbs. I used the Dixie Carb Counter Skinni Spaghetti, at 143 calories and 14 carbs. I used Hormel Turkey Chili w/ Beans and a half a serving of Kraft 2% Shredded Cheese. I seasoned everything with McCormick Grinder Italian Seasoning and McCormick Perfect Pinch Parmesan Herb Seasoning. I also had a slice of Aunt Millie's Hearth Whole Grain Bread. For dessert a bit later I'll have a bowl of Breyers Carb Smart Ice Cream and it's only 90 calories and 13 carbs
