Dinner Tonight: Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip





For Breakfast this morning I prepared a Breakfast sandwich. I heated up a al fresco Chicken Sausage Patty. As that was heating I toasted a Thomas Light 100% Multi Grain English Muffin. I took the Patty put it between the Muffin halves and topped the Patty with a 1/2 slice of Kraft Deli Style Sharp
Cheddar Cheese. These are so good! After Breakfast I went to Kroger for Mom, she wanted some Lunch Meat. I stopped by McDonald's to pick up her usual Breakfast of a Sausage, Egg, and Cheese on Bagel along with a medium Decaf Coffee. Got the cart out of the shed after Lunch along with a rake and the leaf blower. I went around the house and cleaned the flower beds and around the house. Not bad out today, mostly sunny and 50 degrees. For Dinner tonight its a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.




I had fully intended to prepare a Pork Roast for Dinner tonight, until I went to Kroger. I had went to the Deli to purchase some Kahn's Bologna and Boar's Head Sweet Slice Ham, which I did. But I seen them slicing some Boar’s Head London Broil Cap-Off Top Round Oven Roast Beef and it looked
way to good to pass up! It was a beautiful Rare and it was on sale. So the menu changed tonight to a Roast Beef and Vermont Cheddar Sandwich! So for my Sandwich I’ll be using the Boar’s Head Roast Beef, a slice of Boar’s Head Vermont Cheddar Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Aunt Millie’s Light Whole Grain Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef and Cheese is. It’s just so tender and flavorful. And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Ruffle’s Reduced Fat Potato Chips with some Helluva French Onion Dip. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Mango Snapple to drink.

I had a Jimmy Dean Simple Scrambler Cup – Turkey Sausage Crumbles, Egg Whites, and Cheddar Cheese for Breakfast. I also had my morning cup of Bigelow Decaf Green Tea. 43 degrees and partly sunny outside today. After Breakfast did a load of laundry and cleaned the house this afternoon. For Dinner tonight I prepared a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.







So I wanted something light and a Sandwich seemed right for Dinner! I had picked up some Boar's Head Rare London Broil at Jungle Jim's yesterday. For my Sandwich I’ll be using the always delicious Boar’s Head Roast Beef, a slice of Boar’s Head Vermont Cheddar Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Aunt Millie’s Light Whole Grain Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef and Cheese is. It’s just so tender and flavorful. And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Ruffle’s Reduced Fat Potato Chips with some Helluva French Onion Dip. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Dr. Pepper to drink.

For Breakfast this morning I toasted a couple of slices of Aunt Millie's Light Whole Grain Bread and topped them with Smucker's Sugar Free Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. Then at 11:00 I had to go to my family Doctor. My last visit for my Blood Work showed a increased Sugar count. So they are changing my increasing my Medication. The last few months have really been stressful so that didn't help my readings any. And now it looks as though I'm losing my Supplement Insurance because I'm an Amputee, which I was when I first got the policy back in 2002. Then Thursday I have to be back at the Dentist Office for Dental Work. Too much going on, the bad way in my life right now. But it's like they say "It could be worse". So I didn’t really plan on anything for dinner but one thing kept sounding good with no prep by me, Izzy’s Lean Corned Beef Sandwich! So with the Kitchen closed tonight it was Izzy’s Lean Corned Beef Sandwich w/ Ruffle’s Reduced Fat Potato Chips.



I just love Izzy's Sandwiches! I would put Izzy’s Corned Beef up against any other. Plus with their “Lean’ version of the Corned Beef it makes it healthier also. The sandwich contains 170 calories and 16 carbs per serving (1/2 Sandwich) and 340 calories and 32 carbs for a Full Sandwich. I had the Full, as usual, along with a serving of Ruffle’s Reduced Fat Potato Chips and their 80 calories and 17 carbs per serving, I had a 1/2 serving. For Dessert/Snack later some Honey Crisp Apple slices.

You would be hard pressed to find a more perfect Autumn day out than what today was! About 70 degrees and sunny with a light breeze through out the day! Was outside most of the day and didn’t really plan on anything for dinner and didn't feel like cooking tonight. So that meant one thing "The Kitchen is Closed!" So it was Izzy's tonight, Izzy’s Lean Corned Beef Sandwich w/ Ruffle’s Light Chips and an Ice Cold Diet Dr. Pepper.






Subway and Jimmy John's are good but their not a close second to Izzy’s. I would put Izzy’s Corned Beef up against any other. Dinner by Subway!

Today's Menu: Subway 6" Sub on 9 Grain Bun w/ Turkey and Black Forest Ham







Heavy rains all day and more to come, a lot of flooding and roads closed. Just seems like it's been a long week and really had no desire to cook tonight. So it was Subway tonight! I got myself and my parents 6" Subs for dinner.





For my parents I got  2 6" Subway Clubs. Comes on a 6" 9 Grain Wheat Hoagie Bun with Turkey, Roast Beef, and Black Forest Ham and topped with Cucumbers, Black Olives, Tomato, Red Onion, and Green Peppers. For myself I had  6" 9 Grain Wheat Hoagie Bun with Turkey and Black Forest Ham with toppings of Black Olives, Lettuce, and Jalapenos. I added a slice of Sargento Ultra Thin Swiss Cheese, 40 calories. My Sub had 310 calories (With the Cheese) and 44 carbs. We also had Ruffle's Light potato Chips, 80 calories and 17 carbs per serving (About 18 Chips). For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.

Ahhh, another one of those days! Finally got my Hoveround Chair repaired and back running at 100%. Them digital camera went wacko and had to figure out how to reprogram that. Then a Java Update for my computer went awry and took me most of the afternoon to get my computer back up to 100%. Managed to slide out to pick up a few groceries in there too, busy day! For dinner a Smoked Turkey and Roasted Pastrami on Whole Grain Bun w/ Ruffle's Light Chips.




I used Boar's Head Pastrami and Boar's Head Smoked Turkey for my sandwich along with a slice of Sargento Swiss Cheese. First time I tried the Boar's Head Pastrami or Smoked Turkey, very good as all Boar's Head Meat. I served it all on a Healthy Life Whole Grain Bun. I had a side of Ruffle's Light Potato Chips. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Bison BBQ Sandwiches w/ Ruffle Light Chips and a Snapple!


Today's Dinner: Bison BBQ Sandwiches w/ Ruffle Light Chips and a Snapple!




Well last night's delicious and tender Braised Buffalo Chuck Roast has turned into tonight's dinner of Sliced and Shredded Bison BBQ Sandwiches! The Buffalo is every bit as delicious as it was last night and it's even more tender if that's possible. Tonight it was Bison BBQ Sandwiches w/ Ruffle Light Chips and a Peach Tea Diet Snapple.



Preparing the Buffalo Bbq Sandwiches was very easy. After dinner last night I sliced up the remaining Roast, sealed it in a Glad Plastic Container and refrigerated it. To warm it up I took a medium frying pan and added the Buffalo then turned the heat on medium and warmed for about 10 minutes. To build the Sandwich I used Aunt Millies Light Whole Grain Sandwich Bun topped it with the sliced and shredded Buffalo and topped that off with JB's Fat Boy Chipotle BBQ Sauce! JB's Fat Boy has my votes for best BBQ Sauces, bar none. The Chipotle is one of their best. You've got sweetness and then you have heat and it combines for a perfect BBQ Sauce. I had a side of Ruffles Light Potato Chips, 90 Calories 17 Carbs and 0 Fat. Then as they say "To Wash Everything Down With" I had a bottle of Peach Tea Diet Snapple, 10 Calories and 0 Carbs. For dessert later this evening a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Grilled Sweet Italian Turkey Sausages w/ Chips


Dinner Tonight: Grilled Sweet Italian Turkey Sausages w/ Ruffle's Reduced Fat Chips



Another beautiful day around the neighborhood here today! 80 degrees with a light breeze, all we need is some sand and the sound of breaking surf. Anyway back to the grill. I grilled Honeysuckle White Sweet Italian Turkey Sausages. I think these are the best Turkey Sausages there are! Grilled on medium high for about 8 minutes while turning them often. They come out plump and juicy. Served them on Healthy Life Whole Grain Hot Dog Buns and topped with Frisch's Spicy Brown Mustard. For side I had Ruffle's Reduced Fat Potato Chips. For dessert later some Kettle Brand Tia Ranch Chips with Kroger Brand Organic Black Bean and Corn Salsa.
