Dinner Tonight: Beef Stew w/ Potatoes, Carrots, and Corn Bread




For Breakfast this morning a Poached Egg, 2 Johnsonville Turkey Breakfast Sausage Links, 2 slices of Aunt Millie's Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Outside its beautiful! Sunny and 81 degrees out today. After Breakfast I went and picked up Breakfast for Mom at McDonald's. Stopped by at the ATM and filled Mom's Car up with gas. Then later took her car up to be washed. After Lunch did a couple of loads of laundry. Then got the cart out and did some yard work. Nice to be out in sunshine! For Dinner tonight its Beef Stew w/ Potatoes, Carrots, and Corn Bread.







I normally don't have Beef but Mom wanted to make some Beef Stew. I had purchased a Chuck Roast for her at Meijer along with Carrots and Red Potatoes. I gave her hand and we cooked everything in the Crock Pot. She made some Cornbread later on to go with the meal. Everything was so delicious. For Dessert/Snack later a bowl of Skinny Pop - Pop Corn along with a Diet Mango Snapple to drink. Keep the post short today as Mom was the cook. And you know everything is better when Mom does it! Later!

Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Corn Bread

Dinner Tonight: Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Corn Bread






For Breakfast I toasted a couple of slices of Aunt Millie's Light Whole Grain Bread and topped them with some Smucker's Sugar Free Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. Rough morning and afternoon, Ive had a bad Sinus Headache all day. Did a lot of resting and that was it. For Dinner tonight its Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Corn Bread.






I had purchased some Catfish Nuggets from Kroger. To prepare them I rinsed the Catfish Nuggets off
in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty.



For one side we had Fried Potatoes! I’ve loved these all my life and my Mom makes the best! I
bought a bag of Medium Size Red Potatoes, which we’ll be using. To prepare them; first wash the Whole Potatoes and dry with a paper towel. Next grab a Cast Iron Skillet and add 1 tablespoon of Extra Light Olive Oil and heat the Skillet on high.







With the skillet heated add the Potatoes. After adding the Potatoes add your Seasoning, we just used Salt and Pepper. Then fry until the Potatoes start to turn brown. Then flip them with a spatula and continue frying until done. I love these Potatoes and they are so easy to prepare.









Then I also heated up a can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and
heat until heated through.











I also made a small Cast Iron Skillet of Corn Bread, for Mom, using Martha White White Corn Meal.
First Corn Bread I’ve made in a while and it’s just as good as it always was! What a meal  Fried Catfish, Fried Potatoes, Green Beans, and Corn Bread. Then for Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Corn Bread

For Breakfast this morning I prepared a favorite of mine. I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of
Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Snow Flurries and 24 degrees this morning with rain showers and 41 degrees out for the afternoon. Gave Mom a hand in doing a couple of loads of laundry. Then I went to Walmart to pick up a couple of boxes of small Christmas Lights later in the day. For Dinner tonight its Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Corn Bread.

Saturday's Chili - Chili Pie

Chili Pie


Ingredients
1 lb. Italian sausage (sweet or hot) casings removed
2 teaspoons chili powder
1 15-ounce can kidney beans drained
1 14.5-ounce can diced tomatoes drained
3/4 cup jarred salsa
1 box 81/2-ounce corn bread mix
1 large egg
1/3 cup whole milk
1 cup (4 ounces) shredded Cheddar

Directions
Heat oven to 400° F. In a large ovenproof skillet (such as a cast-iron one), over medium heat, cook the sausage, crumbling it with a spoon, until no trace of pink remains, about 7 minutes. Spoon off and discard any fat. Add the chili powder and cook for 1 minute. Add the beans, tomatoes, and salsa and simmer for 3 minutes. Meanwhile, in a bowl, combine the corn bread mix, egg, and milk, then stir in the Cheddar. Remove the chili from heat and spread the corn bread batter over the top. Transfer the skillet to oven and bake until golden, 15 to 20 minutes. Let cool for 5 minutes before serving.

Beans and Smoked Turkey Sausage (Beans and Weenies) w/ Cheddar Corn Bread Muffins

Downright miserable out again, hot and humid. Late afternoon/evening is our community Picnic and Swim Party, a bit too humid for me to go though. For dinner tonight a classic, (Beans and Weenies) Beans and Smoked Turkey Sausage w/ Cheddar Corn Bread Muffins.













Growing up I always loved those little cans of of Campbell’s Beans and Weenies, that and Spaghetti-O’s! Well I wanted some Beans and Weenies but I jazzed it up a bit. I used 1 Butterball Hardwood Smoked Turkey Sausage (sliced into bite size pieces), a handful of Oscar Mayer Turkey Bacon Bits, 1 can of Joan of Arc Spicy Chili Beans, 1 can of Bush’s Reduced Sodium Black Beans (drained and rinsed), 1/4 of a medium-sized Red Onion (Chopped), 1/2  teaspoon Ground Cinnamon, 1 tablespoon Ground Mustard, 1 tablespoon Splenda Brown Sugar, a couple of shakes (or more) of Frank’s Red Hot Sauce, and a 3/4 cup of Jack Daniel’s Honey Smokehouse BBQ Sauce (or to taste).








To prepare everything, it can’t be much easier. I used a small size Dutch Oven that I had sprayed with Pam Cooking Spray. Added all the ingredients except for the Turkey Smoked Sausage to the Dutch Oven, and stirred until well mixed. I turned the stove on medium low, covered the pot and just let simmer. Another set it and forget recipe! You could make this in a crock pot on low and let it go all day or by using a medium size sauce pan and get done even quicker. I love dishes that you can set low and let them simmer. After a couple of hours I sliced up one of the Butterball Hardwood Smoked Turkey Sausage and added it to the Beans. I then increased the heat to medium for about another hour and then reduced it back down to medium low until it was time for dinner.








Then to go with my "Beans and Weenies" I baked some Cheddar Corn Bread Muffins. First time I made these and they are delicious! The recipe comes from the Taste of Home web site. I lightened the recipe up by using 2% Milk, Sargento reduced Fat Shredded Cheddar Cheese, and Fat Free Greek Yogurt. The original recipe also had it as a bread that you cut into squares but I baked as Muffins instead. Fantastic side to the "Beans and Weenies"! I left the full recipe along with a link to the original recipe at the end of the post. A good Hearty Meal tonight. For dessert later a Jello Sugar Free Dark Chocolate Mousse.












Butterball Hardwood Smoked Turkey Sausage



Smoked Turkey Dinner Sausage

Cheddar Corn Bread Recipe

MAKES: 12 servings


Ingredients
2 packages (8-1/2 ounces each) Corn Bread/Muffin Mix
1/2 cup Egg Beater's
1/2 cup 2% Milk
1/2 cup Fat Free Greek plain Yogurt
1 can (14-3/4 ounces) cream-style corn
1/2 cup Sargento 2% Shredded Cheddar Cheese


Directions
In a large bowl, combine the corn bread mix, eggs, milk and yogurt until blended. Stir in corn and cheese. Pour into a greased 13-in. x 9-in. baking dish.
Bake at 400° for 18-22 minutes or until a toothpick inserted near the center comes out clean. Cut into squares. Serve warm. Yield: 12 servings.

Today's Menu: Pork, Potato and Bean Stew w/ Corn Bread



I tried a new recipe for dinner tonight, Pork, Potato and Bean Stew w/ Corn Bread. A really hearty and simple recipe. Using Cannelini Beans, Spicy Chili Beans, New Potatoes, and Pulled Smoked Pork. It all comes together to make a tasty and different stew. The Smoked Pork along with the Beans and Potatoes make a natural and delicious mix. I used Montgomery Inn Smoked Pork Barbecue for the meat and a 1/2 Cup JB's Fat Boy Haugwaush Barbecue Sauce for that extra kick. I left the recipe at the end of the post.

I also made a small  Cast Iron Skillet of Corn Bread using Martha White White Corn Meal. First Corn Bread I've made in a while and it's just as good as it always was! What better side for a hearty stew than Corn Bread. For dessert later another new item. This one from Blue Bunny, Blue Bunny Naturally Frozen Yogurt Chocolate/Vanilla Swirl. It's 110 calories and 19 carbs. I'll leave a separate post on this and how it tasted tomorrow, it looks delicious!








Pork, Potato and Bean Stew

INGREDIENTS:
1 Can Joan of Arc Spicy Chili Beans
1 Can White Cannellini Beans
5 Quartered Small New Potatoes
2 Cups Shredded Smoked Pork, I used Montgomery Inn Shredded Smoked Pork
1/3 Cup Water
1/2 Cup Barbecue Sauce, I used JB's Fat Boy  Barbecue Sauce
Frank's Red Hot Sauce, if desired

DIRECTIONS:
*Wash and quarter New Potatoes. Season and boil Potatoes until they are fork tender. Remove from heat.
  *Spray Large Sauce Pan with cooking spray. In Sauce Pan, mix Potatoes and all other ingredients except hot sauce.
   * Cover; cook on Medium heat until all is heated throughout. Serve with Red Hot Sauce on the side.

Chicken and Dumplings w/ Corn Bread

Tried something new for dinner tonight. I made some Chicken and Dumplings w/ Corn Bread. I used Reames Homestyle Flat Dumplings, first time I tried them and will be using them again. easy to fix and 170 calories and 35 carbs. The carbs could be lower but not bad for noodles plus the other ingredients for the Dumplings aren't very high in calories or carbs. Along with the noodles I used Miller's Amish Chicken Breasts (3 pieces), sliced Mini Carrots, and Diced New Potatoes.


I boiled the Chicken seasoning it with Sea Salt, Pepper, Thyme, and Ground Smoked Cumin. After the Chicken was done I pulled each breast aprt.I also boiled the Mini Carrots ahead of time also along with boiling the Diced New Potatoes. Before putting on the noodles I made the Cornbread. i tried Marie Callender's Low Fat Original Corn Bread, first time I tried this also. This was a breeze to fix also just add 1 1/2 cups water to the one pouch of Corn Bread Mix and mix throughly. Pour into a 8"x8"x2" pan and bake at 375 degrees for 30 minutes. Came out very moist and delicious. After getting the Corn Bread in the oven I started boiling the Dumplings, boil for 30 minutes. With about 8 minutes left to boiling the Dumplings I added the Carrots, Diced Potatoes, and Chicken Breast meat and continued to boil for the 30 minutes. As I said it was the first time I had used the Reames Dumplings and Marie Callender's Corn Bread mix and I'll be using both again as both turned out great. For dessert later a Yoplait Delight Chocolate Eclair Parfait.

Fried Catfish w/ Shells & Cheese and Corn Bread Ears

Dinner Tonight: Fried Catfish Nuggets w/ Shells & Cheese and Corn Bread Ears




Comfort food heaven tonight! Had Fried Catfish Nuggets that were rolled in Whole Wheat Flour and Bread Crumbs and seasoned with Sea Salt and Ground Black Pepper. Then fried in Extra Virgin Olive Oil. Had sides of Velveeta/Kraft Shells and 2% Cheese and Corn Bread Ears. For those who don't know what Corn Bread Ears are it's Corn Bread put into a cast iron mold that looks like small ears of corn, thus Corn Bread Ears. Then they are baked at 450 degrees for 15 minutes. For a dessert/snack later some Whole Grain Tortilla Chips with Black Bean and Corn Salsa.
